Abstract
【解決手段】固形分中に非重合体カテキン類を含有し、キナ酸(B)と非重合体カテキン類(A)との含有重量比[(B)/(A)]が0〜0.018の範囲である緑茶抽出物の精製物を配合してなり、次の成分;非重合体カテキン類、キナ酸又はその塩、甘味料、酸味料、ナトリウムイオン、カリウムイオンを特定の濃度範囲で含有し、pHが2〜6である非茶系容器詰飲料。

Description
また、酸素透過性の透明容器の形態であっても、店頭に並んでショーウィンドウの照明が照射された状態を想定した保存試験(露光試験)時に、飲料の外観が変化しやすく、酸素透過下で光照射による色調安定性に優れなかった。このため、光や酸素を遮断する目的で、酸素透過性が無くかつ不透明な容器の使用が必須であり、商品の多様化が図れなかった。
さらに、本発明者は、酸味料を含有し、かつ高濃度のカテキン類を含有する容器詰飲料の風味向上に関して検討した結果、緑茶抽出物の濃縮物をカテキン類に対しキナ酸又はその塩の含有比を0又は0近くにまで精製し、それを使用して飲料中の非重合体カテキン類に対するキナ酸含有量の比率を調整するとともにpHを2〜6に調整すれば、酸味料を含有しかつカテキンを高濃度に含有した長期間の飲料保存後においても酸味感特有の爽快感が維持されており、特にスポーツシーンでの飲用において見られる酸味感の後引きがなく、口中におけるスッキリ感に優れる容器詰飲料が得られることを見出した。また、得られた飲料は、酸素透過性の透明容器の形態であっても、色調安定性に優れている。また、飲料の濁度の安定性が高いことも見出した。

(C)甘味料 0.0001〜20重量%、
(D)酸味料 0.03〜1.0重量%、
(E)ナトリウムイオン 0.0001〜0.2重量%、
(F)カリウムイオン 0.0001〜0.1重量%
を含有し、pHが2〜6である非茶系容器詰飲料を提供するものである。
ここでいう緑茶抽出物の精製物には、茶葉から熱水もしくは水溶性有機溶媒により抽出された抽出物を濃縮したものを更に精製したものの他、抽出された抽出物を直接精製したもの、精製された茶葉から抽出された抽出物の精製物も含まれる。
緑茶抽出物の精製物として、市販の三井農林(株)「ポリフェノン」、伊藤園(株)「テアフラン」、太陽化学(株)「サンフェノン」等の緑茶抽出物の濃縮物の精製物を使用してもよい。
また、固形分中に非重合体カテキン類を20〜90重量%含有する緑茶抽出物の濃縮物を、有機溶媒と水の重量比9.9/1〜1/9の混合溶液に溶解させ、活性炭及び酸性白土又は活性白土と接触させてもよい。または、超臨界抽出による精製や吸着樹脂に吸着させエタノール溶液で溶離させ、エタノールを留去したもの等でもよい。
特に好ましい香料は、オレンジフレーバー、レモンフレーバー、ライムフレーバー及びグレープフルーツフレーバーを含めたシトラスフレーバーである。他のフルーツフレーバーは、リンゴフレーバー、ブドウフレーバー、ラズベリーフレーバー、クランベリーフレーバー、チェリーフレーバー、パイナップルフレーバー等が使用できる。更に、天然フレーバーとしてはジャスミン、カミツレ、バラ、ペパーミント、サンザシ、キク、ヒシ、サトウキビ、レイシ、タケノコ等が挙げられる。これらのフレーバーはフルーツフレーバー及び香油のような天然物でも又は合成物でもよい。香料には、様々なフレーバーのブレンド、例えばレモン及びライムフレーバー、シトラスフレーバーと選択されたスパイス(典型的コーラソフトドリンクフレーバー)等を含めることができる。親油性の濃縮物又は抽出物の香料としては、合成香味エステル類、アルコール類、アルデヒド類、テルペン類、セスキテルペン類等を含有できる。
併せてキナ酸の含有量が低い風味剤を用いる方が好ましい。
フィルター(0.8μm)で濾し、次いで蒸留水で希釈した容器詰めされた飲料を、島津製作所製、高速液体クロマトグラフ(型式SCL-10AVP)を用い、オクタデシル基導入液体クロマトグラフ用パックドカラム L-カラムTM ODS(4.6mm×250mm:財団法人 化学物質評価研究機構製)を装着し、カラム温度35℃でグラジエント法により行った。移動相A液は酢酸を0.1mol/L含有の蒸留水溶液、B液は酢酸を0.1mol/L含有のアセトニトリル溶液とし、試料注入量は20μL、UV検出器波長は280nmの条件で行った。
改訂食品分析ハンドブック(平成3年9月1日改訂版第4刷発行、発行所 建帛社)の7.有機酸の分析定量(367〜379頁)に記載の分析定量の方法に準ずる。
たとえば、キナ酸においては、HPLCによる日本食品分析センター法。検体2gを超音波処理後濾過し、高速液体クロマトグラフで測定した。

日本ダイオネックス社製イオンクロマトグラフ装置に、カラム:IonPacAS4A−SC、4×250mmを装着し、サプレッサーASRS−ULTRA(ダイオネックス社製)に接続し、リサイクルモードで行った。移動相は1.8mmol/L、Na2CO3/1.7mmol/L、NaHCO3を1.0mL/minで流し、試料注入量は25μLとした。検出器は電気伝導度計を使用した。

試料5gを10%塩酸(定溶時に1%塩酸溶液になるように)に入れ、その後イオン交換水で定溶し吸光度測定を行った。

表1及び表2に示す成分を混合して、所定の後処理を行い、容器詰飲料を製造した。
緑茶抽出物の濃縮物としてポリフェノンHG(東京フードテクノ社製)100gを常温、250r/min攪拌条件下の95%エタノール水溶液490.9g中に懸濁させ、活性炭クラレコールGLC(クラレケミカル社製)20gと酸性白土ミズカエース#600(水澤化学社製)35gを投入後、約10分間攪拌を続けた。そして40%エタノール水溶液409.1gを10分間かけて滴下したのち、室温のまま約30分間の攪拌処理を続けた。その後、2号濾紙で活性炭及び沈殿物を濾過したのちに0.2μmメンブランフィルターによって再濾過を行った。最後にイオン交換水200gを濾過液に添加して、40℃、0.0272kg/cm2でエタノールを留去し製品を得た。
処理後の非重合体カテキン類は22重量%含有。

非重合体カテキン類含有量33.70重量%、ガレート体率50.7重量%であった。キナ酸/非重合体カテキン類重量比=0.16であった。シュウ酸/非重合体カテキン類重量比=0.06であった。
非重合体カテキン類含有量81.4重量%、ガレート体率65重量%であった。キナ酸/非重合体カテキン類重量比=0.00001であった。シュウ酸/非重合体カテキン類重量比=0.00001であった。

栗田工業株式会社製のエピカテキン、エピガロカテキン、エピカテキンガレート、エピガロカテキンガレートのそれぞれの試薬を混合して精製物Eとした。非重合体カテキン類含有量99.0重量%、ガレート体率65重量%であった。キナ酸/非重合体カテキン類重量比=0であった。シュウ酸/非重合体カテキン類重量比=0であった。

表1及び表2にあげる代表的なスポーツドリンク処方で各成分(重量部)を配合し、イオン交換水でメスアップし調合液を調製した。食品衛生法に基づく殺菌工程、ならびにホットパック充填を行い、容器詰飲料とした。飲料の成分値もあわせて示した。
本発明の目的である、酸味料由来の酸味感特有の爽快感が維持され、長期間の飲料保存後においても、爽快感が希薄にならず、また常温でもおいしく飲める飲料となるかどうか評価を行った。

Claims (9)
- 飲料中に配合する全緑茶抽出物の精製物のキナ酸又はその塩(B)と非重合体カテキン類(A)との含有重量比[(B)/(A)]が0〜0.018の範囲であり、次の成分(A)〜(F);
(A)非重合体カテキン類 0.03〜0.6重量%、
(B)キナ酸又はその塩 成分(B)/成分(A)(重量比)=0〜0.2、
(C)甘味料 0.0001〜20重量%、
(D)酸味料 0.03〜1.0重量%、
(E)ナトリウムイオン 0.0001〜0.2重量%、
(F)カリウムイオン 0.0001〜0.1重量%
を含有し、pHが2〜6である非茶系容器詰飲料。 - 容器の酸素透過係数(室温)が、0.1mL/350mL・day・atm以下である酸素透過性の容器に充填されたものである請求項1項記載の非茶系容器詰飲料。
- 飲料の濁度が、0.1〜80である請求項1又は2記載の非茶系容器詰飲料。
- 風味剤として乳化香料を含有する請求項1〜3のいずれか1項記載の非茶系容器詰飲料。
- (B)キナ酸又はその塩と(A)非重合体カテキン類の含有重量比[(B)/(A)]が0.00005〜0.018である請求項1〜4のいずれか1記載の非茶系容器詰飲料。
- 緑茶抽出物の精製物が、(G)シュウ酸又はその塩と(A)非重合体カテキン類との含有重量比[(G)/(A)]が0〜0.002の範囲になるようにシュウ酸又はその塩を除去したものである請求項1〜5のいずれか1項記載の非茶系容器詰飲料。
- (C)甘味料が、人工甘味料である請求項1〜6のいずれか1項記載の容器詰飲料。
- 透明な容器に充填されたものである請求項1〜7のいずれか1項記載の非茶系容器詰飲料。
- pHが3〜6である請求項1〜8のいずれか1項記載の非茶系容器詰飲料。
