Claims (1)
- 【特許請求の範囲】 1.すぐ使用できる水分散性色素配合物であって、10μm以下の平均サイズの 物体の形の水不溶性および/または疎水性天然色素の分散体を含んで成り、前記 物体は界面活性物質の非存在下で前記色素の少なくとも1重量%の量の親水コロ イドを含んで成る水性相に分散されており、少なくとも5重量%の水を含有する ことを特徴とする前記配合物。 2.前記天然色素がカロチノイド、クルクミン、ポルフィリン色素および植物 性カーボンブラックから成る群より選ばれる、請求項1に記載の配合物。 3.前記色素物体が固体粒子、含油樹脂色素の液滴、および色素分散体の液滴 から成る群より選ばれる、請求項1に記載の配合物。 4.前記水性相が糖類を更に含んで成る、請求項1〜3のいずれか一項に記載 の配合物。 5.前記親水コロイドがタンパク質、多糖およびガムから選ばれる、請求項1 に記載の配合物。 6.食品の製造において前記配合物が食品の水性相に分散せしめられる、請求 項1〜5のいずれか一項に記載の配合物の使用。 7.別個の複数区画を含んで成る食品の製造において前記配合物が1または複 数の特定の区画に分散せしめられ、1区画にある前記配合物が別の区画に本質的 に移動しない、請求項1〜5のいずれか一項に記載の配合物の使用。 8.医薬品の製造における請求項1〜5のいずれか一項に記載の配合物の使用 。 9.前記医薬品が別個の複数区画を含んで成り、前記配合物が1または複数の 特定の区画に分散せしめられ、1区画にある前記配合 物が別の区画に本質的に移動しない、請求項8に記載の使用。 10.請求項1〜5のいずれか一項に記載の配合物を含んで成る食用品。 11.請求項1〜5のいずれか一項に記載の配合物を含んで成る医薬品。 12.すぐ使用できる水分散性色素配合物の調製方法であって、乳化剤の非存在 下で水不溶性および/または疎水性天然色素を前記色素の少なくとも1重量%の 量の親水コロイドを含有する水性相中で微粉砕して10μm以下の平均サイズを有 する物体の形で前記色素を含有する分散体を得ることにより、前記水不溶性およ び/または疎水性天然色素の分散体を調製することを含んで成る方法。 13.前記色素が固体色素である、請求項12に記載の方法。 14.前記色素が少なくとも2段階で分散せしめられる、請求項12に記載の方法 。 15.第一段階が10重量%未満の親水コロイドを含有する水性相中での練合であ り、次の段階が場合により追加の量の親水コロイドの添加を伴って前記分散体を 均質化することである、請求項14に記載の方法。
