Abstract
Matière grasse solide dont les constituants principaux sont une fraction intermédiaire de l'huile de palme et une fraction solide de beurre de Galam, laquelle contient au total moins de 80 % en poids de 2-oléo-1,3-distéarine et de 2-oléo-palmitostéarine. La fraction d'huile de palme est une fraction intermédiaire présentant un point de fusion de 29,0 à 32,5 degrés C et un point de clarification ne dépassant pas 34 degrés C. Cette matière grasse solide peut être utilisée en particulier comme substitut du beurre de cacao dans la préparation du chocolat
