Claims (8)
1. Förfarande för förbättrande av reologiska egen-skaper hos mjöldeg, kännetecknat därav, att 5 en effektiv mängd av ett mikrobiellt enzympreparat omfat-tande sulfhydryloxidas och glukosoxidas i ett förhällande av sulfhydryloxidas tili glukosoxidas av cirka 0,003 - 10 kombineras med mjöl, jäst och vatten, och nämnda ingre-dienser blandas tili en deg lämplig för bakning. 10
2. Förfarande enligt patentkravet 1, känne tecknat därav, att enzympreparatet härstammar frän Aspergillus niger -celler.
3. Förfarande enligt patentkravet 1, kännetecknat därav, att enzympreparatet tillsätts i en 15 mängd av cirka 35 - 800 enheter sulfhydryloxidas per kg mjöl.
4. Förfarande enligt patentkravet 1, kännetecknat därav, att enzympreparatet tillsätts i en mängd av cirka 80 enheter sulfhydryloxidas per kg mjöl. 20
