Claims (4)

1. Förfarande för framställning av sötsaksstänger, 1 synnerhet en vAffla, som belagts med choklad ooh fyllts 5 med kräm, varvld man a) framställer gräddade vAffelskivor, b) kyler nämnda skivor, c) transporterar de kylda skivorna genom en i pro-duktionslinjen placerad mognadstunnel, där upprätthAlls 10 bestämda temperaturs- och fuktighetsförhAllanden, d) anbringar kräm pA vAffelskivorna, e) skär Atminstone tvA av de med kräm belagda vAf-felskivorna i enheter motsvarande sötsaksstorlek eller sötsaksstäng, 15 f) anbringar chokladbeläggning pA sötsaksstAngsen- heter för framställning av en chokladbelagd, krämfylld vAffla, kännetecknat därav, att man g) i mognadstunneln upprätthAller sAdana tempera- 20 turs- och fuktighetsförhAllanden, att skivornas fukthalt stlger tili clrka 3,5 - 6,0 %, h) omedelbart efter mognadstunneln transporterar vAffelskivorna tili ett kontrollerat behandlingsrum, där temperaturen hAlls mellan clrka 18 °C och cirka 27 °C och 25 den relativa fuktigheten vid eller under cirka 30 eC, 1. bildar en kräm, som har en fukthalt mindre än cirka 3,5 % och mindre än vAfflans fukthalt och i vilken vattenAngans deltryck är mindre än i skivan, k) i det kontrollerade behandlingsrummet anbringar 30 krämen pA vAffelskivor och staplar Atminstone tvA sAdana med kräm belagda skivor pA varandra.
2. Förfarande enligt patentkravet 1, kännetecknat därav, att man kyler de pA varandra stap-lade skikten av vAffelskivor och kräm i det kontrollerade 35 behandlingsrummet, skär dessa i mindre enheter och beläg- 12 83283 ger dessa med chokladpasta.
3. Förfarande enligt patentkravet 2, k ä n n e -t e c k n a t därav, att de belagda enheterna kyls i en kyltunnel, som anordnats utanför det kontrollerade behand- 5 lingsrummet.
4. Förfarande enligt nägot av patentkraven 1-3, kännetecknat därav, att man a) framställer en väffelblandning genom att blanda en förutbestämd mängd av socker, vatten, natriumbikarbo- 10 nat, vitt vetemjöl, raffinerad palmkärnsolja och lecitin i cirka 4 minuter, b) gräddar denna väffelblandning tili väffelskivor med en förutbestämd storlek i en ugn vid en temperatur av cirka 163 - 177 °C i cirka 2 minuter, och 15 c) kyler dessa skivor cirka 5 minuter.
