Couteau (1, 2) selon la revendication 9, le dispositif de coupe (10) et l'espace d'évacuation de copeaux (11) de la deuxième zone étant formés essentiellement de façon identique au dispositif de coupe (10) et à l'espace d'évacuation de copeaux (11) de la première zone, le dispositif de coupe (10) et l'espace d'évacuation de copeaux (11) de la deuxième zone étant de préférence disposés en symétrie ponctuelle par rapport au dispositif de coupe (10) et à l'espace d'évacuation de copeaux (11) de la première zone sur l'au moins une surface de base (4, 5).
  11. Couteau (1, 2) selon l'une des revendications 1 à 10, le couteau (1, 2) étant formé de façon essentiellement identique sur les deux surfaces de base (4, 5), l'arête de coupe (10) et l'espace d'évacuation de copeaux (11) ou respectivement les arêtes de coupe (10) et les espaces d'évacuation de copeaux (11) de la deuxième surface de base (4, 5) étant de préférence disposés de façon inversée latéralement et/ou de façon tournée de 90° par rapport à l'arête de coupe (10) et à l'espace d'évacuation de copeaux (11) ou respectivement par rapport aux arêtes de coupe (10) et aux espaces d'évacuation de copeaux (11) de la première surface de base (4, 5).
  12. Couteau (1, 2) selon l'une des revendications 1 à 11,
    - le couteau (1, 2) étant de préférence formé de façon parallélépipédique, et/ou
    - le couteau (1, 2) présentant une traversée (26) centrale, de préférence avec un filetage, destinée à relier le couteau (1, 2) à un porte-couteau (27), et/ou
    - l'au moins des deux surfaces de base (4, 5) étant formée au moins par endroits en tant que surface d'appui destinée à soutenir le couteau (1, 2) sur un porte-couteau (27).
  13. Broyeur (3) destiné au broyage de matériau, en particulier de matières recyclables, de résidus de bois et de supports de données, comprenant un bâti de machine (28), au moins un rotor de broyage (29) supporté en rotation sur le bâti de machine (28) et un espace d'alimentation en matériau (30) par le biais duquel le matériau à broyer peut être acheminé à l'au moins un rotor de broyage (29), caractérisé en ce que plusieurs couteaux (1, 2) selon l'une des revendications 1 à 12 sont disposés sur le rotor de broyage (29).
  14. Broyeur (3) selon la revendication 13, les couteaux (1, 2) étant raccordés à l'au moins un rotor de broyage (29) par le biais de porte-couteaux (27).
  15. Broyeur (3) selon la revendication 13 ou 14, le broyeur (3) comprenant un dispositif de criblage (31) qui entoure par endroits le rotor de broyage (29) au moins au nombre de un et par le biais duquel le matériau broyé peut quitter le broyeur (3), et les arêtes de coupe (10) des couteaux (1, 2) actives pendant le processus de broyage formant essentiellement un contact linéaire avec le dispositif de criblage (31).
