    caractérisé en ce que pour le réglage automatique de la position, au moins un composant, qui tient, qui soutient et/ou qui guide le produit (21, 21'), de l'amenée de produit (19), en particulier un support de produit (29), une butée latérale (23) et/ou une arête de coupe (27), est déplacé au moyen d'un dispositif de réglage (33).
  10. Procédé selon l'une au moins des revendications précédentes,
    caractérisé en ce que la position du couteau de coupe (11, 11') par rapport au produit (21, 21') est réglée dans une direction de réglage ou un plan de réglage s'étendant perpendiculairement à la direction d'amenée du produit (P).
  11. Procédé selon l'une au moins des revendications précédentes,
    caractérisé en ce que la position du couteau de coupe (11, 11') par rapport au produit (21, 21') est réglée à l'intérieur d'une plage de tolérances qui est imposée par celles des positions auxquelles un résultat de coupe acceptable peut être obtenu.
  12. Procédé selon l'une au moins des revendications précédentes,
    caractérisé en ce que le réglage automatique de la position est effectué à répétition entre des positions prédéterminées et/ou le long d'une voie prédéterminée.
  13. Appareil pour la coupe de produits alimentaires, en particulier trancheuse à haute performance, qui est réalisé en particulier pour la mise en oeuvre du procédé selon l'une des revendications précédentes,
    comprenant une amenée de produit (19) qui convoie un produit à couper (21, 21') le long d'une direction d'amenée de produit (P) à travers un plan de coupe dans lequel se déplace au moins un couteau de coupe (11, 11'), en particulier en rotation et/ou en circulation,
    dans lequel la position du couteau de coupe (11, 11') par rapport au produit (21, 21') est réglable automatiquement au moyen d'un dispositif de réglage (33),
    caractérisé en ce qu'il est prévu un dispositif de commande qui est réalisé, en vue d'optimiser l'usure du couteau, pour régler la position du couteau de coupe (11, 11') automatiquement de manière à empêcher que, lors de la coupe, ce soit toujours le même emplacement du tranchant de couteau qui vienne rencontrer le produit (21, 21').
  14. Appareil selon la revendication 13,
    caractérisé en ce que le dispositif de réglage (33) est réalisé pour déplacer le couteau de coupe (11, 11') ou une tête de couteau (13) ou tête de coupe (17), qui inclut le couteau de coupe, par rapport au produit (21, 21').
  15. Appareil selon la revendication 13 ou 14,
    caractérisé en ce qu'il est prévu au moins un capteur (31) connecté au dispositif de commande, afin de détecter un degré d'usure ou un état d'usure du couteau de coupe (11, en 11') et/ou en ce qu'il est prévu au moins un capteur (31) connecté au dispositif de commande, afin de surveiller pendant la coupe un état des tranches de produit (25) séparées au moyen du couteau de coupe (11, 11') et/ou un état de portions de tranches de produit séparées (25).
