Claims (15)

  1. Dispositif pour la coupe de produits alimentaires (27), en particulier trancheuse à haute performance, comprenant
    - une amenée de produits (13),
    - au moins un couteau de coupe (11), qui est en rotation autour d'un axe de couteau (A) et/ou qui décrit un mouvement planétaire autour d'un axe médian, et auquel peut être amené au moins un produit à couper (27) dans une direction d'amenée de produit (F), et
    - un moyen de réglage pour le couteau de coupe (11), au moyen duquel le couteau de coupe (11) est déplaçable dans une direction de réglage (V),
    dans lequel l'axe de couteau (A) et/ou l'axe médian du couteau de coupe (11) est incliné par rapport à l'horizontale (H) pendant la coupe,
    et
    dans lequel la direction de réglage (V) du couteau de coupe (11) s'étend en oblique par rapport à l'axe de couteau (A) et/ou à l'axe médian du couteau de coupe (11),
    caractérisé en ce que le mouvement de réglage du couteau de coupe (11) est un mouvement linéaire.
  2. Dispositif selon la revendication 1,
    caractérisé en ce que la direction de réglage (V) du couteau de coupe (11) s'étend au moins approximativement horizontalement.
  3. Dispositif selon la revendication 1 ou 2,
    caractérisé en ce que le moyen de réglage pour le couteau de coupe inclut un entraînement à excentrique.
  4. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce que l'angle d'inclinaison (α) entre l'axe de couteau (A) et/ou l'axe médian du couteau de coupe (11) et l'horizontale (H) pendant la coupe est dans la plage de 30° à 50°, et s'élève en particulier au moins approximativement à 40°.
  5. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce qu'une monture de couteau (17), sur laquelle le couteau de coupe (11) peut être monté de façon interchangeable, est déplaçable dans la direction de réglage (V).
  6. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce qu'une monture de couteau, sur laquelle le couteau de coupe peut être monté de façon interchangeable, est déplaçable dans la direction de réglage par rapport à au moins un palier de rotation pour le mouvement du couteau de coupe autour de l'axe de couteau et/ou autour de l'axe médian et/ou par rapport à une partie de base via laquelle la monture de couteau peut être rapportée sur un support solidaire du châssis.
  7. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce qu'une tête de couteau (19) est déplaçable dans son entier dans la direction de réglage (V), et de préférence la tête de couteau (19) inclut une monture de couteau (17), sur laquelle le couteau de coupe peut être monté de façon interchangeable, et au moins un palier rotatif (21) pour le mouvement du couteau de coupe (11) autour de l'axe de couteau (A) et/ou autour de l'axe médian.
  8. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce qu'il est prévu un châssis stationnaire (23), dans lequel une tête de couteau (19) est déplaçable dans son entier, ou bien une monture de couteau, sur laquelle le couteau de coupe peut être monté de façon interchangeable, est déplaçable, par rapport à un support (24) solidaire du châssis, dans la direction de réglage (V).
  9. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce qu'il est prévu un palier lisse ou un palier coulissant (22) entre la tête de couteau (19) et le support (24), ou bien entre une monture de couteau sur laquelle le couteau de coupe peut être monté de façon interchangeable, et au moins un palier rotatif pour le mouvement du couteau de coupe autour de l'axe de couteau et/ou autour de l'axe médian.
  10. Dispositif selon la revendication 8 ou 9,
    caractérisé en ce que le support (24) pour la tête de couteau (19) est réalisé de manière universelle, de telle façon que l'on peut changer entre une tête de couteau en faucille et une tête de couteau circulaire.
  11. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce qu'un entraînement en rotation (39) est associé à une tête de couteau (19), ledit entraînement en rotation (39) étant agencé solidaire du châssis, ou étant en mesure d'exécuter un mouvement de compensation accordé au mouvement de réglage du couteau le coupe (11).
  12. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce qu'un entraînement en rotation (39) est associé à une tête de couteau (19), et l'entraînement en rotation (39) est agencé, conjointement avec la tête de couteau (19), sur ou dans un boîtier de tête de coupe (41) solidaire du châssis.
  13. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce qu'un entraînement en rotation (39) est associé à une tête de couteau (19), ledit entraînement en rotation (39) coopérant avec la tête de couteau (19) qui exécute dans son entier le mouvement de réglage, ou bien avec une partie de la tête de couteau qui exécute le mouvement de réglage, en particulier une monture de couteau, et en particulier via au moins une courroie d'entraînement (43).
  14. Dispositif selon l'une des revendications précédentes,
    caractérisé en ce que le couteau de coupe (11) est déplaçable dans la direction de réglage (V) de telle façon que la distance entre le couteau de coupe (11) et un plan de référence, qui s'étend parallèlement à un plan de coupe (S) défini par le tranchant du couteau de coupe (11), est variable.
  15. Procédé pour la coupe de produits alimentaires, en particulier au moyen d'un dispositif selon l'une des revendications 1 à 14,
    dans lequel
    au moyen d'une amenée de produit (13), au moins un produit (27) est amené un plan de coupe dans lequel, pour séparer des tranches depuis le produit (27), au moins un couteau de coupe (11) se déplace, lequel est en rotation autour d'un axe de couteau (A) et/ou exécute un mouvement planétaire autour d'un axe médian, dans lequel l'axe médian (A) et/ou l'axe médian du couteau de coupe (11) est incliné par rapport à l'horizontale (H) pendant la coupe, et
    pour exécuter au moins une fonction additionnelle, en particulier pour exécuter des coupes à vide, pour le réglage de l'intervalle de coupe et/ou pour le réglage en hauteur ou en profondeur de plongée, le couteau de coupe est déplacé dans une direction de réglage (V) qui s'étend en oblique par rapport à l'axe de couteau (A) et/ou par rapport à l'axe médian du couteau de coupe (11),
    caractérisé en ce que lors du réglage, le couteau de coupe (11) est déplacé linéairement.
