Abstract

La présente invention concerne un dispositif pour découper des produits alimentaires. Ce dispositif comprend une tête de coupe (1) et une unité d'alimentation de produit qui présente un système de guidage de produit à découper, un système de maintien de produit à découper et un système d'avance. Ce dispositif est caractérisé en ce que la tête de coupe (1) est constituée d'une première partie (5), qui est fixement reliée à la structure de base et qui comprend une unité d'entraînement (2), et d'une seconde partie (4), qui comprend la lame rotative (10), en ce que la seconde partie (4) peut se déplacer de façon limitée par rapport à la première partie (5), parallèlement à l'axe de rotation de la lame (10), et en ce qu'un système d'actionnement, qui peut être commandé en fonction d'opérations de découpe à vide nécessaires, commute la seconde partie (4) de la tête de coupe (1) entre une première position correspondant à la position de découpe de la lame (10) et une seconde position correspondant à une position de découpe à vide de la lame (10).
