- Collagen hydrolyzate is a denatured and partially hydrolyzed protein, obtained from collagenous substances from vertebrates, especially mammals, poultry or fish. Collagen hydrolysis produces peptides with different structures and different biological effects. Collagen hydrolyzate contains approximately twice the proportion of the amino acids lysine, glycine and glutamine as the average of the dietary protein. Collagen hydrolyzate is also rich in the amino acids proline and hydroxyproiin. No other concentration of hydroxyproiin has been detected in any other food. The amino acids mentioned are indispensable for the construction of human collagen, i.e. for connective tissue metabolism, especially bone and cartilage metabolism.

Abstract
