  6. Machine selon l'une des revendications précédentes, caractérisée en ce que le dispositif de pivotement comporte
    - un bras en porte-à-faux (30) fixé sur le bâti (16),
    - une partie rotative dotée d'un prolongement en porte-à-faux (38), qui peut être mise en rotation,
    - une tige articulée (32) qui est fixée de manière articulée au bras libre en porte-à-faux (30) par l'une de ses extrémités et au prolongement (38) par son autre extrémité.
  7. Machine selon l'une des revendications 4 à 6, caractérisée en ce que le mécanisme entraîneur comporte un cliquet d'arrêt (106) qui est fixé sur le bâti pivotant (16) et qui, dans toute position de pivotement du bâti pivotant (16), se trouve en prise avec une rainure entraîneuse (108) fixement installée sur la table de coupe (60) ou sur l'entraînement motorisé (50) ou sur le carter (14).
  8. Machine selon l'une des revendications précédentes, caractérisée en ce qu'un couteau ruban (28) est présent comme organe de coupe.
  9. Machine selon la revendication 8, caractérisée en ce que des galets de renvoi (24, 25) pour le couteau ruban (28.1), respectivement présents de part et d'autre du produit alimentaire, peuvent être déplacés ensemble et conjointement avec la rainure de coupe (86, 114) ou la fente de coupe en direction perpendiculaire au plan de coupe.
  10. Machine selon l'une des revendications précédentes, caractérisée en ce que les plateaux (180, 182) sont réalisés en forme de U en coupe transversale.
  11. Machine selon l'une des revendications précédentes, caractérisée en ce que la direction respective de déploiement des plateaux télescopiques (180, 182) s'étend en éloignement de la rainure de coupe ou de la fente de coupe (189).
  12. Machine selon l'une des revendications précédentes, caractérisée en ce que
    - les plateaux télescopiques (180, 182) et les parois latérales télescopiques (188, 190) sont constitués de panneaux partiels (202) en forme de U,
    - les panneaux partiels (202) sont mutuellement reliés de façon télescopique par l'intermédiaire d'au moins une liaison (203) à parallélogramme articulé.
  13. Machine selon la revendication 12, caractérisée en ce qu'un revêtement antifriction est présent sur le dessous des plateaux (180, 182).
  14. Machine selon la revendication 13, caractérisée en ce qu'une feuille antifriction est présente, notamment est collée, sur le dessous des panneaux partiels (202).
  15. Machine selon l'une des revendications précédentes, caractérisée en ce qu'un couteau circulaire (118) est présent comme organe de coupe.
  16. Machine selon la revendication 15, caractérisée en ce que
    - un coulisseau (120) peut être déplacé en va-et-vient parallèlement à la direction de coupe (152),
    - le couteau circulaire (118) est lié en déplacement au coulisseau (120) de telle sorte que
    - lors d'un déplacement du coulisseau (120) dans la direction de coupe (152), le couteau circulaire (118) peut être dirigé à travers un produit alimentaire (62) à couper, et que
    - lors d'un déplacement du coulisseau (120) dans la direction (154) contraire à la direction de coupe, le couteau circulaire (118) peut être dirigé hors du produit alimentaire (62) à couper.
  17. Machine selon la revendication 16, caractérisée en ce que le couteau circulaire (118) est lié en déplacement au coulisseau (120) de telle sorte que le couteau circulaire (118) ne peut être entraîné en rotation que lors d'un déplacement du coulisseau (120) dans la direction de coupe (152).
  18. Machine selon la revendication 17, caractérisée en ce qu'un mécanisme de roue libre agit sur l'entraînement en rotation du couteau circulaire (118) lors du déplacement du couteau circulaire en direction (154) contraire à la direction de coupe.
  19. Machine selon l'une des revendications précédentes, caractérisée en ce que
    - une courroie dentée (136) est présente le long de la voie de guidage (122) du coulisseau (120),
    - un élément rotatif (130) monté à rotation sur le coulisseau (120) engrène avec la courroie dentée (136),
    - l'élément rotatif (130) est lié en rotation à l'entraînement motorisé en rotation (129) du couteau circulaire (118).
  20. Machine selon l'une des revendications précédentes, caractérisée en ce que le déplacement du couteau circulaire (118) est identique au déplacement du coulisseau (120) quant à sa direction et à son ampleur.
  21. Machine selon la revendication 19 ou 20, caractérisée en ce que les plateaux télescopiques (180, 182) et la voie de guidage (122) sont orientés en inclinaison par rapport à l'horizontale, notamment en étant basculés vers le côté avant (126) de la machine (10.4).
  22. Machine selon l'une des revendications 19 à 21, caractérisée en ce que la voie de déplacement du couteau circulaire (118) est orientée parallèlement à la voie de guidage (122) et/ou parallèlement au plan d'inclinaison des plateaux télescopiques (180, 182).
  23. Machine selon l'une des revendications 16 à 22, caractérisée en ce que l'entraînement du coulisseau comprend :
    - une partie rotative (148) pouvant être entraînée en rotation et dotée d'un prolongement en porte-à-faux (146),
    - une tige articulée (32.4) qui est fixée de manière articulée au coulisseau (120) par l'une de ses extrémités et au prolongement (146) par son autre extrémité.
  24. Machine selon la revendication 23, caractérisée en ce que l'entraînement du coulisseau est conçu de telle sorte que, lors d'une révolution complète de la partie rotative (148), le coulisseau (120) a accompli un déplacement complet dans la direction de coupe (152) et dans la direction (154) contraire à la direction de coupe.
  25. Machine selon l'une des revendications précédentes, caractérisée en ce que la rainure de coupe ou la fente de coupe (189) présente pour l'organe de coupe est fermée par une bande de recouvrement (220) fixée sur l'organe de coupe.
  26. Machine selon la revendication 25, caractérisée en ce que
    - la bande de recouvrement (220) est fixée par l'une de ses extrémités à l'extrémité avant (224) de la rainure de coupe ou de la fente de coupe (189) et par son autre extrémité (226) dans la machine (10.4) en un endroit (228) situé après la position finale (118.2) du couteau circulaire (118) dans la direction contraire (154),
    - la bande de recouvrement (220) est guidée dans la région de la rainure de coupe ou de la fente de coupe (189) par au moins un galet (230) qui est fixé sur un bâti (234), portant l'organe de coupe (118) et pouvant être déplacé le long de la rainure de coupe ou de la fente de coupe (189), de telle sorte que la bande de recouvrement (220) est toujours présente devant l'organe de coupe (118) indépendamment de la position (118.1, 118.2) de l'organe de coupe (118) dans la rainure de coupe ou dans la fente de coupe (189).
  27. Machine selon l'une des revendications précédentes, caractérisée en ce que
    - un bâti (156) assurant le mouvement télescopique des plateaux (180, 182) est présent, qui peut être déplacé cycliquement dans la direction d'avancement (54) et dans la direction (56) contraire à la direction d'avancement,
    - la voie de guidage (122), le couteau circulaire (118) et les plateaux télescopiques (180, 182) sont fixés sur le bâti (156).
  28. Machine selon l'une des revendications précédentes, caractérisée en ce que les plateaux télescopiques (180, 182) peuvent être guidés le long d'un élément de soutien (200).
  29. Machine selon l'une des revendications précédentes, caractérisée en ce que l'extrémité en porte-à-faux respective des deux plateaux télescopiques (180, 182) respectivement fixés sur l'élément récepteur est maintenue sur les deux parois latérales (14.6, 14.7) du carter (14.4) avec possibilité de fixation en position.
  30. Machine selon l'une des revendications précédentes, caractérisée par un dispositif pour modifier l'épaisseur des tranches individuelles (62.1) de produit alimentaire.
