Abstract
Введение сахарозофосфорилазной активности в растения путем трансформации этих растений геном, кодирующим фермент, приводит к увеличению степени гидролиза сахарозы и тем самым к увеличению содержания крахмала, масла и белка. Предпочтительный ген выделяют из Streptococcus mutans. Неожиданно было обнаружено, что трансформированный картофель, который экспрессирует этот ген в своих клубнях, имеет пониженную чувствительность к изменению цвета клубней, вызванному повреждениями, и более равномерное распределение отложений крахмала по всему клубню.
