Abstract

La introduccion de la actividad de la sacarosa fosforilasa a plantas mediante la transformacion con un gen para la enzima incrementa el régimen de la hidrolisis de la sacarosa, conduciendo a niveles incrementados de almidon, aceite y proteínas; el gen preferido es de Streptococcus mutans. Sorprendentemente, en papas transformadas para expresar este gen en los tubérculos, se lograron la susceptibilidad reducida a la decoracion por majadura y la uniformidad incrementada de la deposicion de almidon en todo el tubérculo.
