Abstract
Μέθοδος παρασκευής τεμαχίων λαχανικών ταχείας-κατάψυξης, κατά προτίμηση τεμαχίων πατάτας, όπως τηγανητών πατατών, που περιλαμβάνει σύντομη επαφή των τεμαχίων λαχανικών με αδρανή ουσία, η οποία έχει θερμοκρασία επαρκώς χαμηλή και για χρονική περίοδο επαρκώς μακρά για να προσδώσει στην εξωτερική στοιβάδα των τεμαχίων λαχανικού μία θερμοκρασία η οποία είναι <0°C, ενώ ένα εσωτερικό τμήμα του τεμαχίου λαχανικού έχει θερμοκρασία η οποία είναι > 0°C˙ βραδεία-κατάψυξη των τεμαχίων λαχανικού μέχρις ότου τα τεμάχια είναι πλήρως ταχέως-κατεψυγμένα με το να φέρονται τα τεμάχια λαχανικού σε επαφή με αέρα.
