Abstract

Una masa para tortas lista para hornear y de conservación en estantería caracterizada porque consiste esencialmente de 15-25% de grasa hidrogenada, 15-30% de huevo entero líquido, 3-6% de glicerol, harina con enzimas inactivas 10=15%, almidón 10-15%, agua, aditivos normales para masa, y un sistema de levadura, la masa teniendo una actividad de agua inferior a 0.85, la cual debe ser empacada en una bolsa impermeable algas, en una atmósfera de gas inerte conteniendo menos de 4% de oxígeno residual.
