这种包含桑树叶的功能成分的口香糖包括:15-30%(w/w)胶基质、60-80%(w/w)糖醇、0.1-0.5%(w/w)嫩化剂、0.1-1.0%(w/w)保湿剂、0.1-0.5%(w/w)乳化剂、0.5-2.5%(w/w)调味剂、0.01-10.0%(w/w)桑树叶的功能成分以及0.1-2.0%(w/w)浓缩果汁,其中糖醇包括但不限于木糖醇、麦芽糖醇、山梨糖醇和异麦芽糖酮醇(isomalt),而桑树叶的功能成分所包含的形式,但不限于此,有桑树叶干粉、桑树叶提取物、桑树叶提取物粉或它们的混合物。
本发明人研究了利用桑树叶的功能成分的最佳方式,结果发现包含桑树叶的功能成分的口香糖允许相对大量地吸收此成分,并比其他任何传统食品更快显示效果。然后,本发明人致力于研究哪些形式可用于向口香糖中加入桑树叶的功能成分,发现包含在口香糖中的桑树叶的功能成分,其存在形式有:剪切树叶使其大小≤200目而制得的桑树叶干粉;通过乙醇萃取和真空浓缩方法而制得的桑树叶提取物;或通过干燥桑树叶提取物而制得的桑树叶提取物粉。
此外,本发明人认识到,桑树叶的功能成分对血糖的降低效果可被口香糖中所含的糖所抑制,因此向口香糖中加入糖醇以取代糖,以使抑制作用最小化。
制备包含桑树叶的功能成分的口香糖的方法包括如下步骤:
(i)获得桑树叶的功能成分;
(ii)在50-60℃加热时,将0.01-10.0%(w/w)桑树叶的功能成分、15-30wt%胶基质、60-80wt%糖醇、0.1-0.5wt%嫩化剂、0.1-1.0wt%保湿剂、0.1-0.5wt%乳化剂以及0.1-2.0wt%浓缩果汁混合,在50-60℃加热时加入0.5-2.5wt%调味剂,并混合20-30分钟;
(iii)碾轧此混合物,并在室温保持24-48小时;和
(iv)切割此碾轧的产物,
其中桑树叶的功能成分所包含的形式,但不限于此,有桑树叶干粉、桑树叶提取物、桑树叶提取物粉或它们的混合物。进行切割,但不限于此,以得到板式口香糖或包被有木糖醇糖溶液的涂层口香糖。
本发明用下列的实施例做进一步的说明,这些实施例不应看作是限制本发明的范围。实施例1:获得桑树叶的功能成分实施例1-1:获得桑树叶提取物
将1kg的桑树叶洗净、阴干,并浸入5kg的70%(v/v)乙醇溶液中4小时,然后,用纱布过滤,得到水溶液。真空浓缩此水溶液,得到500g桑树叶提取物。实施例1-2:获得桑树叶提取物粉
将用实施例1-1中制得的300g桑树叶提取物在-30℃下冷冻干燥,得到30g桑树叶提取物粉。实施例1-3:获得桑树叶干粉
将1kg的桑树叶洗净、阴干,接着用200ml 0.5%(w/v)碳酸氢钠溶液喷洒。然后放到温度为75℃的干燥室里20分钟,冷却至室温,再放到温度为45℃的干燥室里12小时,就得到湿度/干重为6%(w/w)的干桑树叶。将如此得到的干桑树叶用研钵以物理方法打碎,然后用高速空气流研磨成粉就得到大小≤300目的颗粒,颗粒大小是通过计算被空气流移动的颗粒距离而测定的。然后将它们通过磁力为200高斯的磁条以除去金属组份,就得到300g桑树叶干粉。实施例2:制备包含桑树叶的功能成分的口香糖
包含用实施例1中制得的桑树叶的功能成分的口香糖是将它们的组分以不同的配比而制得。实施例2-1:口香糖的制备(I)
将280g胶基质、680g木糖醇、2g嫩化剂、3g保湿剂、2g乳化剂、1g桑树叶干粉、5g桑树叶提取物、3g桑树叶提取物粉和4g浓缩苹果汁在搅拌机搅拌下混合,温度保持在55℃。然后,在同样温度下,往此混合物中加入20g调味剂,再混合25分钟,碾轧此混合物。于是,将此所得物在室温下老化、切割,就制得口香糖。实施例2-2:口香糖的制备(II)
用实施例2-1相似的方式制备口香糖,除了用3g桑树叶提取物粉、3g桑树叶干粉和7g浓缩苹果汁代替加入同一量的同种组分以及不加桑树叶提取物以外。实施例2-3:口香糖的制备(III)
用实施例2-1相似的方式制备口香糖,除了用5g桑树叶干粉、1g桑树叶提取物和7g浓缩苹果汁代替加入同一量的同种组分以及不加桑树叶提取物粉以外。实施例2-4:口香糖的制备(IV)
用实施例2-1相似的方式制备口香糖,除了用2g桑树叶提取物、8g桑树叶提取物粉、2g桑树叶干粉和1g浓缩苹果汁代替加入同一量的同种组分以外。实施例3:口香糖的小组评审实验
实施例2-1到实施例2-4中制备的口香糖由20个小组评审者依据美味测试。小组评审实验包括如下项目:口感、苦味、凉感和总的偏爱(参看:表1)

正如表1可以看出,实施例2-1中制备的口香糖在所有实验中评价最好。
如上文清楚地阐明和证实,本发明提供包含桑树叶的功能成分的口香糖,其允许大量吸收桑树叶的功能成分,以及制备这种口香糖的方法。本发明的口香糖能实际应用于患有便秘、糖尿病和高血压病的病人的规定的食物和替代食品。
Claims (6)
1.一种含有桑树叶的功能成分的口香糖,按重量计其包括15-30%胶基质、60-80%糖醇、0.1-0.5%嫩化剂、0.1-1.0%保湿剂、0.1-0.5%乳化剂、0.5-2.5%调味剂、0.01-10.0%桑树叶的功能成分和0.1-2.0%浓缩果汁。
2.权利要求1所述的含有桑树叶的功能成分的口香糖,其中糖醇为木糖醇、麦芽糖醇、山梨糖醇或异麦芽糖酮醇。
3.权利要求1所述的含有桑树叶的功能成分的口香糖,其中桑树叶的功能成分所包含的形式有桑树叶提取物、桑树叶提取物粉、桑树叶干粉或它们的混合物。
4.一种制备含有桑树叶的功能成分的口香糖的方法,其包括如下步骤:
(i)获得桑树叶的功能成分;
(ii)在50-60℃下加热时,按重量计将0.01-10.0%桑树叶的功能成分、15-30%胶基质、60-80%糖醇、0.1-0.5%嫩化剂、0.1-1.0%保湿剂、0.1-0.5%乳化剂和0.1-2.0%浓缩果汁混合,以及在50-60℃下加热时,按重量计向混合物中加入0.5-2.5%调味剂,并混合20-30分钟;
(iii)碾轧此混合物,并在室温下保持24-48小时;和
(iv)切割此碾轧的产物。
5.权利要求4所述的制备含有桑树叶的功能成分的口香糖的方法,其中桑树叶的功能成分所包含的形式有桑树叶提取物、桑树叶提取物粉、桑树叶干粉或它们的混合物。
6.权利要求4所述的制备含有桑树叶的功能成分的口香糖的方法,其中进行切割以得到板式口香糖或包被有木糖醇糖溶液的涂层口香糖。
