Abstract
本发明属于保健食品技术领域,具体涉及一种维生素气泡含片及其制备方法。每片维生素气泡含片中包含如下活性成分:维生素C40‑90mg、维生素B10.5‑1.125mg、维生素B20.5‑1.125mg、维生素B60.5‑1.125mg、维生素B121.05‑2.3625μg、烟酰胺5‑11.25mg、叶酸100‑160μg、生物素13‑29.25μg、泛酸1.7‑3.825mg。本发明食用便利、口感风味新颖、改善口腔内pH值。
Description
技术领域
本发明属于保健食品技术领域,具体涉及一种维生素气泡含片及其制备方法。
背景技术
维生素C的主要作用是提高免疫力,预防癌症、心脏病、中风,保护牙齿和牙龈等。另外,坚持按时服用维生素C还可以使皮肤黑色素沉着减少,从而减少黑斑和雀斑,使皮肤白皙。富含维生素C的食物有花菜、青辣椒、橙子、葡萄汁、西红柿等,可以说,在所有的蔬菜、水果中,维生素C含量都不少。美国专家认为,每人每天维生素C的最佳用量应为200~300毫克,最低不少于60毫克,半杯(大约一百毫升)新鲜橙汁便可满足这个最低量。而中国营养学会建议的膳食参考摄入量(RNI),成年人为100mg/日,可耐受最高摄入量(UL)为1000mg/日。维生素C能防治坏血病,又称“抗坏血酸”。多年来经动物实验和临床研究发现,维生素C可以降低血胆固醇含量,增强免疫力,增加毛细血管弹性,促进创口和手术切口愈合,防治感冒,促进生长发育,防治慢性汞、铅等金属性中毒,防止衰老,预防肿瘤等。所以,除治病外,目前有意识的服用维生素C的人也较多,特别是一些中老年人更喜欢经常或长期服用。
B族维生素也叫乙族维生素(也叫维他命B、维生素B杂或维生素B复合群),共有8种,故冠以"族",它们在结构上没有同一性,但也有它们共同的特性。
B族维生素是维持人体正常机能与代谢活动不可或缺的水溶性维生素,人体无法自行制造合成,必须额外补充。而紧张的生活、工作压力中,不当的饮食习惯或因某些特定药物的使用,加上B族维生素本身溶于水的属性,均会使人体内的B族维生素快速被消耗。B族维生素可以帮助维持心脏、神经系统功能,维持消化系统及皮肤的健康,参与能量代谢,能增强体力、滋补强身。
B族维生素广泛存在于米糠、麸皮、酵母、动物的肝脏、粗粮蔬菜等食物中,但由于食用方法不对,几乎摄取不到。VB是水溶性维生素,它怕光、怕水、怕热、怕氧化(多在80度温度下被破坏)。
就目前来说,市面上的维生素C、维生素B类产品已十分成熟,形式种类也越来越丰富,维生素类的咀嚼片及泡腾片以其特定灵活补充维生素C、B族维生素的优势广受消费者的喜爱。但是维生素类的咀嚼片及泡腾片口感风味单一,越来越满足不了消费者日益增长的需求。
发明内容
本发明的目的是提供一种维生素气泡含片,食用便利、口感风味新颖、改善口腔内pH值;本发明同时提供了维生素气泡含片的制备方法,科学合理、简单易行。
本发明所述的维生素气泡含片,每片维生素气泡含片中包含如下活性成分:
所述的每片维生素气泡含片的质量为0.475-0.525g。
所述的维生素B1、维生素B2和维生素B6的质量比为1:1:1。
所述的维生素C的原料为L-抗坏血酸或L-抗坏血酸钠中的一种或两种。
所述的维生素B1的原料为盐酸硫胺素或硝酸硫胺素中的一种或两种。
所述的维生素B2的原料为核黄素。
所述的维生素B6的原料为盐酸吡哆醇。
所述的维生素B12的原料为氰钴胺。
所述的生物素的原料为D-生物素。
所述的泛酸的原料为D-泛酸。
本发明所述的维生素气泡含片的制备方法,包括如下步骤:
(1)无水柠檬酸进行预处理,得到预处理后的无水柠檬酸;
(2)乳糖、预处理后的无水柠檬酸和纯化水进行湿法制粒,得到颗粒A;
(3)乳糖、碳酸氢钠和纯化水进行湿法制粒,得到颗粒B;
(4)维生素B1、维生素B2、维生素B6、维生素B12、烟酰胺、叶酸、生物素、泛酸和麦芽糊精混合后得到B族维生素预混料;
(5)L-抗坏血酸和/或L-抗坏血酸钠、B族维生素预混料、木糖醇、甜味剂和香精分别过筛后,加入颗粒A、颗粒B和硬脂酸镁混合均匀,压片,得到维生素气泡含片。
步骤(1)中所述的预处理是将无水柠檬酸粉碎后过40目筛网。
步骤(2)中所述的乳糖、预处理后的无水柠檬酸和纯化水的质量比为10-25:10-25:1-2。
步骤(2)中所述的乳糖为过20目筛网处理的乳糖。
步骤(3)中所述的乳糖、碳酸氢钠和纯化水的质量比为10-25:10-25:0.5-1.5。
步骤(3)中所述的乳糖为过20目筛网处理的乳糖,碳酸氢钠为过20目筛网处理的碳酸氢钠。
步骤(5)中所述的L-抗坏血酸和/或L-抗坏血酸钠、颗粒A、颗粒B、B族维生素预混料、木糖醇、甜味剂、香精与硬脂酸镁的质量比为10.85-12.15:20-50:20-50:3.5-4:20-50:0-1.2:0.5-1.5:0.5-1。
步骤(5)中所述的甜味剂为甜蜜素、三氯蔗糖和阿斯巴甜的混合物,甜蜜素、三氯蔗糖和阿斯巴甜的质量比为0.01-0.8:0.01-0.1:0.01-0.3。
步骤(5)中所述的香精为百香果粉末香精和甜橙粉末香精的混合物,百香果粉末香精和甜橙粉末香精的质量比为0.5-1.2:0.1-0.3。
步骤(5)中所述的L-抗坏血酸和/或L-抗坏血酸钠、B族维生素预混料和木糖醇分别过20目筛,甜味剂和香精分别过40目筛。
本发明所述的维生素气泡含片的制备方法,包括如下具体步骤:
(1)无水柠檬酸粉碎预处理:将无水柠檬酸使用粉碎机粉碎,保证其粉碎料颜色均一,无杂质,过40目筛网,防止出现后期因物料混合不均一,成品片剂酸甜不一致现象;
(2)使用湿法制粒机将粉碎过筛后的无水柠檬酸与过20目筛网处理的乳糖干混10-30min,加入纯化水湿混2-3min,开高速剪切制粒,之后过16目筛网,使用沸腾干燥器60-80℃烘干,水分控制≤0.3%,得到颗粒A;
(3)使用湿法制粒机将过20目筛网处理的碳酸氢钠与过20目筛网处理的乳糖干混10-30min,加入纯化水湿混2-3min,开高速剪切制粒,之后过16目筛网,使用沸腾干燥器60-80℃烘干,水分控制≤0.3%,得到颗粒B;
(4)维生素B1、维生素B2、维生素B6、维生素B12、烟酰胺、叶酸、生物素、泛酸和麦芽糊精混合后得到B族维生素预混料;
(5)L-抗坏血酸和/或L-抗坏血酸钠、B族维生素预混料和木糖醇分别过20目筛,甜味剂和香精分别过40目筛后,加入颗粒A、颗粒B和硬脂酸镁混合均匀,送入压片机压片,得到维生素气泡含片。
本发明中酸源为无水柠檬酸,碱源为碳酸氢钠。无水柠檬酸和碳酸氢钠分别以纯化水作为粘合剂与部分乳糖分开制粒,以确保其混合均匀及保证物料的流动性。
本发明所述的维生素气泡含片的食用方法如下:
目标人群的年龄为4-10岁,用量为:每日一次,每次一片;
目标人群的年龄为11-17岁及以上人群,用量为:每日一次,每次两片。
按照以下方法食用:
含服或者咀嚼服用。
本发明的有益效果如下:
本发明基于泡腾片与咀嚼片的制作技术与优势,进行结合创新。本发明的特点在于对口感风味的创新,结合泡腾片的产泡特性,通过适度调整酸碱比例与片剂规格,打破之前泡腾片通常使用冷水或温水冲服的食用方式改为含服食用,在口腔内会产生类似于跳跳糖的轻微刺激愉悦感,搭配适量的甜味剂与适量不同口味的香精,会具备与咀嚼片和泡腾片迥异的、新颖的风味特征。同时本发明又注重维生素之间的合理配比与相互协同作用,B族类的维生素之间存在协同发挥作用的特性,例如:维生素B6促进维生素B12的吸收;维生素B12与叶酸可协同发挥作用;生物素可参与维生素B12、叶酸、泛酸的代谢;B1:B2:B6的质量比为1:1:1时,被认为它们各有最佳的吸收率,因此本发明在严格遵守《保健食品原料目录》中各营养素成分添加限量的同时,又按照合理的维生素配比添加了维生素C和/或维生素C钠、维生素B1、维生素B2、维生素B6、维生素B12、烟酰胺、叶酸、生物素和泛酸,极大程度上确保了营养素之间的吸收利用率。在辅料选择上本发明则以木糖醇为主要辅料,通过改善口腔内pH值以达到保护口腔的目的。
具体实施方式
以下结合实施例对本发明做进一步描述。
实施例1
每百克维生素气泡含片中活性成分如下:维生素C10g、维生素B1 125mg、维生素B2125mg、维生素B6 125mg、维生素B12 262.5μg、烟酰胺1250mg、叶酸25000μg、生物素3250μg、泛酸425mg。
制备每百克维生素气泡含片的原料如下:
L-抗坏血酸8.13g、L-抗坏血酸钠3.02g、B族维生素预混料3.75g(其中:维生素B1125mg、维生素B2 125mg、维生素B6 125mg、维生素B12 262.5μg、烟酰胺1250mg、叶酸25000μg、生物素3250μg、泛酸425mg、麦芽糊精1671.4875mg)、乳糖16.22g、柠檬酸(无水)22g、碳酸氢钠18g、木糖醇26g、环己基氨基磺酸钠(甜蜜素)0.72g、三氯蔗糖0.09g、天门冬酰苯丙氨酸甲酯(阿斯巴甜)0.27g、香精1.2g(其中,百香果粉末香精1g、甜橙粉末香精0.2g)、硬脂酸镁0.6g。
制备方法如下:
(1)将无水柠檬酸使用粉碎机粉碎,保证其粉碎料颜色均一,无杂质,过40目筛网。
(2)使用湿法制粒机将粉碎过筛后的无水柠檬酸与过20目筛网处理的乳糖干混10min,加入纯化水湿混3min,开高速剪切制粒,之后过16目筛网,使用沸腾干燥器80℃烘干,水分控制≤0.3%,得到颗粒A;
(3)使用湿法制粒机将过20目筛网处理的碳酸氢钠与过20目筛网处理的乳糖干混10min,加入纯化水湿混3min,开高速剪切制粒,之后过16目筛网,使用沸腾干燥器80℃烘干,水分控制≤0.3%,得到颗粒B;
(4)维生素B1、维生素B2、维生素B6、维生素B12、烟酰胺、叶酸、生物素、泛酸和麦芽糊精混合后得到B族维生素预混料;
(5)L-抗坏血酸和/或L-抗坏血酸钠、B族维生素预混料和木糖醇分别过20目筛,甜味剂和香精分别过40目筛后,加入颗粒A、颗粒B和硬脂酸镁混合均匀,送入压片机压片,得到维生素气泡含片。
备注:环境温度18-25℃,环境湿度≤35%。
经检测,维生素气泡含片的性能指标结果见表2。

由表1和表2可知,随着硬脂酸镁添加量增多会改善配方引湿导致的粘冲现象,但是随着硬脂酸镁的增加也会影响配方的产泡性能,从而影响产品口感。
口腔pH变化测试:
10人参与口腔pH变化测试,服用前70%的受试者口腔pH为6.4-6.7,30%的受试者口腔pH值为6.7-7.0,服用实施例1的维生素气泡含片后1min内60%的受试者口腔pH值上升至7.5-7.7,30%的受试者口腔pH值上升至7.7-8.0,10%的的受试者口腔pH值上升至7.2-7.5,10min后检测口腔pH均已出现明显下降,20min后检测口腔pH值均已回到服用前的值。而服用对比例6的维生素气泡含片后口腔pH值基本无变化。
由上述测试结果可知,本发明添加适量木糖醇可以改善口腔内pH值。
Claims (10)
2.根据权利要求1所述的维生素气泡含片,其特征在于所述的每片维生素气泡含片的质量为0.475-0.525g,维生素B1、维生素B2和维生素B6的质量比为1:1:1。
3.一种权利要求1或2所述的维生素气泡含片的制备方法,其特征在于包括如下步骤:
(1)无水柠檬酸进行预处理,得到预处理后的无水柠檬酸;
(2)乳糖、预处理后的无水柠檬酸和纯化水进行湿法制粒,得到颗粒A;
(3)乳糖、碳酸氢钠和纯化水进行湿法制粒,得到颗粒B;
(4)维生素B1、维生素B2、维生素B6、维生素B12、烟酰胺、叶酸、生物素、泛酸和麦芽糊精混合后得到B族维生素预混料;
(5)L-抗坏血酸和/或L-抗坏血酸钠、B族维生素预混料、木糖醇、甜味剂和香精分别过筛后,加入颗粒A、颗粒B和硬脂酸镁混合均匀,压片,得到维生素气泡含片。
4.根据权利要求3所述的维生素气泡含片的制备方法,其特征在于步骤(1)中所述的预处理是将无水柠檬酸粉碎后过40目筛网。
5.根据权利要求3所述的维生素气泡含片的制备方法,其特征在于步骤(2)中所述的乳糖、预处理后的无水柠檬酸和纯化水的质量比为10-25:10-25:1-2,乳糖为过20目筛网处理的乳糖。
6.根据权利要求3所述的维生素气泡含片的制备方法,其特征在于步骤(3)中所述的乳糖、碳酸氢钠和纯化水的质量比为10-25:10-25:0.5-1.5,乳糖为过20目筛网处理的乳糖,碳酸氢钠为过20目筛网处理的碳酸氢钠。
7.根据权利要求3所述的维生素气泡含片的制备方法,其特征在于步骤(5)中所述的L-抗坏血酸和/或L-抗坏血酸钠、颗粒A、颗粒B、B族维生素预混料、木糖醇、甜味剂、香精与硬脂酸镁的质量比为10.85-12.15:20-50:20-50:3.5-4:20-50:0-1.2:0.5-1.5:0.5-1。
8.根据权利要求3所述的维生素气泡含片的制备方法,其特征在于步骤(5)中所述的甜味剂为甜蜜素、三氯蔗糖和阿斯巴甜的混合物,甜蜜素、三氯蔗糖和阿斯巴甜的质量比为0.01-0.8:0.01-0.1:0.01-0.3。
9.根据权利要求3所述的维生素气泡含片的制备方法,其特征在于步骤(5)中所述的香精为百香果粉末香精和甜橙粉末香精的混合物,百香果粉末香精和甜橙粉末香精的质量比为0.5-1.2:0.1-0.3。
10.根据权利要求3所述的维生素气泡含片的制备方法,其特征在于步骤(5)中所述的L-抗坏血酸和/或L-抗坏血酸钠、B族维生素预混料和木糖醇分别过20目筛,甜味剂和香精分别过40目筛。
