背景技术
航天员在执行航天任务时,由于受到特殊环境失重、噪声、振动、辐射、昼夜节律改变、狭小空间等不利环境因素的影响,会给航天员的生理系统带来很多不良影响,例如骨钙丢失、肌肉萎缩、空间运动病、昼夜失调等。另外,由于航天员在执行任务时,不仅要面对不良的太空环境,还要执行各种繁琐和困难的操作,因此航天员选拔对身体素质要求较高,其中航天员选拔中动脉血压是重要的筛选指标。人体动脉血压是四大生命体征之一,动脉血压某种程度上可反映心血管功能状态。
“三高”是高血脂、高血压、高血糖的总称,是心血管疾病中最为常见的一种。随着社会的发展,人们的物质生活水平不断提高,而“三高”是导致人体慢性全身性代谢疾病的重要因素,可单独发生,且随着年龄的增长,“三高”的发病率明显升高,也越来越年轻化。《2020年健康医疗预测报告》中指出,中国三高的患者数共计3.5亿例,这些人数已经达到总人口的25%左右。数据显示,在中国人的十大死亡原因中,与代谢疾病相关的死亡率就高达35.7%,与“三高”相关的死亡人数也占总死亡人数的27%。数据显示,在50岁以上中老年人的常见病中,全世界每年死于心脑血管疾病的人数高达1500万人,居各种死因首位。高血脂可以引起血管栓塞,高血压可以引起脑出血和脑血管破裂,高血糖可以引起糖尿病,心脑血管疾病已成为人类死亡病因最高的“头号杀手”,也是人们健康的“无声凶煞”。心脑血管疾病具有“发病率高、致残率高、死亡率高、复发率高,并发症多”形成“四高一多”的特点。目前,我国心脑血管疾病患者已经超过2.7亿人。世界卫生组织曾经明确提出,防止心血管病的第一道防线就是减少“三高”和控制“三高”。对于“三高”人群而言,除了药物治疗、适量运动外,饮食调理也是非常重要的一部分。目前,在日常生活中各类健康食品已被应用在调节人体生理状态、提高机体免疫能力等方面,且具有较好的效果,但缺乏针对宇航员这一特殊人群开发的健康食品。
发明内容
针对上述问题,本发明提供了一种适合宇航员三高调节的膳食营养配方制品,其以青稞粉为主要原料,同时配以脱脂奶粉、乳清蛋白粉、小麦蛋白粉、大米蛋白粉、大豆分离蛋白粉、大豆蛋白粉等优质蛋白源和多种谷物果蔬粉及药食同源的活性物质,使产品富含高蛋白、高纤维、高维生素和多种活性成分,不仅可为宇航员提供优质营养和能量来源,还具有辅助调节血脂、降血压、降血糖的功效作用。

作为优选技术方案,所述青稞粉采用下述方法制备而成:
1)青稞催芽:选取颗粒饱满、大小一致的青稞种子,消毒后用清水清洗青稞种子表面,之后用25~35℃清水浸泡1~3h,将浸泡后的青稞种子捞出沥干表面水分后置于铺设有2~3层纱布的竹篾簸箕上,于温度25~35℃、每日光照时间10~12h、光照强度2 000~4000lx、相对湿度65%~85%的条件下进行催芽,直至青稞种子的胚芽长至2~4mm时,从竹篾簸箕上收集催芽后的青稞种子,得发芽青稞备用;催芽期间每隔4~8h于青稞种子表面喷施催芽营养液,以保持芽床湿润和促进发芽;
2)灭活灭酶:将发芽青稞采用温度为115~120℃的蒸汽进行湿热灭活,防止发芽青稞进一步萌发消耗其活性物质;
3)吸水润胀:之后将发芽青稞置于竹篾簸箕上,于其表面均匀喷施电阻率大于18MΩ*cm的超纯水,使发芽青稞充分吸水浸润膨胀;
4)速冻:将吸水润胀后的发芽青稞于温度-60~-40℃进行速冻;
5)真空微波解冻及膨化:将速冻后的发芽青稞置于铺设有5~8层纱布的竹篾簸箕上,控制发芽青稞的平铺厚度为0.5~1cm,之后于微波剂量0.2~0.4kw/kg、真空度0.90~0.95MPa的条件下微波处理10~15min使发芽青稞解冻,之后在同一微波设备中于微波剂量1~5kw/kg、真空度0.90~0.95MPa的条件下微波继续处理2~5min使发芽青稞膨化;
6)磨浆:将步骤(5)处理后的青稞种子按料液比1:5~7加水反复打浆3~5次,之后收集浆液过200目筛备用;
7)发酵:将步骤(6)的浆液、新鲜青稞花、食醋按质量比4~8:1:0.2混合均匀,之后密封于25~35℃发酵20~40d,得青稞酵素液;
8)超高压均质:将步骤(7)得到的青稞酵素液于压力150~180MPa的条件下进行超高压均质;
9)喷雾干燥:将步骤(8)处理后的青稞酵素液进行喷雾干燥即得青稞粉。
作为优选技术方案,所述步骤(1)中青稞种子的消毒采用臭氧联合脉冲强光消毒,即将青稞种子置于臭氧浓度2~4ppm消毒15~30min,之后于脉冲强光辐照剂量大于9J/cm2、照射距离10~15cm、照射时间2~5min。
作为优选技术方案,所述步骤(1)中的催芽营养液的配方为:亚硒酸钠500~800mg、氧气300~50mg、玉米素10~100mg、水100g。
所述膳食营养配方制品的制备方法为:
1)按原料配方称重备料;

3)将步骤(2)得到的最终混合物进行包装即可。
作为优选技术方案,所述高能球磨的条件为:球料质量比1:5~7,球磨时间为4~12h,球磨转速为200~320r/min。
本发明有益效果:
1)本发明以青稞粉为主要原料,青稞具有高蛋白、高纤维、高维生素和低脂肪的谷物,符合“三高两低”的饮食结构,对高血脂、高血糖、高血压的“三高症”人群有较好的食疗作用。
2)本发明原料中采用多种蛋白组合,来源多样,可为人体提供丰富优质的蛋白质来源;另外,采用多种谷物、果蔬粉和药食同源的中草药原料,不仅富含多种维生素和矿物质,还对人体有较好的增补作用。
3)本发明青稞粉采用独特工艺制备,即先对青稞种子进行萌发,可提高青稞种子中氨基酸、β-葡聚糖、总酚和黄酮的含量,具有更好的降血糖、调节血脂的作用;之后通过吸水润胀、速冻、真空微波解冻及膨化工艺,可是质地较坚硬的青稞种子内部产生多孔结构,利于青稞种子的破碎和内部营养成分的释放;将青稞种子磨浆后与青稞花配伍进行发酵,可将青稞花中的营养成分融入青稞中,进一步增加其活性物质的含量,尤其是发酵过程中小分子活性物质增加,人体更容易吸收;通过高压均质、喷雾干燥可以制备出溶解性好的粉末产品。

6.如权利要求1所述的一种适合宇航员三高调节的膳食营养配方制品,其特征在于所述青稞粉采用下述方法制备而成:
1)青稞催芽:选取颗粒饱满、大小一致的青稞种子,消毒后用清水清洗青稞种子表面,之后用25~35℃清水浸泡1~3h,将浸泡后的青稞种子捞出沥干表面水分后置于铺设有2~3层纱布的竹篾簸箕上,于温度25~35℃、每日光照时间10~12h、光照强度2 000~4000lx、相对湿度65%~85%的条件下进行催芽,直至青稞种子的胚芽长至2~4mm时,从竹篾簸箕上收集催芽后的青稞种子,得发芽青稞备用;催芽期间每隔4~8h于青稞种子表面喷施催芽营养液,以保持芽床湿润和促进发芽;
2)灭活灭酶:将发芽青稞采用温度为115~120℃的蒸汽进行湿热灭活,防止发芽青稞进一步萌发消耗其活性物质;
3)吸水润胀:之后将发芽青稞置于竹篾簸箕上,于其表面均匀喷施电阻率大于18MΩ*cm的超纯水,使发芽青稞充分吸水浸润膨胀;
4)速冻:将吸水润胀后的发芽青稞于温度-60~-40℃进行速冻;
5)真空微波解冻及膨化:将速冻后的发芽青稞置于铺设有5~8层纱布的竹篾簸箕上,控制发芽青稞的平铺厚度为0.5~1cm,之后于微波剂量0.2~0.4kw/kg、真空度0.90~0.95MPa的条件下微波处理10~15min使发芽青稞解冻,之后在同一微波设备中于微波剂量1~5kw/kg、真空度0.90~0.95MPa的条件下微波继续处理2~5min使发芽青稞膨化;

7)发酵:将步骤(6)的浆液、新鲜青稞花、食醋按质量比4~8:1:0.2混合均匀,之后密封于25~35℃发酵20~40d,得青稞酵素液;
8)超高压均质:将步骤(7)得到的青稞酵素液于压力150~180MPa的条件下进行超高压均质;
9)喷雾干燥:将步骤(8)处理后的青稞酵素液进行喷雾干燥即得青稞粉。
7.如权利要求6所述的一种适合宇航员三高调节的膳食营养配方制品,其特征在于所述步骤(1)中青稞种子的消毒采用臭氧联合脉冲强光消毒,即将青稞种子置于臭氧浓度2~4ppm消毒15~30min,之后于脉冲强光辐照剂量大于9J/cm2、照射距离10~15cm、照射时间2~5min。

3)将步骤(2)得到的最终混合物进行包装即可。
10.如权利要求1~9任一所述的一种适合宇航员三高调节的膳食营养配方制品,其特征在于所述高能球磨的条件为:球料质量比1:5~7,球磨时间为4~12h,球磨转速为200~320r/min。
