本发明复合面粉通过上述各原料及配比的限定,使得复合面粉具有丰富的营养成分且含有较低的碳水化合物,同时,本发明复合面粉中通过膳食纤维以及用量的限定,能够使得膳食纤维包裹其他组分,延缓机体对碳水化合物的吸收,进而显著降低血糖生成指数,因此,能够被广大糖尿病患者作为主食食用;此外,该复合面粉经原料配比具有传统面粉的各项性能,能够用于制作各种面食,以满足不同人群的饮食需求。

本实施例公开了一种低血糖生成指数的复合面粉,该复合面粉由如下重量份组分构成:
燕麦粉6份、黑豆粉6份、黄豆粉4份、亚麻籽粉6份、黑苦荞粉3份、黑大麦粉5份、青稞粉6份、黑小麦粉4份、小麦蛋白粉3份、大豆蛋白粉4份、玉米粉5份、藜麦粉6份、豌豆粉6份、鹰嘴豆粉6份、芝麻粉3份、小麦胚芽粉3份、薏米粉5份、香菇粉3份、葛根粉3份、黄芪粉3份、枸杞粉5份、椰蓉粉3份、抗性湖精3份、山药粉4份、魔芋粉3份、茯苓粉0.8份、黄精粉0.8份和膳食纤维粉25份;
其中,各组分的目粒度不低于100目;
每份膳食纤维由大豆膳食纤维粉6份、小麦膳食纤维粉3份和燕麦膳食纤维粉5份组成。

一种面食馒头,该馒头由实施例2中的复合面粉采用本领域常规的馒头制作方法制得。
对照例1
本对照例公开了一种低血糖生成指数的复合面粉,该复合面粉与实施例2中的复合面粉基本相同,区别仅在于每份膳食纤维由大豆膳食纤维粉5份、小麦膳食纤维粉1份和燕麦膳食纤维粉8份组成。
对照例2
本对照例公开了一种低血糖生成指数的复合面粉,该复合面粉与实施例2中的复合面粉基本相同,区别仅在于将茯苓粉和黄静粉均替换为同等份数的黄芪粉。
实验例
将实施例1~6以及对照例1~2的复合面粉采用相同的方法制成馒头;
采用WS/T 652-2019中记载的食物血糖生成指数测定方法对上述各实施例制备得到的馒头的血糖生成指数进行测定,测定结果如表1所示:

本申请实施例制备得到的复合面粉具有更加优异的GL和GI值,能够被广大糖尿病患者作为主食食用。
典型案例
王某某,男,56岁,患有糖尿病,每天需要吃降糖药物和注射胰岛素,自2019年7月开始服用本申请实施例2中的面粉,以该面粉代替平时的主食,持续食用2个月后,医生建议无需注射胰岛素,通过口服降糖药物即可,待食用4个月后,医生建议口服药物减半,目前一直食用该面粉,且血糖一直保持正常。
李某,女,45岁,患有糖尿病,空腹血糖值一般在6.3~6.8mmol/L之间,而餐后两小时血糖值在8.3~8.8mmol/L,之前通过饮食控制和药物进行改善,但药物一旦不吃,血糖值就升高,自2020年4月开始食用本申请实施例2中的面粉代替传统面粉制作的主食,持续服用1个月后,空腹血糖达到6.1mmol/L以下,餐后两小时血糖值在7.6mmol/L以下,至今一直持续食用该面粉,血糖值保持正常。
田某某,男,51岁,患有糖尿病,空腹血糖值一般在6.6~7.2mmol/L之间,而餐后两小时血糖值在8.8~10.4mmol/L,之前通过饮食控制和药物进行改善,无法脱离药物,自2020年7月开始食用本申请实施例2中的面粉代替传统面粉制作的主食,持续服用2个月后,空腹血糖达到5.4~6.2mmol/L,餐后两小时血糖值在7.4~7.9mmol/L,且服用降糖药物减半,至今一直持续食用该面粉。

1.一种低血糖生成指数的复合面粉,其特征在于,由如下重量份组分构成:
燕麦粉1~10份、黑豆粉1~10份、黄豆粉1~10份、亚麻籽粉1~10份、黑苦荞粉1~10份、黑大麦粉1~10份、青稞粉1~10份、黑小麦粉1~10份、小麦蛋白粉1~10份、大豆蛋白粉1~10份、玉米粉1~10份、藜麦粉1~10份、豌豆粉1~10份、鹰嘴豆粉1~10份、芝麻粉1~10份、小麦胚芽粉1~10份、薏米粉1~10份、香菇粉1~10份、葛根粉1~10份、黄芪粉1~10份、枸杞粉1~10份、椰蓉粉1~10份、抗性湖精1~5份、山药粉1~5份、魔芋粉1~5份、茯苓粉0.5~1份、黄精粉0.5~1份和膳食纤维粉10~30份。
2.根据权利要求1所述的复合面粉,其特征在于,由如下重量份组分构成:
燕麦粉5~8份、黑豆粉5~8份、黄豆粉2~6份、亚麻籽粉5~8份、黑苦荞粉2~4份、黑大麦粉4~6份、青稞粉5~8份、黑小麦粉2~5份、小麦蛋白粉2~4份、大豆蛋白粉2~6份、玉米粉4~8份、藜麦粉5~8份、豌豆粉5~8份、鹰嘴豆粉5~8份、芝麻粉2~4份、小麦胚芽粉2~4份、薏米粉4~6份、香菇粉2~4份、葛根粉2~4份、黄芪粉2~4份、枸杞粉4~6份、椰蓉粉2~4份、抗性湖精2~3份、山药粉2~4份、魔芋粉2~4份、茯苓粉0.8~1份、黄精粉0.8~1份和膳食纤维粉20~30份。
3.根据权利要求1或2所述的复合面粉,其特征在于,由如下重量份组分构成:

4.根据权利要求1~2所述的复合面粉,其特征在于,每份所述膳食纤维粉包括大豆膳食纤维粉4~8份、小麦膳食纤维粉2~4份和燕麦膳食纤维粉4~6份。
5.根据权利要求1~2所述的复合面粉,其特征在于,所述组分的目粒度不低于100目。
6.根据权利要求1~2所述的复合面粉,其特征在于,所述膳食纤维粉的目粒度不低于300目。
7.一种面食食品,其特征在于,采用权利要求1~6任一所述的复合面粉制备得到。
8.根据权利要求7所述的面食食品,其特征在于,所述食品包括馒头、面条、饺子、冲调粉、饼和糕点。
