Abstract
本发明涉及一种双参口香糖及其制备方法。本发明以白参(生晒参)和黑参为主要原料,配以胶基、木糖醇、麦芽糖醇、山梨糖醇、柠檬酸、甘油、阿斯巴甜、香精等辅料,研制出一种新型保健型双参口香糖。本双参口香糖具有缓解疲劳、健齿益智、清新口气、醒脑提神、提高免疫力、营养保健等功效作用。本发明制备方法简单,食用方便,充分保持原材料的营养价值和保健功能。本发明是一款集健康与时尚于一体的创新型营养保健产品,目前尚无此种配方产品研究。
Description
技术领域
本发明涉及一种双参口香糖及其制备方法。
背景技术
人参(Panax ginseng C.A.Mey)为五加科人参的干燥根,性温、味甘、微苦,为多年生的草本植物。人参具有多种人体所必需的营养成分和生物活性物质,包括人参皂苷、人参多糖、黄酮类、挥发油、脂肪酸、蛋白质、维生素、甾醇、木质素、无机元素和微量元素等多种活性成分,具有较高的药用价值,是我国传统的名贵中药材。具有大补元气、复脉固脱、生津止渴、调补五脏、安神益智等作用。具有调节中枢神经系统、改善心血管系统功能、增强记忆力、延缓衰老、提高免疫力、降低血糖、抗氧化、抗应激和抗肿瘤等多种作用,从古至今被誉为“百草之王”,更被东方医学界誉为“扶正固本,滋阴补生”之极品。
黑参是人参的一种炮制品,在黑参的加工过程中产生了很多的人参稀有单体皂苷,特别是人参单体皂苷20(S)-Rg3、20(R)-Rg3、Rg5、20(S)-Rh2、20(R)-Rh2、和Rk1等。因为黑参的特有成分,其抗肿瘤、提高免疫的功能更显突出。
双参是指白参(生晒参)加黑参,生晒参和黑参的结合使人参单体皂苷的种类更加全面,其药理活性更加广泛。生晒参中人参皂苷主要含有原人参二醇型(Rb1、Rb2、Rc、Rd、Rg3 和 Rh2等)、原人参三醇型(Re、Rf、Rg1、Rg2和Rh1等)、齐墩果酸型(Ro、Rh3和F4等)。Rb1具有保护神经细胞、改善记忆力的作用,以及改善焦虑情绪等。Rd在心血管和肾脏的保护、抗肿瘤、免疫、镇痛等方面具有良好的药理作用。Rg3可调节疲劳、舒张血管、提高免疫力以及抗肿瘤等。Rg1可以抑制肝细胞凋亡、对肝脏有保护作用。现代研究表明,黑参中的人参单体皂苷Rg3、Rg5具有抗癌活性,主要表现在控制蛋白表达抑制肿瘤细胞增殖、诱导肿瘤细胞凋亡等方面,人参单体皂苷Rg3、Rk1、Rg5能提高小鼠的认知能力,改善由乙醇所致的记忆减退症状,具有益智活性,以及乙醇提取物具有抗顺铂诱导的肾毒性作用。
口香糖是以天然树胶或者甘油树脂为胶体的基础,加入糖浆、薄荷、甜味剂等调和压制而成的一种供人们放入口中嚼咬的糖果。据历史记载,口香糖历史悠久,是世界上最古老的糖果之一。考古学家发现,早在远古时期,人类的先辈就爱咀嚼天然树脂,从中取乐,这是最原始的“口香糖”。几千年来,来自不同地域文化的人们都有嚼“胶”的习惯。随着时代的进步,口香糖作为树脂的一种新的加工产品出现在人们面前,在提升口腔清洁健康的同时,咀嚼口香糖还具有带动口腔和面部肌肉运动,促进血液循环等诸多功效,且口味、种类、样式也越来越多,深受人们喜爱。
随着人们生活水平的不断提高,人们对口香糖开始趋向于口味和保健的双重需求,因此需要研发更多的功能性口香糖来满足人们的需求。本发明将口香糖与白参(生晒参)和黑参结合在一起,制备方法简单,食用方便,使白参(生晒参)和黑参功效成分得以释放,充分保持原材料的营养价值和保健功能。本产品为无糖产品,糖尿病患者皆可食用,本发明是一款集健康与时尚于一体的创新型营养保健产品,目前尚无此种配方产品研究,将具有广阔的市场前景。
发明内容
本发明的目的是提供具有缓解疲劳、健齿益智、清新口气、醒脑提神、提高免疫力、营养保健等功效作用的一种双参口香糖及其制备方法。
本发明的目的通过以下技术方案实现:
一种双参口香糖,包括如下重量份的原料:白参粉1-3份、黑参浸膏1-3份、胶基30-40份、木糖醇20-40份、麦芽糖醇1-5份、山梨糖醇1-5份、柠檬酸0.05-0.5份、甘油2-5份、阿斯巴甜0.05-0.2份、香精0.01-0.2份。
本发明制备方法包括以下步骤:
(1)白参预处理。选用5年生鲜人参,刷洗去泥土,晾干表面余水,横切成1毫米厚的片,经烘干、粉碎、过筛,制得白参粉。
(2)黑参提取浸膏。将黑参粗粉后,加8倍量水进行煎煮3h过滤,滤渣再用6倍量水煎煮3h过滤,之后滤渣再用6倍量水煎煮2h,合并三次滤液,减压浓缩滤液成稠膏状,干燥使其含水为25%,制得黑参浸膏。
(3)辅料预处理。将市购的木糖醇、麦芽糖醇、山梨糖醇、柠檬酸、阿斯巴甜、香精分别粉碎过100目筛,置于干燥的容器中,备用。
(4)胶基预处理。将市购的胶基置于60℃恒温烘箱内软化5h,备用。
(5)配料混合。将(1)(2)(3)和甘油混合均匀,备用。
(6)调和。将混合好的配料(5)均匀分3次加入到已软化好的胶基(4)中,55℃进行保湿搅拌,每次搅拌4min;待胶基与3份配料完全混合后,最后将香精加入到胶基中,继续搅拌5min,使所有配料与胶基混合均匀。
(7)压延、成型。将(6)加热到85℃,使其充分软化,配料溶解,与胶基充分混合约30min后,使温度冷却至40℃,投入挤出机中反复挤压3次,得到组织紧密、表面光滑的带状糖胚,再进入压片机压延切割成型。
(8)冷却老化。将已切割好的糖片在20℃,相对湿度50%的条件下老化24 h。
(9)包装。将老化好的产品用涂蜡铝箔纸包装,在20℃,相对湿度不高于50%的条件下贮藏。

具体实施方式
下面通过具体实施方式,对本发明的技术方案做进一步的详细描述。
实施例1
本双参口香糖实施例,包括原料:白参粉10g、黑参浸膏10g、胶基300g、木糖醇200g、麦芽糖醇10g、山梨糖醇20g、柠檬酸1g、甘油20g、阿斯巴甜0.5g、香精0.2g。
一种双参口香糖,其特征在于,包括如下制备步骤:
(1)白参预处理。选用5年生鲜人参约40g,刷洗去泥土,晾干表面余水,横切成1毫米厚的片,经烘干、粉碎、过筛,制得白参粉,取其10g。
(2)黑参提取浸膏。将150g黑参粗粉后,加1200毫升水进行煎煮3h过滤,滤渣再用900毫升水煎煮3h过滤,之后滤渣再用900毫升水煎煮2h,合并三次滤液,减压浓缩滤液成稠膏状,干燥使其含水为25%,制得黑参浸膏,取其10g。
(3)辅料预处理。分别称取粉碎并过100目筛的木糖醇200g、麦芽糖醇10g、山梨糖醇20g、柠檬酸1g、阿斯巴甜0.5g、香精0.2g,混匀并置于干燥的容器中,备用。
(4)胶基预处理。将市购的胶基300g,置于60℃恒温烘箱内软化5h,备用。
(5)配料混合。将(1)(2)(3)和甘油20g混合均匀,备用。
(6)调和。将混合好的配料(5)均匀分3次加入到已软化好的胶基(4)中,55℃进行保湿搅拌,每次搅拌4min;待胶基与3份配料完全混合后,最后将香精加入到胶基中,继续搅拌5 min,使所有配料与胶基混合均匀。
(7)压延、成型。将(6)加热到85℃,使其充分软化,配料溶解,与胶基充分混合约30min后,使温度冷却至40℃,投入挤出机中反复挤压3次,得到组织紧密、表面光滑的带状糖胚,再进入压片机压延切割成型。
(8)冷却老化。将已切割好的糖片在20℃,相对湿度50%的条件下老化24 h。
(9)包装。将老化好的产品用涂蜡铝箔纸包装,在20℃,相对湿度45%的条件下贮藏。
实施例2
本双参口香糖实施例,包括原料:白参粉20g、黑参浸膏10g、胶基350g、木糖醇300g、麦芽糖醇20g、山梨糖醇30g、柠檬酸2g、甘油30g、阿斯巴甜1g、香精0.5g。

实施例3
本双参口香糖实施例,包括原料:白参粉30g、黑参浸膏10g、胶基400g、木糖醇400g、麦芽糖醇30g、山梨糖醇40g、柠檬酸3g、甘油30g、阿斯巴甜1g、香精0.5g。
一种双参口香糖,其特征在于,包括如下制备步骤:
(1)白参预处理。选用5年生鲜人参约120g,刷洗去泥土,晾干表面余水,横切成1毫米厚的片,经烘干、粉碎、过筛,制得白参粉,取其30g。
(2)黑参提取浸膏。将150g黑参粗粉后,加1200毫升水进行煎煮3h过滤,滤渣再用900毫升水煎煮3h过滤,之后滤渣再用900毫升水煎煮2h,合并三次滤液,减压浓缩滤液成稠膏状,干燥使其含水为25%,制得黑参浸膏,取其10g。
(3)辅料预处理。分别称取粉碎并过100目筛的木糖醇400g、麦芽糖醇30g、山梨糖醇40g、柠檬酸3g、阿斯巴甜1g、香精0.5g,混匀并置于干燥的容器中,备用。
(4)胶基预处理。将市购的胶基400g,置于60℃恒温烘箱内软化5h,备用。
(5)配料混合。将(1)(2)(3)和甘油30g混合均匀,备用。
(6)调和。将混合好的配料(5)均匀分3次加入到已软化好的胶基(4)中,55℃进行保湿搅拌,每次搅拌4min;待胶基与3份配料完全混合后,最后将香精加入到胶基中,继续搅拌5 min,使所有配料与胶基混合均匀。
(7)压延、成型。将(6)加热到85℃,使其充分软化,配料溶解,与胶基充分混合约30min后,使温度冷却至40℃,投入挤出机中反复挤压3次,得到组织紧密、表面光滑的带状糖胚,再进入压片机压延切割成型。

Claims (3)
1.一种双参口香糖,其特征在于,包括如下重量份的原料:白参粉1-3份、黑参浸膏1-3份、胶基30-40份、木糖醇20-40份、麦芽糖醇1-5份、山梨糖醇1-5份、柠檬酸0.05-0.5份、甘油2-5份、阿斯巴甜0.05-0.2份、香精0.01-0.2份。
2.权利要求1所述的一种双参口香糖,包括如下制备步骤:
(1)白参预处理;选用5年生鲜人参,刷洗去泥土,晾干表面余水,横切成1毫米厚的片,经烘干、粉碎、过筛,制得白参粉;
(2)黑参提取浸膏;将黑参粉碎成粗粉后,加8倍量水进行煎煮3h过滤,滤渣再用6倍量水煎煮3h过滤,之后滤渣再用6倍量水煎煮2h过滤,合并三次滤液,减压浓缩滤液成稠膏状,干燥使其含水为25%,制得黑参浸膏;
(3)辅料预处理;将市购的木糖醇、麦芽糖醇、山梨糖醇、柠檬酸、阿斯巴甜、香精分别粉碎过100目筛,置于干燥的容器中,备用;
(4)胶基预处理;将市购的胶基置于60℃恒温烘箱内软化5h,备用;
(5)配料混合;将(1)(2)(3)和甘油混合均匀,备用;
(6)调和;将混合好的配料(5)均匀分3次加入到已软化好的胶基(4)中,55℃进行保湿搅拌,每次搅拌4min;待胶基与3份配料完全混合后,最后将香精加入到胶基中,继续搅拌5min,使所有配料与胶基混合均匀;
(7)压延、成型;将(6)加热到85℃,使其充分软化,配料溶解,与胶基充分混合约30min后,使温度冷却至40℃,投入挤出机中反复挤压3次,得到组织紧密、表面光滑的带状糖胚,再进入压片机压延切割成型;
(8)冷却老化;将已切割好的糖片在20℃,相对湿度50%的条件下老化24 h;
(9)包装;将老化好的产品用涂蜡铝箔纸包装,在20℃,相对湿度不高于50%的条件下贮藏。
