一、技术领域:
本发明涉及食品领域,具体涉及的是一种补血益气的蓝莓杂粮酒酿及其制备方法。
二、背景技术:
随着社会的不断进步,女性气血不足已经成为新时代人们所关注的问题之一。其中,人们生活节奏的加快和身体素质的降低都会造成气血不足。而造成这种现象的原因根据女性自身的身体素质相关,同时,大多数女性由于爱美,通过节食的方式来减肥,因此造成女性内分泌紊乱,气血不足等。因此,长期以往加重了机体的消耗,所以一般有体质虚弱、营养不良、精神萎靡、疲乏无力、食欲降低、睡眠障碍等表现,生病、打针吃药便成了家常便饭。每次生病都要很长时间才能恢复,而且常常反复发作。长此以往会导致身体和智力发育不良,还易诱发重大疾病。因此,就目前国内外的发展来看,这种气血不足已经是我国不可忽视也不容小觑的问题。因此,开发出一种能够补气血,同时富含多种营养物质的女性爱吃的小吃是至关重要的。
酒酿是我国的传统发酵食品,又叫醪糟、糯米酒、酒糟,是将糯米或者大米蒸熟,加入酒曲发酵制成的一种特殊食品。酒酿营养价值丰富、风味俱佳,经常喝酒酿不但有益于身体健康,而且具有一定的医疗性能。不少国内外人士研究了糯米酒等发酵酒促进人体健康的机理,发现氨基酸、低聚糖、多肽和乙醇是具有保健功能的四种主要物质。甜酒酿可以促进食欲、帮助消化、温寒补虚、提神解乏、解渴消暑、促进血液循环、润肤等功效。酒酿不仅能够暖胃活血,还具有丰胸,调味增香的作用,因此更受女性消费者的喜爱。
近年来,杂粮因其具有高的膳食纤维含量而备受人们关注,其营养机制比例均符合人体的摄入需求,其还具备一些独特的生理活性成分而具备食疗功效。而将杂粮应用到酒酿中相对较少,因此本发明主要研制一种具有补血益气功效的的蓝莓杂粮酒酿,主要将具有补血益气功效的人参、白术、何首乌、山药、枸杞、红枣等中药成分加入到由糯米、燕麦、藜麦、糙米、薏仁等杂粮中进行酒酿发酵,制作出一款补血益气的甜酒酿为广大女性消费者提供一种新型保健食品。
三、发明内容:
本发明的一个目的是提供一种补血益气的蓝莓杂粮酒酿,这种补血益气的蓝莓杂粮酒酿通过将具有补血益气功效杂粮、中药、蓝莓相结合,制作出一款具有补血益气的甜酒酿,通过对其调配及精细的加工来实现补血益气的目的;本发明的另一个目的是提供这种补血益气的蓝莓杂粮酒酿的制备方法。
本发明解决其技术问题所采用的技术方案是:这种补血益气的蓝莓杂粮酒酿包括杂粮原料、中药原料、辅料的制备原料制备而成,按重量份数计,所述杂粮原料为糯米100-120份、燕麦30-50份、藜麦20-40份、糙米30-50份、薏米20-40份;所述中药原料:人参4-8份、白术2-4份、何首乌2-4份、山药6-10份、枸杞6-10份、红枣10-15份;所述辅料包括:蜂蜜15-25份、蓝莓50-80份;其中按所述配比, 蓝莓榨汁制得蓝莓汁、果渣, 再由果渣制得多糖冻干粉;将人参、白术、何首乌、山药、枸杞、红枣,放入中药滚筒清洗机中清洗后沥干,放入恒温干燥箱中70℃恒温干燥至恒重,进行初粉碎,之后放入低温密闭超微粉机中进行超微粉碎,过120-140目筛,得微细化中药混合粉。
上述方案中杂粮原料中:糯米110份、燕麦40份、藜麦30份、糙米40份、薏米30份,所述中药原料中:人参6份、白术3份、何首乌3份、山药8份、枸杞8份、红枣13份,所述辅料中:蜂蜜20份、蓝莓65份。
上述补血益气的蓝莓杂粮酒酿的制备方法:
步骤1、取糯米、燕麦、藜麦、糙米、薏米进行清洗、烘干,放入清水中浸泡16-20小时,清水没过杂粮3cm,将浸泡后的杂粮沥干,放入蒸锅内110-130℃蒸煮30-50分钟,使淀粉充分糊化,得预熟杂粮混合物;
步骤2、将蓝莓清洗后榨汁,过滤,制得蓝莓汁、果渣;
步骤3、将人参、白术、何首乌、山药、枸杞、红枣,清洗后沥干, 70℃恒温干燥至恒重,放入磨粉机中进行初粉碎,再放入低温密闭超微粉机中进行超微粉碎,过120-140目筛,得微细化中药混合粉;
步骤4、将步骤2中果渣加入10倍体积的蒸馏水混合,混合后放入超声波微波联合反应系统中,按料液比1:50、提取温度90℃、提取时间20min,以水作为萃取溶剂提取10min后,经纱布滤过后60-70℃旋转蒸发浓缩,浓缩至含水30%,之后放入3-5倍无水乙醇中醇沉12-24小时,4500r/min离心20分钟,去掉上清液,用无水乙醇清洗沉淀,冷冻干燥后研磨得到多糖冻干粉;
步骤5、将步骤1中预熟杂粮混合物与步骤3中微细化中药混合粉进行混合,并加入重量比为0.3%的酒曲后搅拌均匀,并在混合物中间搭成一个凹圆窝,于28-36℃进行保温发酵48-72小时;
步骤6、将步骤4中多糖冻干粉、步骤2中蓝莓汁、蜂蜜混合,分三次等分淋入搭好窝的预熟杂粮混合物中,淋入时间分别为发酵前、发酵24小时、发酵36小时;

本发明所选用低温密闭超微粉碎对中药进行特异性粉碎,原料经超微粉碎后,细胞壁破碎,细胞内的有效成分充分暴露出来,其释放速度及释放量相比常规粉碎会大幅度提高,经低温超微粉碎后的中药,放入冷水中使用辅助超声波震动进行萃取,可最大限度保留药物中的活性成分,可极大限度提升人体对中药药用成分的吸收。
本发明所提供的一种补血益气的蓝莓杂粮酒酿,其杂粮原料为:
糯米:糯米又被称之为江米,是家常食用粮食之一。香糯粘滑,常常被用来制成风味小吃,深受人们喜爱。糯米富含蛋白质、脂肪、碳水化合物、维生素B1、维生素B2、烟酸、钙、铁、磷等。其中磷元素可协助淀粉与脂肪代谢,提供热量,恢复体力;丰富的B族维生素可以促进食欲、改善神经系统。糯米具有补中益气、健脾养胃、止泻、调理消化和吸收的作用,对脾胃虚弱、产后多汗、产后痢疾等症状有舒缓作用,而对于体虚产生的盗汗、血虚、头晕眼花也有改善的作用。
燕麦:俗称油麦、玉麦、雀麦、野麦,是一种低糖、高营养、高能食品,几乎没有其他谷物的主要缺点,在我国各地皆有分布,特别是华北北部长城内外和青藏高原、内蒙古、东北一带牧区或半牧区栽培较多,富含碳水化合物、蛋白质、脂肪、植物纤维、维生素B、维生素E、矿物质、核黄素、皂苷等人体所需营养物质,具有降血糖、润肠通便、补充钙质、延年益寿、美白祛斑、预防心血管疾病的功效。
藜麦:藜麦是全谷全营养完全蛋白碱性食物,胚乳占种子的68%,且具有营养活性,蛋白质含量高达16%-22%,品质与奶面包及肉类相当,富含多种氨基酸,其中有人体必需的全部9种必需氨基酸,比例适当且易于吸收,尤其富含植物中缺乏的赖氨酸,钙、镁、磷、钾、铁、锌、硒、锰、铜等矿物质营养含量高,富含不饱和脂肪酸、类黄酮、B族维生素和维生素 E、胆碱、甜菜碱、叶酸、α-亚麻酸、β-葡聚糖等多种有益化合物,膳食纤维素含量高达7.1%,胆固醇为0,不含麸质,低脂,低热量(305kcal/100g),低升糖(GI升糖值35,低升糖标准为55),几乎都是常见食物里最优秀的。
糙米:糙米是稻谷脱去外保护皮层稻壳后的颖果,果皮、种皮、珠心层完好的稻米籽粒,由于内保护皮层粗纤维、糠蜡等较多口感较粗,质地紧密,煮起来也比较费时,但其瘦身效果显著。糙米中米糠和胚芽部分的维生素B和维生素E,能提高人体免疫功能,促进血液循环,还能帮助人们消除沮丧烦躁的情绪,使人充满活力。此外,糙米中钾、镁、锌、铁、锰等微量元素,有利于预防心血管疾病和贫血症。它还保留了大量膳食纤维,可促进肠道有益菌增殖,加速肠道蠕动,软化粪便,预防便秘和肠癌;膳食纤维还能与胆汁中胆固醇结合,促进胆固醇的排出,从而帮助高血脂症患者降低血脂,被视为是一种绿色的健康食品。
薏米:薏米,又名薏苡仁、苡仁、六谷子,为禾本科植物薏苡的种仁,在我国栽培历史悠久,我国汉代已有栽培,东汉马缓曾从交趾引进优良品种,是我国古老的药食皆佳的粮种之一。薏米的营养价值很高,被誉为“世界禾本科植物之王”,在欧洲,它被称为“生命健康之友”。薏米富含维生素B族、矿物质、膳食纤维,具有健脾养脾、养胃健胃、养肾补肾、补气益气、调理肠胃、滋阴补阴、安神镇定、清肺润肺、祛湿、降血脂、祛风、提高代谢、控制食欲、养颜、抗衰老的功效。
本发明所添加的中药的中药组方,是在传统验方的基础上,经过多年的实际经验,精心调配出来的,该中药组方的各味药材是:
人参:人参具有大补元气、复脉固脱、补脾益肺等功效,适用于气血不足、体虚欲脱、脾虚喘咳、内热消渴、神经衰阳痿宫冷等症,早在《神农本草经》中就有记载表明人参对中枢神经系统具有双向调节作用,能改善记忆功能。人参对需要精细协调动作和集中精力的活动有良好的影响,甚至在夜间工作时,人参仍有增强脑力的作用,且无不良反应。
白术:味苦,甘,性温。归脾、胃经;健脾益气,燥湿利水,止汗,安胎。用于脾虚食少,腹胀泄泻,痰饮眩悸,水肿,自汗,胎动不安。土白术健脾,和胃,安胎。用于脾虚食少,泄泻便溏,胎动不安。
何首乌:何首乌是养发的首选草药,同时首乌对减脂也有很好的功用。首乌味苦涩,性温,归肝肾二经。具有润肠、解毒之功,能够促进肠管蠕动而排出肠内废物,减少肠道对胆固醇的吸收、阻止胆固醇在肝内的沉积。
山药:味甘,性平;归肺、脾、肾经。补脾;养肺;固肾;益精。主脾虚泄泻;食少浮肿;肺虚咳喘;消渴;遗精;带下;肾虚尿频;外用治痈肿;瘰疬。有降低血糖的作用。可用于治疗糖尿病,是糖尿病人的食疗佳品。山药可有效阻止血脂在血管壁的沉淀,预防心血疾病。取得益志安神,延年益寿的功效。
枸杞:枸杞,是茄科、枸杞属植物,枸杞为人们对商品枸杞子、植物宁夏枸杞、中华枸杞等枸杞属下物种的统称。人们日常食用和药用的枸杞子多为宁夏枸杞的果实“枸杞子”,具有养肝、滋肾、润肺、降低血糖、降低血压及抗脂肪肝作用。
红枣:红枣含有大量的糖类物质,主要为葡萄糖,还含有果糖、蔗糖及由葡萄糖和果糖组成的低聚糖、阿拉伯聚糖及半乳醛聚糖等;并含有大量的维生素C、核黄素、硫胺素、胡萝卜素、尼克酸等多种维生素。具有较强的补养作用,能提高人体免疫功能,增强抗病能力。具有抗过敏、宁心安神、益智健脑、增强食欲作用。
本发明所添加的蓝莓,果实色泽美丽、悦目、蓝色并被1层白色果粉,果肉细腻,种子极小,可食率为100%,具清淡芳香,甜酸适口,为一鲜食佳品。蓝莓果实中除了常规的糖、酸和Vc外,富含VE、VA、VB、SOD、熊果苷、蛋白质、花青苷、食用纤维以及丰富的K、Fe、Zn、Ca等矿质元素。根据吉林农业大学小浆果研究所对国外引种的14个蓝莓品种分析,果实中花青苷色素含量高达163mg/100g,鲜果VE含量 9.3L|g/100g鲜果,是其他水果如苹果、葡萄的几倍甚至几十倍。总氨基酸含量0.254%,比氨基酸含量丰富的山楂还高。果实中含有丰富的营养成分,具有防止脑神经老化、保护视力、强心、抗癌、软化血管、增强人机体免疫等功能,营养成分高。
本发明具有以下有益效果:
1、传统的甜酒酿都是以糯米或者大米为主要原料发酵制成的,本发明借鉴了传统甜酒酿的酿造工艺,在糯米甜酒酿的基础上添加了适当的燕麦、藜麦、糙米和薏仁,经酒曲发酵制成了混合甜酒酿,是在传统工艺上的创新,同时增添了杂粮独特的风味和营养价值。与此同时,本发明还添加人参、白术、何首乌、山药、枸杞、红枣等具有补血益气的中药成分,还添加了蜂蜜和蓝莓,更加丰富了该酒酿的风味,更易于各类人群食用。而且在生产制作中,严格考虑营养成分和药用成分的保留,谨慎选取加工工艺和时间相关因素,最大程度保留营养成分。
2、本发明中药的处理工艺分三步:(1)清洗、烘干;(2)初粉碎;(3)低温密闭超微粉碎;本发明所选用低温密闭超微粉碎对中药进行特异性粉碎,经低温超微粉碎后的中药,可最大限度保留药物中的活性成分,可极大限度提升人体对中药药用成分的吸收。而将杂粮、中药粉混合进行发酵,蓝莓混合物分三次淋入,通过此种工艺结合能够使中药、杂粮、蓝莓营养成分相结合,在具有良好配伍性的同时,降低了营养物质的流失,并实现中药、杂粮、蓝莓协同作用增强补血益气的功效。

实施例1:
一种补血益气的蓝莓杂粮酒酿,按照重量份由以下原料制成,包括杂粮原料、中药原料及辅料,所述杂粮原料组分及重量份数配比为:糯米100份、燕麦30份、藜麦20份、糙米30份、薏米20份,所述中药原料组分及重量份数配比为:人参4份、白术2份、何首乌2份、山药6份、枸杞6份、红枣10份,所述辅料组分及重量份数配比为:蜂蜜15份、蓝莓50份。
其制备方法如以下步骤:
步骤1、取糯米、燕麦、藜麦、糙米、薏米进行清洗、烘干,放入清水中浸泡16小时,清水没过杂粮3cm,将浸泡后的杂粮沥干,放入蒸锅内110℃蒸煮30分钟,使淀粉充分糊化,得预熟杂粮混合物,备用。
步骤2、将蓝莓清洗后榨汁,过滤,制得蓝莓汁、果渣,备用。
步骤3、取人参、白术、何首乌、山药、枸杞、红枣,放入中药滚筒清洗机中清洗后沥干,放入恒温干燥箱中70℃恒温干燥至恒重,之后放入磨粉机中进行初粉碎,之后放入低温密闭超微粉机中进行超微粉碎,过120目筛,得微细化中药混合粉,备用。
步骤4、将步骤2中果渣加入10倍体积的蒸馏水混合,混合后放入超声波微波联合反应系统中,为得到最佳提取工艺配合工业化生产,通过以料液比、提取温度和提取时间比作为主要影响因素,以蓝莓多糖提取率为响应值,设计三因素三水平的响应面优化分析法,确定蓝莓多糖提取的工艺参数,结果如下;

通过Design-Expert软件对表2中的实验数据进行多元回归拟合和回归方差分析,结果见表3。

通过DesignExpert软件对表2、表3分析,可知,方程因变量与自变量之间的线性关系明显,该模型回归显著(P<0.0001),失拟项不显著(P>0.05),说明该模型与实验拟合良好,自变量与响应值之间线性关系显著,可以用于该反应的理论推测。应用响应面寻优分析方法对回归模型进行分析,寻找最优响应结果:料液比1:50、提取温度90℃、提取时间20min响应值提取率为3.92%。
因此以料液比1:50、提取温度90℃、提取时间20min,以水作为萃取溶剂提取10min后,经纱布滤过后60℃旋转蒸发浓缩,浓缩至含水30%,之后放入3倍无水乙醇中醇沉12小时,4500r/min离心20分钟,去掉上清液,无水乙醇(食品级)清洗沉淀,冷冻干燥后研磨得到多糖冻干粉,备用。
步骤5、将步骤1中预熟杂粮混合物与步骤3中微细化中药混合粉进行混合,并加入重量比为0.3%的酒曲后搅拌均匀,并在混合物中间搭成一个凹圆窝,有利于通风,于28℃进行保温发酵48小时。
步骤6、将步骤4中多糖冻干粉、步骤2中蓝莓汁、蜂蜜混合,分三次等分淋入搭好窝的杂粮混合物中,时间分别为发酵前,发酵24小时和发酵36小时。
步骤7、将发酵后的酒酿进行灭菌、装罐,既得本发明蓝莓杂粮酒酿。
所述步骤6中,发酵窖在使用前首先用高锰酸钾进行彻底消毒,再用清水冲刷两次,发酵期间搅拌5次,发酵期间室温要始终保持在20℃。
实施例2:
一种补血益气的蓝莓杂粮酒酿,按照重量份由以下原料制成,包括杂粮原料、中药原料及辅料,所述杂粮原料组分及重量份数配比为:糯米110份、燕麦40份、藜麦30份、糙米40份、薏米30份,所述中药原料组分及重量份数配比为:人参6份、白术3份、何首乌3份、山药8份、枸杞8份、红枣13份,所述辅料组分及重量份数配比为:蜂蜜20份、蓝莓65份。
其制备方法如以下步骤:
步骤1、取糯米、燕麦、藜麦、糙米、薏米进行清洗、烘干,放入清水中浸泡18小时,清水没过杂粮3cm,将浸泡后的杂粮沥干,放入蒸锅内120℃蒸煮40分钟,使淀粉充分糊化,得预熟杂粮混合物,备用。
步骤2、将蓝莓清洗后榨汁,过滤,制得蓝莓汁、果渣,备用。
步骤3、取人参、白术、何首乌、山药、枸杞、红枣,放入中药滚筒清洗机中清洗后沥干,放入恒温干燥箱中70℃恒温干燥至恒重,之后放入磨粉机中进行初粉碎,之后放入低温密闭超微粉机中进行超微粉碎,过400目筛,得微细化中药混合粉,备用。
步骤4、将步骤2中果渣加入10倍体积的蒸馏水混合,混合后放入超声波微波联合反应系统中,以料液比1:50、提取温度90℃、提取时间20min,以水作为萃取溶剂提取10min后,经纱布滤过后65℃旋转蒸发浓缩,浓缩至含水30%,之后放入4倍无水乙醇中醇沉16小时,4500r/min离心20分钟,去掉上清液,无水乙醇(食品级)清洗沉淀,冷冻干燥后研磨得到多糖冻干粉,备用。
步骤5、将步骤1中预熟杂粮混合物与步骤3中微细化中药混合粉进行混合,并加入重量比为0.3%的酒曲后搅拌均匀,并在混合物中间搭成一个凹圆窝,有利于通风,于32℃进行保温发酵60小时。
步骤6、将步骤4中多糖冻干粉、步骤2中蓝莓汁、蜂蜜混合,分三次等分淋入搭好窝的杂粮混合物中,时间分别为发酵前,发酵24小时和发酵36小时。
步骤7、将发酵后的酒酿进行灭菌、装罐,既得本发明蓝莓杂粮酒酿。
所述步骤6中,发酵窖在使用前首先用高锰酸钾进行彻底消毒,再用清水冲刷两次,发酵期间搅拌6次,发酵期间室温要始终保持在23℃。
实施例3:
一种补血益气的蓝莓杂粮酒酿,按照重量份由以下原料制成,包括杂粮原料、中药原料及辅料,所述杂粮原料组分及重量份数配比为:糯米120份、燕麦50份、藜麦40份、糙米50份、薏米40份,所述中药原料组分及重量份数配比为:人参8份、白术4份、何首乌4份、山药10份、枸杞10份、红枣15份,所述辅料组分及重量份数配比为:蜂蜜25份、蓝莓80份。
其制备方法如以下步骤:
步骤1、取糯米、燕麦、藜麦、糙米、薏米进行清洗、烘干,放入清水中浸泡16-20小时,清水没过杂粮3cm,将浸泡后的杂粮沥干,放入蒸锅内130℃蒸煮50分钟,使淀粉充分糊化,得预熟杂粮混合物,备用。
步骤2、将蓝莓清洗后榨汁,过滤,制得蓝莓汁、果渣,备用。
步骤3、取人参、白术、何首乌、山药、枸杞、红枣,放入中药滚筒清洗机中清洗后沥干,放入恒温干燥箱中70℃恒温干燥至恒重,之后放入磨粉机中进行初粉碎,之后放入低温密闭超微粉机中进行超微粉碎,过500目筛,得微细化中药混合粉,备用。
步骤4、将步骤2中果渣加入10倍体积的蒸馏水混合,混合后放入超声波微波联合反应系统中,以料液比1:50、提取温度90℃、提取时间20min,以水作为萃取溶剂提取10min后,经纱布滤过后70℃旋转蒸发浓缩,浓缩至含水30%,之后放入5倍无水乙醇中醇沉18小时,4500r/min离心20分钟,去掉上清液,无水乙醇(食品级)清洗沉淀,冷冻干燥后研磨得到多糖冻干粉,备用。

所述步骤6中,发酵窖在使用前首先用高锰酸钾进行彻底消毒,再用清水冲刷两次,发酵期间搅拌5次,发酵期间室温要始终保持在25℃。
实施例4:
基于含糊数学模型对补血益气的蓝莓杂粮酒酿进行感官评定。
感官评定方法:感官评价小组成员由10名经培训的食品专业人员组成,通过色泽、口味、酒香、浊度,这4个因素方面分别对实施例1、2、3补血益气的蓝莓杂粮酒酿进行评价。感官评定标准详见表4。

10名感官评价员对实施例1、实施例2、实施例3中的具有补血益气的蓝莓杂粮酒酿进行了感官评定,结果见表5。
通过表5可以得出:3个不同实施例的模糊矩阵分别为R1、R2、R3。

同理可得Y12、Y13、Y14根据模糊综合评判集的计算结果归一化后的数据,做出的模糊关系曲线图见图1。
由图1可知,实施例3比实施例2的峰值高,所以实施例3比实施例2具有更高的感官评价值,次之实施例1,且三种实施例均具有较高感官评分值。
典型实验例:
王某爽,女,33岁,黑龙江省哈尔滨市初中教师、班主任,长期的室内工作、思虑过重、劳累过度、睡眠无规律,并且之前王老师通过节食的方式来减肥,导致她表现为体质虚弱、健忘心悸、失眠多梦、面色枯黄等症状,已严重影响工作、生活,经诊断为气血不足引起的复合症状受试人群,接收本发明志愿受试后,每日睡前两小时服用本发明产品100克,并调整作息时间、按时吃饭,食用本发明蓝莓杂粮酒酿30天后气色改善、气血不足引起的复合症状有所缓解,继续食用2个月后气血不足引起的复合症状已基本消失,食用直至今日未见任何副作用。
李某欣,女,35岁,辽宁省沈阳市某公司销售人员,经常出差、布置展会、劳累过度、饮食睡眠无规律,导致她患有气血不足,具体表现为皮肤萎黄、肌肤干燥、睡眠不好,而睡眠又导致皮肤变差,黑眼圈较重、眼白的颜色变得混浊、发黄,眼袋很大、眼睛干涩、眼皮沉重,头发干枯、掉发、头发发黄、发白、开叉,经诊断为气血不足综合症状受试人群,接收本发明志愿受试后,每日睡前两小时服用本发明产品100克,并调整作息时间、按时吃饭,食用本发明蓝莓杂粮酒酿30天后皮肤、面部、眼袋、发质均有一定改善,继续食用3个月后,气血不足引起的复合症状已基本消失。
实验结果表明:本发明补血益气的蓝莓杂粮酒酿在改善人体健康方面具有明显的功效,受试者食用后睡眠时间明显延长、气虚血虚有所改善,在临床观察过程中无不良反应,在改善症状、提高患者生活质量显示出独特的优势。

1.一种补血益气的蓝莓杂粮酒酿,其特征在于:这种补血益气的蓝莓杂粮酒酿包括杂粮原料、中药原料、辅料的制备原料制备而成,按重量份数计,所述杂粮原料为糯米100-120份、燕麦30-50份、藜麦20-40份、糙米30-50份、薏米20-40份;所述中药原料:人参4-8份、白术2-4份、何首乌2-4份、山药6-10份、枸杞6-10份、红枣10-15份;所述辅料包括:蜂蜜15-25份、蓝莓50-80份;其中按所述配比, 蓝莓榨汁制得蓝莓汁、果渣, 再由果渣制得多糖冻干粉;将人参、白术、何首乌、山药、枸杞、红枣,放入中药滚筒清洗机中清洗后沥干,放入恒温干燥箱中70℃恒温干燥至恒重,进行初粉碎,之后放入低温密闭超微粉机中进行超微粉碎,过120-140目筛,得微细化中药混合粉。
2.根据权利要求1所述的补血益气的蓝莓杂粮酒酿,其特征在于:所述的杂粮原料中:糯米110份、燕麦40份、藜麦30份、糙米40份、薏米30份,所述中药原料中:人参6份、白术3份、何首乌3份、山药8份、枸杞8份、红枣13份,所述辅料中:蜂蜜20份、蓝莓65份。
3.一种权利要求1或2所述的补血益气的蓝莓杂粮酒酿的制备方法,其特征在于:
步骤1、取糯米、燕麦、藜麦、糙米、薏米进行清洗、烘干,放入清水中浸泡16-20小时,清水没过杂粮3cm,将浸泡后的杂粮沥干,放入蒸锅内110-130℃蒸煮30-50分钟,使淀粉充分糊化,得预熟杂粮混合物;
步骤2、将蓝莓清洗后榨汁,过滤,制得蓝莓汁、果渣;
步骤3、将人参、白术、何首乌、山药、枸杞、红枣,清洗后沥干, 70℃恒温干燥至恒重,放入磨粉机中进行初粉碎,再放入低温密闭超微粉机中进行超微粉碎,过120-140目筛,得微细化中药混合粉;
步骤4、将步骤2中果渣加入10倍体积的蒸馏水混合,混合后放入超声波微波联合反应系统中,按料液比1:50、提取温度90℃、提取时间20min,以水作为萃取溶剂提取10min后,经纱布滤过后60-70℃旋转蒸发浓缩,浓缩至含水30%,之后放入3-5倍无水乙醇中醇沉12-24小时,4500r/min离心20分钟,去掉上清液,用无水乙醇清洗沉淀,冷冻干燥后研磨得到多糖冻干粉;
步骤5、将步骤1中预熟杂粮混合物与步骤3中微细化中药混合粉进行混合,并加入重量比为0.3%的酒曲后搅拌均匀,并在混合物中间搭成一个凹圆窝,于28-36℃进行保温发酵48-72小时;
步骤6、将步骤4中多糖冻干粉、步骤2中蓝莓汁、蜂蜜混合,分三次等分淋入搭好窝的预熟杂粮混合物中,淋入时间分别为发酵前、发酵24小时、发酵36小时;
