Abstract
本发明属于食品保健领域,具体涉及一种减肥保健饮料及其制作方法。该饮料的原料配方按质量百分比为:玉米8~12%、麦芽粉5~10%、羊蹄草3~5%、甘草3~5%、茶树鲜叶3~5%、笋壳3~5%、莲子壳3~5%、无糖型甜味剂1%~3%,山茶籽油0.25%~1%、柠檬酸0.15%~0.30%、稳定剂0.05%~0.20%、余量为水,原料经过处理罐装,得到减肥保健饮料。本发明既可缓解莲子壳、笋壳堆积浪费,又可为保健饮料资源的高效开发利用提供新的增长亮点。本发明制备工艺简便易行,生产成本低,有利于产业化生产和产生较高的附加值。本发明具有营养互补、风味协调、营养丰富、保健功能等优点,可作为一款口味绝佳的功能型饮料。
Description
技术领域
本发明属于食品保健领域,具体涉及一种减肥保健饮料及其制作方法。
背景技术
近年来随着人民生活水平的不断提高,对食品种类的需求越来越多,市面上出现各种各样的的饮料。
肥胖是机体脂肪细胞数量增加或体积肥大使体内脂肪堆积过多和(或)分布异常,体重超过标准体重20%以上的病理状态。另一方面,肥胖症又是多种复杂情况的综合体,如它需要与2型糖尿病、高血压、血脂异常、缺血性心脏病等集结出现,因而它又是一个慢性的代谢异常疾病。消减肥胖的茶剂。据称有减少脂肪、减少胆固醇、祛除疲劳等作用。过度饮用会引起营养失调和腹泻。市面上出现许多具有减肥功效的减肥茶,营养方式已经受到重视,减肥茶据称有减少脂肪、减少胆固醇、祛除疲劳等作用。但是过度饮用会引起营养失调和腹泻。目前沿未出现一种既具有减肥功效,同时富含多种营养成分的饮料。
发明内容
本发明的目的在于提供一种减肥保健饮料及其制作方法,既可缓解莲子壳、笋壳堆积浪费,又可为保健饮料资源的高效开发利用提供新的增长亮点。
本发明采取的技术方案如下:
本发明首先提供了一种减肥保健饮料,所述减肥保健饮料的原料配方按质量百分比为:玉米8~12%、麦芽粉5~10%、羊蹄草3~5%、甘草3~5%、茶树鲜叶3~5%、笋壳3~5%、莲子壳3~5%、无糖型甜味剂1%~3%,山茶籽油0.25%~1%、柠檬酸0.15%~0.30%、稳定剂0.05%~0.20%、余量为水。
所述无糖型甜味剂为甜菊苷或木糖醇。
所述的稳定剂为单甘酯、羧甲基纤维素钠或瓜尔豆胶。
其次,本发明提供了一种所述减肥保健饮料的制作方法,包括以下步骤:
(1)笋壳洗净切片,与洗净的茶树鲜叶一起炒制,高温杀青、过筛除杂,然后加入洗净的羊蹄草、甘草,与水混合煎煮;
(2)将洗净、粉碎的莲子壳,山茶籽油与无糖型甜味剂加入到步骤(1)的煎煮液中,加热煮沸,趁热用40~200目绢布过滤;
(3)洗净的玉米破碎,与麦芽粉混合加水蒸煮糊化,加水蒸煮糊化,趁热用40~200目绢布过滤;
(4)将(2)和(3)的滤液混合,加入柠檬酸和稳定剂,搅拌均匀,罐装,高温杀菌,得到减肥保健饮料。
笋壳原料为竹笋加工厂废弃笋壳或收集笋壳,笋壳原料的重量百分含水量为 80%左右。
本发明采用的原料具有以下功效:
1、玉米:玉米营养丰富:含有碳水化合物:74.8克,蛋白质:29克,脂肪:16.6克,膳食纤维6.9克。可以说玉米是当之无愧的第一黄金主食”,营养专家称,玉米所含的“全能营养”适合各个年龄段的人群食用;所含维生素B族能调节神经,是适合白领的“减压食品”;富含的亚油酸、钙质,能帮助调脂、降压,高纤维含量则使玉米成为很好的“刮肠食物”,能预防中年发福;此外,玉米中富含的谷胱甘肽是最有效的抗癌成分,其所含丰富的维生素E也能帮助抗衰老,软化血管。本发明的玉米原料包括甜玉米、糯玉米。
2、茶树鲜叶:我国夏秋茶树鲜叶约占全年茶树鲜叶总产的 60%,然而因苦涩味重、成茶品质差、卖价低等因素,导致夏秋茶树鲜叶资源绝大部分被白白浪费掉了。茶树叶茶多酚具有很强的抗氧化性和生理活性,可防癌和降血脂,防电脑辐射;有助于美容护肤、醒脑提神、利尿解乏;此外茶树叶中含氟量较高护齿明目。本发明的茶树鲜叶原料可在春、夏、秋三季由茶园采摘获得,对茶树的品种没有特别要求。
3、山茶籽油:山茶籽油是中国特有的食用油,具有很高的营养价值和保健作用。山茶籽油,又名山茶油、茶树油、茶油,是从山茶科油茶树种子中获得的。茶油的不饱和脂肪酸含量高达90%,远远高于花生油和豆油,与橄榄油比,维生素E含量高一倍,具有极高的营养价值,有降低血压、血脂和软化血管等作用。
4、笋壳:我国约有 60%左右的鲜笋用作加工原料,但加工过程中也产生大量废弃笋壳。研究表明,笋壳含粗蛋白 9.0%、氨基酸 1.7%、粗脂肪 1.56%、粗纤维 26.3%、总糖 19.7%、灰分 8.72%、磷 0.2%、钾 3.0%、钙0.16%,具有很好的营养价值。其中木质纤维含量高,可以加快肠道蠕动,将脂肪和毒素排出,使体内环境得到净化。
5、莲子壳:莲子壳是子莲加工产生的大量的副产物,由于莲子壳质硬壁厚,利用率较低,大多数被莲农焚烧在稻田里作肥田之用。经研究表示,莲子壳主要营养成分中纤维含量较高,其次是淀粉、单宁和灰分;且莲子壳类黄酮含量较高,其在油脂体系中的抗氧化功能特性反映了黄酮阻断自由基的综合能力,对延缓细胞衰老等有积极的作用。另外莲子壳还含有莲叶碱、N-去甲亚美罂粟碱、氧化黄心树宁碱等生物碱,具有调血脂活性,减肥降脂作用。
6、羊蹄草:一点红,又名叶下红、红背叶、羊蹄草、假芥兰。始载于《植物名实图考》,原名紫背草。为菊科植物一点红Emilia sor.chifolia (L.)DC.的全草。本品味微苦,性凉。功能清热解毒,散瘀消肿。
7、麦芽:甘,平。归脾、胃经、肝经。行气消食,健脾开胃。
这些成分相互配合,协同作用,具有减肥、明目、润肠、提神、抗衰老、抗辐射等保健功效。
本发明的独特功效在于:
(1)本发明制作的减肥保健饮料,内含各种人体所需的必需氨基酸,口味独特、营养丰富,且脂肪和糖份含量小,适宜人群更广,具有减肥、明目、润肠、提神、抗衰老、抗辐射等辅助功效,也是一种很好的消暑保健饮料。
(2)动物试验结果显示:实验组的体重和体内脂肪重量低于模型对照组,差异有显著性,摄食量不显著低于模型对照组,结果判定本发明产品对动物减肥实验结果阳性。
(3)人体试食试验结果显示:本发明产品为不替代主食的减肥功能食品,实验组体内脂肪重量减少,腰围和臀围减少,且差异有显著性,运动耐力不下降,对机体健康无明显损害,并排除膳食及运动对减肥功能作用的影响,结果判定本发明产品具有减肥功能的作用。
(4)本发明制备工艺简便易行,生产成本低,有利于产业化生产和产生较高的附加值。本发明具有营养互补、风味协调、营养丰富、保健功能等优点,可作为一款口味绝佳的功能型饮料。
具体实施方式
下面通过实施例对本发明作进一步的说明,其目的仅在于更好理解本发明的内容而非限制本发明的保护范围:
实施例1:
一种减肥保健饮料,原料配方按质量百分比为:玉米10%、麦芽粉5%、羊蹄草3%、甘草3%、茶树鲜叶3%、笋壳3%、莲子壳3%、无糖型甜味剂3%,山茶籽油0.25%、柠檬酸0.15%、稳定剂0.05%、余量为水。
制作方法:
(1)笋壳洗净切片,与洗净的茶树鲜叶一起炒制,至叶色失去光泽,青草味消失,然后过筛除杂,然后加入洗净的羊蹄草、甘草,与水混合煎煮;
(2)将洗净、粉碎的莲子壳,山茶籽油与无糖型甜味剂加入到步骤(1)的煎煮液中,加热煮沸,趁热用40~200目绢布过滤;
(3)洗净的玉米破碎,取颗粒饱满、外观完整和清洁的麦芽,用粉碎机粉碎,过40 目筛,成为较为均匀的粉末。上述两种混合加水蒸煮糊化,趁热用40~200目绢布过滤;
(4)将(2)和(3)的滤液混合,加入柠檬酸和稳定剂,搅拌均匀,罐装,高温杀菌,得到减肥保健饮料。
实施例2:
一种减肥保健饮料,原料配方按质量百分比为:玉米8%、麦芽粉8%、羊蹄草4%、甘草4%、茶树鲜叶4%、笋壳4%、莲子壳4%、无糖型甜味剂2%,山茶籽油0.5%、柠檬酸0.2%、稳定剂0.1%、余量为水。
制作方法:
(1)笋壳洗净切片,与洗净的茶树鲜叶一起炒制,至叶色失去光泽,青草味消失,然后过筛除杂,然后加入洗净的羊蹄草、甘草,与水混合煎煮;
(2)将洗净、粉碎的莲子壳,山茶籽油与无糖型甜味剂加入到步骤(1)的煎煮液中,加热煮沸,趁热用40~200目绢布过滤;
(3)洗净的玉米破碎,取颗粒饱满、外观完整和清洁的麦芽,用粉碎机粉碎,过80 目筛,成为较为均匀的粉末。上述两种混合加水蒸煮糊化,趁热用40~200目绢布过滤;
(4)将(2)和(3)的滤液混合,加入柠檬酸和稳定剂,搅拌均匀,罐装,高温杀菌,得到减肥保健饮料。
实施例3:
一种减肥保健饮料,原料配方按质量百分比为:玉米12%、麦芽粉10%、羊蹄草5%、甘草5%、茶树鲜叶5%、笋壳5%、莲子壳5%、无糖型甜味剂1%,山茶籽油1%、柠檬酸0.30%、稳定剂0.20%、余量为水。
制作方法:
(1)笋壳洗净切片,与洗净的茶树鲜叶一起炒制,至叶色失去光泽,青草味消失,然后过筛除杂,然后加入洗净的羊蹄草、甘草,与水混合煎煮;
(2)将洗净、粉碎的莲子壳,山茶籽油与无糖型甜味剂加入到步骤(1)的煎煮液中,加热煮沸,趁热用40~200目绢布过滤;
(3)洗净的玉米破碎,取颗粒饱满、外观完整和清洁的麦芽,用粉碎机粉碎,过60目筛,成为较为均匀的粉末。上述两种混合加水蒸煮糊化,趁热用40~200目绢布过滤;
(4)将(2)和(3)的滤液混合,加入柠檬酸和稳定剂,搅拌均匀,罐装,高温杀菌,得到减肥保健饮料。
以下通过应用例进一步说明本发明的有益效果:
随机抽取人群样本116 例,其中男61,女55,年龄23 ~ 30岁,无遗传病史,无精神病史。饮用本发明的饮料,每天早晚各饮用一次,每次饮用200~300ml,坚持饮用一个月。试用结果表明,该随机试用人群均未出现身体不良反应,其中42 例显著有效(平均减重6kg),43 例有效(平均减重3kg),31 例无效(体重未有明显变化)。
实际应用例1:郭某某,女,25岁,身高154cm,体重75公斤。饮用本发明的饮料,每天早晚各饮用一次,每次200ml左右,连续饮用一个月,期间饮食一日三餐合理安排, 30 天后体重降为 70 公斤,无任何不良反应。其坚持饮用半年,现在体重53公斤,身体健康。
实际应用例2:杨某某,男,30 岁,身高170cm,体重185 斤,饮用本发明饮料,每天早晚各饮用一次,每次250ml左右,同时每天中午饭前吃一个苹果,一个月后体重降为170斤,无任何不良反应。其坚持饮用半年,现在体重125斤,身体健康。
实际应用例3:王某某,女,35岁,身高163cm,体重78公斤。饮用本发明的饮料,每天早晚各饮用一次,每次200ml左右,连续饮用一个月,期间饮食一日三餐合理安排, 30 天后体重降为 75 公斤,无任何不良反应。其坚持饮用半年,现在体重65公斤,身体健康。
Claims (4)
1.一种减肥保健饮料,其特征在于:所述减肥保健饮料的原料配方按质量百分比为:玉米8~12%、麦芽粉5~10%、羊蹄草3~5%、甘草3~5%、茶树鲜叶3~5%、笋壳3~5%、莲子壳3~5%、无糖型甜味剂1%~3%,山茶籽油0.25%~1%、柠檬酸0.15%~0.30%、稳定剂0.05%~0.20%、余量为水。
2.如权利要求1所述的减肥保健饮料,其特征在于,所述无糖型甜味剂为甜菊苷或木糖醇。
3.如权利要求1所述的减肥保健饮料,其特征在于,所述的稳定剂为单甘酯、羧甲基纤维素钠或瓜尔豆胶。
4.一种如权利要求1-3中任一项所述的减肥保健饮料的制作方法,其特征在于:所述的制作方法包括以下步骤:
(1)笋壳洗净切片,与洗净的茶树鲜叶一起炒制,高温杀青、过筛除杂,然后加入洗净的羊蹄草、甘草,与水混合煎煮;
(2)将洗净、粉碎的莲子壳,山茶籽油与无糖型甜味剂加入到步骤(1)的煎煮液中,加热煮沸,趁热用40~200目绢布过滤;
(3)洗净的玉米破碎,与麦芽粉混合加水蒸煮糊化,趁热用40~200目绢布过滤;
(4)将(2)和(3)的滤液混合,加入柠檬酸和稳定剂,搅拌均匀,罐装,高温杀菌,得到减肥保健饮料。
