背景技术 据资料考证:醪糟,是南方常见的传统地方风味小吃。主要原料是江米,所以也叫江米酒。酒酿在北方一般称它为“米酒”或“甜酒”。 人们常说北京的小吃特别多,其实太原的小吃品种也不少。早年间就有醪糟、杏仁茶、八宝粥、姜汤等等在街头叫卖,也各领风骚几十年。到上世纪50年代这几种食品就在历史的长河中逐渐消失了。太原当年的醪糟是用糯米发酵,类似酒酿的半流质食品。现在偶尔还有走街串巷卖“干醪糟”的,东西基本一样,但卖的方法却大不相同。醪糟是我国民间一道历史悠久的小吃,广泛流行于长江流域,如四川、湖南、江浙等地。将醪糟兑水烧开,放入不同材料如蛋花、少量桂花等。醪糟清香爽口,有酒味但不浓烈。营养口味都更好。 醪糟又叫酒酿、米酒、甜酒,有健脾开胃、舒筋活血、祛湿消痰、补血养颜、延年益寿的功能,最宜中老年人和体弱者饮用。在江南民间,为了给产妇滋补,也有必饮米酒之说。此饮品清香袭人、甜润爽口,富含多种维生素、氨基酸等营养成分,不加任何食品添加剂、防腐剂、色素等,属天然绿色饮品。糯米作为一味中药味甘性温,入脾肾肺经,具有温胃健脾、益气止泻、生津止汗的作用。做成醪糟汤圆后,不仅增强了其补益功能,还增加了活血通络的作用:如对慢性萎缩性胃炎和消化不良者有促进胃液分泌,增加食欲,帮助消化的作用;对慢性关节炎患者有助于活血通络止痛;对大病初愈,身体虚弱、贫血、手术恢复期的病人,可起到辅助治疗作用。
睡莲花花中含生物碱、多糖、槲皮素、木犀草素、异懈皮苷、木犀葡萄糖苷、山柰酚、山柰酚-3-半乳糖葡萄苷、山柰酚-3-二葡萄苷等多种黄酮类。利用睡莲花发育成熟时间和花朵白天开放晚上闭合的生长习性,在睡莲花胚胎营养最丰富和生物活性物质最活跃时加工炮制,睡莲花含胚胎(莲花素、莲花碱等)、睡莲花粉和睡莲花蜜等营养物质,花瓣中的强抗氧化物——花青素苷有抗癌防衰老的作用。利用理化性质和波谱学方法鉴定:结果分得六个黄酮醇苷类化合物,分别为黄芪苷(Ⅰ)、槲皮素3-O-甲基-3′-O-β-D-吡喃木糖苷(Ⅱ)、槲皮素3′-O-β-D-吡喃木糖苷(Ⅲ)、异槲皮苷(Ⅳ)、山萘酚3-O-β-D-芸香糖苷(Ⅴ)、芦丁(Ⅵ)。此外还含有十几种氨基酸、六种维生素及铁、硒等微量元素。这些养分对人体都是有很好的调理作用的,其性温,各种体质的人都可以食用,具有护肤养颜、强身健体、延缓衰老、清热解暑、静心健脑、调节人体内分泌和生物钟等诸多功效。睡莲花气微味淡。是维吾尔医常用的单方或复方抗病毒药中的主要成分。
醪糟尽管品种繁多,发酵的效果不好。菌种老化后味道不佳,时间长,杂菌滋生,容易坏,另有的醪糟糖分含量高,对糖尿病患者不宜。 还有的醪糟对有些体质不同的人易上火,对有些体质的人却会加重湿气,起不到去湿的作用,所以要根据各人情况而定。 醪糟对肝病没有影响,胃酸过多的话吃醪糟会加重情况。本发明用营养丰富的睡莲花酿制醪糟,改变了如上的不足,其营养和疗效及作用是最为理想。
发明内容 本发明的关键技术要点:是选用纯天然睡莲花和优质糯米、优质水通过发酵工艺制成。
本发明的配方如下(重量百分比):纯天然睡莲花10-15.0; 优质糯米30.0-50.0; 优质甜酒曲0.2-0.4;崂山天然矿泉水至100。
睡莲花作用: 睡莲花与合欢花都含有皂甙和鞣质,花都有昼开夜合的属性,它们的叶柄基部细胞,犹如反应灵敏的储水袋,它们在白昼和黑夜,会因光红强弱、温度高低的变化,使储水袋吸水或放水,细胞因此膨胀或收缩,使其展开或闭合。而皂甙和鞣质对人体能解郁安神,滋阴补阳,理气开胃,活络止痛,用于心神不安、忧郁失眠。富含花青素、活性生物酶、胎盘素、异黄酮类、维生素B2、氨基酸、粘液蛋白、胶原蛋白、多糖等活性成分。花青素是一种强有力的抗氧化剂,它能够保护人体免受一种叫做自由基的有害物质的损伤。花青素有跨越血脑屏障的能力,可以直接保护大脑中枢神经系统。花青素还能够增强血管弹性,改善循环系统和增进皮肤的光滑度,抑制炎症和过敏,改善关节的柔韧性。 睡莲植物黄酮醇苷类化合物、天然维生素B2 系天然植物雌激素,这些活性分子能迅速吸收并吞噬掉卵巢病变细胞。无不良的癌变危险,不会给患者心理负担。
优质糯米作用:每100克小米含蛋白质9.7克,比大米高。脂肪1.7克,碳水化合物76.1克,都不低于稻、麦。一般粮食中不含有的胡萝卜素,小米每100克含量达0.12毫克,维生素B1的含量位居所有粮食之首。每100克含能量: 349.00 千卡,蛋白质: 13.60 克,碳水化合物: 67.60 克,脂肪: 2.70 克,水分: 11.30 克,膳食纤维: 3.50 克,灰份: 1.30 克,维生素B1: 0.30 毫克,维生素B2: 0.09 毫克,烟酸: 1.40 毫克,维生素E: 1.79 毫克,钾: 201.00 毫克,钠: 1.70 毫克,钙: 30.00 毫克,镁: 116.00 毫克,铁: 5.70 毫克,锰: 1.50 毫克,锌: 3.05 毫克,铜: 0.57 微克,磷: 244.00 毫克,硒: 2.31 微克,核黄素:0.09毫克,硫胺素:0.30毫克,有一定“补中益气、健脾益肺”等保健功能,另外它还具有滋阴养血的功能。可以使产妇虚寒的体质得到调养,帮助她们恢复体力。
崂山矿泉水的作用:崂山天然矿泉水的主要特征是它含有丰富的对人体健康有益的常量和微量元素,特别是矿泉水标准中规定的微量元素指标的合理含量,更是对人体起到防病和保健作用。 经科学测定,人体血液中各种化学元素,微量元素平均值与地壳中元素丰度值密切相关,矿泉水是溶解地壳中的矿物元素,所以矿泉水中富含人体所必需的微量元素。从近代生物化学、量子化学及结构物理学研究证明,水中矿物质和微量元素对人体生命与健康是不能缺少的,是不能用食物中的矿物质和微量元素完全取代的,水中的矿物质和微量元素是离子态,容易被人体所吸收,其吸收高达90%以上,而且吸收的快。食物中的矿物质和微量元素,由于植物纤维和植酸的影响,吸收率多数不到30%,有的仅为10%以下。所以食用含有矿物质和微量元素的崂山天然矿泉水有益健康。另外还特别值得提出的是:水中pH值对人体健康也是重要因素,人体体液呈弱碱性,pH值范围在7.3~7.45。矿泉水属弱碱性,pH值一般在7.5左右,与人体体液的pH值相吻合,有利于维持正常的渗透压和酸碱平衡,促进新陈代谢。
甜酒曲是主要的发酵制剂。甜酒曲是糖化菌及酵母制剂,其所含的微生物主要有根霉、毛霉及少量酵母。在发酵过程中糖化菌首先将糯米中的淀粉分解成葡萄糖,蛋白质分解成氨基酸,接着少量的酵母又将葡糖糖经糖酵解途径转化成酒精。这样就制成了香甜可口、营养丰富的甜酒曲。甜酒曲是米酒曲的最初产品,它是各类酒类制作的雏形,除了食用外,还有两种用途,一是作为料酒使用,如川式火锅,豆瓣酱中添加;二是制作馒头,如河南周口的米酒馒头、浙江金华的米酒馒头。另外,甜酒曲还可以在调料发酵中使用,因此,甜酒曲的用户有甜酒酿工厂、家庭、餐饮单位、调料生产单位。甜酒酿作为料酒使用,主要是利用其良好的口感的独特的风味,在调味的过程中,它既具有一定的酒香,又有酸、甜的口味,能起到处腥膻异味、提鲜增香等作用,使菜肴风味独特,口味柔和,已经成为烹饪菜肴时不可缺少的调味品。川菜的调味名甲天下,甜酒酿也功不可没,如川味凉菜葱酥鲫鱼的制作。米酒,又叫酒酿、甜酒、烧酒。古人叫“醴”, 即醪糟中的汤汁,米散汤清,蜜香浓郁,入口甜美,含有丰富的多种维生素、葡萄糖、氨基酸等营养成分,食后能开胃提神,并有活气养血、滋阴补肾的功能,产妇和妇女经期多吃,尤有益处,是老幼均宜的营养佳品。米酒(醪糟)入肺经,能补肺之虚寒。肺主皮毛,故醪糟又能养颜,常吃的人皮肤好。
醪糟入肝经,能活血,散结消肿,调经通乳。醪糟入肾经,能补肾虚,治疗虚劳泄泻,腰疼及男性疾病。醪糟甘甜芳醇,能刺激消化腺的分泌,增进食欲,有助消化。用江米酒炖制肉类能使肉质更加细嫩,易于消化。江米经过酿制,营养成分更易于人体吸收,是中老年人,孕产妇和身体虚弱者补气养血之佳品。我国许多地方都有给坐月子的产妇、大病刚愈者食用江米酒的风俗。米酒还有提神解乏、解渴消暑、促进血液循环、润肤的功效。与鸡蛋、红糖同煮或冲服,则补中益气,强健筋骨,可防止神经衰弱,神思恍惚,头晕耳鸣,失眠、健忘等症;如分别与桂圆或荔枝、红枣、核桃、人参同煮,有助阳壮力、滋补气血之功效,对体质虚衰、元气降损、贫血等有疗效。米酒适合所有人食用。温中益气、补气养颜。中老年人、孕产妇和身体虚弱者更加适合。对畏寒、血淤、缺奶、风湿性关节炎、腰酸背痛及手足麻木等症,以热食为好;对神经衰弱、精神恍惚、抑郁健忘等症,加鸡蛋同煮食汤效果较佳;能够帮助血液循环,促进新陈代谢,具有补血养颜、舒筋活络、强身健体和延年益寿的功效.
本发明生产流程: 将糯米泡8--12小时→用中大火蒸30分钟→ 放凉到30℃→加入少许凉开水直至米粒发散→将甜酒曲和糯米饭拌均匀→37℃发酵32-36小时→出醪糟汁即可;
睡莲→烘烤→称量→预煮→打浆→过胶体磨→拌加甜酒曲和糯米饭待发酵。

3)将甜酒曲和糯米饭、睡莲花胶体,摊搅拌均匀装入发酵罐(缸)内,在37℃发酵32-36小时,再倒入二次发酵罐内继续发酵,直到彻底发酵完毕,出醪糟汁即可,成为酒醪;
4)装瓶:冷却后分装瓶中,封口既得成品。
本发明的关键技术事项:
1)根据睡莲花发育成熟时间和花朵白天开放晚上闭合的生长习性,采集含苞未放的花蕾,及时晒干,存于阴凉干燥处,在睡莲花胚胎营养最丰富和生物活性物质最活跃时加工炮制;
2)酿造醪糟必须用米中之王,颗粒饱满整齐、色泽金黄均匀的优质糯米(黍子去壳而成)做原料;
3)酿造醪糟的曲种,必须选用三伏天用优质甜酒曲做糖化发酵剂,即中医所用之“神曲”;
4)水是醪糟之血,好水才能酿出好的醪糟,采用的是甘甜爽口的崂山矿泉水,自然与众不同;
5)酿造醪糟的容器,要选用质地优良、无渗漏的陶器或无毒无味的其它现代容器,器具必须严格杀菌消毒,防止杂菌污染;
6)给糯米饭加凉开水时候不要太大要能挖个洞出来,不然太稀了挖不出来洞的话发酵内部温度太高不易成功;
7)发酵时间不必太长,太长会有酒味,至少得要32小时;使温度能升能降,散热均匀,恰到好处。
具体实施方式 下面结合实施例对本发明作进一步的详细说明:
本发明的配方(重量百分比)纯天然睡莲花10-15.0; 优质糯米30.0-50.0; 优质甜酒曲0.2-0.4;崂山天然矿泉水至100。
本发明生产流程: 将糯米泡8--12小时→用中大火蒸30分钟→ 放凉到30℃→加入少许凉开水直至米粒发散→将甜酒曲和糯米饭拌均匀→37℃发酵32-36小时→出醪糟汁即可。
睡莲→烘烤→称量→预煮→打浆→过胶体磨→拌加甜酒曲和糯米饭待发酵。

Claims (4)
1.本发明涉及一种睡莲花醪糟酒酿,其特征在于具有如下配方(重量百分比%):纯天然睡莲花10-15.0; 优质糯米30.0-50.0; 优质甜酒曲0.2-0.4;崂山天然矿泉水至100。
2.根据权利要求1所述的一种睡莲花醪糟酒酿,其特征在于具有如下生产流程:将糯米泡8--12小时→用中大火蒸30分钟→ 放凉到30℃→加入少许凉开水直至米粒发散→将甜酒曲和糯米饭拌均匀→37℃发酵32-36小时→出醪糟汁即可;睡莲→烘烤→称量→预煮→打浆→过胶体磨→拌加甜酒曲和糯米饭待发酵。
3.根据权利要求1所述的一种睡莲花醪糟酒酿,其特征在于具有如下生产工艺:

4)装瓶:冷却后分装瓶中,封口既得成品。

1)根据睡莲花发育成熟时间和花朵白天开放晚上闭合的生长习性,采集含苞未放的花蕾,及时晒干,存于阴凉干燥处,在睡莲花胚胎营养最丰富和生物活性物质最活跃时加工炮制;
2)酿造醪糟必须用米中之王,颗粒饱满整齐、色泽金黄均匀的优质糯米(黍子去壳而成)做原料;
3)酿造醪糟的曲种,必须选用三伏天用优质甜酒曲做糖化发酵剂,即中医所用之“神曲”;
4)水是醪糟之血,好水才能酿出好的醪糟,采用的是甘甜爽口的崂山矿泉水,自然与众不同;

7)发酵时间不必太长,太长会有酒味,要有使温度能升能降系统,散热均匀,恰到好处。
