Abstract
本发明提供了一种啤酒味瓜子及其制备方法,由以下重量份原料制备而成:60‑80份瓜子、5‑8份薄荷叶、1‑2份金银花、2‑3份银杏叶、5‑6份山楂、1‑2份野菊花、0.5‑1份柠檬草、20‑30份啤酒、5‑8份白糖、4‑6份八角、3‑5份桂皮、3‑4份食盐。本发明提供了一种啤酒味瓜子及其制备方法,利用多种中药配方有效的解决了嗑瓜子引起的上火问题,且通过大料与啤酒进行调味,使得本发明具备独特的风味,既健康又好吃,老少咸宜,同时本发明制作的西瓜子,长期食用,具有健胃,降火等功效。
Description
技术领域
本发明涉及食品加工技术领域,尤其涉及一种啤酒味瓜子及其制备方法。
背景技术
瓜子本身营养就很高,其中所含有的维生素、蛋白质、油类含量都属佼佼者。瓜子,又叫瓜子儿。它的种类较多,有葵花子、海瓜子、白瓜子、吊瓜子、西瓜子、南瓜籽、黄瓜子、丝瓜子等。葵花子是向日葵的果实,不但可以作为零食,而且还可以作为制作糕点的原料,同时也是重要的榨油原料,是高档健康的油脂来源。海瓜子是一种海水特产,其特点是肉质鲜嫩、清爽可口。白瓜子炒熟后可直接食用,也可加料制成多味瓜子,味道香美。吊瓜子炒熟后味道润绵、脆香特异、其外观褐色艳丽、籽仁饱满,被誉为“瓜子之王”,是食用瓜籽中的上品。
新鲜西瓜子常被炒熟或煮熟干制后食用,它营养丰富,功能广泛,西瓜子 含有丰富蛋白质、脂肪酸、B族维生素、钙、镁、钾、铁、硒等营养元素,有 清肺化痰的作用,对咳嗽痰多和咯血等症有辅助疗效,可帮助体弱的妇女补充 蛋白质,也可帮助儿童补锌补铁,还有助于预防老年人动脉硬化,是非常受欢 迎的零食小吃。
啤酒是一种风味独特的饮料,深受广大消费者热爱,为此我们特意配置出一种啤酒味的瓜子,既满足嗑瓜子的乐趣,又增添了瓜子本身的风味。
发明内容
本发明的目的在于提供一种啤酒味瓜子及其制备方法,以解决上述技术问题。
本发明为解决上述技术问题,采用以下技术方案来实现:
一种啤酒味瓜子,由以下重量份原料制备而成:60-80份瓜子、5-8份薄荷叶、1-2份金银花、2-3份银杏叶、5-6份山楂、1-2份野菊花、0.5-1份柠檬草、20-30份啤酒、5-8份白糖、4-6份八角、3-5份桂皮、3-4份食盐。
优选地,所述瓜子为西瓜子。
优选地,所述瓜子颗粒饱满、大小均匀、无霉变、无腐烂。
一种啤酒味瓜子的制备方法,包括以下步骤:
A.将瓜子倒入温水中,并加入纤维素酶,均匀搅拌10-15分钟,搅拌结束后,继续浸泡1-2小时;
B.将瓜子取出并沥干,然后放入-50~-40℃的冷库中冷冻45-60分钟,冷冻后取出并烘干;
C.将薄荷叶、金银花、银杏叶、山楂、野菊花、柠檬草加入清水中,煎煮2-4次,合并滤液并得到药液;
D.将八角、桂皮、红糖、食盐倒入锅中并加入清水用小火熬煮,待煮沸后转中火继续熬煮1-2小时,熬煮结束后进行过滤,并取卤液;
E.将瓜子、药液、卤液进行均匀混合,并用小火熬煮,待完全收汁后加入啤酒,并用大火收汁;
F.将瓜子进行烘烤,烘烤结束后放凉,晾干既得啤酒味瓜子。
优选地,所述步骤A中,温水的温度为40-50℃。
优选地,所述步骤C中,煎煮温度为100-120℃,首次煎煮时间为70-80分钟,后续煎煮时间每次递减5-10分钟。
优选地,所述步骤F中,烘烤温度为80-90℃,烘烤时间为60-80分钟,每烘烤6-8分钟,将瓜子翻动一次。
西瓜子含有丰富蛋白质、脂肪酸、B族维生素、维生素E、钾、铁、硒等营养元素,有清肺化痰的作用,对咳嗽痰多和咯血等症有辅助疗效;西瓜子富含油脂,有健胃、通便的作用;西瓜子含有不饱和脂肪酸,有降低血压的功效,并有助于预防动脉硬化,是适合高血压病人的小吃;西瓜子性味甘,性平,无毒,具有利肺,润肠,止血,健胃等功效。
薄荷是中华常用中药之一。它是辛凉性发汗解热药,治流行性感冒、头疼、目赤、身热、咽喉、牙床肿痛等症。外用可治神经痛、皮肤瘙痒、皮疹和湿疹等。平常以薄荷代茶,清心明目。
金银花 ,又名忍冬。“金银花”一名出自《本草纲目》,由于忍冬花初开为白色,后转为黄色,因此得名金银花。药材金银花为忍冬科忍冬属植物忍冬及同属植物干燥花蕾或带初开的花;金银花自古以来就以它的药用价值广泛而著名。其功效主要是清热解毒,主治温病发热、热毒血痢、痈疽疔毒等。现代研究证明,金银花含有绿原酸、木犀草素苷等药理活性成分,对溶血性链球菌、金黄葡萄球菌等多种致病菌及上呼吸道感染致病病毒等有较强的抑制力;
银杏叶则具有活血化瘀,通络止痛,敛肺平喘,化浊降脂的功效。
山楂是核果类水果,核质硬,果肉薄,味微酸涩。果可生吃或作果脯果糕,干制后可入药,是中国特有的药果兼用树种,具有降血脂、血压、强心、抗心律不齐等作用,同时也是健脾开胃、消食化滞、活血化痰的良药,对胸膈脾满、疝气、血淤、闭经等症有很好的疗效。
野菊花性微寒,具疏散风热、消肿解毒。能治疗疔疮痈肿、咽喉肿痛、风火赤眼、头痛眩晕等病证。
柠檬草,别名:香茅,多年生密丛型具香味草本。粗壮,节下被白色蜡粉。叶鞘无毛,不向 外反卷,内面浅绿色;叶舌质厚,顶端长渐尖,平滑或边缘粗糙。柠檬草有健胃、利尿、防止贫血及滋润皮肤,据印度的传统医术中视柠檬草为治疗百病的药用植物,由此可看出柠檬草的功效与作用是非常多的。气味芬芳而且有杀菌抗病毒的作用,从古至今受到医家的推崇。可调节油脂分泌,有益于油性肤质和发质,可加入水中清洁皮肤,促进血液循环。
本发明的有益效果是:本发明提供了一种啤酒味瓜子及其制备方法,利用多种中药配方有效的解决了嗑瓜子引起的上火问题,且通过大料与啤酒进行调味,使得本发明具备独特的风味,既健康又好吃,老少咸宜,同时本发明制作的西瓜子,长期食用,具有健胃,降火等功效。

为了使本发明实现的技术手段、创作特征、达成目的与功效易于明白了解,下面结合具体实施例,进一步阐述本发明,但下述实施例仅仅为本发明的优选实施例,并非全部。基于实施方式中的实施例,本领域技术人员在没有做出创造性劳动的前提下所获得其它实施例,都属于本发明的保护范围。下述实施例中的实验方法,如无特殊说明,均为常规方法,下述实施例中所用的材料、试剂等,如无特殊说明,均可从商业途径得到。
实施例1
A.将60份瓜子倒入温水中,并加入纤维素酶,均匀搅拌10分钟,搅拌结束后,继续浸泡1小时;
B.将瓜子取出并沥干,然后放入-50℃的冷库中冷冻45分钟,冷冻后取出并烘干;
C.将5份薄荷、1份金银花、2份银杏叶、5份山楂、1份野菊花、0.5柠檬草加入清水中,煎煮2次,合并滤液并得到药液;
D.将4份八角、3份桂皮、5份红糖、3份食盐倒入锅中并加入清水用小火熬煮,待煮沸后转中火继续熬煮1小时,熬煮结束后进行过滤,并取卤液;
E.将瓜子、药液、卤液进行均匀混合,并用小火熬煮,待完全收汁后加入20份啤酒,并用大火收汁;
F.将瓜子进行烘烤,烘烤结束后放凉,既得啤酒味瓜子。
所选瓜子为西瓜子;所选瓜子颗粒饱满、大小均匀、无霉变、无腐烂;步骤A中,温水的温度为40℃;步骤C中,煎煮温度为100℃,首次煎煮时间为70分钟,后续煎煮时间每次递减5分钟;步骤F中,烘烤温度为80℃,烘烤时间为60分钟,每烘烤6分钟,将瓜子翻动一次。
实施例2
A.将80份瓜子倒入温水中,并加入纤维素酶,均匀搅拌15分钟,搅拌结束后,继续浸泡2小时;
B.将瓜子取出并沥干,然后放入40℃的冷库中冷冻60分钟,冷冻后取出并烘干;
C.将5份薄荷、2份金银花、3份银杏叶、6份山楂、2份野菊花、1柠檬草加入清水中,煎煮4次,合并滤液并得到药液;
D.将6份八角、5份桂皮、8份红糖、4份食盐倒入锅中并加入清水用小火熬煮,待煮沸后转中火继续熬煮2小时,熬煮结束后进行过滤,并取卤液;
E.将瓜子、药液、卤液进行均匀混合,并用小火熬煮,待完全收汁后加入30份啤酒,并用大火收汁;
F.将瓜子进行烘烤,烘烤结束后放凉,既得啤酒味瓜子。
所选瓜子为西瓜子;所选瓜子颗粒饱满、大小均匀、无霉变、无腐烂;步骤A中,温水的温度为50℃;步骤C中,煎煮温度为120℃,首次煎煮时间为80分钟,后续煎煮时间每次递减10分钟;步骤F中,烘烤温度为90℃,烘烤时间为80分钟,每烘烤8分钟,将瓜子翻动一次。
实施例3
A.将70份瓜子倒入温水中,并加入纤维素酶,均匀搅拌12分钟,搅拌结束后,继续浸泡1.5小时;
B.将瓜子取出并沥干,然后放入-45℃的冷库中冷冻55分钟,冷冻后取出并烘干;
C.将6份薄荷、1.5份金银花、2.5份银杏叶、5.5份山楂、1.5份野菊花、0.5柠檬草加入清水中,煎煮3次,合并滤液并得到药液;
D.将5份八角、4份桂皮、7份红糖、份食盐倒入锅中并加入清水用小火熬煮,待煮沸后转中火继续熬煮1小时,熬煮结束后进行过滤,并取卤液;
E.将瓜子、药液、卤液进行均匀混合,并用小火熬煮,待完全收汁后加入25份啤酒,并用大火收汁;
F.将瓜子进行烘烤,烘烤结束后放凉,既得啤酒味瓜子。
所选瓜子为西瓜子;所选瓜子颗粒饱满、大小均匀、无霉变、无腐烂;步骤A中,温水的温度为45℃;步骤C中,煎煮温度为110℃,首次煎煮时间为75分钟,后续煎煮时间每次递减5分钟;步骤F中,烘烤温度为85℃,烘烤时间为70分钟,每烘烤7分钟,将瓜子翻动一次。
本发明提供了一种啤酒味瓜子及其制备方法,利用多种中药配方有效的解决了嗑瓜子引起的上火问题,且通过大料与啤酒进行调味,使得本发明具备独特的风味,既健康又好吃,老少咸宜。

1.一种啤酒味瓜子,其特征在于,由以下重量份原料制备而成:60-80份瓜子、5-8份薄荷叶、1-2份金银花、2-3份银杏叶、5-6份山楂、1-2份野菊花、0.5-1份柠檬草、20-30份啤酒、5-8份白糖、4-6份八角、3-5份桂皮、3-4份食盐。
2.根据权利要求1所述的一种啤酒味瓜子,其特征在于,所述瓜子为西瓜子。
3.根据权利要求1所述的一种啤酒味瓜子,其特征在于,所述瓜子仁颗粒饱满、大小均匀、无霉变、无腐烂。
4.一种啤酒味瓜子的制备方法,其特征在于,包括以下步骤:
A.将瓜子倒入温水中,并加入纤维素酶,均匀搅拌10-15分钟,搅拌结束后,继续浸泡1-2小时;
B.将瓜子取出并沥干,然后放入-50℃~-40℃的冷库中冷冻45-60分钟,冷冻后取出并烘干;
C.将薄荷叶、金银花、银杏叶、山楂、野菊花、柠檬草加入清水中,煎煮2-4次,合并滤液并得到药液;
D.将八角、桂皮、白糖、食盐倒入锅中并加入清水用小火熬煮,待煮沸后转中火继续熬煮1-2小时,熬煮结束后进行过滤,并取卤液;
E.将瓜子、药液、卤液进行均匀混合,并用小火熬煮,待完全收汁后加入啤酒,并用大火收汁;
F.将瓜子进行烘烤,烘烤结束后放凉,既得啤酒味瓜子。
5.根据权利要求4所述的一种啤酒味瓜子的制备方法,其特征在于,所述步骤A中,温水的温度为40-50℃。
6.根据权利要求4所述的一种啤酒味瓜子的制备方法,其特征在于,所述步骤C中,煎煮温度为100-120℃,首次煎煮时间为70-80分钟,后续煎煮时间每次递减5-10分钟。
7.根据权利要求4所述的一种啤酒味瓜子的制备方法,其特征在于,所述步骤F中,烘烤温度为80-90℃,烘烤时间为60-80分钟,每烘烤6-8分钟,将瓜子翻动一次。
