本发明涉及一种香辣苔干的制作方法,属于食品加工技术领域。
背景技术
苔干,含有营养丰富的蛋白质、果胶及多种氨基酸、维生素和人体必须的钙、铁、锌、胡萝卜素、钾、钠、磷等多种微量元素及碳水化合物,具有降血压,通经脉,活血健脑,开胸利气,壮筋骨,抗衰老,清热解毒,预防高血压,冠心病等功效。
随着生活水平的提高,人们注重食品的口感的同时,也更加注重食品营养保健功能丰富性,本发明提供一种香辣苔干的制作方法,满足人们的需求。
发明内容
本发明的目的在于提供一种香辣苔干的制作方法。
本发明采用的技术方案如下:
一种香辣苔干的制作方法,包括以下步骤:
(1)、称取下列重量份的原料:新鲜贡菜100-120、西瓜皮30-40、红辣椒10-15、食盐5-12、海萝5-10、料酒10-15、香辛料0.05-0.2、钩藤2-3、五味子2-3、生甘草1-2、串铃草1-2、五爪龙1-2、青风藤1-2、荷叶1-2、栝楼根2-3、玉米须2-3、植物油适量;
(2)、将西瓜皮去外层青皮及内层红瓤,洗净切丝,红辣椒去蒂去籽切丝,与西瓜丝入熟油锅内煸炒,加入料酒、香辛料文火焖润至熟香,加水煮沸10-15分钟,捞出西瓜丝、辣椒丝晒干,研磨成粉,煎煮液过滤去渣,得香辣液;
(3)、将钩藤、五味子、生甘草、串铃草、五爪龙、青风藤、荷叶、栝楼根、玉米须等合并破碎,加水煎煮,过滤去渣,得中药液;
(4)、将新鲜贡菜去皮切条,焯水漂烫2-4分钟,冲洗沥干蒸熟晒制半干,加入中药液,浸泡20-40分钟,文火焖煮至微干待用;
(5)、将海萝除杂清洗,加水浸泡1-2小时,沥干磨浆,加水熬煮胶状,加入香辣液、食盐、步骤(2)中磨粉混合均匀,加入步骤(4)处理贡菜条,在8-15℃腌制18-24小时,灭菌即得。
本发明的有益效果为:

具体实施方式
一种香辣苔干的制作方法,包括以下步骤:
(1)、称取下列重量(斤)的原料:新鲜贡菜120、西瓜皮30、红辣椒15、食盐12、海萝10、料酒15、香辛料0.1、钩藤2、五味子2、生甘草1、串铃草1、五爪龙2、青风藤2、荷叶2、栝楼根2、玉米须3、植物油适量;
(2)、将西瓜皮去外层青皮及内层红瓤,洗净切丝,红辣椒去蒂去籽切丝,与西瓜丝入熟油锅内煸炒,加入料酒、香辛料文火焖润至熟香,加水煮沸13分钟,捞出西瓜丝、辣椒丝晒干,研磨成粉,煎煮液过滤去渣,得香辣液;
(3)、将钩藤、五味子、生甘草、串铃草、五爪龙、青风藤、荷叶、栝楼根、玉米须等合并破碎,加水煎煮,过滤去渣,得中药液;
(4)、将新鲜贡菜去皮切条,焯水漂烫4分钟,冲洗沥干蒸熟晒制半干,加入中药液,浸泡38分钟,文火焖煮至微干待用;
(5)、将海萝除杂清洗,加水浸泡2小时,沥干磨浆,加水熬煮胶状,加入香辣液、食盐、步骤(2)中磨粉混合均匀,加入步骤(4)处理贡菜条,在10℃腌制20小时,灭菌即得。

1.一种香辣苔干的制作方法,其特征在于,包括以下步骤:
(1)、称取下列重量份的原料:新鲜贡菜100-120、西瓜皮30-40、红辣椒10-15、食盐5-12、海萝5-10、料酒10-15、香辛料0.05-0.2、钩藤2-3、五味子2-3、生甘草1-2、串铃草1-2、五爪龙1-2、青风藤1-2、荷叶1-2、栝楼根2-3、玉米须2-3、植物油适量;
(2)、将西瓜皮去外层青皮及内层红瓤,洗净切丝,红辣椒去蒂去籽切丝,与西瓜丝入熟油锅内煸炒,加入料酒、香辛料文火焖润至熟香,加水煮沸10-15分钟,捞出西瓜丝、辣椒丝晒干,研磨成粉,煎煮液过滤去渣,得香辣液;
(3)、将钩藤、五味子、生甘草、串铃草、五爪龙、青风藤、荷叶、栝楼根、玉米须等合并破碎,加水煎煮,过滤去渣,得中药液;
