技术背景
随着生活质量的提高,肥胖人数正在每年递增,严重危害到人的健康,减脂越来越收到重视。但由于减脂过程中摄入营养比例搭配不合理,往往导致减脂失败。皮质醇分泌自肾上腺皮质,是一种分解代谢激素,属于糖皮质激素,对糖代谢具有极大影响。碳水化合物摄入不足时,皮质醇会指挥身体分解脂肪、蛋白质和糖,调度比例以及控制何时分解。它既能把脂肪以甘油三酯的形式带到肌肉中,也能分解肌肉,将其转化为糖原为机体提供能量。早晨时皮质醇水平会升高,高强度训练后程和结束后皮质醇水平也会升高,持续的高水平皮质醇不利于减脂和增肌。原因在于,持续的过高的皮质醇会使得顽固脂肪逐渐积累,同时会加速肌肉的分解。此外,慢性皮质醇水平高对健康的危害很大,会导致包括体重增加、抑郁、短期记忆力衰退、脑损伤在内的一系列问题。皮质醇通过调控营养物质代谢,使得到达大脑的营养物质减少,持续高水平皮质醇会对大脑内与记忆有关的海马体造成损害,长期皮质醇水平高的人在年老后丧失记忆力或患老年痴呆症的风险较高。

其中:灭菌功率为425 W~500W,灭菌时间为100 s~120 s。
本发明所述的适于长期健身的运动补剂的食用方法如下:
目标人群的年龄为18~50岁的长期健身人群,不包括孕妇和哺乳期妇女;
可作为目标人群的单一营养来源长期食用;
食用量为每日4 g/kg~5 g/kg,在早餐及训练前后,食用每日总量的70%,30%平均分配在其余正餐和加餐;

本发明有益效果如下:
皮质醇是体内重要激素之一,对机体内的碳水化合物、蛋白质、脂肪的代谢有着重要的影响,对维持机体内环境稳定起重要的作用。长期持续过量运动等会导致皮质醇水平长期偏高,不利于减肥。另外,慢性皮质醇水平高对健康的危害很大,会导致包括体重增加或抑郁在内的一系列问题,这可以解释在长期健身的人群中,由于控制碳水化合物的摄入加上长期高强度运动导致的人情绪状态差。本发明所述的运动补剂中碳水化合物、蛋白质、脂肪三大营养素原料选择、组成含量和搭配比例,有助于合理调控减脂过程中皮质醇的含量,避免了因长期高强度运动造成的皮质醇水平持续升高,同时,适量的碳水化合物,有助于保持良好的心情,通过调节应激作用,使得皮质醇水平保持在正常范围,进而抑制了顽固脂肪的储存,使得内脏脂肪细胞不会过量分化,避免形成苹果型身材。
本发明所述的蛋白为乳清蛋白和大豆蛋白组成的双蛋白,乳清蛋白是优质蛋白质,营养价值高,必需氨基酸种类和含量齐全,含有丰富的亮氨酸,能够减少减脂运动后肌肉酸痛的问题。另外,大豆蛋白不但营养价值高,氨基酸结构接近人体氨基酸,也具有恢复运动后肌肉损伤的功效,同时其价格便宜,但是其口感不佳,具有腥味,且溶解性不好。乳清蛋白具有口感佳、溶解性好的优点,但是其价格较高。大豆蛋白和乳清蛋白的混合,通过动植物蛋白的优势互补,发挥了各自调节生理状态的功效,有助于减脂运动后肌肉的恢复,同时又改善了口感,降低了原料成本。大豆蛋白的添加还有助于降低因加工和贮藏造成的乳清蛋白羰基化现象,有利于产品的稳定性。
本发明中大豆蛋白和乳清蛋白经过超微粉碎机微粒化处理,改善了产品的乳化性、乳化稳定性以及溶解性,增加了产品的起泡性及泡沫稳定性,使得产品产生类似奶油的滑腻口感,从而改善产品的口感。
相对于芹菜中的膳食纤维,本发明中的豌豆膳食纤维具有一定的可溶性,对胃肠的刺激更加柔和,效果更深入、持久。豌豆膳食纤维能够促进肠道内有益菌的增殖,豌豆膳食纤维具有可溶性能被肠道细菌分解,进而刺激大肠,促进肠道蠕动,促进良好的消化和排泄固体废物,有利于腹部的塑形。本专利的豌豆膳食纤维及其含量范围可以减少消化过程中脂肪的吸收,起到一定的减肥作用。
正在减脂的人对于B族维生素的需求很高,促进代谢需要酶的参与,酶发挥作用需要活化,而B族维生素是酶的辅基,参与体内物质代谢和能量合成,维持脂肪的代谢,同时还能保护肝脏。另外,B族维生素中的肌醇有着重新分布体内脂肪分布的作用,对塑形和改善体态有一定作用,同时肌醇能够促进运动后疲劳的恢复。因此,本配方中含有维生素B1 、B2 、B6 、B12,而且其含量范围和组成有助于加快减肥速度。
本发明中含有的钾离子及其含量范围可以促使可导致血压上升的钠通过尿液排出体外,有助于消除浮肿。
本发明所述的适于长期健身的运动补剂不仅可以缓解长期健身导致的情绪差的情况,还有辅助减脂塑形的功效,同时价格低廉,适于低收入者长期食用,营养搭配合理,易于消化吸收,能够满足长期健身过程中的营养需求。
具体实施方式
以下通过实施例对本发明进一步说明,但这些实施例并不用于限制本发明的保护范围和适用范围。
实施例 1
制备每百克适于长期健身的运动补剂的原料如下:双蛋白(大豆蛋白24.25 g和乳清蛋白24.25 g)、椰子油9.50 g、羟丙基淀粉31.46 g、豌豆膳食纤维7.14 g、醋酸视黄酯189.21μg、维生素D2 3.363 μg、D-α-生育酚3.363 mg、维生素K1 18.59 μg、盐酸硫胺素0.40 mg、核黄素0.354 mg、盐酸吡哆醇0.432 mg、氰钴胺0.531 μg、烟酸0.89 mg、叶酸93.81 μg、D-泛酸钙2.69 mg、L-抗坏血酸23.01 mg、D-生物素8.85 μg、氯化钠500 mg、柠檬酸钾260 mg、硫酸铜500 μg、氧化镁122 mg、富马酸亚铁13 mg、氧化锌6.5 mg、硫酸锰1.1 mg、柠檬酸钙1146 mg、磷酸二氢钾702 mg、碘酸钾50 μg、亚硒酸钠53 μg、氯化铬40 μg。
制备方法如下:
双蛋白的制备方法为:将24.25 g大豆蛋白和24.25 g乳清蛋白混合,经超微粉碎-微粒化后得到双蛋白,其中超微粉碎工艺为:气流压力为0.90 MPa,气流温度为15 ℃,气流式超微粉碎机的变频电机转速16500 r/min,控制物料的粉碎粒度5 μm;微粒化处理工艺如下:0.10 g/mL蛋白分散液 90 ℃ 湿热处理 30 min 后,采用高速乳化剪切机12000 r/min 处理4 min。
将双蛋白、椰子油、麦芽糊精、醋酸视黄酯、维生素D2、D-α-生育酚、维生素K1、盐酸硫胺素、核黄素、盐酸吡哆醇、氰钴胺、烟酸、叶酸、D-泛酸钙、L-抗坏血酸、D-生物素、氯化钠、柠檬酸钾、硫酸铜、氧化镁、富马酸亚铁、氧化锌、硫酸锰、柠檬酸钙、磷酸二氢钾、碘酸钾、亚硒酸钠、氯化铬,于500 W的灭菌器中灭菌100 s,灭菌后,形成功能袋;
将大豆油于500 W的灭菌器中灭菌100 s,灭菌后,形成能量袋。
实施例 2
制备每百克适于长期健身的运动补剂的原料如下:双蛋白(大豆蛋白26.10g和乳清蛋白23.0 g)、红花棕榈油9.90 g、羟丙基淀粉25.40 g、豌豆膳食纤维12.50 g、醋酸视黄酯927.60 μg、维生素D2 11.25 μg、D-α-生育酚33 mg、维生素K1 185 μg、盐酸硫胺素4.50 mg、核黄素3.50 mg、盐酸吡哆醇5.00 mg、氰钴胺5.30 μg、烟酸8.5 mg、叶酸938 μg、D-泛酸钙58.03 mg、L-抗坏血酸230 mg、D-生物素88.5 μg、氯化钠800 mg、柠檬酸钾260 mg、硫酸铜500 μg、氧化镁122 mg、富马酸亚铁13 mg、氧化锌6.5 mg、硫酸锰1.1 mg、柠檬酸钙1146mg、磷酸二氢钾702 mg、碘酸钾50 μg、亚硒酸钠53 μg、氯化铬40 μg。
制备方法如下:
双蛋白的制备方法为:将26.10 g大豆蛋白和23.0 g乳清蛋白混合,经超微粉碎-微粒化后得到双蛋白,其中超微粉碎工艺为:气流压力为0.85 MPa,气流温度为15 ℃,气流式超微粉碎机的变频电机转速14500 r/min,控制物料的粉碎粒度8 μm;微粒化处理工艺如下:0.08 g/mL蛋白分散液 85 ℃ 湿热处理 25 min 后,采用高速乳化剪切机10000 r/min 处理5 min。
将双蛋白、红花棕榈油、羟丙基淀粉、醋酸视黄酯、维生素D2、D-α-生育酚、维生素K1、盐酸硫胺素、核黄素、盐酸吡哆醇、氰钴胺、烟酸、叶酸、D-泛酸钙、L-抗坏血酸、D-生物素、氯化钠、柠檬酸钾、硫酸铜、氧化镁、富马酸亚铁、氧化锌、硫酸锰、柠檬酸钙、磷酸二氢钾、碘酸钾、亚硒酸钠、氯化铬,于500 W的灭菌器中灭菌100 s,灭菌后,形成功能袋;
将大豆油于500 W的灭菌器中灭菌100 s,灭菌后,形成能量袋。

1.一种适于长期健身的运动补剂及其制备方法,其特征在于每百克运动补剂中包括以下营养成分:蛋白47.90 g~49.10 g、脂肪8.90 g~10.70 g、碳水化合物25.40 g~31.96 g、膳食纤维7.14 g~12.50 g、维生素A 189.21 μg~927.60 μg、维生素D 3.36 μg~11.25 μg、维生素E 3.36 mg~33 mg、维生素K1 18.59 μg~185 μg、维生素B1 0.40 mg~4.50 mg、维生素B2 0.35 mg~3.5 mg、维生素B6 0.43 mg~5.24 mg、维生素B12 0.53 μg~5.30 μg、烟酸0.89mg~8.9 mg、叶酸93.81 μg~938 μg、泛酸2.69 mg~58.50 mg、维生素C23.01 mg~230 mg、生物素8.85 μg~88.5 μg、钠118.20 mg~315.20 mg、钾85 mg~145 mg、铜182 μg~230 μg、镁73mg~100 mg、铁3.3 mg~9.4 mg、锌1.7 mg~8.5 mg、锰99 μg~1.2 mg、钙215 mg~222 mg、磷159 mg~164 mg、碘25 μg~50 μg、硒13 μg~91 μg、铬7 μg~28 μg。
2.如权利要求1所述的一种适于长期健身的运动补剂及其制备方法,其特征在于:
蛋白的原料为大豆蛋白与乳清蛋白按一定比例组成的双蛋白;
脂肪的原料为椰子油、红棕榈油、橄榄油、omega-3中的一种或多种混合;
碳水化合物的原料为羟丙基淀粉或麦芽糊精;
膳食纤维的原料为豌豆膳食纤维。
3.如权利要求1所述的一种适于长期健身的运动补剂及其制备方法,其特征在于:
维生素A的原料为醋酸视黄酯、棕榈酸视黄酯、β-胡萝卜素中的一种或多种混合;
维生素D的原料为为维生素D2、维生素D3中的一种或多种混合;
维生素E的原料为D-α-生育酚、D-α-醋酸生育酚、D-α-琥珀酸生育酚、dl -α-醋酸生育酚、dl -α-生育酚、维生素E琥珀酸钙中的一种或多种混合;
维生素K1的原料为维生素K1;
维生素B1的原料为为盐酸硫胺素、硝酸硫胺素中的一种或多种混合;
维生素B2的原料为为核黄素、核黄素5’-磷酸钠中的一种或多种混合;
维生素B6的原料为为盐酸吡哆醇;
维生素B12的原料为氰钴胺;
烟酸的原料为烟酸、烟酰胺中的一种或多种混合;
叶酸的原料为叶酸;泛酸的添加形式为D-泛酸钙;
维生素C的原料为L-抗坏血酸、L-抗坏血酸钠、L-抗坏血酸钙、抗坏血酸棕榈酸酯中的一种或多种混合;
生物素的原料为D-生物素;
如权利要求1所述的一种适于长期健身的运动补剂及其制备方法,其特征在于:
钠的原料为氯化钠;
钾的原料为磷酸氢二钾、磷酸二氢钾、氯化钾、柠檬酸钾中的一种或多种混合;
铜的原料为硫酸铜、葡萄糖酸铜中的一种或多种混合;
镁的原料为碳酸镁、硫酸镁、氧化镁、氯化镁、L-苏糖酸镁中的一种或多种混合;
铁的原料为葡萄糖酸亚铁、富马酸亚铁、硫酸亚铁、乳酸亚铁、琥珀酸亚铁中的一种或多种混合;
锌的原料为硫酸锌、柠檬酸锌、柠檬酸锌(三水)、葡萄糖酸锌、氧化锌、乳酸锌中的一种或多种混合;
锰的原料为硫酸锰、葡糖糖酸锰中的一种或多种混合;
钙的原料为碳酸钙、醋酸钙、氯化钙、柠檬酸钙、葡萄糖酸钙、乳酸钙、磷酸氢钙、磷酸二氢钙、磷酸三钙(磷酸钙)、硫酸钙、L-乳酸钙、甘油磷酸钙中的一种或多种,其中以有机钙为主;
磷的原料为磷酸二氢钾;
碘的原料为碘酸钾;
硒的原料为亚硒酸钠、富硒酵母、L-硒-甲基硒代半胱氨酸中的一种或多种混合;
铬的原料为氯化铬。
4.如权利要求2所述的一种适于长期健身的运动补剂及其制备方法,其特征在于:双蛋白的制备方法为:将大豆蛋白与乳清蛋白按一定比例混合,经超微粉碎-微粒化后得到双蛋白,其中超微粉碎工艺为:气流压力为0.85 MPa~1.0 MPa,气流温度为10 ℃~15 ℃,气流式超微粉碎机的变频电机转速14500 r/min~16500 r/min,控制物料的粉碎粒度5 μm~8 μm;微粒化处理工艺如下:0.08 g/mL~0.12 g/mL蛋白分散液 85 ℃~95 ℃ 湿热处理 25 min~35 min 后,采用高速乳化剪切机 10000 r/min~12000 r/min 处理 3 min~5 min。
5.如权利要求1所述的一种适于长期健身的运动补剂及其制备方法的制备方法,其特征在于:以配方食品质量100克计,将蛋白、碳水化合物、维生素A、维生素D、维生素E、维生素K1、维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸、泛酸、维生素C、生物素、钠、钾、铜、镁、铁、锌、锰、钙、磷、碘、硒、铬等营养成分的原料灭菌后,形成功能袋;脂肪营养成分的原料灭菌后,形成能量袋。
6.如权利要求2所述的一种适于长期健身的运动补剂的制备方法,其特征在于:所述的微波杀菌功率为425 W~500 W、时间100 s~120 s、物料覆盖厚度为5 mm~10mm。
7.如权利要求1所述的适于长期健身的运动补剂的食用方法,其特征在于:
目标人群的年龄为18~50岁的长期健身人群,不包括孕妇和哺乳期妇女;
食用量为每日4 g/kg~5 g/kg,在早餐及训练前后,食用每日总量的70%,30%平均分配在其余正餐和加餐;
食用方法:用300 mL~400 mL的开水降温至50 ℃~60 ℃,加入功能袋和能量袋中的营养物质,搅拌、摇匀,运动后直接饮用。
8.如权利要求1所述的适于长期健身的运动补剂的食用方法,其特征在于:可作为目标人群的单一营养来源长期食用。
