Abstract
本发明公开了一种双蛋白运动补剂及其制备方法,涉及运动营养食品技术领域。所述的双蛋白运动补剂中含有大豆蛋白和乳清蛋白组成的双蛋白,以及脂肪、碳水化合物、维生素、矿物质等营养元素。本发明的运动补剂通过动植物蛋白优势互补,发挥了各自调节生理状态的功效,协同增强了肌肉蛋白的生成。本发明中的B族维生素能促进脂肪的燃烧,其含有的肌醇能重新分布体内脂肪,对塑形和改善体态有一定作用,还能促进运动后疲劳的恢复。本发明同时具有颗粒小、稳定性好、能耗低等优良品质,口感好,成本低,符合国家新旧动能转化发展趋势。本发明营养搭配合理,易于消化吸收,能够满足由于年龄增长及大负荷运动造成肌肉功能损伤病人的营养需求。

本发明涉及运动营养食品技术领域,具体涉及一种双蛋白运动补剂及其制备方法。
技术背景
人体共有639块肌肉,按照结构和功能的不同分为平滑肌、心肌和骨骼肌,担负着人体重要的机体运动,心脏收缩,消化系统、血管、膀胱、呼吸道和子宫等器官正常运作的功能。大负荷运动及年龄增长都会造成肌肉功能的损伤,影响机体运动功能。流行病学数据表明,50~60岁,人体骨骼肌以平均每年3%的数量减少,60岁以上人群肌肉损失率达30%,80岁以上时高达50%。研究表明,大负荷运动后会出现骨骼肌收缩功能下降的现象。早期补充蛋白质及氨基酸能预防由于年龄增长造成的肌肉损伤和衰减,运动后补充蛋白质,可以增加肌肉蛋白质的合成速度,有利于骨骼肌对运动的适应性增大、增强反应和骨骼肌功能的恢复。
而目前,尚无针对由于年龄增长及大负荷运动造成肌肉功能损伤病人的营养合理、价格优惠,且可作为单一营养来源、长期食用的运动补剂。
发明内容
为满足由于年龄增长及大负荷运动造成肌肉功能损伤病人的营养需求,特别是长期营养需求,本发明提供了一种双蛋白运动补剂及其制备方法。以大豆蛋白和乳清蛋白相复合的形式,两种蛋白互相取长补短,对肌肉蛋白的合成效果好于单一的乳清蛋白,同时经过超微粉碎和微粒化处理后,具有颗粒小、稳定性好、能耗低等优良的产品品质和生产工艺特点,该运动补剂的制备方法和配方不仅改进了产品的风味、性状和品质,降低产品的成本,还符合国家新旧动能转化发展趋势。另外,本发明制备的运动补剂,营养搭配合理,易于消化吸收,能够满足由于年龄增长及大负荷运动造成肌肉功能损伤病人的营养需求。

本发明所述的双蛋白运动补剂包括以下制备步骤:以配方食品质量100 g计,将蛋白、碳水化合物、维生素A、维生素D、维生素E、维生素K1、维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸、泛酸、维生素C、生物素、钠、钾、铜、镁、铁、锌、锰、钙、磷、碘、硒、铬营养成分的原料灭菌后,形成功能袋;
脂肪营养成分的原料灭菌后,形成能量袋。
其中:灭菌功率为425 W~500 W,灭菌时间为100 s~120 s。
本发明所述的双蛋白运动补剂的食用方法如下:
目标人群的年龄为18~50岁有消化吸收障碍、可做常规运动或健身的人群,不包括孕妇和哺乳期妇女;
可作为目标人群单一营养来源且可以长期食用的。
按照以下两种方法之一食用:
(1)用300 mL~400 mL的开水降温至50 ℃~60 ℃,加入功能袋和能量袋中的营养物质,搅拌、摇匀,运动后直接饮用;
(2)将功能袋中的营养物质添加到不含有食盐的日常饮食中食用,日常饮食中含有的脂肪与能量袋中的脂肪含量一致。
本发明有益效果如下:
乳清蛋白的生物效价、可吸收性要比大豆蛋白更强,而乳清蛋白相比大豆蛋白更易发生羰基化反应,羰基化会影响蛋白质的结构和功能,并进而影响产品的色泽、风味、理化品性和功能特性。为了保护乳清蛋白避免发生羰基化反应,本发明采用大豆蛋白和乳清蛋白双蛋白复合模式,使得在后续的加工羰基化反应时,因大豆蛋白的添加使得乳清蛋白浓度降低,降低乳清蛋白羰基化的比例。同时,大豆蛋白中的球蛋白优于乳清蛋白的纤维蛋白发生羰基化反应,而起到一定的保护乳清蛋白的作用。
经超微粉碎后,由于蛋白颗粒的比表面积、表面能和孔隙率提高,使得蛋白颗粒与油的接触面积增加,吸油性明显提高。超微粉碎导致蛋白质内部疏水基团暴露,蛋白质疏水性增强,乳化性和乳化稳定性提高。同时链段柔性的增加以及疏水基团、极性基团和-SH的充分暴露,增加了蛋白的起泡性及泡沫稳定性。因此,本发明中超微粉碎处理使得蛋白具有更好的功能性质,从而改善了产品溶解性、起泡性等产品品质方面的特性。微粒化处理,使得蛋白形成0.1 μm~10 μm 的小颗粒,当颗粒蛋白小于人体口腔粘膜对其感知程度的阈值,会产生类似奶油的滑腻口感,从而改善产品的口感。
本发明选用的蛋白为乳清蛋白,乳清蛋白是优质蛋白质,营养价值高,必需氨基酸种类和含量齐全,含有丰富的亮氨酸,可以提高运动后骨骼肌肌原纤维蛋白的合成速率,减少肌肉酸痛,加快运动性损伤的修复。大豆蛋白是营养价值最高的植物蛋白,不含胆固醇,氨基酸结构接近人体氨基酸,研究表明运动后摄入40 g大豆蛋白有助于提高肌肉蛋白的合成,同时其价格便宜,但是其口感不佳,具有腥味,且溶解性不好。乳清蛋白具有口感佳、溶解性好的优点,但是其价格较高。大豆蛋白和乳清蛋白的混合对肌肉蛋白的合成效果好于单一的乳清蛋白,通过动植物蛋白的优势互补,发挥了各自调节生理状态的功效,协同增强了肌肉蛋白的生成,改善了大负荷运动及年龄增长造成的肌肉损伤问题,同时又改善了口感,降低了原料成本。
钾具有维持机体酸碱平衡、参与能量代谢以及维持神经肌肉的正常功能的作用。在运动中,肌肉活动时,钾离子会随汗液排出体外,导致体内钾离子缺失。钾缺失会减少肌肉兴奋性,使肌肉的收缩松弛受阻,造成机体无力、疲乏、心跳减弱、头昏眼花,严重缺钾还会导致呼吸肌麻痹死亡。另外,长期低钾会导致胃肠蠕动减慢、肠麻痹,出现厌食、恶心、呕吐、腹胀等症状。在运动中或运动后补充不足的钾离子,能有效减轻肌肉疼痛感或痉挛,有助于疲劳的恢复。本专利钾的添加及其含量范围有利于疲劳的恢复。
铬是人体必需微量元素之一,铬的补充有利于增加肌肉合成和脂肪的减少。本专利铬的添加及其含量范围有利于增加肌肉合成和脂肪的减少。
镁可通过影响离子转运以及同钙离子协同工作,完成肌肉的收缩与舒张。持续性运动过程中,汗液、尿液的排出会引起镁的缺失,镁缺失会导致肌肉痉挛。通过补充镁,可预防运动过程中出现肌肉痉挛。本专利镁的添加及其含量范围有利于骨骼的合成。
维生素K能够辅助合成骨钙蛋白,骨钙蛋白参与骨骼的组成和代谢。维生素K不足导致骨质生成与降解失衡,出现骨质疏松等症状,适量补充维生素K有利于骨骼的合成。本专利维生素K的添加及其含量范围有利于骨骼的合成。
B族维生素参与物质代谢,促进脂肪的燃烧。另外,B族维生素中的肌醇有着重新分布体内脂肪分布的作用,对塑形和改善体态有一定作用,同时肌醇能够促进运动后疲劳的恢复。本专利B族维生素的添加及其含量范围有利于人体脂肪的燃烧、塑形和运动后疲劳的恢复。
本发明所述的运动补剂价格低廉,适于低收入者长期食用,营养搭配合理,易于消化吸收,能够作为单一营养来源满足由于年龄增长及大负荷运动造成肌肉功能损伤或消化吸收障碍、可做常规运动或健身的患者营养需求。能够改善患者营养状况,促进肌肉蛋白的生成,预防及逆转肌肉损伤及衰减。

制备方法如下:
双蛋白的制备方法为:将20.0 g大豆蛋白和20.0 g乳清蛋白混合,经超微粉碎-微粒化后得到双蛋白,其中超微粉碎工艺为:气流压力为0.90 MPa,气流温度为15 ℃,气流式超微粉碎机的变频电机转速16500 r/min,控制物料的粉碎粒度5 um;微粒化处理工艺如下:0.10 g/mL蛋白分散液 90 ℃ 湿热处理 30 min 后,采用高速乳化剪切机 12000 r/min处理 4 min。

制备方法如下:
双蛋白的制备方法为:将24.40 g大豆蛋白和16.50 g乳清蛋白混合,经超微粉碎-微粒化后得到双蛋白,其中超微粉碎工艺为:气流压力为0.85 MPa,气流温度为15 ℃,气流式超微粉碎机的变频电机转速14500 r/min,控制物料的粉碎粒度8um;微粒化处理工艺如下:0.08 g/mL蛋白分散液85 ℃ 湿热处理25 min 后,采用高速乳化剪切机10000 r/min 处理5 min。
将双蛋白、椰子油油、慢消化淀粉、醋酸视黄酯、维生素D2、D-α-生育酚、维生素K1、盐酸硫胺素、核黄素、盐酸吡哆醇、氰钴胺、烟酸、叶酸、D-泛酸钙、L-抗坏血酸、D-生物素、氯化钠、柠檬酸钾、硫酸铜、氧化镁、富马酸亚铁、氧化锌、硫酸锰、柠檬酸钙、磷酸二氢钾、碘酸钾、亚硒酸钠、氯化铬,于500 W的灭菌器中灭菌100 s,灭菌后,形成功能袋;
将大豆油于500 W的灭菌器中灭菌100 s,灭菌后,形成能量袋。

制备方法如下:
双蛋白的制备方法为:将21.10 g大豆蛋白和18.0 g乳清蛋白混合,经超微粉碎-微粒化后得到双蛋白,其中超微粉碎工艺为:气流压力为1.0 MPa,气流温度为15 ℃,气流式超微粉碎机的变频电机转速16500 r/min,控制物料的粉碎粒度5 um;微粒化处理工艺如下:0.12 g/mL蛋白分散液95 ℃ 湿热处理 35 min 后,采用高速乳化剪切机12000 r/min处理3 min。
将双蛋白、大豆油、羟丙基淀粉、醋酸视黄酯、维生素D2、D-α-生育酚、维生素K1、盐酸硫胺素、核黄素、盐酸吡哆醇、氰钴胺、烟酸、叶酸、D-泛酸钙、L-抗坏血酸、D-生物素、氯化钠、柠檬酸钾、硫酸铜、氧化镁、富马酸亚铁、氧化锌、硫酸锰、柠檬酸钙、磷酸二氢钾、碘酸钾、亚硒酸钠、氯化铬,于500 W的灭菌器中灭菌100 s,灭菌后,形成功能袋;
将大豆油于500 W的灭菌器中灭菌100 s,灭菌后,形成能量袋。

蛋白的原料为大豆蛋白与乳清蛋白按一定比例组成的双蛋白;
脂肪的原料为椰子油;
碳水化合物的原料为抗性淀粉、慢消化淀粉、膳食纤维;
如权利要求1所述的一种双蛋白运动补剂,其特征在于:
维生素A的原料为醋酸视黄酯、棕榈酸视黄酯、β-胡萝卜素中的一种或多种混合;
维生素D的原料为为维生素D2、维生素D3中的一种或多种混合;
维生素E的原料为D-α-生育酚、D-α-醋酸生育酚、D-α-琥珀酸生育酚、dl -α-醋酸生育酚、dl -α-生育酚、维生素E琥珀酸钙中的一种或多种混合;
维生素K1的原料为维生素K1;
维生素B1的原料为盐酸硫胺素、硝酸硫胺素中的一种或多种混合;
维生素B2的原料为核黄素、核黄素5’-磷酸钠中的一种或多种混合;
维生素B6的原料为盐酸吡哆醇;
维生素B12的原料为氰钴胺;
烟酸的原料为烟酸、烟酰胺中的一种或多种混合;
叶酸的原料为叶酸;泛酸的添加形式为D-泛酸钙;
维生素C的原料为L-抗坏血酸、L-抗坏血酸钠、L-抗坏血酸钙、抗坏血酸棕榈酸酯中的一种或多种混合;
生物素的原料为D-生物素;
如权利要求1所述的一种双蛋白运动补剂,其特征在于:
钠的原料为氯化钠;
钾的原料为磷酸氢二钾、磷酸二氢钾、氯化钾、柠檬酸钾中的一种或多种混合;
铜的原料为硫酸铜、葡萄糖酸铜中的一种或多种混合;
镁的原料为碳酸镁、硫酸镁、氧化镁、氯化镁、L-苏糖酸镁中的一种或多种混合;
铁的原料为葡萄糖酸亚铁、富马酸亚铁、硫酸亚铁、乳酸亚铁、琥珀酸亚铁中的一种或多种混合;
锌的原料为硫酸锌、柠檬酸锌、柠檬酸锌(三水)、葡萄糖酸锌、氧化锌、乳酸锌中的一种或多种混合;
锰的原料为硫酸锰、葡糖糖酸锰中的一种或多种混合;
钙的原料为碳酸钙、醋酸钙、氯化钙、柠檬酸钙、葡萄糖酸钙、乳酸钙、磷酸氢钙、磷酸二氢钙、磷酸三钙(磷酸钙)、硫酸钙、L-乳酸钙、甘油磷酸钙中的一种或多种,其中以有机钙为主;
磷的原料为磷酸二氢钾;
碘的原料为碘酸钾;
硒的原料为亚硒酸钠、富硒酵母、L-硒-甲基硒代半胱氨酸中的一种或多种混合;
铬的原料为氯化铬。
3. 如权利要求2所述的一种双蛋白运动补剂,其特征在于:双蛋白的制备方法为:将大豆蛋白与乳清蛋白按一定比例混合,经超微粉碎-微粒化后得到双蛋白,其中超微粉碎工艺为:气流压力为0.85 MPa~1.0 MPa,气流温度为10 ℃~15 ℃,气流式超微粉碎机的变频电机转速14500 r/min~16500 r/min,控制物料的粉碎粒度5 um~8 um;微粒化处理工艺如下:0.08 g/mL~0.12 g/mL蛋白分散液85 ℃~95 ℃湿热处理25min~35 min后,采用高速乳化剪切机10000 r/min ~12000 r/min 处理3 min~5 min。
4.如权利要求1所述的一种双蛋白运动补剂的制备方法,其特征在于:以配方食品质量100克计,将蛋白、碳水化合物、维生素A、维生素D、维生素E、维生素K1、维生素B1、维生素B2、维生素B6、维生素B12、烟酸、叶酸、泛酸、维生素C、生物素、钠、钾、铜、镁、铁、锌、锰、钙、磷、碘、硒、铬等营养成分的原料灭菌后,形成功能袋;脂肪营养成分的原料灭菌后,形成能量袋。
5. 如权利要求2所述的一种双蛋白运动补剂的制备方法,其特征在于:所述的微波杀菌功率为425 W~500 W、时间100 s~120 s、物料覆盖厚度为5 mm~10 mm。
6.如权利要求1所述的一种双蛋白运动补剂的食用方法,其特征在于:
目标人群的年龄为18~50岁有消化吸收障碍、可做常规运动或健身的人群,不包括孕妇和哺乳期妇女;
按照以下两种方法之一食用:
(1)用300 mL~400 mL的开水降温至40 ℃~60 ℃,加入功能袋和能量袋中的营养物质,搅拌、摇匀,运动后直接饮用;
(2)将功能袋中的营养物质添加到不含有食盐的日常饮食中食用,日常饮食中含有的脂肪与能量袋中的脂肪含量一致。
7.如权利要求1所述的一种双蛋白运动补剂的食用方法,其特征在于:
可作为目标人群的单一营养来源且可以长期食用。
8.如权利要求1所述的一种双蛋白运动补剂,其特征在于:
本专利钾的添加及其含量范围有利于疲劳的恢复;
本专利铬的添加及其含量范围有利于增加肌肉合成和脂肪的减少;
本专利镁的添加及其含量范围有利于骨骼的合成;
本专利维生素K的添加及其含量范围有利于骨骼的合成;
本专利B族维生素的添加及其含量范围有利于人体脂肪的燃烧、塑形和运动后疲劳的恢复。
