本发明涉及食品加工领域,具体涉及一种保健绿色鸡糕及其制作方法。
背景技术
鸡糕是江苏省涟水县特产,早先属于糕点/甜点,并逐渐衍生为菜肴,主要原料是鸡肉、淀粉、鸡蛋、虾仁、姜葱汁等,可以烧、涮、蒸,亦可做汤,味道鲜美,口感细嫩,深受老人喜受。传统鸡糕成份单调,营养价值缺乏保健作用,随着人们的生活水平提高,越来越青睐健康食品,因此开发具有保健功能的鸡糕新品,更具有市场竞争力。
发明内容
本发明要解决的技术问题是提供一种保健绿色鸡糕,含有大量人体所需氨基酸、维生素,具有健胃脾、防癌、抗癌活性的保健价值,且产品绿色青透,清香爽口,味道独特。
本发明通过以下技术方案实现:
一种保健绿色鸡糕,由以下重量份配比的原料,经榨汁、混合、成型、蒸制而成:芦笋30-50份、黄瓜5-10份、山芋粉10-20份、蚕豆粉5-10份、山药粉5-10份、青鱼5-10份、鸡胸肉2-5份、鸡蛋5-10份、蜂蜜1-3份、食盐0.5-1份。
芦笋为百合科植物石刁柏的嫩芽,它天赐野成,营养丰富,风味独特,集天然野生和绿色有机等特点于一体,在国际市场上享有"蔬菜之王"的美称,芦笋富含多种氨基酸、蛋白质和维生素,其含量均高于一般水果和菜蔬,特别是芦笋中的天冬酰胺和微量元素硒、钼、铬、锰等,具有调节机体代谢,提高身体免疫力的功效,在对高血压、心脏病、白血病、血癌、水肿、膀胱炎等的预防和治疗中,具有很强的抑制作用和药理效应。因此芦笋结合到传统鸡糕生产中,具有极高的保健功效,提升营养价值,但是芦笋味苦,影响口感,本发明采用蜂蜜予以调和,亦增加产品的天然保健营养成分。同时黄瓜、山药含有很高的维生素,是人们喜见的绿色健康食品,具有很好的保健功效。山芋粉、蚕豆粉、山药粉提供优质的植物蛋白,青鱼、鸡胸肉、鸡蛋提供优质的动物质白,动植物蛋白结合提升食品营养结构。
再有,食品讲究色味搭配,具有诱人食欲的色泽也是十分重要的,本发明鸡糕绿色青透,从外观色泽上也迎合人们对绿色食品的追求。
制作保健绿色鸡糕的方法,包括以下步骤:
(1)将芦笋、黄瓜洗净,榨汁,过滤杂质,留汁待用;
(2)将青鱼去刺,绞碎,拍打成细泥;
(3)将鸡胸肉,绞碎,拍打成细泥;
(4)取出鸡蛋,分离蛋清、蛋黄待用;
(5)去除芦笋汁、黄瓜汁混合液中的沉淀物,加入蜂蜜和鸡蛋清搅拌均匀;
(6)将山芋粉、蚕豆粉、山药粉、食盐混合后加入芦笋汁和黄瓜汁搅拌均匀成糊状;
(7)将糊状物成型切成块状,放在固定盒中,在表层均匀添加蛋黄;
(8)将步骤7得到的物质放在蒸笼中蒸15-20分钟后冷却即可。
本发明与现有技术相比,具有以下明显优点:
一、本发明芦笋和黄瓜的提取液取代传统鸡糕加工的水份添加,既因芦笋、黄瓜、山药含有很高氨基酸、蛋白质和维生素,具有价值很高的保健作用,又提供了纯天然的色素,制成色泽绿透的食品,动植物蛋白配合,营养价值更高。青鱼肉泥的加入使得鸡糕久煮不烂,韧性更佳,口感筋道、嫩滑。
二、本发明具有绿色青透的外观,迎合人们绿色食品的感观追求,也利于菜肴色泽搭配,提升人们进食欲望。
具体实施方式
实施例1
取芦笋30份、黄瓜10份、山芋粉10份、蚕豆粉5份、山药粉10份、青鱼5份、鸡胸肉5份、鸡蛋5份、蜂蜜1份、食盐0.5份。具体制作步骤如下:
(1)将芦笋、黄瓜洗净,榨汁,过滤杂质,留汁待用;
(2)将青鱼去刺,绞碎,拍打成细泥;
(3)将鸡胸肉,绞碎,拍打成细泥;
(4)取出鸡蛋,分离蛋清、蛋黄待用;
(5)去除芦笋汁、黄瓜汁的沉淀物,加入蜂蜜和鸡蛋清搅拌均匀;
(6)将山芋粉、蚕豆粉、山药粉、食盐混合后加入芦笋汁和黄瓜汁搅拌均匀成糊状;
(7)将糊状物成型切成块状,放在固定盒中,在表层均匀添加蛋黄;
(8)将步骤7得到的物质放在蒸笼中蒸15-20分钟后冷却即可。
实施例2
取芦笋50份、黄瓜5份、山芋粉20份、蚕豆粉5份、山药粉5份、青鱼10份、鸡胸肉2份、鸡蛋10份、蜂蜜3份、食盐1份。制作步骤如实施例1。
实施例3
取芦笋40份、黄瓜8份、山芋粉15份、蚕豆粉8份、山药粉8份、青鱼8份、鸡胸肉4份、鸡蛋8份、蜂蜜2份、食盐1份。制作步骤如实施例1。
实施例1、2、3制成的鸡糕色泽绿色青透,口感细嫩、爽滑筋道,味道鲜美,富含多种氨基酸、维生素和蛋白质,是一道具有保健功能的食品,符合人们绿色健康食品的要求。

1.一种保健绿色鸡糕,其特征在于:由以下重量份配比的原料,经榨汁、混合、成型、蒸制而成:芦笋30-50份、黄瓜5-10份、山芋粉10-20份、蚕豆粉5-10份、山药粉5-10份、青鱼5-10份、鸡胸肉2-5份、鸡蛋5-10份、蜂蜜1-3份、食盐0.5-1份。
2.制作权利要求1保健绿色鸡糕的方法,其特征在于包括以下步骤:
(1)将芦笋、黄瓜洗净,榨汁,过滤杂质,留汁待用;
(2)将青鱼去刺,绞碎,拍打成细泥;
(3)将鸡胸肉,绞碎,拍打成细泥;
(4)取出鸡蛋,分离蛋清、蛋黄待用;
