背景技术
我国食用鲜花有着悠久的历史。早在西汉末年东汉初年即现存最早的本草专著《神农本草经》一书中就有香蒲、松花花粉、白莲花蕊、须及梅、李桃、梨花等花蕊供食疗的记载,食一用鲜花能起到驻颜耐老,轻身延年之说。花是植物的营养精华,经科学分析测定,花中含有丰富的人体所必须的氨基酸、各类维生素、微量元素、酶类、糖类,这五类人体所必须的营养素均集中于鲜花花瓣、花蕊、粉之中,其量之多,是其它任何天然物质所不可比拟的,所以鲜花又被誉为“微型营养宝库”。将具有一定保健功能的鲜花与其他药食同源、功能物质相结合制成可食用的保健食品,可充分利用鲜花中的营养物质及功能成分,对人体能起到一定的保健效果。
现有技术中也有种类诸多的鲜花酱,而此类鲜花酱通过鲜花加工制成浆后,都不能够保存住鲜花的天然本色,缺乏了鲜花的原汁原味,并且此类鲜花酱也存在营养单一,口味不理想的缺点。
发明内容
本发明克服现有技术的不足,提供了一种具有活血养颜作用的桃花酱,通过与其他药食同源的食物相结合,并添加一定的功能性成分,结合低温静置、酒制的工艺充分保留了其中的活性成分,提高了最终产品的保健效果,同时口味酸甜适口,适合各类人群食用。
本发明所采用的技术方案为:一种活血养颜桃花酱,包括以下重量份的原料:桃花20-30份、玫瑰花10-15份、红花10-15份、桑葚10-15份、枸杞5-10份、冰糖30-35份、柠檬5-10份、蜂蜜5-10份、酿造白酒3-9份、花青素0.05-0.1份、维生素C 0.01-0.06份;制备方法包括步骤:
a)原料预处理:取桃花、玫瑰花、红花粉碎并混合均匀,桑葚、柠檬和枸杞加总重量0.5-1倍的水打浆,将粉碎后的桃花、玫瑰花、红花与制好的浆液混合得混合物1。
b)将混合物1与冰糖搅拌均匀得混合物2,在0-4℃下静置12-24h。
c)将静置后的混合物2与酿造白酒搅拌均匀得混合物3,并在20-25℃下静置6-16h。
d)将静置后的混合物3在80-90℃下加热5-8min,加热过程中充分搅拌。
e)之后冷却至40-55℃,加入蜂蜜、花青素、维生素C,搅拌均匀,得到成品。

1)本发明使用桃花、玫瑰花、红花、桑葚、枸杞作为主要原料,通过制成口味适宜的桃花酱,可以提高日常的食用量,提高了人体对鲜花中有益成分的摄取和吸收,扩展了酱类制品的种类。将鲜花和水果相结合,在感官上更具新颖性,提高了口感。
2)通过低温长时浸泡,使原料中的功能性有效成分缓慢渗出释放,同时保留自身的活性而不被破坏,是最终产品的功能性物质被最大程度的保留,提高了产品的保健效果。
3)通过采取低温酒制的特殊的工艺,使菊花、枸杞、蓝莓中的醇溶性成分被充分提出,活性成分更加丰富。
4)本发明采用柠檬来调制口味,同时也是一种天然的防腐物质,减少了化学添加剂的添加;同时,添加了功能性成分花青素、维生素C,在本发明的低温制酱工艺下,不易被破坏,提高了产品的保健效果。
5)本发明得到的花酱将桃花、玫瑰花、红花、桑葚、枸杞的保健功能紧密结合,富含多种维生素、矿物质等营养物质,具有疏通经络,扩张末梢毛血管,改善血液循环,促进皮肤营养和氧供给,滋润皮肤的作用,是集营养与活血养颜作用于一体的保健鲜花酱。
具体实施方式
下面结合实施例详细说明本发明的技术方案,但保护范围不被此限制。
实施例1
称取以下原料:桃花20kg、玫瑰花10kg、红花10kg、桑葚10kg、枸杞5kg、冰糖30kg、青柠檬5kg、蜂蜜5kg、50°酿造白酒3kg、花青素0.05kg、维生素C 0.01kg;制备方法包括步骤:
a)原料预处理:取桃花、玫瑰花、红花粉碎并混合均匀,桑葚、青柠檬和枸杞加总重量0.5倍的水打浆,将粉碎后的桃花、玫瑰花、红花与制好的浆液混合得混合物1;
b)将混合物1与冰糖搅拌均匀得混合物2,在0℃下静置12h;
c)将静置后的混合物2与50°酿造白酒搅拌均匀得混合物3,并在20℃下静置6h;
d)将静置后的混合物3在80℃下加热5min,加热过程中充分搅拌;
e)之后冷却至40℃,加入蜂蜜、花青素、维生素C,搅拌均匀,得到成品。
实施例2
称取以下原料:桃花30kg、玫瑰花15kg、红花15kg、桑葚15kg、枸杞10kg、冰糖35kg、柠檬10kg、蜂蜜10kg、52°酿造白酒9kg、花青素0.1kg、维生素C 0.06kg;制备方法包括步骤:
a)原料预处理:取桃花、玫瑰花、红花粉碎并混合均匀,桑葚、柠檬和枸杞加总重量0.5-1倍的水打浆,将粉碎后的桃花、玫瑰花、红花与制好的浆液混合得混合物1;
b)将混合物1与冰糖搅拌均匀得混合物2,在4℃下静置24h;
c)将静置后的混合物2与52°酿造白酒搅拌均匀得混合物3,并在25℃下静置16h;
d)将静置后的混合物3在90℃下加热8min,加热过程中充分搅拌;
e)之后冷却至55℃,加入蜂蜜、花青素、维生素C,搅拌均匀,得到成品。
实施例3
称取以下原料:桃花25kg、玫瑰花12.5kg、红花12.5kg、桑葚12.5kg、枸杞7.5kg、冰糖32.5kg、柠檬7.5kg、蜂蜜7.5kg、酿造白酒6kg、花青素0.075kg、维生素C 0.03kg;制备方法包括步骤:
a)原料预处理:取桃花、玫瑰花、红花粉碎并混合均匀,桑葚、柠檬和枸杞加总重量0.5-1倍的水打浆,将粉碎后的桃花、玫瑰花、红花与制好的浆液混合得混合物1;
b)将混合物1与冰糖搅拌均匀得混合物2,在2℃下静置18h;
c)将静置后的混合物2与酿造白酒搅拌均匀得混合物3,并在22℃下静置11h;
d)将静置后的混合物3在85℃下加热6min,加热过程中充分搅拌;
e)之后冷却至50℃,加入蜂蜜、花青素、维生素C,搅拌均匀,得到成品。

Claims (3)
1.一种活血养颜桃花酱,其特征在于,包括以下重量份的原料:桃花20-30份、玫瑰花10-15份、红花10-15份、桑葚10-15份、枸杞5-10份、冰糖30-35份、柠檬5-10份、蜂蜜5-10份、酿造白酒3-9份、花青素0.05-0.1份、维生素C 0.01-0.06份;制备方法包括步骤:
a)原料预处理:取桃花、玫瑰花、红花粉碎并混合均匀,桑葚、柠檬和枸杞加总重量0.5-1倍的水打浆,将粉碎后的桃花、玫瑰花、红花与制好的浆液混合得混合物1;
b)将混合物1与冰糖搅拌均匀得混合物2,在0-4℃下静置12-24h;
c)将静置后的混合物2与酿造白酒搅拌均匀得混合物3,并在20-25℃下静置6-16h;
d)将静置后的混合物3在80-90℃下加热5-8min,加热过程中充分搅拌;
e)之后冷却至40-55℃,加入蜂蜜、花青素、维生素C,搅拌均匀,得到成品。
2.根据权利要求1所述的一种活血养颜桃花酱,其特征在于柠檬为青柠檬,榨汁后使用。
3.根据权利要求1所述的一种活血养颜桃花酱,其特征在于酿造白酒的酒精度为50-52°。
