背景技术
甘草,别名:国老、甜草、乌拉尔甘草、甜根子,根茎呈圆柱形,表面有芽痕,断面中部有髓。气微,味甜而特殊。功能主治清热解毒、祛痰止咳、脘腹等。甘草有类似肾上腺皮质激素样作用。对组胺引起的胃酸分泌过多有抑制作用;并有抗酸和缓解胃肠平滑肌痉挛作用。
党参(学名;Codonopsis pilosula (Franch.) Nannf. )桔梗科党参属,多年生草本植物,有乳汁。党参为中国常用的传统补益药,古代以山西上党地区出产的党参为上品,具有补中益气,健脾益肺之功效。党参有增强免疫力、扩张血管、降压、改善微循环、增强造血功能等作用。此外对化疗放疗引起的白细胞下降有提升作用。
党参和甘草是药食两用植物,目前,采用保健价值高的甘草和党参为原料,加工成甘草党参营养粉,未见有相关报道和产品面市。
发明内容
本发明的目的是提供一种甘草党参保健粉的制作方法,实现对原料的综合利用,提高其营养价值和经济价值,同时也为甘草、党参的深加工开辟了新途径。
本发明解决其技术问题所采取的技术方案是:
一种甘草党参保健粉的制作方法,其特征在于,采用原料挑选、胶磨、酶萃取、药汁提取、调配、控温定色、干燥、包装的加工工序,具体步骤如下:
①原料挑选:选取新鲜优质、无病虫害的甘草根茎、党参,辅以竹茹、百部根、矮地茶,去除杂质,清洗后沥干水分;取3kg的甘草、2kg的党参、1kg的竹茹、0.85kg的百部根和0.35kg的矮地茶,混合均匀,制得原料;
②胶磨:将原料经破碎处理后,加入其重量2倍的苏打水进行打浆,再送入胶体磨进行磨浆,制得原浆;
③酶萃取:向原浆中加入其重量0.5%的淀粉酶、0.2%的纤维素酶和0.1%的蛋白酶,搅拌均匀后,进行酶萃取,萃取温度控制为40℃,时间控制为55min,制得萃取物;
④药汁提取:锅中入水煮沸,加入白芷、五味子、紫菀、乌灵参、丁香,文火煎煮,过滤,蒸馏提取,得药汁;再将滤渣研磨成浆,经喷雾干燥,得到药粉;
⑤调配:取40份萃取物、20份药汁、15份药粉,加入10份甘草液、8份苦荞汁、7份菱角粉,混合均匀,制得混合液;
⑥控温定色:将混合液在温度为40℃,压力为12MPa的条件下进行均质,再放入鼓风干燥箱内快速加热,控温定色,箱内温度为55℃,加热25秒后,打开排风机,冷却至45℃;
⑦干燥:采用离心喷雾干燥,设置进口热风温度120℃、流量6ml/min、雾化器转速8000r/min、液料中干物质量10%、进料温度45℃,制得甘草党参营养粉;
⑧包装:将甘草党参营养粉整理后,用食品级包装材料包装,入通风干燥环境中储存。
有益效果:本发明采用甘草的根茎、党参为原料,采用原料挑选、胶磨、酶萃取、药汁提取、调配、控温定色、干燥、包装的加工工序,能够有效提取原料所含的营养成分,提高原料的利用效率,使制得的成品营养粉香气浓郁,营养价值高,还具有益气补中、缓急止痛、润肺止咳、健脾益肺、下火解毒、调和诸药等保健效果。

④药汁提取:锅中入水煮沸,加入白芷、五味子、紫菀、乌灵参、丁香,文火煎煮,过滤,蒸馏提取,得药汁;再将滤渣研磨成浆,经喷雾干燥,得到药粉;
⑤调配:取40份萃取物、20份药汁、15份药粉,加入10份甘草液、8份苦荞汁、7份菱角粉,混合均匀,制得混合液;
⑥控温定色:将混合液在温度为40℃,压力为12MPa的条件下进行均质,再放入鼓风干燥箱内快速加热,控温定色,箱内温度为55℃,加热25秒后,打开排风机,冷却至45℃;
⑦干燥:采用离心喷雾干燥,设置进口热风温度120℃、流量6ml/min、雾化器转速8000r/min、液料中干物质量10%、进料温度45℃,制得甘草党参营养粉;
⑧包装:将甘草党参营养粉整理后,用食品级包装材料包装,入通风干燥环境中储存。
