Abstract
本发明公开了一种生酮饮食配方粉,要解决的技术问题是锻炼婴幼儿的咀嚼能力,提高生酮饮食的治疗效果。本发明的生酮饮食配方粉,由以下质量比组份组成:脂肪55~75份,蛋白质10~21份,碳水化合物4~22.5份,维生素和矿物质3.2~4.5份,左旋肉碱0.6~3.0份,牛磺酸0.1~0.15份,食品添加剂0.4~2.0份,食品添加剂为乳化剂、酸度调节剂和甜味剂。本发明与现有技术相比,生酮饮食配方粉用温水冲调后呈糊状,可以有效预防吞咽功能障碍的患者呛奶,同时,婴幼儿需要稍微咀嚼后吞下,充分锻炼婴幼儿的咀嚼能力,患者食后在胃肠道内与葡萄糖形成黏胶,可以减慢葡萄糖的吸收,使餐后血糖维持稳定,从而使餐后血酮水平也能维持稳定,提高生酮饮食的治疗效果。

技术领域
本发明涉及一种食品,特别是一种用于治疗癫痫、糖尿病、肿瘤、行为异常、孤独症、脊髓损伤、减肥、减脂、阿尔茨海默病的食品。
背景技术
生酮饮食疗法治疗癫痫已经有90多年历史,大量临床病例证明该疗法治疗癫痫病的疗效显著,副作用少,安全性好,经济实惠,简单方便,此外生酮饮食在糖尿病、抗肿瘤、行为异常、孤独症、脊髓损伤、脑外伤、肥胖病、阿尔茨海默病等方面也有显著效果。现有技术的生酮饮食产品主要有液体的配方奶、冲调后呈液体的营养粉和固体的饼干。液体的配方奶和冲调后呈液体的营养粉适用于婴幼儿直接口服,有吞咽功能障碍的患者服用液体的食物容易发生呛奶,容易导致肺炎等更严重的问题,同时,液体食物不能锻炼婴幼儿的咀嚼功能。固体的饼干可以供大龄儿童和成人使用,但是对于咀嚼和吞咽功能有问题的婴幼儿或老龄人不适合,这类人群适合采用半固体的流质食物,现有技术没有适合咀嚼和吞咽功能有问题的婴幼儿或老龄人的生酮饮食产品,特别是在婴幼儿从液体到半固体食物的过渡期。大部分癫痫患者伴有发育落后,吞咽功能障碍,咀嚼障碍,之前的生酮饮食产品多为直接口服的液体奶或营养粉冲调成的液体奶,吞咽功能障碍的患者容易呛奶,引发肺炎等,同时,无法锻炼咀嚼能力。
生酮饮食属于高脂肪的饮食,油腻感是生酮饮食一直以来都面临的一个问题,普通的生酮饮食非常油腻,食物的色、香、味与普通饮食相差较大,因而很难接受并长期坚持食用。传统配方的生酮饮食虽然口感上在不断改善,但是形态上依然只有液体和固体,缺少半固体的生酮饮食配方产品。其次,传统的生酮饮食配方产品本身含有一定的葡萄糖,或含有经过水解后能生成葡萄糖的淀粉类物质,患者在摄入传统生酮配方产品后血糖普遍会升高,带来一些副作用。
发明内容
本发明的目的是提供一种生酮饮食配方粉,要解决的技术问题是锻炼婴幼儿的咀嚼能力,提高生酮饮食的治疗效果。
本发明采用以下技术方案:一种生酮饮食配方粉,由以下质量比组份组成:脂肪55~75份,蛋白质10~21份,碳水化合物4~22.5份,维生素和矿物质3.2~4.5份,左旋肉碱0.6~3.0份,牛磺酸0.1~0.15份,食品添加剂0.4~2.0份,食品添加剂为乳化剂、酸度调节剂和甜味剂。
本发明的脂肪采用椰子油、棕榈仁油、中链甘油三酯、橄榄油、菜籽油、大豆油、葵花籽油、茶籽油、玉米油、芝麻油、花生油、亚麻籽油中的两种以上的脂肪粉。
本发明的椰子油、棕榈仁油和中链甘油三脂中的一种以上脂肪粉16~23份,所述橄榄油、菜籽油、大豆油、葵花籽油、茶籽油、玉米油、芝麻油、花生油和亚麻籽油中的一种以上的脂肪粉39~52份。
本发明的脂肪粉采用以下方法得到,按质量百分比,将16%低聚果糖、7%抗性糊精、5.0%酪蛋白酸钠、2.0%单,双甘油脂肪酸酯溶解于65~70℃的水中,呈水相;将70%的椰子油、棕榈仁油、中链甘油三酯与橄榄油、菜籽油、大豆油、葵花籽油、茶籽油、玉米油、芝麻油、花生油、亚麻籽油中的两种以上的油脂充分混合,在转速20~25转/min,搅拌15min,在搅拌下加入水相,继续搅拌10min,再经高压均质处理,压力为40~50MPa,时间为20min,得到稳定乳液,采用喷雾干燥得到脂肪粉。
本发明的蛋白质采用乳清蛋白质粉、大豆蛋白质粉、小麦低聚肽、玉米低聚肽、大豆低聚肽、豌豆低聚肽、胶原蛋白低聚肽、白蛋白低聚肽和牡蛎低聚肽中的一种以上。
本发明的碳水化合物采用燕麦粉、糙米粉、糊精、小麦粉、玉米粉、乳糖、果糖和水溶性膳食纤维中的两种以上,所述水溶性膳食纤维为魔芋葡甘露聚糖、低聚果糖和抗性糊精。
本发明的燕麦粉、糙米粉、糊精、小麦粉、玉米粉、大米粉、乳糖、果糖中的一种以上2~8份,所述魔芋葡甘露聚糖、低聚果糖和抗性糊精中的两种以上2~14.5份。
本发明的维生素和矿物质采用维生素预混料和矿物质预混料,所述维生素预混料采用以下方法得到:按质量百分比称取2.9%维生素A、12.2%β-胡萝卜素、0.3%维生素D3、7.0%维生素E、0.6%维生素B1、2.6%维生素B2、0.6%维生素B6、0.1%维生素B12、53.3%维生素C、6.1%烟酸、0.4%叶酸、1.9%泛酸和12%糊精,分别经过或不经过粉碎或制粒,再等量递增混合或分级放大混合,得到维生素预混料;所述矿物质预混料采用以下方法得到:按质量百分比称取17.9%硫酸镁、56.2%L-乳酸钙、20.7%磷酸氢钙、0.9%硫酸亚铁、1.9%葡萄糖酸锌和2.4%糊精,分别经过或不经过粉碎或制粒,再等量递增混合或分级放大混合,得到矿物质预混料。

本发明的乳化剂为可溶性大豆多糖、磷脂、柠檬酸脂肪酸甘油酯、辛,癸酸甘油酯、蔗糖脂肪酸酯和山梨糖醇中的一种以上;所述酸度调节剂为磷酸、柠檬酸、柠檬酸钾、柠檬酸钠、乳酸钙和DL-苹果酸钠中的一种以上;所述甜味剂为三氯蔗糖、赤藓糖醇、麦芽糖醇、山梨糖醇、罗汉果糖苷和甜菊糖苷中的一种以上。
本发明与现有技术相比,生酮饮食配方粉用温水冲调后呈糊状,可以有效预防吞咽功能障碍的患者呛奶,同时,婴幼儿需要稍微咀嚼后吞下,充分锻炼婴幼儿的咀嚼能力,特别是作为从液体食物过渡到固体食物这个阶段的一个过渡产品,非常有必要,其中加入的魔芋葡甘露聚糖和低聚果糖,患者食后在胃肠道内与葡萄糖形成黏胶,可以减慢葡萄糖的吸收,使餐后血糖维持稳定,从而使餐后血酮水平也能维持稳定,提高生酮饮食的治疗效果。

脂肪采用椰子油、棕榈仁油、中链甘油三酯、橄榄油、菜籽油、大豆油、葵花籽油、茶籽油、玉米油、芝麻油、花生油、亚麻籽油中的两种以上的脂肪粉。其中,椰子油、棕榈仁油和中链甘油三脂中的一种以上脂肪粉16~23份,橄榄油、菜籽油、大豆油、葵花籽油、茶籽油、玉米油、芝麻油、花生油和亚麻籽油中的一种以上的脂肪粉39~52份。
在生酮饮食中,脂肪作为机体的主要能源物质,由肝脏代谢产生酮体,酮体对癫痫发作起到抑制作用。
蛋白质采用乳清蛋白质粉、大豆蛋白质粉、小麦低聚肽、玉米低聚肽、大豆低聚肽、豌豆低聚肽、胶原蛋白低聚肽、白蛋白低聚肽和牡蛎低聚肽中的一种以上。

在生酮饮食中,碳水化合物并不不是人体的主要能源物质,但少量的碳水化合物是构成机体组织的重要物质,并参与细胞的组成和多种活动。本发明采用的水溶性膳食纤维作为抗消化性的碳水化合物,能刺激肠道蠕动,保持水分,增加结肠发酵和粪便容积,促进短链脂肪酸生成和肠道菌群增殖,维持肠道健康。

本发明的生酮饮食配方粉,形态为粉末状,可以采用密封罐装包装,常温储存、运输,常温下保质期可以达到18~24个月。
本发明的生酮饮食配方粉,适用对象为病人、正常人、动物。治疗范围:癫痫、糖尿病、肿瘤、行为异常、孤独症、脊髓损伤、减肥、减脂、阿尔茨海默病。
用法:按计量将本发明的生酮饮食配方粉,放入40℃的温水中,搅拌混合均匀得到泥糊状,直接食用。推荐用量:1~3岁,15g~55g/次,3次~6次/天;4岁~10岁,40g~80g/次,3次~4次/天;10岁以上,60g~125g/次,3次/天。
本发明的生酮饮食配方粉,加入有魔芋葡甘露聚糖和低聚果糖,其在胃肠道内与葡萄糖形成黏胶,可以减慢葡萄糖的吸收,使餐后血糖和血酮水平维持稳定,提高生酮饮食的治疗效果,可作为生酮饮食期间的主食,营养全面,脂肪酸搭配合理,有利于高效、稳定产酮,并且副反应少。
本发明的生酮饮食配方粉,可用以下方法制备得到,包括以下步骤:
一、按质量比,将脂肪粉55~75份,粉末状蛋白质10~21份,粉末状碳水化合物4~22.5份,粉末状维生素、矿物质3.2~4.5份,左旋肉碱0.6~3.0份,牛磺酸0.1~0.15份,其他成分0.4~2.0份,搅拌混合,转速12~15转/min,时间30~40min,得到生酮饮食配方粉。
脂肪粉采用椰子油、棕榈仁油、中链甘油三酯、橄榄油、菜籽油、大豆油、葵花籽油、茶籽油、玉米油、芝麻油、花生油和亚麻籽油中的两种以上的脂肪粉。其中,椰子油、棕榈仁油和中链甘油三脂中的一种以上脂肪粉16~23份,橄榄油、菜籽油、大豆油、葵花籽油、茶籽油、玉米油、芝麻油、花生油和亚麻籽油中的一种以上的脂肪粉39~52份。

食疗例1
小宝,男,黑龙江人,现31个月,5个月的时候开始出现点头症状,发作时不断点头,每天20多次,被诊断为婴儿痉挛症,先服用妥泰无效,病情加重,后来注射德巴金6天,病情得到控制,改用口服德巴金,但是5个月之后病情复发,之后增加德巴金的剂量,难以控制病情,16个月时采用生酮饮食治疗。开始食用实施例1一周,后调整,食用实施例2、实施例3四周,最后食用实施例2六周后,没有再发作点头症状,行为、语言、智力与正常同龄儿童无区别。
食疗例2
慧慧,女,浙江人,现21个月,6个月的时候,开始发现点头,并伴有哭闹,嘴唇发青,经诊断,是婴儿痉挛症。确诊后注射德巴金,由于过敏,换成注射氯硝西泮和服用妥泰,点头开始减少,哭闹也减少,但是两周后点头次数回到之前状态。在医生的建议下,10个月时开始接受生酮饮食治疗。开始食用实施例3二周,测得酮值达不到要求,后食用实施例4至今,开始食用的时候病情时有发作,但是程度减轻,嘴唇不发青,次数逐渐减少,食用3个月后,病情再也没有发作过。
食疗例3
阿卓,女,重庆人,现4岁半,2个月第一次出现癫痫发作,两眼翻白,呼吸停止,CT和脑电图检查,没有查出任何异样,一年后感冒出现同样症状,CT检查正常,脑电图异常,确诊为继发性癫痫,先后服用德巴金、氯硝西泮、开普兰、妥泰、奥卡西平、拉莫三嗪两年多,并采用激素、丙球蛋白治疗,开始癫痫发作减少,后来越来越多,每天发作四、五十次。3岁的时候开始生酮饮食治疗。食用实施例6,同时还服用抗癫痫药物氯硝西泮、开普兰、妥泰、奥卡西平、拉莫三嗪,两周后癫痫发作次数慢慢减少,一个月后完全控制,两个月后开始逐渐减少抗癫痫药物,生酮饮食一年后完全停用了抗癫痫药物,到现在已经没有再发作癫痫了,上个月复查脑电图,结果已经显示为正常脑电图。

皓皓,男,浙江人,现7岁,4岁的时候,突然摔倒,没有发出惊吓的声音,带去医院检查时又摔倒了,经多家医院确诊为肌陈挛性癫痫LGS。服用过德巴金、妥泰、氯硝西泮,开始都有效,几天后就无效了。5岁2个月时正式开始生酮饮食治疗。食用实施例5三个月后,病情得到控制,话明显比以前多了,记忆力也好多了,还能够模仿电视里的内容。
食疗例5
越越,男,内蒙古人,现13岁,6岁刚上幼儿园,开始发作癫痫,后来癫痫发作越来越频繁,被诊断为部分性发作癫痫,尝试过大多数的抗癫痫药物,但是断断续续癫痫发作了两年多时间,选择了右颞枕切除术。术后癫痫发作得到控制,但是脑电图还不正常,手术后一年半后,又开始发作癫痫,最后选择了生酮饮食治疗,一直食用实施例5,到现在没有再发作癫痫,不管是智力还是语言上都基本与同龄的孩子一致,个子长高了,会挑选自己喜欢的衣物,上小学五年级,成绩也不错。
食疗例6
小健,男,湖北人,现1岁半,5个月大的时候,点头,弯腰,确诊为婴儿痉挛症,服用很多药物,病情仍没有被控制,7个月大的时候开始生酮饮食治疗。生酮饮食治疗前每天有3次病情发作,每次点头不小于10次,食用实施例5一周后,病情得到明显改善,后根据身体状况进行了调节,食用实施例4,生酮食疗五个月后,没有出现过点头,半年后,脑电图检查,结果显示已经没有出现高峰节律,较之前明显好转。
生酮饮食属于高脂肪比例的食物,普通的生酮饮食油腻,口感差很难接受并长期坚持食用,生酮饮食治疗每天摄入的热量是普通人群的75%,摄入的营养物质更少,所以生酮治疗期间要更加重视营养的全面均衡,本发明的生酮饮食配方粉加入了全面的营养素,不需额外补充,储藏、食用、运输方便,给食用繁琐的生酮饮食的人群,带来了方便。
Claims (1)
1.一种生酮饮食配方粉,其特征在于:每100克生酮饮食配方粉中,脂肪56克,蛋白质16克,碳水化合物19克,维生素0.4克,矿物质4.0克,左旋肉碱0.6克,牛磺酸0.14克,水分2.5克,磷脂0.5克,柠檬酸0.26克, 赤藓糖醇0.6克;其中,脂肪为:棕榈仁油17克,菜籽油39克,蛋白质为乳清蛋白,碳水化合物为:可溶性膳食纤维魔芋葡甘露聚糖和低聚果糖3克,乳糖和果糖16克;
所述脂肪采用棕榈仁油和菜籽油的脂肪粉,用以下方法得到,按质量百分比,将16%低聚果糖、7%抗性糊精、5.0%酪蛋白酸钠、2.0%单,双甘油脂肪酸酯溶解于65~70℃的水中,呈水相;将70%的棕榈仁油和菜籽油充分混合,在转速20~25转/min,搅拌15min,在搅拌下加入水相,继续搅拌10min,再经高压均质处理,压力为40~50MPa,时间为20min,得到稳定乳液,采用喷雾干燥得到脂肪粉;
所述维生素和矿物质采用维生素预混料和矿物质预混料,所述维生素预混料采用以下方法得到: 按质量百分比称取2.9%维生素A、12.2%β-胡萝卜素、0.3%维生素D3、7.0%维生素E、0.6%维生素B1、2.6%维生素B2、0.6%维生素B6、0.1%维生素B12、53.3%维生素C、6.1%烟酸、0.4%叶酸、1.9%泛酸和12%糊精,分别经过或不经过粉碎或制粒,再等量递增混合或分级放大混合,得到维生素预混料;所述矿物质预混料采用以下方法得到: 按质量百分比称取17.9%硫酸镁、56.2%L-乳酸钙、20.7%磷酸氢钙、0.9%硫酸亚铁、1.9%葡萄糖酸锌和2.4%糊精,分别经过或不经过粉碎或制粒,再等量递增混合或分级放大混合,得到矿物质预混料。
