Abstract
本发明公开了一种抗食物蛋白过敏的生酮饮食及其制备方法,要解决的技术问题是适用于对食物蛋白过敏的癫痫和孤独症患儿食用生酮饮食。本发明的抗食物蛋白过敏的生酮饮食,含有以下质量百分比的原料:粉剂脂肪62~90%,蛋白质等同物5~32%,复配维生素0.3~0.4%,复配矿物质一0.8~1.1%,复配矿物质二和其他营养素2.4~3.6%,复配核苷酸0.02~0.05%。本发明的制备方法,包括制备粉剂脂肪,干法混合。本发明与现有技术相比,产酮稳定,不含蛋白过敏原物质,营养全面均衡,易于消化吸收,适合癫痫和孤独症患儿的生酮治疗、康复及生长发育的营养需求,采用喷雾干燥法生产无蛋白的粉剂脂肪原料,干法混合添加蛋白质等同物、复配维生素、复配矿物质及核苷酸、益生菌,容易控制、易于实现。

技术领域
本发明涉及一种食品及其制备方法,特别是一种具有食疗功能的食品及其制备方法。
背景技术
癫痫是临床上常见的一种神经系统疾病,也是儿童时期较为多发的慢性脑功能障碍。据相关临床资料显示,小儿癫痫的发生率约是成人发生率的10~15倍,并且约有25%的患儿会发展为难治性癫痫。癫痫具有反复发作的临床表现,使得患儿的原发病灶受到不可逆转的损害,严重者还会损伤到神经等多个系统,对患儿的生活和智力均造成严重的影响,严重降低了患儿的生活质量。因此,有效地控制癫痫的发作,改善难治性癫痫患儿的预后,成为提高患儿生活质量的关键。
孤独症,又称自闭症或孤独性障碍,是一种大脑紊乱疾病,患者大脑的不同区域难以协同工作。孤独症症状通常在患儿3岁之前开始显现。孤独症儿童中,智力水平表现很不一致,大多数患者表现为不同程度的智力障碍。
癫痫和孤独症儿童是需要特殊关注的群体。早期开展诊断和治疗可以帮助孤独症患儿充分发掘潜能,提高患儿的智力及整体的生活能力。癫痫和孤独症都是基于大脑的疾病,研究显示癫痫和孤独症经常在一起发生,发生癫痫症的概率比孤独症的高30%,且患有孤独症的儿童有更高的发生癫痫的风险。
临床研究证明,生酮饮食疗法既能用于癫痫疾病,其疗效显著、副作用少、安全性好、经济实惠、简单方便,又能用于孤独症,其能明显减轻并改善孤独症社会功能、交流能力、刻板及重复性行为的孤独症核心症状。在上述患病人群中,婴幼儿及儿童对生酮饮食疗法具有更高的依从性,并且疗效更显著。
食物过敏是由免疫机制介导的对食物不良反应,其发病率逐年增高,在婴幼儿群体中尤以牛奶蛋白过敏症最为显著,牛奶蛋白过敏是人体对一种以上牛奶蛋白质发生的免疫学反应,是儿童尤其是3岁内婴幼儿最常见的食物过敏。据流行病学统计7.5%的婴幼儿对牛奶蛋白过敏。而对于癫痫、孤独症幼儿及儿童,牛奶蛋白过敏的发生率更高。对孤独症患儿,食物过敏是导致和影响其病症的重要环境因素,超过60%孤独症患儿对牛奶蛋白过敏。约30~50%的癫痫患儿对牛奶蛋白过敏。其临床表现多样,为反复发作性湿疹,胃肠道功能紊乱,如腹泻、便秘、肠绞痛、呕吐,拒奶,缺铁性贫血,身高体重增长缓慢,慢性咳嗽,发作性喘息。严重过敏反应症状发展迅速,发生率为50~60%的累及胃肠道、发生率为50~60%的皮肤和发生率为20~30%的呼吸道中两个以上器官系统,尤其是心血管系统,出现血压下降及心律失常,甚至过敏性休克。治疗牛奶蛋白过敏的最佳方法是回避牛奶蛋白,同时给予低过敏原性配方替代,以提供生长所需要的能量及营养。
生酮饮食是一个脂肪高比例、碳水化合物低比例、蛋白质和其他营养素合适的配方饮食,蛋白质是生酮饮食中的重要营养组成成分。现有技术的生酮饮食中,蛋白质主要来源于牛奶动物蛋白、大豆蛋白、鸡蛋蛋白。超过90%的牛奶蛋白过敏婴幼儿存在对羊奶、马奶交叉过敏,30~50%的牛奶蛋白过敏婴幼儿存在对大豆、鸡蛋、谷物的交叉过敏。癫痫和孤独症患儿在生酮饮食治疗过程中也因牛奶蛋白过敏导致依从性大大降低、病情延误或加重的现象时有发生。
现有技术的抗食物蛋白过敏的奶粉或配方营养粉是高碳水化合物产品,只适合普通儿童及婴幼儿食用。无法满足对牛奶蛋白过敏的癫痫和孤独症儿童及婴幼儿的特殊需求。
现有技术的制备方法,不含水解乳清蛋白、肽、氨基酸,采用全湿法工艺生产抗食物蛋白过敏的生酮饮食专用配方食品,生产规模大、投资大,同时很多具有生物活性的营养物质不适合湿法喷雾干燥工艺。
发明内容
本发明的目的是提供一种抗食物蛋白过敏的生酮饮食及其制备方法,要解决的技术问题是适用于对食物蛋白过敏的癫痫和孤独症患儿食用生酮饮食。
本发明采用以下技术方案:一种抗食物蛋白过敏的生酮饮食,含有以下质量百分比的原料:粉剂脂肪62~90%,蛋白质等同物5~32%,复配维生素0.3~0.4%,复配矿物质一0.8~1.1%,复配矿物质二和其他营养素2.4~3.6%,复配核苷酸0.02~0.05%;
所述粉剂脂肪含有以下质量百分比的原料:油脂50~60%,碳水化合物8~30%,膳食纤维10~40%;
所述油脂由以下质量百分比的原料组成:中链脂肪酸油料20~50%、长链脂肪酸油料50~80%;
所述碳水化合物采用变性淀粉辛烯基琥珀酸淀粉钠;
所述膳食纤维为水溶性膳食纤维聚葡萄糖、抗性糊精、低聚异麦芽糖,低聚果糖和低聚半乳糖中的一种以上;
所述蛋白质等同物为深度水解乳清蛋白、深度水解酪蛋白和深度水解大豆蛋白中的一种以上,蛋白质等同物由质量百分比10~50%的氨基酸、50~90%的低聚肽组成。
本发明的粉剂脂肪含有以下质量百分比的原料:0<乳化剂≤2%,0<酸度调节剂≤2%,0<抗氧化剂≤2%。
本发明的抗食物蛋白过敏的生酮饮食含有以下质量百分比的原料:0<益生菌粉≤0.1%,0<食品添加剂≤1%。
本发明的复配维生素由以下质量百分比的原料组成:醋酸视黄酯0.9~1.4%,胆钙化醇0.02~0.03%,牛磺酸9.3~14.8%,植物甲萘醌0.3~0.5%,盐酸硫胺素0.2~0.3%,核黄素0.8~1.3%,盐酸吡哆醇0.2~0.3%,氰钴胺0.05~0.08%,烟酰胺1.4~2.3%,叶酸0.5~0.8%,D-泛酸钙0.9~1.4%,L-抗坏血酸32.5~51.7%,D-生物素0.2~0.3%,肌醇8.3~13.1%,抗性糊精11.7%~44.4%。
本发明的复配矿物质一由以下质量百分比的原料组成:焦磷酸铁3.2~5.1%,硫酸铜0.06~0.09%,硫酸镁36.9~58.7%,硫酸锌1.1~1.7%,碘化钾0.17~0.27%,亚硒酸钠0.5~0.8%,硫酸锰0.09~0.14%,抗性糊精33.2~57.9%。
本发明的复配矿物质二和其他营养素由以下质量百分比的原料组成:氯化钠2.9~4.6%,氯化钾17.4~27.6%,磷酸三钙34.8~55.4%,左旋肉碱酒石酸盐1.4~2.3%,酒石酸氢胆碱4.3~6.9%,抗性糊精3.2~39.2%。
本发明的复配核苷酸为5’-胞苷酸二钠、5’-尿苷酸二钠、5’-单磷酸腺苷、5-肌苷酸二钠、5-鸟苷酸二钠中一种以上。

(2)按质量百分比,将碳水化合物8~30%、膳食纤维10~40%、乳化剂0~2%、酸度调节剂0~2%,加入到40~80℃纯水中,搅拌均匀,得到固形物质量含量为20~30%的水溶液;
(3)将混合油脂,加入到水溶液中,在转速4000~20000转/min下,剪切5~40min,在压力为40~120MP下,高压均质处理2~4次,得到稳定乳液,喷雾干燥,进风温度为175~185℃,出风温度80~85℃,得到粉剂脂肪,载油率为50~60%;

粉剂脂肪提供脂肪,脂肪作为机体的主要能源物质,由肝脏代谢产生酮体,酮体对癫痫发作起到抑制作用。
粉剂脂肪由以下质量百分比的原料组成:油脂50~60%,碳水化合物8~30%,膳食纤维10~40%,乳化剂0~2%,酸度调节剂0~2%,抗氧化剂0~2%。

一、制备粉剂脂肪,包括以下步骤:
(1)室温(20℃)下,按质量百分比,将油脂50~60%、抗氧化剂0~2%混合,转速10~25转/min,搅拌5~20min,得到混合油脂。
(2)按质量百分比,将碳水化合物8~30%、膳食纤维10~40%、乳化剂0~2%、酸度调节剂0~2%,按现有技术缓慢加入到40~80℃纯水中,搅拌均匀,得到固形物质量含量为20~30%的水溶液。
(3)将混合油脂,按现有技术缓慢加入到水溶液中,在转速4000~20000转/min下,剪切5~40min,在压力为40~120MP下,高压均质处理2~4次,得到稳定乳液,喷雾干燥,进风温度为175~185℃,出风温度80~85℃,得到粉剂脂肪,载油率为50~60%。

本发明的粉剂脂肪以变性淀粉辛烯基琥珀酸淀粉钠复配水溶性膳食纤维作为壁材,包埋混合油脂。采用喷雾干燥制成的粉剂脂肪,壁材强度高、包埋率大于95%,氧化稳定性好。
现有技术的粉剂脂肪,当载油率大于50%,采用的包埋壁材为蛋白原料,蛋白原料为酪蛋白、酪蛋白酸盐、乳清蛋白、大豆分离蛋白,其中酪蛋白酸盐为酪蛋白酸钠、酪蛋白酸钾、酪蛋白酸钙、酪蛋白酸镁。蛋白原料含蛋白过敏原物质,不适合对蛋白过敏的儿童及婴幼儿食用。现有技术单独采用辛烯基琥珀酸淀粉钠作壁材,粉剂脂肪的氧化稳定性差;采用辛烯基琥珀酸淀粉钠复配麦芽糊精淀粉水解物虽可增强壁材的强度,提高粉剂脂肪的抗氧化性,但麦芽糊精在人体内可快速代谢产生糖,会影响血糖,减弱生酮效果。本发明的粉剂脂肪,包埋壁材选用辛烯基琥珀酸淀粉钠和水溶性膳食纤维,其既能提供高脂肪又不含蛋白过敏原物质,脂肪酸营养均衡,生酮效果稳定,其中,水溶性膳食纤维作为益生元能促进肠道益生菌增殖,提高婴幼儿免疫功能,从而保护婴幼儿免于感染及过敏,进一步提高了抗食物蛋白过敏的生酮饮食的抗过敏功效,适合蛋白过敏儿童及婴幼儿的生酮食疗需求,同时,粉剂脂肪的壁材强度高、包埋率大于95%、粉剂脂肪氧化稳定性好,可保证抗食物蛋白过敏的生酮饮食货架期的质量稳定。
二、按质量百分比,将粉剂脂肪62~90%、蛋白质等同物5~32%、复配维生素0.3~0.4%、复配矿物质一0.8~1.1%、复配矿物质二和其他营养素2.4~3.6%、复配核苷酸0.02~0.05%,益生菌粉0~0.1%,食品添加剂0~1%,进行干法混合,包括以下步骤:
(1)将复配维生素、复配核苷酸、益生菌粉、食品添加剂质量之和,与粉剂脂肪的1~50%,进行预混合,转速为15~30转/min,混合时间为15~30min,得到第一预混营养素。

三、将混合原料进行计量包装,进行X射线检验、外包装,得到抗食物蛋白过敏的生酮饮食。
本发明的抗食物蛋白过敏的生酮饮食,状态为粉末状,可以采用铝箔袋+盒装包装,常温(25℃)储存、运输,常温下保质期可以达到18~24个月。适用于对食物蛋白过敏的癫痫、孤独症、行为异常患者。用法:将抗食物蛋白过敏的生酮饮食,放入40~50℃的温开水中,搅拌溶解后口服。推荐用量:1~3岁,15~55g/次,3~6次/天;4~10岁,40~80g/次,3~4次/天;10岁以上,60~125g/次,3次/天。

一、制备粉剂脂肪
(1)按质量百分比,将椰子油30%、低芥酸的菜籽油25%、抗坏血酸钠0.6%混合,在转速20转/min,搅拌10min,得到混合油脂。

(3)将混合油脂,缓慢加入到水溶液中,在转速10000转/min下,剪切8min,经高压均质处理3次,压力为120MP,得到稳定乳液,喷雾干燥得到粉剂脂肪,喷雾干燥进风温度为175~185℃,出风温度为80~85℃。
二、干法混合
(1)按质量百分比,将复配维生素0.3%、复配核苷酸0.03%、动物双歧杆菌粉0.1%、甜菊糖苷0.07%,用粉剂脂肪的10%进行稀释预混合,混合转速25转/min,混合时间为15min,得到第一预混营养素。
(2)将复配矿物质一1.0%、复配矿物质二和其他营养素3.0%,用粉剂脂肪20%进行稀释预混合,混合转速25转/min,混合时间为15min,得到第二预混营养素。
(3)将剩余粉剂脂肪、第一预混营养素、深度水解乳清蛋白粉25.5%、第二预混营养素依次投料进行混合,混合转速10转/min,混合时间为35min,得到混合原料。

(1)按质量百分比,将复配维生素0.3%、复配核苷酸0.04%、鼠李糖乳杆菌粉0.2%、磷脂0.06%,用粉剂脂肪20%进行稀释预混合,混合转速20转/min,混合时间为25min,得到第一预混营养素。
(2)将复配矿物质一1.0%、复配矿物质二和其他营养素3.5%,用粉剂脂肪40%进行稀释预混合,混合转速20转/min,混合时间为25min,得到第二预混营养素。
(3)将剩余粉剂脂肪、第一预混营养素、深度水解乳清蛋白粉6%、第二预混营养素依次投料进行混合,混合转速10转/min,混合时间为40min,得到混合原料。

食疗例1
小志,男,现3岁半,9月大时,被确诊为婴儿痉挛症,服用过很多药物,病情仍没有被控制,且有牛奶蛋白过敏史,食用牛奶全身出现红斑并伴有轻度腹泻、孩子哭闹,在医生建议下,1岁3个月时启动生酮饮食,食用实施例1一周,未见不适症状,后调整食用实施例2,二周后,病情得到明显改善,且未出现蛋白过敏症状,生酮饮食食疗四个月后,没有出现过点头,半年后,脑电图检查,结果显示已经没有出现高峰节律,较生酮饮食食疗前明显好转。

豆豆,女,现4岁,出生4个月时因食用普通配方奶粉,出现荨麻疹,后进行过敏原检查,结果显示对牛奶蛋白、大豆蛋白、鸡蛋蛋白过敏,在医生建议下食用深度水解蛋白配方的普通奶粉,无过敏症状。在8月大时开始出现无明显诱因抽搐发作,表现为点头、耸肩发作,每天发作10余次,脑电图检查高度失律,被确诊为婴儿痉挛症。先后服用妥泰、开普兰、德巴金、丙戊酸钠等多种抗癫痫药物长达1年多,癫痫持续发作并未得到控制,服药期间也时不时抽搐,频繁的时候一天抽搐十几次。2岁时在医生建议下进行生酮饮食,食用实施例2,两周后癫痫发作次数慢慢减少,且未出现蛋白过敏症状和不适反应,后调整食用实施例3,3个月后完全控制,一年后脑电图检查为正常脑电图,认知和运动方面均有进步。
食疗例3
李某,男,现7岁,3岁时开始出现语言能力退化、无法解释的烦躁和发脾气、攻击,行为刻板的症状,随后被诊断为早期儿童孤独症、发育迟滞,其对麸质和牛奶蛋白均呈现重度过敏,在服用了1年丙戊酸治疗孤独症没有效果后,同时使得孤独症核心症状加剧。在5岁时,接受了医生重新评估,儿童孤独症评定量表CARS得分为38(34分及以上表明严重的孤独症),难以控制自己的情绪,并且过度活跃,还有听觉恐惧和强迫症,社交互动非常困难。在医生建议下,采用实施例1进行生酮饮食治疗,1个月后,多动和攻击性行为有所减少,一年后,多动、恐惧、焦虑、异常的视、听觉反应显著减少,注意力明显增加,沟通能力提高,在整个生酮饮食食疗过程中,没有服用任何精神药物治疗,在上个月刚刚接受医生的评估,儿童孤独症评定量表CARS得分为25(28~36分表示轻度至中度孤独症,而小于28分表示无症状)。
食疗例4
小齐,女,5岁,1岁大时喊她的名字没有反应、没有呀呀学语、没有与人互动的手势;16个月时不会发单音,睡眠很差,最终被确诊为孤独症,且伴有癫痫,高峰时每天发作50次之多,对牛奶蛋白、鸡蛋蛋白、大豆蛋白、麸质过敏,食用过敏原物质会出现哮喘,在3岁时开始生酮饮食,食用实施例3一周,无过敏症状和不适反应,5周后,开始能集中注意力,多动症状减少,癫痫发作也明显减少,后对实施例3出现抵触,不愿进食,调整为实施例2,坚持生酮饮食1年,在社交能力,行为控制上,都有了很大的改善。
从食疗例可以看出,本发明的抗食物蛋白过敏的生酮饮食,不会引发癫痫和孤独症患儿的过敏症状,过敏患儿对抗食物蛋白过敏的生酮饮食的依从性高、耐受性好,同时生酮饮食食疗效果明显,对于癫痫患儿能有效控制癫痫发作减少、提高认知和行为能力,对于孤独症患儿能明显改善孤独症核心症状。
本发明的抗食物蛋白过敏的生酮饮食,产酮稳定,不含蛋白过敏原物质,同时添加了多种营养物质和生物活性物质,营养全面均衡,适合癫痫和孤独症患儿的生酮治疗、康复及生长发育的营养需求。
Claims (10)
1.一种抗食物蛋白过敏的生酮饮食,其特征在于:所述抗食物蛋白过敏的生酮饮食含有以下质量百分比的原料:粉剂脂肪62~90%,蛋白质等同物5~32%,复配维生素0.3~0.4%,复配矿物质一0.8~1.1%,复配矿物质二和其他营养素2.4~3.6%,复配核苷酸0.02~0.05%;
所述粉剂脂肪含有以下质量百分比的原料:油脂50~60%,碳水化合物8~30%,膳食纤维10~40%;
所述油脂由以下质量百分比的原料组成:中链脂肪酸油料20~50%、长链脂肪酸油料50~80%;
所述碳水化合物采用变性淀粉辛烯基琥珀酸淀粉钠;
所述膳食纤维为水溶性膳食纤维聚葡萄糖、抗性糊精、低聚异麦芽糖,低聚果糖和低聚半乳糖中的一种以上;
所述蛋白质等同物为深度水解乳清蛋白、深度水解酪蛋白和深度水解大豆蛋白中的一种以上,蛋白质等同物由质量百分比10~50%的氨基酸、50~90%的低聚肽组成。
2.根据权利要求1所述的抗食物蛋白过敏的生酮饮食,其特征在于:所述粉剂脂肪含有以下质量百分比的原料:0<乳化剂≤2%,0<酸度调节剂≤2%,0<抗氧化剂≤2%。
3.根据权利要求2所述的抗食物蛋白过敏的生酮饮食,其特征在于:所述抗食物蛋白过敏的生酮饮食含有以下质量百分比的原料:0<益生菌粉≤0.1%,0<食品添加剂≤1%。
4.根据权利要求3所述的抗食物蛋白过敏的生酮饮食,其特征在于:所述复配维生素由以下质量百分比的原料组成:醋酸视黄酯0.9~1.4%,胆钙化醇0.02~0.03%,牛磺酸9.3~14.8%,植物甲萘醌0.3~0.5%,盐酸硫胺素0.2~0.3%,核黄素0.8~1.3%,盐酸吡哆醇0.2~0.3%,氰钴胺0.05~0.08%,烟酰胺1.4~2.3%,叶酸0.5~0.8%,D-泛酸钙0.9~1.4%,L-抗坏血酸32.5~51.7%,D-生物素0.2~0.3%,肌醇8.3~13.1%,抗性糊精11.7%~44.4%。
5.根据权利要求3所述的抗食物蛋白过敏的生酮饮食,其特征在于:所述复配矿物质一由以下质量百分比的原料组成:焦磷酸铁3.2~5.1%,硫酸铜0.06~0.09%,硫酸镁36.9~58.7%,硫酸锌1.1~1.7%,碘化钾0.17~0.27%,亚硒酸钠0.5~0.8%,硫酸锰0.09~0.14%,抗性糊精33.2~57.9%。
6.根据权利要求3所述的抗食物蛋白过敏的生酮饮食,其特征在于:所述复配矿物质二和其他营养素由以下质量百分比的原料组成:氯化钠2.9~4.6%,氯化钾17.4~27.6%,磷酸三钙34.8~55.4%,左旋肉碱酒石酸盐1.4~2.3%,酒石酸氢胆碱4.3~6.9%,抗性糊精3.2~39.2%。
7.根据权利要求3所述的抗食物蛋白过敏的生酮饮食,其特征在于:所述复配核苷酸为5’-胞苷酸二钠、5’-尿苷酸二钠、5’-单磷酸腺苷、5-肌苷酸二钠、5-鸟苷酸二钠中一种以上。
8.根据权利要求3所述的抗食物蛋白过敏的生酮饮食,其特征在于:所述乳化剂为单,双脂肪酸甘油酯、柠檬酸脂肪酸甘油酯、硬脂酰乳酸钠、蔗糖脂肪酸酯和磷脂中的一种以上;
所述酸度调节剂为柠檬酸、柠檬酸钾、柠檬酸钠和三聚磷酸钠中的一种以上;
所述抗氧化剂为维生素E、抗坏血酸和抗坏血酸钠中的一种以上。
9.根据权利要求3所述的抗食物蛋白过敏的生酮饮食,其特征在于:所述益生菌粉为嗜酸乳杆菌、动物双歧杆菌、乳双歧杆菌、鼠李糖乳杆菌、罗伊氏乳杆菌、发酵乳杆菌、短双歧杆菌中的一种以上;
所述食品添加剂为乳化剂和调味剂;所述乳化剂为单,双脂肪酸甘油酯、柠檬酸脂肪酸甘油酯、硬脂酰乳酸钠、蔗糖脂肪酸酯和磷脂中的一种以上;所述调味剂为三氯蔗糖、甜菊糖苷、罗汉果糖苷、赤藓糖醇、麦芽糖醇、木糖醇、异麦芽酮糖和食用盐中的一种以上。
10.一种抗食物蛋白过敏的生酮饮食的制备方法,包括以下步骤:
一、制备粉剂脂肪,包括以下步骤:
(1)按质量百分比,将油脂50~60%、抗氧化剂0~2%混合,转速10~25转/min,搅拌5~20min,得到混合油脂;
(2)按质量百分比,将碳水化合物8~30%、膳食纤维10~40%、乳化剂0~2%、酸度调节剂0~2%,加入到40~80℃纯水中,搅拌均匀,得到固形物质量含量为20~30%的水溶液;
(3)将混合油脂,加入到水溶液中,在转速4000~20000转/min下,剪切5~40min,在压力为40~120MP下,高压均质处理2~4次,得到稳定乳液,喷雾干燥,进风温度为175~185℃,出风温度80~85℃,得到粉剂脂肪,载油率为50~60%;
所述油脂由以下质量百分比的原料组成:中链脂肪酸油料20~50%、长链脂肪酸油料50~80%;
所述中链脂肪酸油料采用椰子油、棕榈仁油和中链甘油三酯中的一种以上;
所述长链脂肪酸油料采用榈油、花生油、低芥酸的菜籽油、橄榄油、茶油、高油酸的葵花籽油、稻米油、松子油、豆油、玉米油、葵花籽油、亚麻籽油、棉子油、芝麻油、核桃油、紫苏油、胡麻油、二十二碳六烯酸DHA藻油、花生四烯酸ARA油和鱼油中的一种以上;
所述碳水化合物采用变性淀粉辛烯基琥珀酸淀粉钠;
所述膳食纤维为水溶性膳食纤维聚葡萄糖、抗性糊精、低聚异麦芽糖,低聚果糖和低聚半乳糖中的一种以上;
所述乳化剂为单,双脂肪酸甘油酯、柠檬酸脂肪酸甘油酯、硬脂酰乳酸钠、蔗糖脂肪酸酯和磷脂中的一种以上;
所述酸度调节剂为柠檬酸、柠檬酸钾、柠檬酸钠和三聚磷酸钠中的一种以上;
所述抗氧化剂为维生素E、抗坏血酸和抗坏血酸钠中的一种以上;
二、按质量百分比,将粉剂脂肪62~90%、蛋白质等同物5~32%、复配维生素0.3~0.4%、复配矿物质一0.8~1.1%、复配矿物质二和其他营养素2.4~3.6%、复配核苷酸0.02~0.05%,益生菌粉0~0.1%,食品添加剂0~1%,进行干法混合,包括以下步骤:
(1)将复配维生素、复配核苷酸、益生菌粉、食品添加剂质量之和,与粉剂脂肪的1~50%,进行预混合,转速为15~30转/min,混合时间为15~30min,得到第一预混营养素;
(2)将复配矿物质一、复配矿物质二和其他营养素质量之和,与粉剂脂肪的1~10%,进行预混合,转速为15~30转/min,混合时间为15~30min,得到第二预混营养素;
(3)将剩余粉剂脂肪、第一预混营养素、蛋白质等同物、第二预混营养素,依次投料进行混合,转速为8~12转/min,混合时间为30~60min,得到得到抗食物蛋白过敏的生酮饮食;
所述蛋白质等同物为深度水解乳清蛋白、深度水解酪蛋白和深度水解大豆蛋白中的一种以上;蛋白质等同物由质量百分比10~50%的氨基酸、50~90%的低聚肽构成;
所述复配维生素由以下质量百分比的原料组成:醋酸视黄酯0.9~1.4%,胆钙化醇0.02~0.03%,牛磺酸9.3~14.8%,植物甲萘醌0.3~0.5%,盐酸硫胺素0.2~0.3%,核黄素0.8~1.3%,盐酸吡哆醇0.2~0.3%,氰钴胺0.05~0.08%,烟酰胺1.4~2.3%,叶酸0.5~0.8%,D-泛酸钙0.9~1.4%,L-抗坏血酸32.5~51.7%,D-生物素0.2~0.3%,肌醇8.3~13.1%,抗性糊精11.7%~44.4%;
所述复配矿物质一由以下质量百分比的原料组成:焦磷酸铁3.2~5.1%,硫酸铜0.06~0.09%,硫酸镁36.9~58.7%,硫酸锌1.1~1.7%,碘化钾0.17~0.27%,亚硒酸钠0.5~0.8%,硫酸锰0.09~0.14%,抗性糊精33.2~57.9%;
所述复配矿物质二和其他营养素由以下质量百分比的原料组成:氯化钠2.9~4.6%,氯化钾17.4~27.6%,磷酸三钙34.8~55.4%,左旋肉碱酒石酸盐1.4~2.3%,酒石酸氢胆碱4.3~6.9%,抗性糊精3.2~39.2%;
所述复配核苷酸为5’-胞苷酸二钠、5’-尿苷酸二钠、5’-单磷酸腺苷、5-肌苷酸二钠、5-鸟苷酸二钠中一种以上;
所述益生菌粉为为嗜酸乳杆菌、动物双歧杆菌、乳双歧杆菌、鼠李糖乳杆菌、罗伊氏乳杆菌、发酵乳杆菌、短双歧杆菌中的一种以上;
所述食品添加剂为乳化剂和调味剂;
所述乳化剂为单,双脂肪酸甘油酯、柠檬酸脂肪酸甘油酯、硬脂酰乳酸钠、蔗糖脂肪酸酯和磷脂中的一种以上。
