Abstract

本发明公开了富含二氢杨梅素藤茶的真空冷冻干燥加工方法,属于藤茶加工领域。当年采摘藤茶叶片进行180℃快速杀青10分钟,杀青好的藤茶用揉捻机进行包揉加工5分钟,用布包裹藤茶,在速包机上紧袋和收缩藤茶茶条,将收缩好的藤茶放平板机上加工30分钟,用打散机将藤茶块进行打散使其散热,然后再用特定的真空冷冻参数对藤茶进行干燥。本发明加工的藤茶具有二氢杨梅素含量高27.01%(是对照自然风干的2.97倍),茶叶紧实耐泡,色泽鲜艳等优点,同时富含的蛋白质、微量元素硒等,具有保肝护肝、抗氧化、抑菌作用、提高免疫力、降血脂、清除自由基等重要的保健生理功能,是药食两用的健康饮品。

一种富含二氢杨梅素藤茶的真空冷冻干燥加工方法
技术领域
本发明属于藤茶加工领域,具体涉及一种富含二氢杨梅素藤茶的真空冷冻干燥加工方法。
背景技术
藤茶是传统的中草药之一,在民间使用广泛。藤茶是葡萄科蛇葡萄属显齿蛇葡萄(Ampelopsis grossedentata) (Hand-Mazz) W.T.wang的嫩茎叶,广泛分布在热带和亚热带地区,嫩茎和叶片被用于健康茶饮料,在中药中被用于治疗肝脏方面疾病。Ampelopsis的活性成分主要是类黄酮(flavonoids)物质蛇葡萄素(ampelopsin,AMP),也叫二氢杨梅素(dihydromyricetin,DHM)。近年来类黄酮被报道具有抗病毒,抗过敏,抗凝血,消炎,抗肿瘤和抗氧化功效,对人类健康具有潜在的功效,因此引起了广泛的关注。二氢杨梅素的生物和药理功效包括降血糖、抗氧化和保肝作用,最近的研究表明这种类黄酮对某些癌症具有效的抗癌活性,包括肝癌、乳腺癌、前列腺癌和膀胱癌。DHM还是一种天然抗氧化剂,具有抗氧化,清除自由基等性能。目前对这种类黄酮的保肝药理作用的研究发现HDM能够抑制乙肝病毒HBV和抑制HepG2细胞的增殖,因而成为筛选肝脏疾病治疗和保健药物和食品的一个极有前景的来源。
传统藤茶采用日光干燥及热风干燥两种方式对藤茶进行干燥,干燥时间长,受天气的影响大,加工后的藤茶营养成分遭破坏,产品苦涩、口感欠佳,外观有白霜,青涩味重等缺点。利用真空冷冻干燥技术可以防止由于温度过高而使藤茶营养成分遭破坏,影响产品的质量,同时可保持藤茶的新鲜食品的色、香、味,保留营养成分和防止表面硬化,提高产品复水性和速溶性,食用方便、脱水彻底、且能在室温下长期保存。
发明内容
本发明的目的在于针对现有技术不足,提供一种富含二氢杨梅素藤茶的真空冷冻干燥加工方法及其产品。本发明采用真空冷冻干燥机分9个时段烘干,加工出的藤茶营养成分和风味损失很少,可以最大限度地保留藤茶原有的营养、味道和芳香,保持着藤茶原来的颜色和形状,其所含二氢杨梅素含量高,达到27.01%,是自然风干藤茶二氢杨梅素含量(9.10%)的2.97倍,是热风干燥藤茶二氢杨梅素含量最低(3.81%)的7.09倍。
为实现上述目的,本发明采用如下技术方案:
一种富含二氢杨梅素藤茶的真空冷冻干燥加工方法,具体包括以下步骤:
(1)藤茶处理:当年采摘藤茶叶片经杀青和包揉加工后,用布包裹,随后在速包机上紧袋和收缩藤茶茶条,将收缩好的藤茶放平板机上进行加工,最后用打散机将藤茶块进行打散使其散热;
(2)真空冷冻干燥加工:将步骤(1)处理过的藤茶采用真空冷冻干燥机分9个时段烘干,所述9个时段烘干:第一时段:-40℃,4h;第二时段:-20℃,1h;第三时段:0℃,1h;第四时段:5℃,1h;第五时段:10℃,0.5h;第六时段:20℃,0.5h;第七时段:30℃,0.5h;第八时段:40℃,0.5h;第九时段:50℃,0.5h。
步骤(1)中所述杀青的工艺参数为:杀青温度180℃,杀青时间10min。
步骤(1)中所述包揉加工的时间为5min,平板机上进行加工的时间为30min。
步骤(2)干燥过程中真空度为<10pa。
本发明的有益效果在于:
(1)本发明加工的藤茶的营养成分和风味损失很少,可以最大限度地保留藤茶原有的营养、味道和芳香,保持着藤茶原来的颜色和形状;
(2)由于脱水彻底、重量轻,不仅适合长途运输,而且在常温下可保存3~5年;
(3)冻干食品最大的特点,是有它较好的复水性,可迅速地吸水复原,而其品质与新鲜原料基本相同或完全相同;
(4)与常规的冷冻干燥工艺相比,本发明所采用的真空冷冻干燥加工工艺在总干燥时间方面要缩短70%以上,在单位能耗方面降低了53%左右;
(5)采用本发明的真空冷冻干燥加工工艺,使得所加工出的藤茶二氢杨梅素含量高,达到27.01%,是自然风干藤茶二氢杨梅素含量(9.10%)的2.97倍,是热风干燥藤茶二氢杨梅素含量最低(3.81%)的7.09倍。

具体实施方式
以下结合具体实施例对本发明做进一步说明,但本发明不仅仅限于这些实施例。
实施例
一种富含二氢杨梅素藤茶的真空冷冻干燥加工方法,具体包括以下步骤:
(1)藤茶处理:当年采摘藤茶叶片经180℃杀青10min后,用揉捻机进行包揉加工5min,用布包裹,随后在速包机上紧袋和收缩藤茶茶条,将收缩好的藤茶放平板机上进行加工30min后,最后用打散机将藤茶块进行打散使其散热;
(2)真空冷冻干燥加工:将步骤(1)处理过的藤茶采用真空冷冻干燥机分9个时段烘干,烘干过程中控制真空度为<10pa,所述9个时段烘干的工艺参数如表1所示。

藤茶的二氢杨梅素含量测定
将藤茶按本发明实施例中的处理方法进行处理后,分别采用自然风干、热风干燥、晒干和本发明实施例中的真空冷冻干燥4种不同干燥方式对藤茶进行加工处理,并测定不同干燥方式下所得藤茶的二氢杨梅素含量,结果如图1所示。
从图1中可以看出,采用本发明的真空冷冻干燥加工工艺,所加工出的藤茶二氢杨梅素含量高,达到27.01%,是对照自然风干藤茶二氢杨梅素含量(9.10%)的2.97倍,是热风干燥藤茶二氢杨梅素含量最低(3.81%)的7.09倍。
从图2~图4中可以看出,本发明真空冷冻干燥加工出的藤茶保持着其原来的色泽和形状,具有很好的复水性,可迅速地吸水复原,所冲泡的茶汤颜色、品质与新鲜原料基本相同或完全相同。

1.一种富含二氢杨梅素藤茶的真空冷冻干燥加工方法,其特征在于:具体包括以下步骤:
(1)藤茶处理:当年采摘藤茶叶片经杀青和包揉加工后,用布包裹,随后在速包机上紧袋和收缩藤茶茶条,将收缩好的藤茶放平板机上进行加工,最后用打散机将藤茶块进行打散使其散热;
(2)真空冷冻干燥加工:将步骤(1)处理过的藤茶采用真空冷冻干燥机分9个时段烘干,干燥过程中真空度<10pa,所述9个时段烘干:第一时段:-40℃,4h;第二时段:-20℃,1h;第三时段:0℃,1h;第四时段:5℃,1h;第五时段:10℃,0.5h;第六时段:20℃,0.5h;第七时段:30℃,0.5h;第八时段:40℃,0.5h;第九时段:50℃,0.5h。
2.根据权利要求1所述的一种富含二氢杨梅素藤茶的真空冷冻干燥加工方法,其特征在于:步骤(1)中所述杀青的工艺参数为:杀青温度180℃,杀青时间10min。
3.根据权利要求1所述的一种富含二氢杨梅素藤茶的真空冷冻干燥加工方法,其特征在于:步骤(1)中所述包揉加工的时间为5min,平板机上进行加工的时间为30min。
4.一种如权利要求1所述的真空冷冻干燥加工方法制成的富含二氢杨梅素的藤茶。
