本发明属于膳食纤维技术领域,具体涉及一种红枣膳食纤维的制作方法。
背景技术
红枣营养丰富,含有各种丰富的营养成分,药用价值高,含有一些具有生物活性的特殊成分,如多糖、环磷酸腺苷、黄酮类化合物、五环三萜类化合物和生物碱等,这些成分共同作用构成了红枣特有的保健功能,是集营养和医疗保健于一体的优质滋补果品。现代医学和食品科学研究表明,红枣还具有抗癌、抗氧化及延缓衰老、护肝养脾、防止心脑血管疾病、镇静安神、护肤美容和提高机体免疫力等保健作用,是一种不可多得的药食兼顾的天然保健食品,被国家列为药食同源植物中首选,红枣的肉质部分较多,含有较多的不能被人体利用的多糖等物资,通过生物酶解,在提取红枣汁的副产物——红枣渣是生产红枣膳食纤维最佳原料,通过副产物的加工,可有效利用废物,大幅度减少废物的排放。

本发明为了解决现有技术中红枣渣的有效利用的问题,提供一种红枣膳食纤维的制作方法。
本发明采用如下技术方案:
一种红枣膳食纤维的制作方法,工艺流程如下:红枣→清洗→予煮→打浆去核→酶解→汁渣分离→枣渣脱水干燥→粉碎→包装,包括如下步骤:
a. 以红枣为原料,要求果实饱满、干实,无虫蛀、霉变;
b. 清洗,将红枣通过清洗槽用清水冲洗三遍;
c. 予煮,按照红枣:水为1:4的质量比加水,加热至90℃煮1小时;
d. 打浆去核,将予煮后的红枣加入打浆机去核,得枣浆;
e. 酶解,将去核后的枣浆放入酶解罐中,加入枣浆质量的0.5%的果胶酶,温度控制在40℃,酶解2小时;
f. 汁渣分离,将酶解后的枣浆经过离心分离机,将枣汁和枣渣进行分离,得到枣渣;
g. 枣渣脱水干燥,将枣渣在70℃条件下,气流烘干,干燥至含水分9%;
h. 粉碎,将干燥后的枣渣进行粉碎,过80目筛,得到红枣膳食纤维;
i. 包装,将干燥、过筛的红枣膳食纤维装桶、封口,形成成品后入库。
本发明的有益效果如下:
本发明通过果胶酶的分解,可以很好的释放枣肉中的糖分、蛋白质等有益成分,可以实现被人体利用的效果,很好的解决了枣渣的后处理问题,减少了废弃物的排放,减少了对环境的污染,另外,分离得到的枣汁还可以用于生产红枣酒、红枣醋等产品。
具体实施方式
一种红枣膳食纤维的制作方法,工艺流程如下:红枣→清洗→予煮→打浆去核→酶解→汁渣分离→枣渣脱水干燥→粉碎→包装,包括如下步骤:

1.一种红枣膳食纤维的制作方法,其特征在于:工艺流程如下:红枣→清洗→予煮→打浆去核→酶解→汁渣分离→枣渣脱水干燥→粉碎→包装,包括如下步骤:
a. 以红枣为原料,要求果实饱满、干实,无虫蛀、霉变;
b. 清洗,将红枣通过清洗槽用清水冲洗三遍;
c. 予煮,按照红枣:水为1:4的质量比加水,加热至90℃煮1小时;
d. 打浆去核,将予煮后的红枣加入打浆机去核,得枣浆;
e. 酶解,将去核后的枣浆放入酶解罐中,加入枣浆质量的0.5%的果胶酶,温度控制在40℃,酶解2小时;
f. 汁渣分离,将酶解后的枣浆经过离心分离机,将枣汁和枣渣进行分离,得到枣渣;
