我国是一个有着悠久酒文化的国家,在漫长的发展过程中形成了其独特的风格,占据着独特的地位,几乎渗透到社会生活的各个领域。酒给人民的生活增添了丰富的色彩,很多人喜欢饮酒,或因工作需要而不可避免地饮酒。适量饮酒对人体有一定的好处,不仅可以振奋情绪,而且也能促进人体的血液循环。但是一旦过量饮酒,就会引起诸如恶心、呕吐、记忆力减退、注意力不集中、运动能力受损和情绪不稳定等,严重时甚至因呼吸麻痹而导致死亡。已经有资料表明,食道癌、肝癌发病率的升高也与饮酒有关。近年来,脂肪肝、酒精肝、药肝等其他肝脏疾病的发病率在逐年上升,成为严重威胁我国人民生命健康的一类疾病。而酒精性肝病区别于其他性质肝病的明显特点是,酒精性肝病是长期过量饮酒而形成的。
很久以来,人民采用各种方法来解除和缓解酒所带来的不适。所用的解酒用品五花八门。目前解酒产品主要分为两类,一种是由化学合成物质制备,有一定的毒副作用,有关专家认为不应提倡使用;另一种是中药制剂,中药提取物本身成分复杂,而且口感苦涩,解酒效果单一,不能尽如人意。
玫瑰茄又名洛神花、洛克红、山茄等,是锦葵科木槿属的一年生草本植物,玫瑰茄花有“植物红宝石”的美誉。气微香、味酸,富含维生素C、接骨木三糖苷、柠檬酸等营养成份;玫瑰茄的花萼为肉质结构,多汁,含有丰富的蛋白质、有机酸、维生素C,多种氨基酸,大量的天然维生素和人体所需的矿物质,如铁、钙、磷等。其成份分析如下:还原糖5.7克;蛋白质2.37克;果胶19.8克;苹果酸3.3克;单宁1.09克;花青素14.5克;维生素89毫克/100克,含有人体所必需冬氨酸和谷氨酸与脯氨酸、甘氨酸、丙氨酸、赖氨酸、精氨酸等十七种氨基酸及抗氧化功能显著的花青素以及多元酚、呋喃醛、羟甲基呋喃醛,尤其高含Vc-抗坏血酸。这些成份具有平肝降火、清热消炎、生津止渴、降压减脂、醒脑安神、清除自由基等作用。其中木槿酸,被认为对治疗心脏病、高血压、动脉硬化等有一定疗效,可降低胆固醇和甘油三脂;另外的一些成份还对肠、子宫肌肉有解痉作用于,同时还有驱虫作用并能促进胆汁分泌、降低血液浓度、刺激肠壁蠕动,有益于调节和平衡血脂,增进钙质吸收,促进儿童发育,促进消化等。具有清凉解毒利水,降血压等等功效。无毒性。
玫瑰茄的花萼肉质多汁,并可提取天然食用色素。玫瑰茄的花萼同时还可药用,其味酸、性寒,具有清热解暑、利尿降压、养颜消斑、解毒、解酒等功效。现代研究表明玫瑰茄含有类黄酮素、原儿茶酸、花青素、异黄酮素以及丰富的氨基酸、维生素、糖类、有机酸、无机盐等成分,能降低胆固醇和甘油三脂、抑制低密度脂蛋白的氧化、抑制血小板的凝集、降低血栓的形成、减少动脉粥状硬化,可有效地预防心血管疾病的发生。此外玫瑰茄还有保肝、抗癌的作用。所以,玫瑰茄是一个很好的天然保健药物。
发明内容
本发明的目的在于,提供一种解酒保健作用的玫瑰茄醋饮料及其制备方法。本发明的醋饮料所选用的所有原料均为日常可食用果蔬或药食同源产品,与市售的解酒产品相比,安全无毒副作用,口感醇厚,甜度适中,颜色艳丽清新,不仅具有保肝护肝、解酒防醉作用,同时还含有多种氨基酸、维生素、糖类、有机酸、无机盐等成分,营养丰富,对于老人,可以调节和平衡血脂、清热消炎、降血压;对于儿童,可增进钙质吸收,促进儿童发育,促进消化等;对于成人,可平肝降火、生津止渴、降压减脂、醒脑安神、清除自由基等作用;对于女性,还可以养颜消斑,减脂等,即本发明适合任何人群饮用。制备过程中所用仪器占地面积小,发酵效率高,操作方便,大大降低劳动强度,且操作过程中不引入不安全物质,减少能源消耗,成本低廉,易于机械化、自动化生产。
为此,本发明的技术方案如下:
一种具有解酒保健作用的玫瑰茄醋饮料,包括以下重量份原料:玫瑰茄 30~50份,柚子10~30份,橄榄 5~15份,芹菜 10~20份,荸荠 10~20份,甘蔗 5~15份,鲜橙 10~30份,梨 10~30份,桑葚 10~20份,蜂蜜40~60份。
优选地,所述的一种具有解酒保健作用的玫瑰茄醋饮料,包括以下重量份原料:玫瑰茄 40份,柚子 20份,橄榄 10份,芹菜 15份,荸荠 15份,甘蔗 10份,鲜橙 20份,梨 20份,桑葚 15份,蜂蜜50份。
一种具有解酒保健作用的玫瑰茄醋饮料的制备方法,其特征在于,包括以下步骤:
1) 将柚子、橄榄、芹菜、荸荠、甘蔗、鲜橙、梨洗净、切碎,加入玫瑰茄和桑葚,再加入原料重量25~50 %的水,搅拌均匀后,将汁、渣一起放入生物发酵一体机,装液量70 %,接种2 %酵母菌和0.2 %乳酸菌,接种量5 %, pH 4~6,转速200 rpm/min,培养温度28 ~30 ℃,无氧密闭发酵培养50 h,得到发酵培养液;
2) 将步骤1)制备的发酵培养液中接种10 %醋酸菌,风量1:0.08~1:0.1 m3(m3·min),温度33~35 ℃,pH1~2,发酵时间40~60 h,当醋酸量不再增加时,发酵结束,得到醋醪;
3) 将步骤2)制备的醋醪过滤,加蜂蜜,再加饮用水搅拌均匀,稀释至总酸0.5~2.5 g/100 mL,得到稀释液;
4) 将步骤3)得到的稀释液超高温灭菌1~3 min,得到玫瑰茄醋饮料。
本发明的优点是:
1) 本发明所选用的所有原料均为日常可食用或使用的食品级原料或药食同源材料,安全无毒副作用;
2) 本发明饮用后出现头晕、脸红、心跳过速甚至神态不清的现象减少,具有明显的防醉解酒作用。其醒酒的功效及服用时间在饮酒前、饮酒时、饮酒后都有作用,饮酒前和饮酒时服用本产品具有很好的预防醉酒的作用,醉酒后服用本产品能够有效地起到醒酒的作用。
3) 本发明制备的玫瑰茄醋饮料不仅具有解酒护肝作用,同时还含有多种氨基酸、维生素、糖类、有机酸、无机盐等成分,营养丰富,对于调节和平衡血脂、清热消炎、降血压、增进钙质吸收,促进儿童发育,促进消化、平肝降火、生津止渴、降压减脂、醒脑安神、清除自由基均有一定效果,适合于任何人群饮用。
4) 本发明制得的解酒饮料口感醇厚,甜度适中,同时因为含有玫瑰茄,饮料呈现天然的艳丽清新的玫瑰红颜色,增强人们饮用的欲望;
5) 在制备过程中,理化条件易于控制,生产工艺规范,生产周期短,产品质量稳定,产量高,对制备设备及场所要求低,便于工业化生产,并且不受季节控制。
具体实施方式
以下通过实施例形式的具体实施方式,对本发明的上述内容作进一步的详细说明。但不应将此理解为本发明上述主题的范围仅限于以下实施例。凡基于本发明上述内容所实现的技术均属于本发明的范围。
实施例1
1) 将柚子20份、橄榄10份、芹菜15份、荸荠15份、甘蔗10份、鲜橙20份、梨20份洗净,切碎,加入玫瑰茄40份和桑葚15份,再加入原料重量40 %的水,搅拌均匀后,将汁、渣一起放入生物发酵一体机,装液量70 %,接种2 %酵母菌和0.2 %乳酸菌,接种量5 %, pH 5,转速200rpm/min,培养温度29 ℃,无氧密闭发酵培养50 h,得到发酵培养液;
2) 将步骤1)制备的发酵培养液中接种10 %醋酸菌,风量1:0.09 m3(m3·min),温度34℃,pH1.5,发酵时间50 h,当醋酸量不再增加时,发酵结束,得到醋醪;
3) 将步骤2)制备的醋醪过滤,加蜂蜜50份,再加饮用水搅拌均匀,稀释至总酸1.5 g/100 mL,得到稀释液;
4) 将步骤3)得到的稀释液超高温灭菌2 min,得到玫瑰茄醋饮料。
实施例2
1) 将柚子10份、橄榄5份、芹菜10份、荸荠10份、甘蔗5份、鲜橙10份、梨10份洗净,切碎,加入玫瑰茄30份和桑葚10份,再加入原料重量25 %的水,搅拌均匀后,将汁、渣一起放入生物发酵一体机,装液量70 %,接种2 %酵母菌和0.2 %乳酸菌,接种量5 %, pH 4,转速200rpm/min,培养温度28 ℃,无氧密闭发酵培养50 h,得到发酵培养液;
2) 将步骤1)制备的发酵培养液中接种10 %醋酸菌,风量1:0.08 m3(m3·min),温度33℃,pH1,发酵时间40 h,当醋酸量不再增加时,发酵结束,得到醋醪;
3) 将步骤2)制备的醋醪过滤,加蜂蜜40份,再加饮用水搅拌均匀,稀释至总酸0.5 g/100 mL,得到稀释液;
4) 将步骤3)得到的稀释液超高温灭菌1 min,得到玫瑰茄醋饮料。
实施例3
1) 将柚子30份、橄榄15份、芹菜20份、荸荠20份、甘蔗15份、鲜橙30份、梨30份洗净,切碎,加入玫瑰茄50份和桑葚20份,再加入原料重量50 %的水,搅拌均匀后,将汁、渣一起放入生物发酵一体机,装液量70 %,接种2 %酵母菌和0.2 %乳酸菌,接种量5 %, pH 6,转速200rpm/min,培养温度30 ℃,无氧密闭发酵培养50 h,得到发酵培养液;
2) 将步骤1)制备的发酵培养液中接种10 %醋酸菌,风量1:0.1 m3(m3·min),温度35℃,pH2,发酵时间50 h,当醋酸量不再增加时,发酵结束,得到醋醪;
3) 将步骤2)制备的醋醪过滤,加蜂蜜,60份,再加饮用水搅拌均匀,稀释至总酸2.5 g/100 mL,得到稀释液;
4) 将步骤3)得到的稀释液超高温灭菌3 min,得到玫瑰茄醋饮料。
Claims (3)
1.一种具有解酒保健作用的玫瑰茄醋饮料,其特征在于,包括以下重量份原料:玫瑰茄30~50份,柚子 10~30份,橄榄 5~15份,芹菜 10~20份,荸荠 10~20份,甘蔗 5~15份,鲜橙10~30份,梨 10~30份,桑葚 10~20份,蜂蜜40~60份。
2.根据权利要求1所述的一种具有解酒保健作用的玫瑰茄醋饮料,其特征在于,包括以下重量份原料:玫瑰茄 40份,柚子 20份,橄榄 10份,芹菜 15份,荸荠 15份,甘蔗 10份,鲜橙 20份,梨 20份,桑葚 15份,蜂蜜50份。
3.一种如权利要求1~2所述的具有解酒保健作用的玫瑰茄醋饮料的制备方法,其特征在于,包括以下步骤:
1) 将柚子、橄榄、芹菜、荸荠、甘蔗、鲜橙、梨洗净、切碎,加入玫瑰茄和桑葚,再加入原料重量25~50 %的水,搅拌均匀后,将汁、渣一起放入生物发酵一体机,装液量70 %,接种2 %酵母菌和0.2 %乳酸菌,接种量5 %, pH 4~6,转速200 rpm/min,培养温度28 ~30 ℃,无氧密闭发酵培养50 h,得到发酵培养液;
2) 将步骤1)制备的发酵培养液中接种10 %醋酸菌,风量1:0.08~1:0.1 m3(m3·min),温度33~35 ℃,pH1~2,发酵时间40~60 h,当醋酸量不再增加时,发酵结束,得到醋醪;
3) 将步骤2)制备的醋醪过滤,加蜂蜜,再加饮用水搅拌均匀,稀释至总酸0.5~2.5 g/100 mL,得到稀释液;
4) 将步骤3)得到的稀释液超高温灭菌1~3 min,得到玫瑰茄醋饮料。
