在一个实施方案中,营养组合物还包括碳水化合物源。任意适合的碳水化合物可以用于本营养组合物,包括、但不限于蔗糖、乳糖、葡萄糖、果糖、玉米糖浆固体、麦芽糖糊精、改性淀粉、直链淀粉、木薯淀粉、玉米淀粉或其组合。
在一个实施方案中,营养组合物还包括脂肪源。该脂肪源可以包括任意适合的脂肪或脂肪混合物。例如,该脂肪源可以包括、但不限于蔬菜脂肪(例如橄榄油、玉米油、向日葵油、棉籽油、榛子油、大豆油、棕榈油、椰子油、介花油、卵磷酯类等)和动物脂肪(例如乳脂)。

实施例2-实验研究
实施例2概述了使用本说明书的增稠剂制品进行的各种实验。申请人已经进行了几次实验以确定具有不同配方的各种营养组合物随时间推移和在不同温度(例如室温和冷藏温度)下的粘度。一般而言,这些实验已经证实添加一定量的角叉菜胶或黄原胶和淀粉可以在相同温度和不同温度下延长贮存时间过程中提供具有稳定的粘度的营养组合物。特别地,例如添加一定量的角叉菜胶或黄原胶和淀粉可以将在冷藏温度下贮存的营养组合物的粘度增加降至最低。这些实验还证实营养组合物中包含的蛋白质量和类型,且在一定程度上,营养组合物的卡密度可以在确定实现营养组合物中粘度增加最小所需的角叉菜胶或黄原胶和淀粉的量上起作用。
如上所述,申请人已经发现营养组合物中具体量的角叉菜胶和淀粉的组合能够减小制品随时间推移的粘度差异。例如,如图1中所示,具有0.04%重量的角叉菜胶和3.54%重量的淀粉和0.02%重量的角叉菜胶和2.36%重量的淀粉的营养组合物在40°F在过夜贮存与3个月贮存之间的粘度差异减小。使用较少量的角叉菜胶得到了类似的效应,这一点如图1中所示。在24小时与1个月之间达到了稳定的粘度。约24小时后,增稠剂制品具有在40°F冷藏的蜂蜜范围的粘度(例如小于9000cps)。
类似地如图2中所示,0.04%重量的角叉菜胶和3.54%重量的淀粉产生在40°F下1个月-3个月之间最小的粘度改变。作为结果,增稠剂制品维持了1个月-3个月的稳定的粘度。这一结果与具有少量淀粉和/或少量角叉菜胶的营养组合物的粘度增加的结果直接相反,正如图2的断箭头所示的。
图3还显示具有1.2卡粘度、14g蛋白质和不同量的角叉菜胶和淀粉的营养组合物在不同温度下的最小粘度增加。特别地,图3显示至少约0.0325%量的角叉菜胶和至少约1.65%量的淀粉显著地将在40°F1个月-3个月之间贮存的营养组合物的任何粘度改变降至最低。
图4-6显示角叉菜胶和淀粉对贮存在不同温度下的营养组合物的影响。例如图4显示与贮存在40°F相比贮存在室温时,将一定量的角叉菜胶添加到营养组合物中可以降低营养组合物的粘度增加。正如图4所示,具有两种淀粉和不添加角叉菜胶的营养组合物导致在室温贮存与在40°F贮存之间的粘度增加22倍。具有一种淀粉和不添加角叉菜胶的相同营养组合物导致在室温贮存与在40°F贮存之间的粘度增加8倍。将0.02%量的一种淀粉和角叉菜胶添加到相同营养组合物中导致在室温贮存与在40°F贮存之间的粘度增加5倍。此外,具有一种淀粉和0.04%角叉菜胶的相同营养组合物仅导致在室温贮存与在40°F贮存之间的粘度增加4倍。照此,图4清楚地显示将一定量的角叉菜胶和淀粉添加到营养组合物中在室温贮存与在40°F贮存相比时,可以将营养组合物的粘度增加降至最低。
除角叉菜胶外,可以将黄原胶与淀粉一起加入到营养组合物中以减小贮存过程中粘度增加。例如图5显示当使用0.12%重量黄原胶和不同量淀粉时,保持在40°F的室温至24小时的营养组合物的粘度增加最小。约0.12%重量黄原胶和2.6%重量淀粉的混合物可以提供具有蜂蜜稠度的增稠的补充剂。表3-6还显示当使用不同浓度的黄原胶和淀粉时,在不同温度下随时间推移的粘度改变。

图6显示具有(i)0.02%重量的角叉菜胶和约1.8%重量的淀粉(“原型A”);(ii)0.02%重量的角叉菜胶和2.4%重量的淀粉(“原型B”);和(iii)0.12%重量的黄原胶和约2.6%重量的淀粉(“原型C”)的营养组合物随时间推移和在不同温度下的粘度。正如图6所示,营养组合物的粘度在210天期限内一般是稳定的。
因此,使用不同浓度的营养组合物进行的实验已经证实添加一定量的角叉菜胶或黄原胶和淀粉可以提供在相同温度和不同温度下延长的贮存时间过程中具有稳定粘度的营养组合物。特别地,例如添加一定量的角叉菜胶或黄原胶和淀粉可以将在冷藏温度下贮存的营养组合物的粘度增加降至最低。
然而,如上所述,这些实验还证实营养组合物中包含的蛋白质的量和类型且在一定程度上,营养组合物的卡密度可以在确定实现营养组合物粘度增加最小所需的角叉菜胶或黄原胶和淀粉的量中起作用。例如图7显示两种营养组合物制品的粘度测量值。图7左侧两个条上的第一种组合物包括约0.02%角叉菜胶和1.5%淀粉。图7右侧两个条上的第二种组合物包括约0.02%角叉菜胶和约2.0%淀粉。这些条清楚地示例具有21g蛋白质与18g蛋白质的两种营养组合物的粘度。此外,图7的条还清楚地示例具有1.5%淀粉与2.0%淀粉的组合物的粘度总增加。
应理解本领域技术人员显然可以对本文所述的目前优选的实施方案进行各种改变和变型。可以在不脱离本发明主题精神和范围和不缩小其预期的优点的情况下进行这种改变和变型。因此,预计这种改变和变型被待批权利要求所覆盖。
