背景技术
紫薯除具有普通红薯全部营养成分外,还富含花青素和硒元素,具有防癌抗癌、抗衰老、润肠通便、防止紫外线对皮肤伤害、预防心脑血管疾病的功效。
传统的紫薯食用方法为蒸、煮、烤等,操作时间长,营养成分易受破坏,降低了营养成分的消化吸收率。且单一的紫薯食品,营养不全面。
发明内容
本发明要解决的技术问题是提供一种速调即食紫薯羹及其制备方法,该紫薯羹以紫薯、大米为主要原料,并与多种辅料配伍,以膳食养生为理念,加工成一种营养保健、醇香可口的速调即食紫薯羹;其速调性好,口感光滑细腻,运用膨化技术,瞬间熟化,使淀粉彻底α(阿尔法)化,保证维生素受破坏较少,更有利于胃肠消化酶的渗入,提高了营养素的消化吸收率。
为解决上述技术问题,本发明所采取的技术方案是:一种速调即食紫薯羹,是由以下重量份的原料制成的:紫薯粉35-45份,大米粉20-30份,麦芽糊精5-10份,花生粉3-7份,黑芝麻粉3-7份,黑米粉3-7份,红枣粉3-7份,枸杞粉3-7份,山药粉3-7份,南瓜粉3-7份,核桃粉2-4份。
优选的,是由以下重量份的原料制成的:紫薯粉35-45份,大米粉20-30份,麦芽糊精5-10份,花生粉5份,黑芝麻粉5份,黑米粉5份,红枣粉5份,枸杞粉5份,山药粉5份,南瓜粉5份,核桃粉3份。
速调即食紫薯羹的制备方法,包括下列步骤:
(1)将紫薯表面洗净去皮,切片入烘干箱35-40℃烘干,烘干冷却后粉碎成紫薯生粉;
(2)将黑芝麻、花生、核桃分别入烤箱115-125℃烤熟,冷却后粉碎成黑芝麻粉、花生粉、核桃粉;
(3)将山药、南瓜表面洗净去皮,切片入烘干箱35-40℃烘干,烘干冷却后粉碎成山药生粉、南瓜生粉;
(4)将大米、黑米粉碎成大米生粉、黑米生粉;
(5)将红枣、枸杞清洗净,控干水分,进烘干箱80-90℃烘干,冷却后粉碎成红枣粉、枸杞粉;
(6)将大米生粉、紫薯生粉、黑米生粉、山药生粉、南瓜生粉分别经膨化机140-160℃膨化熟制成块儿状,冷却后分别粉碎成大米粉、紫薯粉、黑米粉、山药粉、南瓜粉;
(7)将上述紫薯粉、大米粉、黑米粉、山药粉、南瓜粉、红枣粉、枸杞粉与黑芝麻粉、核桃粉、花生粉和麦芽糊精混合均匀,再杀菌包装,得到成品。
优选的,包括下列步骤:
(1)将紫薯表面的泥沙杂物洗净去皮,切片入烘干箱35℃经24-36小时烘干,烘干冷却后经60目粉碎机粉碎成紫薯生粉;
(2)将黑芝麻、花生、核桃入烤箱120℃经2小时烤熟,冷却后经20目粉碎机粉碎成黑芝麻粉、花生粉、核桃粉;
(3)将山药、南瓜表面的泥沙杂物洗净去皮,切片入烘干箱35℃经24-36小时烘干,烘干冷却后经60目粉碎机粉碎成山药生粉、南瓜生粉;
(4)将大米、黑米经60目粉碎机粉碎成大米生粉、黑米生粉;
(5)将红枣、枸杞清洗净经3小时控干水分,进烘干箱90℃经2-6小时烘干,冷却后经60目粉碎机粉碎成红枣粉、枸杞粉;
(6)将大米生粉、紫薯生粉、黑米生粉、山药生粉、南瓜生粉分别经双螺杆膨化机160℃膨化熟制成块儿状,冷却后经60目粉碎机分别粉碎成大米粉、紫薯粉、黑米粉、山药粉、南瓜粉;
(7)将上述紫薯粉、大米粉、黑米粉、山药粉、南瓜粉、红枣粉、枸杞粉与黑芝麻粉、核桃粉、花生粉和麦芽糊精混合均匀,再杀菌包装,得到成品。
温度的选择:紫薯烘干温度,烘箱温度35-40℃。温度低于这个区间,会影响水分的挥发,造成能源浪费;高于这个区间,会造成物料熟化(蒸熟),无法进行膨化。(物料烘干温度和在室外太原晾晒环境温度基本相同,保证物料的天然性。)烘干时间:春夏季24小时,秋冬季36小时。
山药、南瓜烘干温度时间与上述紫薯烘干温度相同。
红枣、枸杞烘干温度80-90℃,烘干时间2-6小时。优点:本温度区间可以充分利用热风使物料成熟并烘干水分。温度低会造成物料不成熟且浪费能源;温度高可能会使物料烤焦。
膨化机温度需控制在140-160℃之间。温度低物料膨化不充分,影响口感,温度高物料会烤焦。
本发明紫薯羹以紫薯、大米为主要原料,并与多种辅料配伍,以膳食养生为理念,加工成一种营养保健、醇香可口的速调即食紫薯羹。
其中,紫薯富有18种氨基酸,10种矿物质,并且膳食纤维素含量高,可以促进肠胃蠕动,清理肠粘液,排出有素物质和致癌物质,改善消化道环境;紫薯中锌、铁、铜、锰、钙、硒均为天然营养素,并且铁、钙含量高,而硒元素与花青素是人体抗衰老补血的必要元素,具有良好的保健功能;紫薯还具有抗氧化、抗突变、保肝、减少心血管病等要用作用。
大米含有蛋白质,脂肪,维生素B1、A、E及多种矿物质。大米,入脾、胃、肺经,具有补中益气、健脾和胃、滋阴润肺、除烦渴的作用。在紫薯中加入大米,更有利健康。紫薯中因含纤维素过多而易导致腹胀,而大米营养丰富,有健脾和胃作用。
黑米含蛋白质、碳水化合物、B族维生素、维生素E、钙、磷、钾、镁、铁、锌等营养元素,营养丰富;黑米具有清除自由基、改善缺铁性贫血、抗应激反应以及免疫调节等多种生理功能;黑米中的黄铜类化合物能维持血管正常渗透压,减轻血管脆性,防止血管破裂和止血;黑米有抗菌,降低血压、抑制癌细胞生长的功效;黑米还具有改善心肌营养,降低心肌耗氧量等功效。

枸杞具有免疫调节、抗衰老、抗肿瘤、抗疲劳、抗辐射损伤、调节血脂、降血糖、降血压、保护生殖系统、提高视力、提高呼吸道抗病能力、美容养颜,滋润肌肤作用。枸杞子富含枸杞多糖,枸杞多糖是一种水溶性多糖,由阿拉伯糖、葡萄糖、半乳糖、甘露糖、木糖、鼠李糖这6种单糖成分组成,具有生理活性,能够增强非特异性免疫功能,提高抗病能力,抑制肿瘤生长和细胞突变。枸杞中所含丰富的B一胡萝卜素可在人体内转化成维生素A,而维生素A可生成视黄醇,从而提高视力,防止黄斑症。维生素A具有维持上皮组织正常生长与分化的功能,量充足时可预防鼻、咽、喉和其他呼吸道感染,提高呼吸道抗病能力。
黑芝麻含有大量的脂肪和蛋白质,还有糖类、维生素A、维生素E、卵磷脂、钙、铁、铬等营养成分。药理作用:芝麻素抗病毒、杀菌剂、抗氧化剂、杀虫增效剂、治疗气管炎。
核桃含有丰富的营养素,每百克含蛋白质15~20克,脂肪较多,碳水化合物10克;并含有人体必需的钙、磷、铁等多种微量元素和矿物质,以及胡萝卜素、核黄素等多种维生素。对人体有益,可强健大脑。
花生果具有很高的营养价值,内含丰富的脂肪和蛋白质。据测定花生果内脂肪含量为44%-45%,蛋白质含量为24-36%,含糖量为20%左右。花生中还含有丰富的维生素B2.PP、A、D、E,钙和铁等。并含有硫胺素、核黄素、尼克酸等多种维生素。矿物质含量也很丰富,特别是含有人体必须的氨基酸,有促进脑细胞发育,增强记忆的功能。
麦芽糊精具有甜度低,溶解性好,不易吸潮,稳定性好,难以变质的特性。还具有增稠性强,发酵性小,不吸潮、无异味、易消化、低热、低甜度等特点。麦芽糊精含有大量的多糖类,另外还含有钙、铁等对人体有益的微量元素及矿物质,并能促进人体正常的物质代谢。
紫薯粉是本品的主要成分,富含花青素和硒元素,具有防癌、抗癌、抗衰老、美容养颜等功效,红枣、枸杞入肾经,补血、补肾的保健作用,山药、南瓜具有强脾开胃助生长的作用,核桃、花生、黑芝麻补充不饱和脂肪酸增加香气,黑米粉调和产品颜色,大米补充植物蛋白含量。以上食材合用有补充植物蛋白,开胃健脾,调和身体机能,增强抵抗力的功效。
食用方法:取本品一小包30-40g放入杯中,加入约50毫升80℃温开水,搅拌均匀成糊状,再加入约150-200毫升开水,边加水边搅拌,搅拌均匀成糊状,即可食用。(开袋后请尽快食用完)。
采用上述技术方案所产生的有益效果在于:
(1)本发明紫薯羹以紫薯、大米为主要原料,并与多种辅料配伍,以膳食养生为理念,加工成一种营养保健、醇香可口的速调即食紫薯羹;
(2)本发明紫薯羹速调性好,口感光滑细腻,大米生粉、紫薯生粉、黑米生粉、山药生粉、南瓜生粉运用膨化技术,瞬间熟化,使淀粉彻底α(阿尔法)化,保证维生素受破坏较少,更有利于胃肠消化酶的渗入,提高了营养素的消化吸收率。
具体实施方式
下面结合具体实施方式对本发明作进一步详细的说明。
实施例1
一种速调即食紫薯羹,是由以下重量份的原料制成的:紫薯粉35kg,大米粉25kg,麦芽糊精10kg,花生粉5kg,黑芝麻粉5kg,黑米粉5 kg,红枣粉5kg,枸杞粉5kg,山药粉5kg,南瓜粉5kg,核桃粉3kg。
制备方法,包括下列步骤:
(1)将紫薯表面的泥沙杂物洗净去皮,切片入烘干箱35℃经24小时烘干,烘干冷却后经60目粉碎机粉碎成紫薯生粉;
(2)将黑芝麻、花生、核桃入烤箱120℃经2小时烤熟,冷却后经20目粉碎机粉碎成黑芝麻粉、花生粉、核桃粉;
(3)将山药、南瓜表面的泥沙杂物洗净去皮,切片入烘干箱35℃经24小时烘干,烘干冷却后经60目粉碎机粉碎成山药生粉、南瓜生粉;
(4)将大米、黑米经60目粉碎机粉碎成大米生粉、黑米生粉;
(5)将红枣、枸杞清洗净经3小时控干水分,进烘干箱90℃经6小时烘干,冷却后经60目粉碎机粉碎成红枣粉、枸杞粉;
(6)将大米生粉、紫薯生粉、黑米生粉、山药生粉、南瓜生粉分别经双螺杆膨化机160℃膨化熟制成块儿状,冷却后经60目粉碎机分别粉碎成大米粉、紫薯粉、黑米粉、山药粉、南瓜粉;
(7)将上述紫薯粉、大米粉、黑米粉、山药粉、南瓜粉、红枣粉、枸杞粉与黑芝麻粉、核桃粉、花生粉和麦芽糊精混合均匀,再杀菌包装,得到成品。
实施例2
一种速调即食紫薯羹,是由以下重量份的原料制成的:紫薯粉45kg,大米粉20kg,麦芽糊精7.5kg,花生粉5kg,黑芝麻粉5kg,黑米粉5kg,红枣粉5kg,枸杞粉5kg,山药粉5kg,南瓜粉5kg,核桃粉3kg。
制备方法同实施例1。
实施例3
一种速调即食紫薯羹,是由以下重量份的原料制成的:紫薯粉40kg,大米粉30kg,麦芽糊精5kg,花生粉5kg,黑芝麻粉5kg,黑米粉5 kg,红枣粉5kg,枸杞粉5kg,山药粉5kg,南瓜粉5kg,核桃粉3kg。
制备方法同实施例1。
实施例4
一种速调即食紫薯羹,是由以下重量份的原料制成的:紫薯粉35kg,大米粉30kg,麦芽糊精10kg,花生粉3kg,黑芝麻粉5.5kg,黑米粉7kg,红枣粉4.5kg,枸杞粉3kg,山药粉7kg,南瓜粉7kg,核桃粉4kg。
制备方法,包括下列步骤:
(1)将紫薯表面洗净去皮,切片入烘干箱40℃烘干,烘干冷却后粉碎成紫薯生粉;
(2)将黑芝麻、花生、核桃分别入烤箱125℃烤熟,冷却后粉碎成黑芝麻粉、花生粉、核桃粉;
(3)将山药、南瓜表面洗净去皮,切片入烘干箱40℃烘干,烘干冷却后粉碎成山药生粉、南瓜生粉;
(4)将大米、黑米粉碎成大米生粉、黑米生粉;
(5)将红枣、枸杞清洗净,控干水分,进烘干箱80℃烘干,冷却后粉碎成红枣粉、枸杞粉;
(6)将大米生粉、紫薯生粉、黑米生粉、山药生粉、南瓜生粉分别经膨化机140℃膨化熟制成块儿状,冷却后分别粉碎成大米粉、紫薯粉、黑米粉、山药粉、南瓜粉;
(7)将上述紫薯粉、大米粉、黑米粉、山药粉、南瓜粉、红枣粉、枸杞粉与黑芝麻粉、核桃粉、花生粉和麦芽糊精混合均匀,再杀菌包装,得到成品。
实施例5
一种速调即食紫薯羹,是由以下重量份的原料制成的:紫薯粉45kg,大米粉20kg,麦芽糊精5kg,花生粉7kg,黑芝麻粉3kg,黑米粉4.5kg,红枣粉3kg,枸杞粉5.5kg,山药粉5kg,南瓜粉3kg,核桃粉3kg。
制备方法,包括下列步骤:
(1)将紫薯表面洗净去皮,切片入烘干箱38℃经36小时烘干,烘干冷却后粉碎成紫薯生粉;
(2)将黑芝麻、花生、核桃分别入烤箱115℃烤熟,冷却后粉碎成黑芝麻粉、花生粉、核桃粉;
(3)将山药、南瓜表面洗净去皮,切片入烘干箱38℃经36小时烘干,烘干冷却后粉碎成山药生粉、南瓜生粉;
(4)将大米、黑米粉碎成大米生粉、黑米生粉;
(5)将红枣、枸杞清洗净,控干水分,进烘干箱85℃烘干,冷却后粉碎成红枣粉、枸杞粉;
(6)将大米生粉、紫薯生粉、黑米生粉、山药生粉、南瓜生粉分别经膨化机155℃膨化熟制成块儿状,冷却后分别粉碎成大米粉、紫薯粉、黑米粉、山药粉、南瓜粉;
(7)将上述紫薯粉、大米粉、黑米粉、山药粉、南瓜粉、红枣粉、枸杞粉与黑芝麻粉、核桃粉、花生粉和麦芽糊精混合均匀,再杀菌包装,得到成品。
实施例6
一种速调即食紫薯羹,是由以下重量份的原料制成的:紫薯粉40kg,大米粉25kg,麦芽糊精7.5kg,花生粉4.5kg,黑芝麻粉7kg,黑米粉3kg,红枣粉7kg,枸杞粉7kg,山药粉3kg,南瓜粉5.5kg,核桃粉2kg。
制备方法同实施例1。

1.一种速调即食紫薯羹,其特征在于:是由以下重量份的原料制成的:紫薯粉35-45份,大米粉20-30份,麦芽糊精5-10份,花生粉3-7份,黑芝麻粉3-7份,黑米粉3-7份,红枣粉3-7份,枸杞粉3-7份,山药粉3-7份,南瓜粉3-7份,核桃粉2-4份。
2.根据权利要求1所述的一种速调即食紫薯羹,其特征在于:是由以下重量份的原料制成的:紫薯粉35-45份,大米粉20-30份,麦芽糊精5-10份,花生粉5份,黑芝麻粉5份,黑米粉5份,红枣粉5份,枸杞粉5份,山药粉5份,南瓜粉5份,核桃粉3份。
3.如权利要求1或2所述的一种速调即食紫薯羹的制备方法,其特征在于,包括下列步骤:
(1)将紫薯表面洗净去皮,切片入烘干箱35-40℃烘干,烘干冷却后粉碎成紫薯生粉;
(2)将黑芝麻、花生、核桃分别入烤箱115-125℃烤熟,冷却后粉碎成黑芝麻粉、花生粉、核桃粉;
(3)将山药、南瓜表面洗净去皮,切片入烘干箱35-40℃烘干,烘干冷却后粉碎成山药生粉、南瓜生粉;
(4)将大米、黑米粉碎成大米生粉、黑米生粉;
(5)将红枣、枸杞清洗净,控干水分,进烘干箱80-90℃烘干,冷却后粉碎成红枣粉、枸杞粉;
(6)将大米生粉、紫薯生粉、黑米生粉、山药生粉、南瓜生粉分别经膨化机140-160℃膨化熟制成块儿状,冷却后分别粉碎成大米粉、紫薯粉、黑米粉、山药粉、南瓜粉;
(7)将上述紫薯粉、大米粉、黑米粉、山药粉、南瓜粉、红枣粉、枸杞粉与黑芝麻粉、核桃粉、花生粉和麦芽糊精混合均匀,再杀菌包装,得到成品。
4.根据权利要求3所述的一种速调即食紫薯羹的制备方法,其特征在于,包括下列步骤:
(1)将紫薯表面的泥沙杂物洗净去皮,切片入烘干箱35℃经24-36小时烘干,烘干冷却后经60目粉碎机粉碎成紫薯生粉;
(2)将黑芝麻、花生、核桃入烤箱120℃经2小时烤熟,冷却后经20目粉碎机粉碎成黑芝麻粉、花生粉、核桃粉;
(3)将山药、南瓜表面的泥沙杂物洗净去皮,切片入烘干箱35℃经24-36小时烘干,烘干冷却后经60目粉碎机粉碎成山药生粉、南瓜生粉;
(4)将大米、黑米经60目粉碎机粉碎成大米生粉、黑米生粉;
(5)将红枣、枸杞清洗净经3小时控干水分,进烘干箱90℃经2-6小时烘干,冷却后经60目粉碎机粉碎成红枣粉、枸杞粉;
(6)将大米生粉、紫薯生粉、黑米生粉、山药生粉、南瓜生粉分别经双螺杆膨化机160℃膨化熟制成块儿状,冷却后经60目粉碎机分别粉碎成大米粉、紫薯粉、黑米粉、山药粉、南瓜粉;
(7)将上述紫薯粉、大米粉、黑米粉、山药粉、南瓜粉、红枣粉、枸杞粉与黑芝麻粉、核桃粉、花生粉和麦芽糊精混合均匀,再杀菌包装,得到成品。
