核桃营养价值丰富,有“万岁子”“长寿果”“养生之宝”的美誉。核桃中86%的脂肪是不饱和脂肪酸,核桃富含铜、镁、钾、维生素B6、叶酸和维生素B1,也含有纤维、磷、烟酸、铁、维生素B2和泛酸。每50克核桃中,水分占3.6%,另含蛋白质7.2克、脂肪31克和碳水化合物9.2克。
核桃仁中的不饱和脂肪酸具有降低胆固醇、防止动脉硬化的功能,维生素和卵磷脂具有抗衰老的功能,因而中医认为核桃仁有补气养血、润燥化痰、温肺润肠等作用。花生具有健脾和胃、利肾去水、抗衰老和滋润皮肤的功能。以核桃仁、花生仁为原料制备的饮料,不但保持了核桃仁、花生仁原有的营养成份和清香味,而且还具有丰富的营养,受到人们的广泛欢迎,具有良好的市场前景。但由于原料中含脂肪、蛋白质较高等特点, 加工中容易出现脂肪上浮、蛋白质沉淀、风味劣化、色泽改变等现象。

所述的核桃粉是指将核桃在40℃翻炒30分钟,经粉碎,过100目筛得到。
