Abstract
本发明属于食品技术领域,公开了一种酸菜鱼配方,包括以重量计算的鲜鱼肉300‑500g、鲫鱼汤900‑1200g、酸菜酱100‑150g、酸菜150‑200g、冬笋尖100‑150g、辅助调味料40‑90g。本发明的酸菜鱼配方用鲫鱼汤替换现有配方中的水作为酸菜鱼汤底,使得成品酸菜鱼汤味道更加鲜美且富含营养物质,便于食用。且本发明的配方将大部分香料、配料以香鸡油、酸辣酱汁和酸菜酱等方式加入到酸菜鱼中,有减少了成品酸菜鱼汤中的配料、辅料添加,使得成品酸菜鱼汤中只含有鱼肉、酸菜和极少量的配料,酸菜鱼汤中杂质较少,鱼汤中不含辣椒、花椒等香辛料,且含有较少的食用油,便于对酸菜鱼汤的食用,老人、小孩及需要食用清淡食物的人均可食用。

背景技术
酸菜鱼也称为酸汤鱼,是一道源自重庆的经典菜品,以其特有的调味和独特的烹调技法而著称。流行于上世纪90年代,是重庆江湖菜的开路先锋之一。酸菜鱼以草鱼为主料,配以泡菜等食材煮制而成,口味酸辣可口;鱼含丰富优质蛋白,能提供人丰富的蛋白质、矿物质等营养;酸菜中的乳酸可以促进人体对铁元素的吸收,还可以增加人的食欲。
酸菜鱼的主材鱼含丰富优质蛋白,人体消化吸收率可达96%,并能供给人体必需的氨基酸、矿物质、维生素A和维生素D;鱼的脂肪多为不饱和脂肪酸,能很好的降低胆固醇,可以防治动脉硬化、冠心病,因此,多吃鱼可以健康长寿。酸菜中的乳酸能开胃提神、醒酒去腻,还能能增进食欲、帮助消化,还可以促进人体对铁元素的吸收。同时,酸菜中所含营养成分不易损失。尤其适宜虚劳、风虚头痛、肝阳上亢高血压、头痛、久疟、心血管病人食用。
现有的一些酸菜鱼配方中没有对各个组分的用量进行固定,通常都是以适量、少许或着多少汤匙等来量化,极不准确,在制作酸菜鱼的过程中要求制作人需要一定的料理经验,且每次做出来的酸菜鱼风味不一,难以量化生产。现有的酸菜鱼配方中通常是直接用水作为汤底,成品的酸菜鱼汤中缺乏营养物质。且现有的酸菜鱼配方中食用油、辣椒、香料等较多,成品酸菜鱼汤中除了鱼肉还有很多其他物质,鱼汤中食用油较多、辣椒、花椒等较多,酸菜鱼汤通常无法食物或者食物起来极为不便,造成浪费。
发明内容
为了解决现有技术存在的上述问题,本发明目的在于提供一种酸菜鱼配方。
本发明所采用的技术方案为:
一种酸菜鱼配方,包括以重量计算的鲜鱼肉300-500g、鲫鱼汤900-1200g、酸菜酱100-150g、酸菜150-200g、冬笋尖100-150g、辅助调味料40-90g。
冬笋是立冬前后由毛竹(楠竹)的地下茎(竹鞭)侧芽发育而成的笋芽,因尚未出土,笋质幼嫩,是一道人们十分喜欢吃的菜肴。冬笋因土质和环境原因,草酸含量低可以直接炒,有不过水不麻口的特点。竹笋味甘、性微寒,归胃、肺经;具有滋阴凉血、和中润肠、清热化痰、解渴除烦、清热益气、利隔爽胃、利尿通便、解毒透疹、养肝明目、消食的功效,还可开胃健脾,宽肠利膈,通肠排便,开膈豁痰,消油腻,解酒毒;主治:食欲不振、胃口不开、脘痞胸闷、大便秘结、痰涎壅滞、形体肥胖、酒醉恶心等病症。冬笋是一种富有营养价值并具有医药功能的美味食品,质嫩味鲜,清脆爽口,含有丰富的蛋白质和多种氨基酸、维生素,以及钙、磷、铁等微量元素以及丰富的纤维素,能促进肠道蠕动,既有助于消化,有能预防便秘和结肠癌的发生。冬笋是一种高蛋白、低淀粉食品。它所含的多糖物质,还具有一定的抗癌作用。
所述鲜鱼肉为经过初步处理后的新鲜鱼肉,具体的处理步骤为:
S1.去尾:用片刀斩去鱼的尾部,放入装满水的大桶中,让乌鱼在自然游动中放净淤血;
S2.去鳞:去掉鱼鳞,洗净鱼皮表面的黏液;
S3.去骨:从鱼的颈部慢慢往下将鱼肉和鱼骨剃开,要求下刀轻、速度稳,鱼骨上残留鱼肉少;
S4.切片:用清水冲洗干净鱼肉,摆放在菜板上,用刀背从鳞甲生长的反方向再次清理鳞甲,将鱼肉翻面,片出长5-6厘米、宽7-8厘米、厚0.2-0.3厘米的鱼片,然后利用工具将鱼片中的鱼刺去除;
S5.腌渍:将鱼片用清水加适度的盐反复冲洗,直至水无杂质,鱼片洁白,然后对鱼片进行腌渍。
上述步骤S5中腌渍的具体方法为,向2500g鱼片中加入200g腌鱼粉,然后再加入200g饮用水,搅拌均匀。然后再加入100g澄面,搅拌均匀,最后加入50g色拉油,搅拌均匀,静置20分钟即可。
所述鲫鱼汤为利用鲫鱼熬煮所得的膏汤,最好选用生长周期1年左右、体重75克至100克的鲫鱼进行熬制。所述鲫鱼汤的制备步骤为:
鲫鱼,简称鲫,俗名鲫瓜子、月鲫仔、土鲫、细头、鲋鱼、寒鲋、喜头、鲫壳、河鲫。常见于欧亚地区,为常见淡水鱼,属于辐鳍鱼亚纲鲤形目鲤科鲫属。鲫鱼肉质细嫩,营养价值很高,富含蛋白质、脂肪、钙、磷、铁等营养物质。鲫鱼药用价值极高,其性平味甘,入胃、肾,具有和中补虚、温胃进食、补中生气之功效。每100克鲫鱼食部约含蛋白质17.1克、脂肪2.7克、磷193毫克、钙79毫克、铁1.3毫克、硫胺素0.04毫克、核黄素0.09毫克。鲫鱼味甘性平,有健脾利湿的作用,对治疗脾胃虚弱、食少、乏力、水肿、痢疾等病症有疗效。适宜慢性肾炎水肿、肝硬化腹水、营养不良性水肿、孕妇产后乳汁缺少、脾胃虚弱、饮食不香之人食用;适宜小儿麻疹初期或麻疹透发不快者和痔疮出血、慢性久痢者食用。
S1.煎鱼:向铁锅中加100g猪油,然后加入1500g鲫鱼煎至两面金黄,使鱼肉产生酯化反应;
S2.熬煮:向麦饭石材器皿中加入8500g饮用水,大火烧开,然后加入煎好的鲫鱼,再加入30g老姜、4g白胡椒,文火慢炖1小时,直至鲫鱼汤呈白色,得到熬煮的鱼汤;
S3.过滤:将鱼汤倒入过滤装置中过滤,去除鱼汤中的食物残渣,再用密漏进行二次过滤,出去鱼汤中较为细小的残渣,得到鲫鱼膏汤。
本发明的配方中采用鲫鱼汤作为酸菜鱼汤底,使得成品酸菜鱼汤更加鲜美、蛋白质等营养物质较多,酸菜鱼汤可食用。
进一步的,所述辅助调味料包括以重量计算的果酸20-50g、香鸡油10-20g、藤椒油5-10g、酸辣酱汁5-10g。
进一步的,所述香鸡油包括以重量计算的鸡油20000-30000g、香菜梗400-600g、芹菜400-600g、大葱1300-1600g、老姜800-1100g、大蒜130-160g、三奈80-120g、八角80-120g、洋葱2000-3000g、胡萝卜400-600g。
鸡油指的是鸡腹内的脂肪,特别柔软细嫩,因此其油脂很容易溶出,味道鲜美,富含蛋白质和脂肪。鸡油氧化生成的降解产物及其参与Maillard反应生成的产物,不仅具有脂肪香气,且能形成鸡肉的特征香味,能够提升鸡油的风味功能。
香菜,学名芫荽,属伞形目双子叶植物纲,是一种有特殊香气的植物,一般用作食用。香菜中特殊的香气就是挥发油散发出来的,它能祛除肉类的腥膻味,在菜肴中加些香菜能起到祛腥膻、增味道的功效。茎叶作蔬菜和调香料,并有健胃消食作用;果实可提芳香油;种子含油约20%。
芹菜,属伞形科植物。芹菜富含蛋白质、碳水化合物、胡萝卜素、B族维生素、钙、磷、铁、钠等,同时,具有有平肝清热,祛风利湿,除烦消肿,凉血止血,解毒宣肺,健胃利血、清肠利便、润肺止咳、降低血压、健脑镇静的功效。常吃芹菜,尤其是吃芹菜叶,对预防高血压、动脉硬化等都十分有益,并有辅助治疗作用。每100克芹菜中含有蛋白质2.2克、脂肪0.3克、糖类1.9克、钙160毫克、磷61毫克、铁8.5毫克,还含有胡萝卜素和其他多种B族维生素。芹菜营养丰富,含有较多的钙,磷、铁及胡萝卜素、维生索C、维生素P等,长期以来既作食用,又作药用。芹菜性味甘凉,具有清胃涤痰,祛风理气,利口齿爽咽喉,清盱明目和降压的功效。此外,芹菜中含有丰富的挥发性芳香油,既能增进食欲、促进血液循环,还能起到醒脑提神的食疗效用。含有丰富的维生素A、维生素B1、维生素B2、维生素C和维生素P,钙,铁,磷等矿物质含量也多,此外还有蛋白质、甘露醇和食物纤维等成分。叶茎中还含有药效成分的芹菜苷、佛手苷内酯和挥发油,具有降血压、降血脂、防治动脉粥样硬化的作用;对神经衰弱、月经失调、痛风、肌肉痉挛也有一定的辅助食疗作用;它还能促进胃液分泌,增加食欲。特别是老年人,由于身体活动量小、饮食量少、饮水量不足而易患大便干燥,经常吃点芹菜可刺激胃肠蠕动利于排便。
大葱石蒜科葱属二年生草本植物,常用作调味蔬菜,适量食葱补阴壮阳,大葱中的各种维生素能保证人体激素正常分泌,还能有效刺激性欲,从而“壮阳补阴”。大葱味辛,性微温,具有发表通阳、解毒调味的作用。主要用于风寒感冒、阴寒腹痛、恶寒发热、头痛鼻塞、乳汁不通,二便不利等。大葱含有挥发油,油中的主要成分为蒜素,又含有二烯丙基硫醚、草酸钙。另外,还含有脂肪、糖类,胡萝卜素等,维生素B、C,烟酸,钙,镁,铁等成分。大葱具有刺激身体汗腺,达到发汗散热之作用;葱油可以刺激上呼吸道,使黏痰易于咳出。葱中所含大蒜素,具有明显的抵御细菌、病毒的作用,尤其对痢疾杆菌和皮肤真菌抑制作用更强。葱所含的果胶,可明显地减少结肠癌的发生,有抗癌作用。葱内的蒜辣素也可以抑制癌细胞的生长;葱还含有微量元素硒,可降低胃液内的亚硝酸盐含量,对预防胃癌及多种癌症有一定作用。生葱像洋葱一样,含烯丙基硫醚,这种物质会刺激胃液的分泌,且有助于食欲的增进。与含维生素B1含量较多的食物一起摄取时,会促进食物的淀粉及糖质变为热量,可以缓解疲劳。大葱富含维生素C,有舒张小血管,促进血液循环的作用,可防止血压升高所致的头晕,使大脑保持灵活,并预防老年痴呆。大葱的挥发油和辣素,能祛除腥膻等油腻厚味菜肴中的异味,产生特殊香气,如果与蘑菇同食还可以起到促进血液循环的作用。大葱可降低坏胆固醇的堆积,经常吃葱的人,即便脂多体胖,其胆固醇并不增高,而且体质强壮。葱叶部分比葱白部分含有更多的维生素A、C及钙。一般人群均可食用,脑力劳动者更适宜。葱含有蛋白质、糖类、脂肪、碳水化合物、胡萝卜素,还含有苹果酸、磷酸糖、维生素B1、维生素B2、维生素C、铁、钙、镁及挥发性成分。葱性温味辛,具有散寒健胃、祛痰、杀菌、利肺通阳、发汗解表、通乳止血、定痛疗伤的功效,可用于痢疾、腹痛、关节炎、便秘等症;葱独特的香辣味来源于挥发硫化物葱素,能刺激胃液和唾液分泌,增进食欲;葱中含有大量特殊微量元素硒,具有防止人体细胞老化的功能,所含的苹果酸、磷酸糖等可兴奋神经系统,刺激血液循环,促使发汗,增强消化液的分泌,增进食欲;葱中所含的多种矿物质及维生素可促进胎儿组织器官的发育和供给孕妇大量的热能,有利于母体和胎儿的健康;葱蒜辣素可杀菌抑菌,抑制亚硝酸盐的生成,从而有一定的防癌作用。
老姜,味辛,性微温。入肺经、脾经、胃经。具有解表散寒、温中止呕、温肺止咳、化痰止咳,解毒等功效,临床上常用于治疗外感风寒及胃寒呕逆等证。老姜,俗称姜母,立秋之后收获的姜,即姜种,皮厚肉坚,味道辛辣,但香气不如黄姜。烹调常用姜有新姜、黄姜、老姜和浇姜之分。新姜皮薄肉嫩,味淡薄;黄姜,香辣气味由淡转浓,肉质由松软变结实,是姜中上品;老姜,又称姜母即姜种,肉厚肉坚,味辛辣,但香气不如黄姜;浇姜,附有姜芽,可做菜肴的配菜或酱腌,味甚鲜美。
大蒜又叫蒜头、大蒜头、胡蒜、葫、独蒜、独头蒜,是蒜类植物的统称。半年生草本植物,百合科葱属,以鳞茎入药。大蒜性温,味辛、甘。具有温中健胃,消食理气等作用。大蒜中含硫化合物具有奇强的抗菌消炎作用,对多种球菌、杆菌、真菌和病毒等均有抑制和杀灭作用,是当前发现的天然植物中抗菌作用最强的一种。大蒜中的锗和硒等元素可抑制肿瘤细胞和癌细胞的生长,实验发现,癌症发生率最低的人群就是血液中含硒量最高的人群。排毒清肠,预防肠胃疾病。降低血糖,预防糖尿病。大蒜可促进胰岛素的分泌,增加组织细胞对葡萄糖的吸收,提高人体葡萄糖耐量,迅速降低体内血糖水平,并可杀死因感染诱发糖尿病的各种病菌,从而有效预防和治疗糖尿病。大蒜可防止心脑血管中的脂肪沉积,诱导组织内部脂肪代谢,显著增加纤维蛋白溶解活性,降低胆固醇,抑制血小板的聚集,降低血浆浓度,增加微动脉的扩张度,促使血管舒张,调节血压,增加血管的通透性,从而抑制血栓的形成和预防动脉硬化。大蒜中含有一种叫“硫化丙烯”的辣素,对病原菌和寄生虫都有良好的杀灭作用,可预防感冒,减轻发烧、咳嗽、喉痛及鼻塞等感冒症状。维生素B1与大蒜所含有的大蒜素结合在一起,能很好的发挥消除疲劳、恢复体力的作用。蒜里的某些成份有类似维生素E与维生素C的抗氧化,防衰老特性。大蒜中的微量元素硒,通过参与血液的有氧代谢,清除毒素,减轻肝脏的解毒负担,从而达到保护肝脏的目的。每天生吃大蒜能够减轻过敏反应程度,特别是由温度变化所引起的过敏。最好的方法是在过敏季节来临前几周就开始生吃大蒜。霉菌性阴道炎是由霉菌感染所致的,蒜中含有大量的大蒜素、大蒜拉素等物质,是天然强力的杀菌物质,具有极大的杀菌作用,可以抑制白色念珠菌在阴道内的过度生长和繁殖,所以女性日常多吃蒜类的食物,可以有效的预防霉菌性阴道炎的发生。大蒜集100多种药用和保健成分于一身,其中含硫挥发物43种,硫化亚磺酸(如大蒜素)酯类13种、氨基酸9种、肽类8种、甙类12种、酶类11种。另外,蒜氨酸是大蒜独具的成分,当它进入血液时便成为大蒜素,这种大蒜素即使稀释10万倍仍能在瞬间杀死伤寒杆菌、痢疾杆菌、流感病毒等。蒜素与维生素B1结合可产生蒜硫胺素,具有消除疲劳、增强体力的奇效。大蒜含有的肌酸酐是参与肌肉活动不可缺少的成分,对精液的生成也有作用,可使精子数量大增,所谓吃大蒜精力旺盛即指此而言。大蒜还能促进新陈代谢,降低胆固醇和甘油三酯的含量,并有降血压、降血糖的作用,故对高血压、高血脂、动脉硬化、糖尿病等有一定疗效。大蒜外用可促进皮肤血液循环,去除皮肤的老化角质层,软化皮肤并增强其弹性,还可防日晒、防黑色素沉积,去色斑增白。国内外研究证明,大蒜可断亚硝胺类致癌物在体内的合成到当前为止,其防癌效果在40多种蔬菜、水果中,按金字塔排列,大蒜位于塔顶。在100多种成分中,其中几十种成分都有单独的抗癌作用。
三奈也叫沙姜、山辣,为根状茎。沙姜味辛、性温,入胃经;有温中散寒,开胃消食,理气止痛的功效;适宜胃寒之人心腹冷痛,肠鸣腹泻者,纳谷不香,不思饮食,或停食不化之人食用。三奈气香特异,味辛辣。功能主治行气温中,消食,止痛。用于胸膈胀满,脘腹冷痛,饮食不消。
八角为著名的调味香料,味香甜。八角果实在日常调味中可直接使用,如炖、煮、腌、卤、泡等,也可直接加工成五香调味粉。茴油和八角油树脂则通常用于肉类制品、调味品、软饮料、冷饮、糖果以及糕点、烘烤食品等食品加工业领域。八角干燥成熟果实含有含芳香油、脂肪油、蛋白质、树脂等,提取物为茴香油,其中种子中含有茴香油1.7%-2.7%,干果和干叶的茴香油含量分别为12%-13%、1.6%-1.8%。茴香油的主要成分为茴香醚、茴香醛和茴香酮、黄樟醚、水芹烯等。八角供药用,有祛风理气、和胃调中的功能,用于中寒呕逆、腹部冷痛、胃部胀闷等。但多食会损目发疮。八角果具有健胃、驱风、镇痛、调中理气、祛寒湿,治疗消化不良和神经衰弱等功用。随着新药研制水平的不断提高,其用途不断扩大,以八角为原料提取的莽草酸可合成抗癌药和制取抗甲型或乙型流行性感冒药物。八角干果含莽草酸8%-13%,是最佳天然植物原料,除毒八角(莽草籽)含量比它高些外,还没有发现有潜在规模生产价值的植物。
洋葱是一种很普通的廉价家常菜。其肉质柔嫩,汁多辣味淡,品质佳,适于生食。原产亚洲西部,在中国各地均有栽培,四季都有供应。洋葱供食用的部位为地下的肥大鳞茎(即葱头)。在国外它却被誉为“菜中皇后”,营养价值较高。洋葱中的营养成分十分丰富,不仅富含钾、维生素C、叶酸、锌、硒,及纤维质等营养素,更有两种特殊的营养物质——槲皮素和前列腺素A。这两种特殊营养物质,令洋葱具有了很多其他食物不可替代的健康功效:洋葱的防癌功效来自于它富含的硒元素和槲皮素。硒是一种抗氧化剂,能刺激人体免疫反应,从而抑制癌细胞的分裂和生长,同时还可降低致癌物的毒性。而槲皮素则能抑制致癌细胞活性,阻止癌细胞生长。一份调查显示,常吃洋葱比不吃的人患胃癌的几率少25%,因胃癌致死者少30%。洋葱是所知惟一含前列腺素A的蔬菜。前列腺素A能扩张血管、降低血液黏度,因而会产生降血压、增加冠状动脉的血流量,预防血栓形成的作用。洋葱中含量丰富的槲皮素,其生物的可利用率很高,科学家研究报告指出,槲皮素可能有助于防止低密度脂蛋白(LDL)的氧化,对于动脉粥样硬化,能提供重要的保护作用。洋葱含有葱蒜辣素,有浓郁的香气,加工时因气味刺鼻而常使人流泪。正是这特殊气味可刺激胃酸分泌,增进食欲。动物实验也证明,洋葱能提高胃肠道张力,促进胃肠蠕动,从而起到开胃作用,对萎缩性胃炎、胃动力不足、消化不良等引起的食欲不振有明显效果。洋葱中含有植物杀菌素如大蒜素等,有很强的杀菌能力,能有效抵御流感病毒、预防感冒。这种植物杀菌素经由呼吸道、泌尿道、汗腺排出时,能刺激这些位置的细胞管道壁分泌,所以又有祛痰、利尿、发汗以及抑菌防腐等作用。
胡萝卜是一种质脆味美、营养丰富的家常蔬菜,素有“小人参”之称。胡萝卜富含糖类、脂肪、挥发油、胡萝卜素、维生素A、维生素B1、维生素B2、花青素、钙、铁等营养成分。每100克胡萝卜中,约含蛋白质0.6克,脂肪0.3克,糖类7.6-8.3克,铁0.6毫克,维生素A原(胡萝卜素)1.35-17.25毫克,维生素B10.02-0.04毫克,维生素B20.04-0.05毫克,维生素C12毫克,热量150.7千焦,另含果胶、淀粉、无机盐和多种氨基酸。各类品种中,尤以深橘红色胡萝卜素含量最高。美国科学家研究证实:每天吃两根胡萝卜,可使血中胆固醇降低10%-20%;每天吃三根胡萝卜,有助于预防心脏疾病和肿瘤。胡萝卜含有大量胡萝卜素,这种胡萝卜素的分子结构相当于2个分子的维生素A,进入机体后,在肝脏及小肠粘膜内经过酶的作用,其中50%变成维生素A,有补肝明目的作用,可治疗夜盲症;胡萝卜素转变成维生素A,维生素A是骨骼正常生长发育的必需物质,有助于细胞增殖与生长,是机体生长的要素,对促进婴幼儿的生长发育具有重要意义。维生素A有助于增强机体的免疫轼能,在预防上皮细胞癌变的过程中具有重要作用。胡萝卜中的木质素也能提高机体免疫机制,间接消灭癌细胞。胡萝卜含有的α-胡萝卜素抑制肿瘤细胞的能力是β-胡萝卜素的10倍,对预防DNA(脱氧核糖核酸)的异常变化效果很强。血液中α-胡萝卜素的浓度越高,则受试者的心脏病危险就越低。血液中的α-胡萝卜素含量越高的人拥有更长的寿命。α-胡萝卜素含量最高的食物是胡萝卜。南瓜、橙子、柑橘中,α-胡萝卜素的含量也较高。α-胡萝卜素不怕高温蒸煮,把胡萝卜放在肉汤里煮,只要连汤喝掉,并不会引起α-胡萝卜素的明显损失。相反,熟吃才更有利于各种类胡萝卜素的吸收,只要少量的油脂就能达到充分吸收的效果。胡萝卜中的β-胡萝卜素能有效预防花粉过敏症、过敏性皮炎等过敏性疾病,且β-胡萝卜素能调节细胞内的平衡,从而使身体不易出现过敏反应。胡萝卜含有植物纤维,吸水性强,在肠道中体积容易膨胀,是肠道中的“充盈物质”,可加强肠道的蠕动,从而利膈宽肠,通便防癌。胡萝卜还含有降糖物质,是糖尿病人的良好食品。胡萝卜素中含的槲皮素、山柰酚能增加冠状动脉血流量,降低血脂,促进肾上腺素的合成,因而有降压强心的作用。胡萝卜中含有琥珀酸钾盐,有助于防止血管硬化,降低胆固醇及有降低血压的作用。胡萝卜中的叶酸,能减少冠心病发病因素。高血压者饮胡萝卜汁后,有很好的降压作用。吃较多胡萝卜的人群,比吃较少胡萝卜的人群,心脏病例几乎减少50%。在鸡油中加入胡萝卜可使得最后所得的香鸡油色泽鲜亮,拥有独特的香味。
上述香鸡油的制备方法为,将大葱1000g、洋葱1000g、老姜1000g、大蒜500g、香菜500g、芹菜500g、胡萝卜1000g、八角150g、三奈150g、鸡油100000g一起下锅中炒香,用小火熬制2小时炸至香味溢出,得到熬制的鸡油。对熬制的鸡油进行过滤,去除鸡油中的杂质,得到清澈的鸡油。最后对清澈的鸡油进行分装,得到成品香鸡油。
进一步的,所述酸菜酱包括以重量计算的酸菜9000-12000g、泡小黄姜5000-7000g、野山椒3500-4500g、猪油4500-6000g、味精200-350g、鸡汁100-200g、白醋1500-2500g。
酸菜是中国人喜欢的食品,每年到了秋天,白菜,青菜,萝卜收获的季节,各家各户都会选恰当的时间,腌浸过冬食用的酸菜。整个操作过程要求在无油、无面粉、无菌的状态中进行,密封腌制一个月后再炖熟食用,酸香浓郁,让人回味。
酸菜酸香味醇、清淡爽口、采用自然抑菌,富含氨基酸、有机酸、膳食纤维等营养物质,不含有防腐剂和色素,是一种绿色天然的健康食品。酸菜是将新鲜水芥菜经一定的加工方法使其具有一定的酸味和独特的风味。
酸菜香气的由来:将青菜,白菜中的植物糖分解,大部分由植物糖转化成有机酸而使蔬菜变酸香,少部分由于分解不完全而生成酒醇,有机酸可与醇反应生成酯,酯类是有特殊香气的,例如:乙酸乙酯存在于酒、食醋和某些水果中;乙酸异戊酯存在于香蕉、梨等水果中;苯甲酸甲酯存在于丁香油中;水杨酸甲酯存在于冬青油中。高级和中级脂肪酸的甘油酯是动植物油脂的主要成分;高级脂肪酸和高级醇形成的酯是酯蜡的主要成分。在中草药的叶、根、特别是果实中广泛分布,如乌梅、五味子,覆盆子等。常见的植物中的有机酸有脂肪族的一元、二元、多元羧酸如酒石酸、草酸、苹果酸、枸椽酸、抗坏血酸等,亦有芳香族有机酸如苯甲酸、水杨酸、咖啡酸等。除少数以游离状态存在外,一般都与钾、钠、钙等结合成盐,有些与生物碱类结合成盐。脂有的有机酸是挥发油与脂的组成成分。在有酸或有碱存在的条件下,酯也能发生水解反应生成相应的酸或醇。所以酸泡菜含有有机酸、酯、植物酵素,因此酸香味醇,开胃生津,深受人们喜爱。
酸菜中的“酸香”是植物酵素自然发酵使蔬菜中的植物糖分解,大部分由植物糖转化成酸性物质(有机酸),酸菜发酵过程中产生的有机酸、醇、氨基酸等形成了酸菜独特的鲜酸风味。
泡小黄姜是将小黄姜洗净使用白醋浸泡之后所得的产物。野山椒俗称指天椒,主要用作菜肴烹调、配菜的佐料,辛辣副食品的调料。猪油,中国人也将其称为荤油或猪大油。它是从猪肉提炼出,初始状态是略黄色半透明液体的食用油,常温下为白色或浅黄色固体。猪油主要由饱和高级脂肪酸甘油酯与不饱和高级脂肪酸甘油脂组成,其中饱和高级脂肪酸甘油酯含量更高。其中的不饱和高级脂肪酸甘油酯由于分子中含有碳碳双键,因此能使溴水褪色,能使酸性高锰酸钾溶液褪色。猪油属于油脂中的“脂”,常温下为白色或浅黄色固体。该脂肪于过低室温即会凝固成白泽色固体油脂。猪油熔点为28℃~48℃。在西方被称为猪脂肪。猪油色泽白或黄白,具有猪油的特殊香味。味精是调味料的一种,主要成分为谷氨酸钠。味精的主要作用是增加食品的鲜味,在中国菜里用的最多,也可用于汤和调味汁。味精是指以粮食为原料经发酵提纯的谷氨酸钠结晶。白醋是烹调的酸味辅料,色泽透亮、酸味醇正。主要原料有水、大米、食用酒精、食用盐等。本发明的酸菜鱼配方添加白醋来增加酸菜鱼中的酸味,使酸菜鱼中除了酸菜的酸味外还带有白醋的酸味,口感更佳丰富。
所述酸菜酱的制备方法为,向锅中放入猪油4500-6000g烧至5成油温后,加入9000-12000g酸菜、3500-4500g野山椒、5000-7000g小泡黄姜炒制表皮发白、香味溢出,再放入200-350g味精、100-200g鸡汁、1500-2500g白醋翻炒1分钟,即可得到成品酸菜酱。
进一步的,所述酸辣酱汁包括以重量计算的灯笼辣酱1000-2000g、野山椒汁水800-1200g、鲜柠檬汁150-300g、味精40-60g、盐30-50g、色拉油200-400g。
鸡汁也称鸡汁调味料,是以磨碎的鸡肉或鸡骨或其浓缩抽提物以及其他辅料等为原料,添加或不添加香辛料和(或)食用香料等增香剂加工而成的,具有鸡的浓郁鲜味和香味的汁状复合调味料。鸡汁鸡鲜味十足、口感自然,适合煎、炒、焖、蒸、煮等多种菜式的的烹调。灯笼辣椒酱属于海南省的传统调味品,一般人到了海南都会带一些黄灯笼辣椒酱回去,鲜辣一绝,而且好吃不上火,辣而不呛。黄辣椒,产于海南南部,呈灯笼型,色泽鲜黄,外观漂亮,也叫灯笼椒。经测试,黄辣椒的辣度达十五万辣度单位,别称辣椒王。且各种营养成份含量大大超过其他辣椒,特别是人体必需的磷、钙、铁,各种氨基酸含量尤为丰富,蛋白质、纤维素含量亦较高。除可帮助消化、增进食欲外,并有壮胃健脾、助于减肥、促进血液循环、防治伤风感冒等功效。色拉油是指各种植物原油经脱胶、脱色、脱臭(脱脂)等加工程序精制而成的高级食用植物油。主要用作凉拌或作酱、调味料的原料油。野山椒汁水是指泡野山椒的汁水,具有野山椒的辣味和独特酸味。本发明的酸菜鱼配方添加柠檬汁和野山椒汁来增加酸菜鱼中的酸味,使酸菜鱼中除了酸菜的酸味外还带有柠檬汁和野山椒汁的酸味,口感更佳丰富,酸味更佳明显,促进食欲。
所述酸辣酱汁的制备方法为,向锅中加入200-400g色拉油烧至4成油温,再加入1000-2000g灯笼辣椒酱炒香,然后依次加入30-50g盐、800-1200g野山椒汁水、150-300g鲜柠檬汁、40-60g味精煮至沸腾即可得到成品酸辣酱汁。

S1.酸菜的炒制:取150-200g酸菜,将酸菜洗净,将酸菜叶和酸菜茎分开;然后分别将酸菜叶和酸菜茎切丝;向锅中加入猪油,猪油融化之后,向锅中分别加入酸菜叶丝和酸菜茎丝进行炒制,得到炒制后的酸菜叶和酸菜茎;
S2.鱼肉的煮制:向锅中加入900-1200g的鲫鱼汤,待鲫鱼汤沸腾之后加入300-500g的鲜鱼肉进行煮制,煮熟后捞出,得到鱼汤和煮熟的鱼肉;
S3.冬笋尖的煮制:取冬笋尖100-150g,将冬笋尖洗净,相锅中加入饮用水,待锅中的水沸腾之后加入洗净的冬笋尖进行煮制,冬笋尖煮熟之后捞出;

本发明的有益效果为:
本发明的酸菜鱼配方用鲫鱼汤替换现有配方中的水作为酸菜鱼汤底,使得成品酸菜鱼汤味道更加鲜美且富含营养物质,便于食用。且本发明的配方将大部分香料、配料以香鸡油、酸辣酱汁和酸菜酱等方式加入到酸菜鱼中,有减少了成品酸菜鱼汤中的配料、辅料添加,使得成品酸菜鱼汤中只含有鱼肉、酸菜和极少量的配料,酸菜鱼汤中杂质较少,鱼汤中不含辣椒、花椒等香辛料,且含有较少的食用油,便于对酸菜鱼汤的食用,老人、小孩及需要食用清淡食物的人均可食用。本发明的配方中还添加了冬笋尖来提升酸菜鱼汤的鲜味,增加鱼汤中的营养物质含量。

实施例1:
本实施例提供一种酸菜鱼配方,包括以重量计算的鲜鱼肉300-500g、鲫鱼汤900-1200g、酸菜酱100-150g、酸菜150-200g、冬笋尖100-150g、辅助调味料40-90g。
本实施例的一种酸菜鱼配方的制备方法,具体制备步骤如下:
1.酸菜的炒制:取150-200g酸菜,将酸菜洗净,将酸菜叶和酸菜茎分开;然后分别将酸菜叶和酸菜茎切丝;向锅中加入猪油,猪油融化之后,向锅中分别加入酸菜叶丝和酸菜茎丝进行炒制,得到炒制后的酸菜叶和酸菜茎;
2.鱼肉的煮制:向锅中加入900-1200g的鲫鱼汤,待鲫鱼汤沸腾之后加入300-500g的鲜鱼肉进行煮制,煮熟后捞出,得到鱼汤和煮熟的鱼肉;
3.冬笋尖的煮制:取冬笋尖100-150g,将冬笋尖洗净,相锅中加入饮用水,待锅中的水沸腾之后加入洗净的冬笋尖进行煮制,冬笋尖煮熟之后捞出;
4.鱼汤调味:向锅中加入准备好的鱼汤,然后加入炒制后的酸菜叶丝,再加入酸菜酱100-150g和辅助调味料40-90g对鱼汤进行调味,得到酸菜鱼汤;

本实施例的一种酸菜鱼配方,包括以重量计算的鲜鱼肉300-500g、鲫鱼汤900-1200g、酸菜酱100-150g、酸菜150-200g、冬笋尖100-150g、辅助调味料40-90g。
所述辅助调味料包括以重量计算的果酸20-50g、香鸡油10-20g、藤椒油5-10g、酸辣酱汁5-10g。
所述鲜鱼肉的制备步骤如下:
1.去尾:用片刀斩去鱼的尾部,放入装满水的大桶中,让乌鱼在自然游动中放净淤血;
2.去鳞:去掉鱼鳞,洗净鱼皮表面的黏液;
3.去骨:从鱼的颈部慢慢往下将鱼肉和鱼骨剃开,要求下刀轻、速度稳,鱼骨上残留鱼肉少;
4.切片:用清水冲洗干净鱼肉,摆放在菜板上,用刀背从鳞甲生长的反方向再次清理鳞甲,将鱼肉翻面,片出长5-6厘米、宽7-8厘米、厚0.2-0.3厘米的鱼片;
5.腌渍:将鱼片用清水加适度的盐反复冲洗,直至水无杂质,鱼片洁白,然后对鱼片进行腌渍。
所述鲫鱼汤为利用鲫鱼熬煮所得的膏汤,最好选用生长周期1年左右、体重75克至100克的鲫鱼进行熬制。所述鲫鱼汤的制备步骤为:
1.煎鱼:向铁锅中加猪油,然后加入鲫鱼煎至两面金黄,使鱼肉产生酯化反应;
2.初次熬煮:向麦饭石材器皿中加入饮用水,大火烧开,然后加入煎好的鲫鱼,文火慢炖1小时,直至鲫鱼汤呈白色,得到初次熬煮的鱼汤;
3.二次熬煮:向初次熬煮的鱼汤中加入酸菜、乳酸菌、香油、酸菜鱼酱料小火熬制5分钟,得到二次熬煮的鱼汤;
3.过滤:将鱼汤倒入过滤装置中过滤,去除鱼汤中的食物残渣,再用密漏进行二次过滤,出去鱼汤中较为细小的残渣,得到鲫鱼膏汤。

本实施例的一种酸菜鱼配方,包括以重量计算的鲜鱼肉300-500g、鲫鱼汤900-1200g、酸菜酱100-150g、酸菜150-200g、冬笋尖100-150g、辅助调味料40-90g。

10.酸菜的炒制:取150-200g酸菜,将酸菜洗净,将酸菜叶和酸菜茎分开;然后分别将酸菜叶和酸菜茎切丝;向锅中加入猪油,猪油融化之后,向锅中分别加入酸菜叶丝和酸菜茎丝进行炒制,得到炒制后的酸菜叶和酸菜茎;
11.鱼肉的煮制:向锅中加入900-1200g的鲫鱼汤,待鲫鱼汤沸腾之后加入300-500g的鲜鱼肉进行煮制,煮熟后捞出,得到鱼汤和煮熟的鱼肉;
12.冬笋尖的煮制:取冬笋尖100-150g,将冬笋尖洗净,相锅中加入饮用水,待锅中的水沸腾之后加入洗净的冬笋尖进行煮制,冬笋尖煮熟之后捞出;
13.鱼汤调味:向锅中加入准备好的鱼汤,然后加入炒制后的酸菜叶丝,再加入酸菜酱100-150g和辅助调味料40-90g对鱼汤进行调味,得到酸菜鱼汤;
14.酸菜鱼成品的获得:向器皿中加入炒制后的酸菜茎丝和煮制后的冬笋尖,再向器皿中加入酸菜鱼汤,最后向器皿中加入煮熟的鱼肉得到酸菜鱼成品。

Claims (10)
1.一种酸菜鱼配方,其特征在于:包括以重量计算的鲜鱼300-500g、鲫鱼汤900-1200g、酸菜酱100-150g、酸菜150-200g、冬笋尖100-150g、辅助调味料40-90g。
2.根据权利要求1所述的一种酸菜鱼配方,其特征在于:所述辅助调味料包括以重量计算的果酸20-50g、香鸡油10-20g、藤椒油5-10g、酸辣酱汁5-10g。
3.根据权利要求2所述的一种酸菜鱼配方,其特征在于:所述香鸡油包括以重量计算的鸡油20000-30000g、香菜梗400-600g、芹菜400-600g、大葱1300-1600g、老姜800-1100g、大蒜130-160g、三奈80-120g、八角80-120g、洋葱2000-3000g、胡萝卜400-600g。
4.根据权利要求3所述的一种酸菜鱼配方,其特征在于:所述酸菜酱包括以重量计算的酸菜9000-12000g、泡小黄姜5000-7000g、野山椒3500-4500g、猪油4500-6000g、味精200-350g、鸡汁100-200g、白醋1500-2500g。
5.根据权利要求4所述的一种酸菜鱼配方,其特征在于:所述酸辣酱汁包括以重量计算的灯笼辣酱1000-2000g、野山椒汁水800-1200g、鲜柠檬汁150-300g、味精40-60g、盐30-50g、色拉油200-400g。
6.根据权利要求5所述的一种酸菜鱼配方,其特征在于:包括以重量计算的鲜鱼400g、鲫鱼汤1000g、酸菜酱115g、酸菜190g、冬笋尖130、辅助调味料58g。
7.根据权利要求6所述的一种酸菜鱼配方,其特征在于:所述辅助调味料包括以重量计算的果酸30g、香鸡油15g、藤椒油7g、酸辣酱汁6g。
8.根据权利要求7所述的一种酸菜鱼配方,其特征在于:所述酸菜酱包括以重量计算的酸菜10000g、泡小黄姜6000g、野山椒4000g、猪油5000g、味精300g、鸡汁150g、白醋2000g。
9.根据权利要求8所述的一种酸菜鱼配方,其特征在于:所述酸辣酱汁包括以重量计算的灯笼辣酱1500g、野山椒汁水1000g、鲜柠檬汁200g、味精50g、盐40g、色拉油300g。
10.根据权利要求9所述的一种酸菜鱼配方,其特征在于:所述鲜鱼为鲜乌鱼。
