[0001]本发明涉及食品加工技术领域,具体涉及一种余甘果豆豉酱及其制作方法。
【背景技术】
[0002]调味或佐餐食品是人们生活中不可或缺的食品,豆豉酱由于其味道好、且具有较高的营养价值,成为了其中一个很受欢迎的品类,其不仅可作为菜肴食用,也可作为调味品使用。在炒菜、吃面、吃粥时,都十分喜爱用豆豉酱来佐餐;在保健方面,豆豉还具有和胃,除烦,解腥毒,去寒热的功效。随着物质的丰富化,用户口味的多样化和求变需求开始逐渐呈现。首先,市场上需求品种更多、风味更多的豆豉酱,以满足新品体验的需求;其次,人们一方面追求麻、辣、香等味觉体验,一方面又会担心食用后出现上火、腹痛等身体不适的症状。因此,豆豉酱的研制还有许多待开发的空间。
[0003]余甘果是一种健康食品,富含维生素C、E、B等多种微量元素及矿物质,同时还含有人体所需的14种氨基酸以及超氧化物歧化酶(SOD)和丰富的有机砸,尤其是维生素C,每100克鲜余甘果中含维生素C500 —1841毫克,比素有维生素之王的猕猴桃高4倍,比柑桔高25倍,具有多种保健医疗作用。余甘果能润肺化痰,生津止渴,降低血压,增进食欲,能明显治疗和预防胃癌,对乙肝、高血脂、高血压、高血糖等均有较好的疗效。治疗咽喉不适、烟酒过度、胆道蛔虫绞痛等等,更是立竿见影。此外,余甘果的根、茎、叶均可入药,用余甘果叶作药枕,民间早已广为流传。余甘果生吃最好,但是比较苦涩,一般都是腌制后再吃,比较容易入口,也有做成果醋的牛甘果,果脯等。将余甘果制作成豆豉酱也是开发豆豉酱品种的一项新的选择。
【发明内容】
[0004]本发明的发明目的在于:针对上述存在的问题,提供一种余甘果豆豉酱及其制作方法,该豆豉酱除了具有普通豆豉酱的调味功效外,还具有余甘果风味,其味道苦中带甜,能生津止渴,增进食欲,且由于添加了功能性添加剂,久吃不会引起上火、腹痛等病症。
[0005]为了实现上述目的,本发明采用的技术方案如下:
[0006] —种余甘果豆豉酱,是由以下重量份的原料制成:余甘果150-180份、豆豉40-60份、萝卜干40-50份、肉丝30-40份、山楂20-28份、柠檬汁8-10份、核桃仁80-100份、板栗10-20份、花生油10-20份、酱油15-20份、大蒜10-15份、姜10-15份、鲜辣椒60-80份以及功能性添加剂20-30份;
[0007]所述功能性添加剂是由以下重量份的原料制成:新会皮5-12份、鲜稻叶8-15份、白薇5-12份、方通草5-10份、焦米仁10-15份、佩兰7-12份、鲜荷叶10-15份、大腹皮7-12份。
[0008]优选地,所述余甘果豆豉酱更优选的配方组成为,按重量份计,由以下原料制成:余甘果160份、豆豉50份、萝卜干45份、肉丝35份、山楂23份、柠檬汁9份、核桃仁90份、板栗15份、花生油15份、酱油18份、大蒜12份、姜12份、鲜辣椒75份以及功能性添加剂25份;
[0009]所述功能性添加剂是由以下重量份的原料制成:新会皮8份、鲜稻叶12份、白薇8份、方通草7份、焦米仁12份、佩兰8份、鲜荷叶12份、大腹皮8份。
[0010] 进一步地,所述功能性添加剂通过以下方法制备得到:
[0011] a、将鲜稻叶、鲜荷叶捣碎后,放入磨浆机内,加入150重量份的水一起磨浆,然后用50目的过滤网过滤,取滤液备用;
[0012] b、将新会皮、白薇、方通草、焦米仁、佩兰、大腹皮一起放入陶瓷碗里,置于蒸锅内隔水蒸0.5h,然后取陶瓷碗内浸出的蒸煮液;
[0013] C、将上述步骤a、b中的滤液与蒸煮液合并,然后浓缩成50°C下相对密度为1.25-
1.30的浸膏,即得功能性添加剂。
[0014]进一步地,本发明中所用的豆豉可以从市场购买,也可以通过以下方法特制:首先将黑豆洗净后在35°C的温水中浸泡2.5-3小时;再将浸泡后的黑豆蒸熟,蒸熟后将黑豆出锅,冷却至30-35°C后拌入发酵菌种;然后在簸箕上铺上一层干荷叶,将拌好发酵菌种的黑豆均匀摊放在干荷叶上、并在黑豆上铺一层桑叶进行发酵,室内保持通风,并保持室温为28-30°C ;发酵10-15天后,经去毛、入盐、晒干后制得。
[0015]其中,所述发酵菌种为毛霉或曲霉。
[0016] 其中,在黑豆发酵过程中,在黑豆上铺上一层桑叶时,可以直接用采摘回来的桑叶,最好是先将桑叶切碎成宽度小于2cm的碎条,桑叶摊放时要薄摊,摊放厚度小于0.5cm。桑叶有利于发酵时豆豉内的营养转换,将桑叶切碎使组织内的成份释放出来,能更好地发挥其作用。
[0017]本发明还提供上述的一种余甘果豆豉酱的制作方法,包括以下步骤:
[0018] (I)将余甘果切开两半并去核,再切成厚度为2mm,长度不超过1mm的薄片,用一半份量的柠檬汁拌匀并腌制24h以上备用;
[0019] (2)将大蒜、姜、鲜辣椒、洗净切碎,鲜猪肉洗净切丝,山楂切成碎粒,将一半份量的花生油倒入锅中烧热,依次向锅内加入切碎的姜、鲜辣椒、大蒜、豆豉、山楂碎粒、肉丝炒熟备用,得调料;
[0020] (3)将板栗和核桃仁制成粉状;向锅内倒入剩余的花生油烧热,将板栗和核桃仁制成的粉倒入锅中翻炒1-2分钟后,倒入酱油继续翻炒2-3分钟,关火后倒入功能性添加剂,拌匀得酱汁;
[0021] (4)将步骤(I)处理的余甘果肉、步骤(2)的调料、萝卜干、剩余的柠檬汁一起混匀得主料,最后将步骤(3)的酱汁趁热倒入主料中,将主料混匀并放冷后包装即得余甘果豆豉。
[0022]本发明中所用的主要原料,不仅作为食材,还各有其保健功效,其中:
[0023]余甘果能生津止渴,增进食欲。豆豉具有和胃,除烦,解腥毒,去寒热的功效。萝卜干,具有降血脂、降血压、消炎、开胃、清热生津、防暑、消油腻、破气、化痰、止咳等功效。肉丝蛋白质丰富,且加入进去能增进食欲。山楂能健脾开胃、消食化滞、活血化痰,用于增加豆豉酱的酸甜风味;其还具有降血脂、血压、强心、抗心律不齐等功效。柠檬汁不仅可以用于调味,改善余甘果的苦味,并能使余甘果更脆;还具有助消化、美白、杀菌、防结石等功效。核桃仁是胡桃核内的果肉,具有补肾固精,温肺定喘,润肠等功效,在本发明中用于制作调味酱料。板栗具有养胃健脾,补肾强筋,活血止血之功效。花生油、酱油用于调味。大蒜不仅作为调味品,使食品具有蒜香,还解毒杀虫,消肿止痛,温脾暖胃等功效。姜具有发汗解表,温中止呕,温肺止咳,解毒的功效。鲜辣椒在本发明中不仅能赋予豆豉酱的辣味,还能温中健胃,散寒燥湿,解表发汗。
[0024]功能性添加剂中的新会皮治脾胃不调、冷气暴折、客乘于中,鲜稻叶消食宽中、健脾和胃、以滋生化之源,白薇清热凉血、利尿通淋、解毒疗疮,方通草泻肺、清热利尿、通气下乳,荷叶清热解暑、升发清阳、凉血止血,焦米仁健脾、补肺、清热、利湿,佩兰芳香化湿、醒脾开胃、发表解暑,大腹皮下气宽中、行水消肿。在本配方中新会皮、鲜稻叶健脾和胃,力气宽中,白薇、方通草、荷叶、焦米仁,清热利湿,利湿热之邪从小便出,一则护胃气,二则助去邪湿;佩兰和鲜荷叶、大腹皮专治霉湿和湿浊。稻叶鲜,宽中、下气、消食积。多味药一起共同作用是用于清热燥湿,健脾养胃,以消除食用过辣带来的影响。
[0025]综上所述,由于采用了上述技术方案,本发明的有益效果是:
[0026] 1、普通加了辣椒的豆豉酱在食用后,对于湿热体质的人来说,会使湿热更盛,引起上火、腹痛、冒痘等不适的症状,而本发明的余甘果豆豉酱不仅风味独特,营养丰富,由于添加了功能助剂,食用后不仅不会引起上火、腹痛等问题,还能健胃消食,清热祛湿,具有保健的功能。不仅可以作为开胃食品,还能调理身体的脏腑功能,从真正意义上使人脾胃趋于健康正常,恢复正常食欲。
[0027] 2、本发明的豆豉酱如果采用特制的豆豉,用特殊方法制成,由于使用荷叶使其具有荷香,由于增加桑叶可以助其发酵,能使豆豉别具风味。
[0028] 3、本发明的豆豉酱如果采用本发明的特殊制法,能使各食材的功效最好的发挥,柠檬汁能增加余甘果的脆性,改善其苦味,山楂能增加酸甜的风味,核桃仁和板栗制作酱汁,酱汁浓郁,增进产品的色泽和味道;萝卜干、肉丝、豆豉能增添佐料品类;辣椒、大蒜、酱能为产品增香;所制得的余甘果豆豉酱味道鲜美、果肉脆爽、辣香适口。
【具体实施方式】

[0031] 一种余甘果豆豉酱,是由以下重量份的原料制成:余甘果150份、豆豉40份、萝卜干40份、肉丝30份、山楂20份、柠檬汁8份、核桃仁80份、板栗10份、花生油10份、酱油15份、大蒜10份、姜10份、鲜辣椒60份以及功能性添加剂20份;功能性添加剂是由以下重量份的原料制成:新会皮5份、鲜稻叶8份、白薇5份、方通草5份、焦米仁10份、佩兰7份、鲜荷叶10份、大腹皮7份。
[0032]制作上述余甘果豆豉酱的方法,包括以下步骤:
[0033](一)制备功能性添加剂:
[0034] a、将鲜稻叶、鲜荷叶捣碎后,放入磨浆机内,加入150重量份的水一起磨浆,然后用50目的过滤网过滤,取滤液备用;
[0035] b、将新会皮、白薇、方通草、焦米仁、佩兰、大腹皮一起放入陶瓷碗里,置于蒸锅内隔水蒸0.5h,然后取陶瓷碗内浸出的蒸煮液;
[0036] C、将上述步骤a、b中的滤液与蒸煮液合并,然后浓缩成50°C下相对密度为1.25的浸膏,即得功能性添加剂;
[0037] (二)制备豆豉:
[0038]首先将黑豆洗净后在35°C的温水中浸泡2.5小时;再将浸泡后的黑豆蒸熟,蒸熟后将黑豆出锅,冷却至30°C后拌入毛霉或曲霉,菌种的加入量按照常规生产的量添加;然后在簸箕上铺上一层干荷叶,将拌好发酵菌种的黑豆均匀摊放在干荷叶上、并在黑豆上铺一层桑叶进行发酵,室内保持通风,并保持室温为28-30°C左右;发酵10天后,经去毛、入盐、晒干后制得。铺桑叶的时候,先将桑叶切碎成宽度小于2cm的碎条,桑叶摊放时要薄摊,摊放厚度小于0.5cm。
[0039](三)制作余甘果豆豉酱:
[0040] (I)将余甘果切开两半并去核,再切成厚度为2mm,长度不超过1mm的薄片,用一半份量的柠檬汁拌匀并腌制24h以上备用;
[0041 ] (2)将大蒜、姜、鲜辣椒、洗净切碎,鲜猪肉洗净切丝,山楂切成碎粒,将一半份量的花生油倒入锅中烧热,依次向锅内加入切碎的姜、鲜辣椒、大蒜、豆豉、山楂碎粒、肉丝炒熟备用,得调料;
[0042] (3)将板栗和核桃仁制成粉状;向锅内倒入剩余的花生油烧热,将板栗和核桃仁制成的粉倒入锅中翻炒I分钟后,倒入酱油继续翻炒3分钟,关火后倒入功能性添加剂,拌匀得酱汁;
[0043] (4)将步骤(I)处理的余甘果肉、步骤(2)的调料、萝卜干、剩余的柠檬汁一起混匀得主料,最后将步骤(3)的酱汁趁热倒入主料中,将主料混匀并放冷后包装即得余甘果豆豉。

[0062]认为本发明的豆豉酱吃起来香脆舒爽、有嚼劲、吃完还想吃的有26人,另外4人觉得偏辣;其中20人觉得实施例1和3制得的豆豉酱中的豆豉有荷香,风味更足。
[0063]认为本发明的豆豉酱内容物丰富、货真价实、且余甘果好吃的有30人。
[0064]认为本发明的豆豉酱用作炒菜的调味料,能增加菜品的色泽、风味的有30人。
[0065]试吃二周后,认为本发明的豆豉酱吃了不上火、不会产生其他不适的有25人,其中还有22人认为吃过一段时间后,脾胃功能有所改善,即使不依赖本品,胃口也明显变好。
[0066]因此本发明取得了较好的认可度,值得在市场上大量推广。
