技术领域
本发明涉及糖果加工领域,具体的说,涉及一种养肝护肝巧克力。
背景技术
巧克力为糖果中的皇后,自17世纪问世以来,一直深受世界上男女老少各类人士所喜爱,尤其是孩子。它富含天然可可脂的不饱和脂肪酸、多酚类植物蛋白、类黄酮物质,不仅具有独特的味道,还具有改善心脑血管、增强抗氧化能力等保健功能,因此别于糖果。巧克力营养丰富,每100克中含有碳水化合物50克左右,脂肪30克左右,蛋白质15克左右,含有较多的锌、维生素B2、铁和钙等。但是多年来巧克力食用形式和保健功能过于单一。
肝脏是身体内以代谢功能为主的器官,并在身体里面扮演重要角色。肝脏的功能包括:解毒、代谢、分泌胆汁、造血、储血和调节循环血量、免疫防御、肝脏再生。人不能离开肝脏而存活,但是现在随着生活和工作的压力的增大,生活不规律,生活方式不健康,饮酒过多,熬夜过劳,环境污染等都会使肝损伤人群迅速扩大,肝损伤若任其恶化发展,最终会转变为肝硬化,甚至恶化为肝癌,最终无法挽救。所以应该从平时的生活中注意肝脏的保养。现在市场上还没有出现专门养肝护肝的巧克力。
发明内容
为了弥补已有技术的缺陷,本发明的目的是提供一种养肝护肝巧克力。
一种养肝护肝巧克力,由以下重量份的原料制成:可可液块66~69、可可脂17~19、脱脂奶粉13~15、黑米9~11、香菇6~8、银耳6~8、金耳6~8、荠菜4~6、鳄梨3~5、中药3~5、富硒麦芽粉2~4、富硒酵母粉2~4、大豆低聚糖7~9、马铃薯淀粉1~3、米糠多糖1~3、食盐0.3~0.5、维生素A0.1~0.2、维生素B族0.1~0.2、维生素E0.1~0.2。
所述的中药,由以下重量份的原料组成:桑叶23~27、茵陈20~22、垂盆草18~20、丹参18~20、黄芪18~20、五味子14~16、半边莲14~16、佛甲草11~13。
所述的维生素A、维生素B族和维生素E,为市售购买。
一种养肝护肝巧克力的制备方法,具体的包括以下步骤:
(1)将香菇、银耳、金耳和荠菜洗净,在95~100℃的热水中漂烫16~20分钟,粉碎,粒径为35~40μm,得原料A;
(2)将黑米洗净,冷水浸泡6~8小时,蒸熟,捣碎,过120~140目筛,50~55℃烘干,得原料B;
(3)将鳄梨洗净,打浆,8000~10000转/分钟,离心5~8分钟,得鳄梨汁和鳄梨渣,向鳄梨渣中加水,打浆,离心,重复打浆和离心4~5次,合并所有鳄梨汁,40~43℃真空浓缩至无水分,得原料C;
(4)将中药粉碎,过100~120目筛,加入中药重量2~3倍量的水,加热煮沸后,小火煎煮60~80分钟,过滤,得中药提取液和中药渣,向中药渣中加入中药渣重量2~3倍量的体积分数为67~71%(v/v)的酒精溶液,80~90℃超声提取40~50分钟,6000~8000转/分钟,离心8~10分钟,得中药提取液和中药渣,合并所有中药提取液,70~80℃烘干,至水分含量为中药重量的2~3%(w/w),得原料D;
(5)向马铃薯淀粉中加入马铃薯淀粉重量2倍量的水,混合均匀,加热至96~100℃,加入原料A、原料B、原料C、原料D、大豆低聚糖和食盐,搅拌加热6~10分钟,待温度降至36~38℃,加入米糠多糖、维生素A、维生素B族和维生素E,混合均匀,置于模具中,倒模成型,得原料E;
(6)将可可液块和可可脂加热熔化,加入3/4脱脂奶粉,搅拌加热至80~85℃,23~25转/分钟,搅拌12~14分钟,待温度降至42~46℃,加入富硒麦芽粉和富硒酵母粉,精磨,得可可混合液;
(7)将原料E浸于可可混合液中,取出,使可可混合液的厚度为1.5~2mm,均匀喷撒一层脱脂奶粉,迅速冷却,再次浸于可可混合液中,取出,使可可混合液的厚度为2~2.5mm,迅速冷却,得养肝护肝巧克力;
(8)包装,得成品。

一种养肝护肝巧克力,由以下重量份的原料制成:可可液块66、可可脂17、脱脂奶粉13、黑米9、香菇6、银耳6、金耳6、荠菜4、鳄梨3、中药3、富硒麦芽粉2、富硒酵母粉2、大豆低聚糖7、马铃薯淀粉1、米糠多糖1、食盐0.3、维生素A0.1、维生素B族0.1、维生素E0.1。
所述的中药,由以下重量份的原料组成:桑叶23、茵陈20、垂盆草18、丹参18、黄芪18、五味子14、半边莲14、佛甲草11。
一种养肝护肝巧克力的制备方法,具体的包括以下步骤:
(1)将香菇、银耳、金耳和荠菜洗净,在95℃的热水中漂烫16分钟,粉碎,粒径为35μm,得原料A;
(2)将黑米洗净,冷水浸泡6小时,蒸熟,捣碎,过120目筛,50℃烘干,得原料B;
(3)将鳄梨洗净,打浆,8000转/分钟,离心5分钟,得鳄梨汁和鳄梨渣,向鳄梨渣中加水,打浆,离心,重复打浆和离心4次,合并所有鳄梨汁,40℃真空浓缩至无水分,得原料C;

(5)向马铃薯淀粉中加入马铃薯淀粉重量2倍量的水,混合均匀,加热至96℃,加入原料A、原料B、原料C、原料D、大豆低聚糖和食盐,搅拌加热6分钟,待温度降至36℃,加入米糠多糖、维生素A、维生素B族和维生素E,混合均匀,置于模具中,倒模成型,得原料E;
(6)将可可液块和可可脂加热熔化,加入3/4脱脂奶粉,搅拌加热至80℃,23转/分钟,搅拌12分钟,待温度降至42℃,加入富硒麦芽粉和富硒酵母粉,精磨,得可可混合液;
(7)将原料E浸于可可混合液中,取出,使可可混合液的厚度为1.5mm,均匀喷撒一层脱脂奶粉,迅速冷却,再次浸于可可混合液中,取出,使可可混合液的厚度为2mm,迅速冷却,得养肝护肝巧克力;
(8)包装,得成品。
实施例2
一种养肝护肝巧克力,由以下重量份的原料制成:可可液块68、可可脂18、脱脂奶粉14、黑米10、香菇7、银耳7、金耳7、荠菜5、鳄梨4、中药4、富硒麦芽粉3、富硒酵母粉3、大豆低聚糖8、马铃薯淀粉2、米糠多糖2、食盐0.4、维生素A0.15、维生素B族0.15、维生素E0.15。
所述的中药,由以下重量份的原料组成:桑叶25、茵陈21、垂盆草19、丹参19、黄芪19、五味子15、半边莲15、佛甲草12。
一种养肝护肝巧克力的制备方法,具体的包括以下步骤:
(1)将香菇、银耳、金耳和荠菜洗净,在98℃的热水中漂烫18分钟,粉碎,粒径为38μm,得原料A;
(2)将黑米洗净,冷水浸泡7小时,蒸熟,捣碎,过130目筛,53℃烘干,得原料B;
(3)将鳄梨洗净,打浆,9000转/分钟,离心6分钟,得鳄梨汁和鳄梨渣,向鳄梨渣中加水,打浆,离心,重复打浆和离心4次,合并所有鳄梨汁,42℃真空浓缩至无水分,得原料C;
(4)将中药粉碎,过110目筛,加入中药重量2.5倍量的水,加热煮沸后,小火煎煮70分钟,过滤,得中药提取液和中药渣,向中药渣中加入中药渣重量2.5倍量的体积分数为69%(v/v)的酒精溶液,85℃超声提取45分钟,7000转/分钟,离心9分钟,得中药提取液和中药渣,合并所有中药提取液,75℃烘干,至水分含量为中药重量的2.5%(w/w),得原料D;
(5)向马铃薯淀粉中加入马铃薯淀粉重量2倍量的水,混合均匀,加热至98℃,加入原料A、原料B、原料C、原料D、大豆低聚糖和食盐,搅拌加热8分钟,待温度降至37℃,加入米糠多糖、维生素A、维生素B族和维生素E,混合均匀,置于模具中,倒模成型,得原料E;
(6)将可可液块和可可脂加热熔化,加入3/4脱脂奶粉,搅拌加热至83℃,24转/分钟,搅拌13分钟,待温度降至44℃,加入富硒麦芽粉和富硒酵母粉,精磨,得可可混合液;
(7)将原料E浸于可可混合液中,取出,使可可混合液的厚度为1.8mm,均匀喷撒一层脱脂奶粉,迅速冷却,再次浸于可可混合液中,取出,使可可混合液的厚度为2.3mm,迅速冷却,得养肝护肝巧克力;
(8)包装,得成品。
实施例3
一种养肝护肝巧克力,由以下重量份的原料制成:可可液块69、可可脂19、脱脂奶粉15、黑米11、香菇8、银耳8、金耳8、荠菜6、鳄梨5、中药5、富硒麦芽粉4、富硒酵母粉4、大豆低聚糖9、马铃薯淀粉3、米糠多糖3、食盐0.5、维生素A0.2、维生素B族0.2、维生素E0.2。
所述的中药,由以下重量份的原料组成:桑叶27、茵陈22、垂盆草20、丹参20、黄芪20、五味子16、半边莲16、佛甲草13。
一种养肝护肝巧克力的制备方法,具体的包括以下步骤:
(1)将香菇、银耳、金耳和荠菜洗净,在100℃的热水中漂烫20分钟,粉碎,粒径为40μm,得原料A;
(2)将黑米洗净,冷水浸泡8小时,蒸熟,捣碎,过140目筛,55℃烘干,得原料B;
(3)将鳄梨洗净,打浆,10000转/分钟,离心8分钟,得鳄梨汁和鳄梨渣,向鳄梨渣中加水,打浆,离心,重复打浆和离心5次,合并所有鳄梨汁,43℃真空浓缩至无水分,得原料C;
(4)将中药粉碎,过120目筛,加入中药重量3倍量的水,加热煮沸后,小火煎煮80分钟,过滤,得中药提取液和中药渣,向中药渣中加入中药渣重量3倍量的体积分数为71%(v/v)的酒精溶液,90℃超声提取50分钟,8000转/分钟,离心10分钟,得中药提取液和中药渣,合并所有中药提取液,80℃烘干,至水分含量为中药重量的3%(w/w),得原料D;
(5)向马铃薯淀粉中加入马铃薯淀粉重量2倍量的水,混合均匀,加热至100℃,加入原料A、原料B、原料C、原料D、大豆低聚糖和食盐,搅拌加热10分钟,待温度降至38℃,加入米糠多糖、维生素A、维生素B族和维生素E,混合均匀,置于模具中,倒模成型,得原料E;
(6)将可可液块和可可脂加热熔化,加入3/4脱脂奶粉,搅拌加热至85℃,25转/分钟,搅拌14分钟,待温度降至46℃,加入富硒麦芽粉和富硒酵母粉,精磨,得可可混合液;
(7)将原料E浸于可可混合液中,取出,使可可混合液的厚度为2mm,均匀喷撒一层脱脂奶粉,迅速冷却,再次浸于可可混合液中,取出,使可可混合液的厚度为2.5mm,迅速冷却,得养肝护肝巧克力;
(8)包装,得成品。

市售普通巧克力。

对实施例巧克力进行检测,主要指标的检测结果见表1。

从表1能够看出,实施例的养肝护肝巧克力,符合国家标准,食用安全健康,产生保健功能。
实施例和对比例巧克力的感官评定:
随机选择18~65岁的受试者40位,对实施例和对比例巧克力的进行感官评定,并打分,每项满分为10分,取平均值。实施例和对比例巧克力的感官评定结果见表2。

从表2能够看出,实施例的养肝护肝巧克力,色泽均一,形态完整,层次分明,组织紧密,润滑,无粗糙感,香味和谐,滋味纯正,无肉眼可见杂质,得到广大消费者的喜欢。
实施例和对比例巧克力的养肝护肝效果:
有效:食欲缺乏、乏力、面容晦暗、全身发黄、头昏耳鸣、腹痛、腹胀、血压下降、出冷汗、脉氧合不足等症状消失或减轻;
无效:食欲缺乏、乏力、面容晦暗、全身发黄、头昏耳鸣、腹痛、腹胀、血压下降、出冷汗、脉氧合不足等症状不变或加重。
随机选择具有肝损伤症状的患者400名,随机分为4组,每组100人,每人在受试期间不刻意服用养肝护肝的药品和食品,每人每天食用该组的巧克力30克,受试时间为30天,实施例和对比例巧克力的养肝护肝效果见表3。

从表3可以看出,实施例的养肝护肝巧克力的养肝护肝有效率明显较对比例高,说明本发明提供的养肝护肝巧克力具有明显的养肝护肝效果。
典型病例:
(1)患者李某,女,35岁,食欲缺乏、乏力、面容晦暗、血压下降、出冷汗。食用本发明提供的养肝护肝巧克力,每天30克,10天后食欲缺乏、乏力、血压下降症状有所减轻,30天后症状消失。
(2)患者牛某,男,56岁,食欲缺乏、乏力、全身发黄、头昏耳鸣、血压下降、出冷汗。食用本发明提供的养肝护肝巧克力,每天30克,15天后食欲缺乏、乏力、血压下降、出冷汗症状有所减轻,30天后症状消失,每天精力充沛。
(3)患者赵某,男,58岁,食欲缺乏、乏力、面容晦暗、全身发黄、头昏耳鸣、腹痛、腹胀、血压下降、出冷汗。食用本发明提供的养肝护肝巧克力,每天30克,30天后食欲缺乏、乏力、面容晦暗、腹痛、腹胀症状明显减轻,每天精力充沛。
Claims (3)
1.一种养肝护肝巧克力,其特征在于,由以下重量份的原料制成:可可液块66~69、可可脂17~19、脱脂奶粉13~15、黑米9~11、香菇6~8、银耳6~8、金耳6~8、荠菜4~6、鳄梨3~5、中药3~5、富硒麦芽粉2~4、富硒酵母粉2~4、大豆低聚糖7~9、马铃薯淀粉1~3、米糠多糖1~3、食盐0.3~0.5、维生素A0.1~0.2、维生素B族0.1~0.2、维生素E0.1~0.2。
2.根据权利要求1所述的养肝护肝巧克力,其特征在于,所述的中药,由以下重量份的原料组成:桑叶23~27、茵陈20~22、垂盆草18~20、丹参18~20、黄芪18~20、五味子14~16、半边莲14~16、佛甲草11~13。
3.根据权利要求1所述养肝护肝巧克力的制备方法,其特征在于,具体的包括以下步骤:
(1)将香菇、银耳、金耳和荠菜洗净,在95~100℃的热水中漂烫16~20分钟,粉碎,粒径为35~40μm,得原料A;
(2)将黑米洗净,冷水浸泡6~8小时,蒸熟,捣碎,过120~140目筛,50~55℃烘干,得原料B;
(3)将鳄梨洗净,打浆,8000~10000转/分钟,离心5~8分钟,得鳄梨汁和鳄梨渣,向鳄梨渣中加水,打浆,离心,重复打浆和离心4~5次,合并所有鳄梨汁,40~43℃真空浓缩至无水分,得原料C;
(4)将中药粉碎,过100~120目筛,加入中药重量2~3倍量的水,加热煮沸后,小火煎煮60~80分钟,过滤,得中药提取液和中药渣,向中药渣中加入中药渣重量2~3倍量的体积分数为67~71%(v/v)的酒精溶液,80~90℃超声提取40~50分钟,6000~8000转/分钟,离心8~10分钟,得中药提取液和中药渣,合并所有中药提取液,70~80℃烘干,至水分含量为中药重量的2~3%(w/w),得原料D;
(5)向马铃薯淀粉中加入马铃薯淀粉重量2倍量的水,混合均匀,加热至96~100℃,加入原料A、原料B、原料C、原料D、大豆低聚糖和食盐,搅拌加热6~10分钟,待温度降至36~38℃,加入米糠多糖、维生素A、维生素B族和维生素E,混合均匀,置于模具中,倒模成型,得原料E;
(6)将可可液块和可可脂加热熔化,加入3/4脱脂奶粉,搅拌加热至80~85℃,23~25转/分钟,搅拌12~14分钟,待温度降至42~46℃,加入富硒麦芽粉和富硒酵母粉,精磨,得可可混合液;
(7)将原料E浸于可可混合液中,取出,使可可混合液的厚度为1.5~2mm,均匀喷撒一层脱脂奶粉,迅速冷却,再次浸于可可混合液中,取出,使可可混合液的厚度为2~2.5mm,迅速冷却,得养肝护肝巧克力;
(8)包装,得成品。
