Abstract
本发明公开了一种含有支链氨基酸的泡腾片及其制备方法,属于食品技术领域。该含有支链氨基酸的泡腾片包含:柠檬酸、碳酸氢钠、支链氨基酸、针叶樱桃浓缩粉、多聚果糖和番茄红素。本发明泡腾片加工工艺简单,不添加防腐剂,携带方便,适用于运动健身人群和普通人群补充支链氨基酸。

技术领域
本发明属于食品技术领域,具体涉及一种含有支链氨基酸的泡腾片及其制备方法,以及该泡腾片在食品、保健食品中的应用。
背景技术
目前,市场上补充氨基酸的产品很多,其剂型都是粉末状、颗粒状或瓶装水溶液,瓶装水溶液优点是开瓶即饮。但也有许多不足之处:1、水溶液饮品大多含有糖类成分,容易滋生各种细菌、霉菌,要保证一年或更长的保质期,必须添加一定量的防腐剂。2、保健饮品在生产过程中都要进行高温灭菌操作,这就会对其中含有的多种维生素、氨基酸等营养素有不同程度的破坏,产品的有效性和安全性难以得到保证。3、瓶装保健饮品与泡腾片比较,体积大、质量大,携带不方便。
中国专利号:CN201210024583公开了一种参肽氨基酸饮料,所述的参肽氨基酸饮料按下列重量百分比范围配比的原料制成:人参总皂甙提取物0.1~0.5%,玉米低聚肽0.1~0.5%,肌醇0.1~0.2%,赖氨酸0.15~0.2%,精氨酸0.15~0.2%,甘氨酸0.15~0.2%,牛磺酸0.05~0.15%,白砂糖8~12%,浓缩果汁10~20%,羧甲基纤维素钠0.015~0.02%,柠檬酸0.15~0.3%,柠檬酸钠0.1~0.2%,β-环状糊精0.07~0.1%,香精0.1~0.2%,其余为纯净水。但该产品为饮品,会出现前述饮品的不足,如:需添加防腐剂、有效性和安全性难以保证、携带不便等。
发明内容
本发明提供一种含有支链氨基酸的泡腾片,该泡腾片可以充分发挥支链氨基酸的效果且方便运动健身人群和普通人群补充支链氨基酸。
本发明的另一目的是提供该泡腾片的制备方法。
本发明还有一个目的是提供该组合物的应用。
本发明的技术方案是通过以下方式实现的:
一种含有支链氨基酸的泡腾片,该泡腾片中包含柠檬酸、碳酸氢钠、支链氨基酸、针叶樱桃浓缩粉、多聚果糖和番茄红素。所述的支链氨基酸为速溶支链氨基酸;速溶支链氨基酸为缬氨酸、亮氨酸、异亮氨酸和磷脂通过微胶囊包埋加工组成的混合物,其中,缬氨酸、亮氨酸、异亮氨酸的重量比例为2:1:1,磷脂添加量为缬氨酸、亮氨酸、异亮氨酸总重的0.5%-1.5%。
上述泡腾片具体中包含:柠檬酸10~40重量份,碳酸氢钠10~40重量份,支链氨基酸10~40重量份,针叶樱桃浓缩粉5~30重量份,多聚果糖5~30重量份、番茄红素0.1~0.5重量份。
优选上述泡腾片中包含:柠檬酸15~35重量份,碳酸氢钠15~35重量份,支链氨基酸15~35重量份,针叶樱桃浓缩粉5~10重量份,多聚果糖5~10重量份、番茄红素0.1~0.5重量份。
本发明所述的速溶支链氨基酸是采用微胶囊包埋加工,其具体方法是以磷脂作为囊材,以缬氨酸、亮氨酸和异亮氨酸作为芯材,通过混合、制粒、干燥、筛分而制成。
该泡腾片中还可以包含麦芽糖、山梨糖醇、抗性糊精、果胶、富马酸、食品用香精、滑石粉、甜菊糖苷和乙酰磺胺酸钾。
本发明泡腾片中最优选包含:柠檬酸15~35重量份,碳酸氢钠15~35重量份,支链氨基酸15~35重量份,针叶樱桃浓缩粉5~10重量份,多聚果糖5~10重量份、麦芽糖4~8重量份、山梨糖醇4~8重量份、抗性糊精3~8重量份、果胶3~8重量份、富马酸2~8重量份、食品用香精1~5重量份、番茄红素0.1~0.5重量份、甜菊糖苷1~3重量份、乙酰磺胺酸钾1~3重量份,滑石粉0.1-0.3重量份。
配方中,支链氨基酸泡腾片酸源选择柠檬酸,富马酸;碱源选择碳酸氢钠;填充剂选择麦芽糖、山梨糖醇;粘合剂优选纯化水或去离子水;润滑剂选择滑石粉;娇味剂选择食品用香精、甜菊糖苷、乙酰磺胺酸钾,崩解剂选择果胶。
上述含支链氨基酸的泡腾片制备方法,其步骤为:
步骤1:将柠檬酸、支链氨基酸、麦芽糖粉碎过80~120目筛;
步骤2:将甜菊糖苷、乙酰磺胺酸钾与针叶樱桃浓缩粉、多聚果糖、山梨糖醇、抗性糊精、富马酸、柠檬酸、碳酸氢钠混合分散稀释后,再与支链氨基酸、麦芽糖混合均匀,得到混料;
步骤3:将步骤2得到的混料,制备软材,粘合剂用量为7%-11%,制粒,45-60℃真空干燥2-3.5小时,18-20目筛整粒,加入剩余原料混合均匀后,压片。
上述含支链氨基酸的泡腾片制备方法中支链氨基酸为速溶支链氨基酸,速溶支链氨基酸为缬氨酸、亮氨酸和异亮氨酸按照重量比例为2:1:1的混合物和磷脂通过微胶囊包埋加工制成,磷脂添加量为0.5%-1.5%。
支链氨基酸包括L-亮氨酸、L-异亮氨酸和L-缬氨酸。支链氨基酸主要在骨骼肌中代谢,约占骨骼肌蛋白质的必需氨基酸的35%,也是体内骨骼肌供能的主要氨基酸,尤其在长时间运动时,为运动和训练中的骨骼肌直接提供能量。在运动中,补充足够的支链氨基酸可以促进运动后恢复期蛋白质的合成代谢,加速肌肉合成,减少肌肉组织的分解,有助于肌肉块的增大。此外,支链氨基酸还作为能源物质参与代谢,运动训练期间摄入支链氨基酸能刺激生长激素的释放和提高胰岛素水平,从而起到促进合成代谢的作用。最后,支链氨基酸还可以抑制色氨酸进入大脑产生5-羟色胺,从而预防减轻中枢疲劳。
本发明采用果胶作为泡腾片崩解剂,具有快速崩散、溶解的效果,可显著促进泡腾片中支链氨基酸的快速吸收。而现有的羧甲基淀粉钠、交联聚维酮、低取代羟丙基纤维素等常用的崩解剂难以达到上述效果。
与现有技术比较本发明的有益效果:本发明泡腾片具有品质稳定、不需添加任何防腐剂,吸收快,利用率高,使用、携带更方便等优点,方便运动健身人群和普通人群补充支链氨基酸。
具体实施方式
为进一步了解本发明的内容,下面结合具体实施例对本发明进行描述,但不仅限于以下实例。
实施例1
柠檬酸500g,碳酸氢钠400g,支链氨基酸400g,针叶樱桃浓缩粉120g,多聚果糖100g重量份、麦芽糖84g、山梨糖醇82g、抗性糊精82g、果胶70g、富马酸60g、食品用香精40g、番茄红素4g、甜菊糖苷36g、乙酰磺胺酸钾20g、滑石粉6g。
上述含支链氨基酸的泡腾片制备方法,其步骤为:
步骤1:将柠檬酸、支链氨基酸、麦芽糖粉碎,过80~120目筛后分别按照上述比例进行定量称取,其中支链氨基酸原料为速溶支链氨基酸,速溶支链氨基酸为缬氨酸、亮氨酸和异亮氨酸按照重量比例为2:1:1的混合物和磷脂通过微胶囊包埋加工制成,磷脂添加量为0.8%。采用微胶囊包埋加工的具体方法是以磷脂作为囊材,以缬氨酸、亮氨酸和异亮氨酸作为芯材,通过混合、制粒、干燥、筛分而制成。
步骤2:将甜菊糖苷、乙酰磺胺酸钾与针叶樱桃浓缩粉、多聚果糖、山梨糖醇、抗性糊精、富马酸、柠檬酸、碳酸氢钠混合分散稀释后,再与步骤1中的支链氨基酸、麦芽糖混合均匀,得到混料;
步骤3:将步骤2得到的混料,用纯化水或去离子水作为粘合剂制备软材,水用量约为9%。采用摇摆颗粒机16目筛制粒,50℃真空干燥2.5小时,20目筛整粒,加入剩余原料混合均匀后,进行压片。
本实施例制成的片剂经质量检测,结果如下表:

柠檬酸400g,碳酸氢钠400g,支链氨基酸460g,针叶樱桃浓缩粉100g,多聚果糖160g、麦芽糖96g、山梨糖醇72g、抗性糊精84g、果胶60g、富马酸60g、食品用香精36g、番茄红素8g、甜菊糖苷40g、乙酰磺胺酸钾14g、滑石粉2g。
制备方法:
步骤1:将柠檬酸、支链氨基酸、麦芽糖粉碎,过80~120目筛后分别按照上述比例进行定量称取,其中支链氨基酸原料为速溶支链氨基酸,速溶支链氨基酸为缬氨酸、亮氨酸和异亮氨酸按照重量比例为2:1:1的混合物和磷脂通过微胶囊包埋加工制成,磷脂添加量为0.5%。采用微胶囊包埋加工的具体方法是以磷脂作为囊材,以缬氨酸、亮氨酸和异亮氨酸作为芯材,通过混合、制粒、干燥、筛分而制成。

步骤3:将步骤2得到的混料,用纯化水或去离子水作为粘合剂制备软材,水用量约为9%。采用摇摆颗粒机16目筛制粒,50℃真空干燥2.5小时,20目筛整粒,加入剩余原料混合均匀后,进行压片。
本实施例制成的片剂经质量检测,结果如下表:

1、实验对象与方法

男子羽毛球运动员24名,一般情况如表3。

1.2实验方法:对照组服用安慰剂,实验组服用实施例得到支链氨基酸组合物(实验组1服用实施例1产品,实验组2服用实施例2产品),训练后服用,每日一次,每次服用2片,片重1g,连续服用4周。
1.3测试指标
1.3.1体成分测试:服用营养补充剂前后采用DX200超强型体成分测试仪测试受试者的体重和瘦体重。
1.3.2无氧功测试:采用Wingate法(阻力=体重*0.085kg),在MONARK-829功率自行车上进行,服用营养补充剂前后各进行一次。令受试者全力蹬车30s,测定30s的最大功率。
1.3.3尿指标测定:每名受试者于服用营养补充剂前后,分别在进行大强度训练后,每日6次,每次隔4小时将尿液收集后,立即加入盐酸防腐,冻存。用氨基酸分析仪测定3-甲基组氨基酸含量。

实验结果表明,实验组实验前后无氧功率有显著变化,说明本发明支链氨基酸组合物能够达到促进肌肉合成和力量增长的目的。

实验结果表明,实验组实验前后3-甲基组氨基含量有显著变化,说明本发明支链氨基酸组合物能够有效减少肌肉蛋白分解。
本发明支链氨基酸组合物可以促进瘦体重增加、肌肉做功能增强;该支链氨基酸组合物有助于减少肌肉蛋白质分解,从而起到减轻肌肉损伤作用。
Claims (6)
1.一种含有支链氨基酸的泡腾片,其特征在于该泡腾片中包含:柠檬酸、碳酸氢钠、支链氨基酸、针叶樱桃浓缩粉、多聚果糖和番茄红素,所述的支链氨基酸为速溶支链氨基酸;速溶支链氨基酸为缬氨酸、亮氨酸、异亮氨酸和磷脂通过微胶囊包埋加工组成的混合物,所述的速溶支链氨基酸采用微胶囊包埋加工的具体方法是以磷脂作为囊材,以缬氨酸、亮氨酸和异亮氨酸作为芯材,通过混合、制粒、干燥、筛分而制成;其中,缬氨酸、亮氨酸、异亮氨酸的重量比例为2:1:1,磷脂添加量为0.5%~1.5%;该泡腾片中还包含麦芽糖、山梨糖醇、抗性糊精、果胶、富马酸、食品用香精、滑石粉、甜菊糖苷和乙酰磺胺酸钾。
2.根据权利要求1的泡腾片,其特征在于该泡腾片中包含:柠檬酸10~40重量份,碳酸氢钠10~40重量份,支链氨基酸10~40重量份,针叶樱桃浓缩粉5~30重量份,多聚果糖5~30重量份、番茄红素0.1~0.5重量份。
3.根据权利要求2的泡腾片,其特征在于该泡腾片中包含:柠檬酸15~35重量份,碳酸氢钠15~35重量份,支链氨基酸15~35重量份,针叶樱桃浓缩粉5~10重量份,多聚果糖5~10重量份、番茄红素0.1~0.5重量份。
4.根据权利要求3所述的泡腾片,其特征在于该泡腾片中包含:柠檬酸15~35重量份,碳酸氢钠15~35重量份,支链氨基酸15~35重量份,针叶樱桃浓缩粉5~10重量份,多聚果糖5~10重量份、麦芽糖4~8重量份、山梨糖醇4~8重量份、抗性糊精3~8重量份、果胶3~8重量份、富马酸2~8重量份、食品用香精1~5重量份、番茄红素0.1~0.5重量份、甜菊糖苷1~3重量份、乙酰磺胺酸钾1~3重量份,滑石粉0.1-0.3重量份。
5.一种权利要求4所述的含支链氨基酸的泡腾片制备方法,其步骤为:
步骤1:将柠檬酸、支链氨基酸、麦芽糖粉碎过80~120目筛;
步骤2:将甜菊糖苷、乙酰磺胺酸钾与针叶樱桃浓缩粉、多聚果糖、山梨糖醇、抗性糊精、富马酸、柠檬酸、碳酸氢钠混合分散稀释后,再与支链氨基酸、麦芽糖混合均匀,得到混料;
步骤3:将步骤2得到的混料,制备软材,粘合剂用量为7%-11%,制粒,45-60℃真空干燥2-3.5小时,18-20目筛整粒,加入剩余原料混合均匀后,压片。
