本发明公开了一种陈年道菜肉丸,旨在提供一种营养丰富、嫩滑爽口、味道鲜美的肉丸制作方法。它由下列重量份的食材制成:陈年道菜75~85份、火腿4~6份,新鲜葛根10~15份,韭菜4~8份、菜籽油1~1.5份,姜0.2~0.8份、蒜0.5~1份、胡椒粉0.5~1份、料酒1~3份、茶汁1.5~3份,所述茶汁由1份茶与20份水熬制20~30分钟而成;制作方法是:将新鲜葛根蒸熟、粉碎成糊状;向上述葛根糊中加入剁碎的陈年道菜、火腿、韭菜、姜、蒜,菜籽油和胡椒粉,搅拌均匀;加入料酒和茶汁,搅拌成面团状混合料,挤压成肉丸。本发明味道鲜美、口感独特、油而不腻,具有浓郁的地方特色;是一种菜肴的制作方法。

技术领域
本发明涉及一种菜肴的制作方法,尤其涉及一种陈年道菜肉丸,属于食品技术领域。
背景技术
“道菜”是一种类似于盐菜、梅干菜的一种腌制干蔬菜,相传最初由贵州省镇远县青龙洞中的道士所创,故称“道菜”;是一道色香味俱全的传统名肴,属于黔菜系。至今已有500多年的历史,因此菜储藏愈久,品质愈佳,味道愈美,因而又称“陈年道菜”。该菜选取当地生产的头大、叶长、苔短的特等青菜作主料,经过选料、搓盐、翻晒、揉搓、剔筋、甑蒸、喷酒等十余道工序,精心加工制成;其味甘甜绵香,富含氨基酸和维生素C等营养成份,具有开胃健脾之功效。目前,道菜的食用方法大多炒肉、蒸肉或煮汤,食用方法较少;若能开发该菜的其它食用方法,则对其推广普及、发扬光大有着积极的意义。
发明内容
为了克服现有技术中存在的不足,本发明旨在提供一种营养丰富、嫩滑爽口、味道鲜美的陈年道菜肉丸。
为了实现上述目的,本发明包括陈年道菜;由下列重量份的食材制成:
主料:陈年道菜75~85份、火腿4~6份,
辅料:新鲜葛根10~15份,
配料:韭菜4~8份、菜籽油1~1.5份,
佐料:姜0.2~0.8份、蒜0.5~1份、胡椒粉0.5~1份、料酒1~3份、茶汁1.5~3份,所述茶汁由1份茶与20份水熬制20~30分钟而成;制作方法如下:
1)将新鲜葛根切成小块,蒸熟、粉碎成糊状;
2)向上述葛根糊中加入剁碎的陈年道菜、火腿、韭菜、姜、蒜,菜籽油和胡椒粉,搅拌均匀;然后缓慢加入料酒和茶汁,搅拌成面团状混合料;
3)将上述混合料挤压成粒径为2厘米的肉丸。
上述技术方案中,主料优选:陈年道菜80份、火腿5份,辅料优选:新鲜葛根12份,配料优选:韭菜6份、菜籽油1.2份,佐料优选:姜0.5份、蒜0.8份、胡椒粉0.8份、料酒2份、茶汁2份。
与现有技术比较,本发明由于采用了上述技术方案,以陈年道菜、火腿为主,配以韭菜、菜籽油,辅以姜、蒜、胡椒、料酒、茶汁等佐料,因此味道鲜美、口感独特、油而不腻,具有浓郁的地方特色;另外,以食药两用的新鲜葛根替代淀粉作为粘合剂,不仅肉丸松软爽滑、汤清味美,而且营养丰富,具有开胃健脾等保健功能。本发明突破了道菜只能制作炖肉、蒸扣肉等味道浓烈菜肴的传统模式,为道菜的推广开辟了另外一条崭新的途径。
下面结合具体的实施例对本发明作进一步说明:
实施例1,按下列配方备料:
主料:陈年道菜75~85克、火腿4~6克,
辅料:新鲜葛根10~15克,
配料:韭菜4~8克、菜籽油1~1.5克,
佐料:姜0.2~0.8克、蒜0.5~1克、胡椒粉0.5~1克、料酒1~3克、茶汁1.5~3克,所述茶汁由1克茶与20克水熬制20~30分钟而成;肉丸制作方法如下:
1)将10克新鲜葛根切成小块,蒸熟、粉碎成糊状;
2)向上述葛根糊中加入剁碎的陈年道菜85克、火腿4克、韭菜8克、姜0.2克、蒜1克,菜籽油1克和胡椒粉0.5克,搅拌均匀;然后缓慢加入料酒3克和茶汁1.5克,搅拌成面团状混合料;
3)将上述混合料挤压成粒径为2厘米的肉丸、即可。
实施例2
各步骤同实施例1,其中:步骤1)中的新鲜葛根为15克,步骤2)中的陈年道菜为75克、火腿6克、韭菜4克、姜0.8克、蒜0.5克,菜籽油1.5克、胡椒粉1克、料酒1克、茶汁3克。
实施例3
各步骤同实施例1,其中:步骤1)中的新鲜葛根为12克,步骤2)中的陈年道菜为80克、火腿5克、韭菜6克、姜0.5克、蒜0.8克,菜籽油1.2克、胡椒粉0.8克、料酒2克、茶汁2克。
Claims (2)
1.一种陈年道菜肉丸,包括陈年道菜;其特征在于由下列重量份的食材制成:
主料:陈年道菜75~85份、火腿4~6份,
辅料:新鲜葛根10~15份,
配料:韭菜4~8份、菜籽油1~1.5份,
佐料:姜0.2~0.8份、蒜0.5~1份、胡椒粉0.5~1份、料酒1~3份、茶汁1.5~3份,所述茶汁由1份茶与20份水熬制20~30分钟而成;其制作方法如下:
1)将新鲜葛根切成小块,蒸熟、粉碎成糊状;
2)向上述葛根糊中加入剁碎的陈年道菜、火腿、韭菜、姜、蒜,菜籽油和胡椒粉,搅拌均匀;然后缓慢加入料酒和茶汁,搅拌成面团状混合料;
3)将上述混合料挤压成粒径为2厘米的肉丸。
2.根据权利要求1所述的陈年道菜肉丸,其特征在于:
主料:陈年道菜80份、火腿5份,
辅料:新鲜葛根12份,
配料:韭菜6份、菜籽油1.2份,
佐料:姜0.5份、蒜0.8份、胡椒粉0.8份、料酒2份、茶汁2份。
