背景技术
竹筒饭,用稻米并配肉类为原料,放进新鲜的粉竹或山竹锯成的竹筒中,加适量的水,再用香蕉叶将竹筒口堵严,炭火中绿竹烤焦即可。竹筒饭的煮法颇具有野炊特点,即砍下一节竹筒,装进适量的山兰米和水,放在火堆中烤熟,当竹筒表层烧焦时,饭就熟了。劈开竹筒,米饭被竹膜所包,香软可口,有香竹之清香和米饭之芬芳。用餐时破开竹筒取出饭,这便是有名的"竹筒香饭"。如果把猪瘦肉混以香糯米和适量盐巴放进竹筒烤成香糯饭,异香扑鼻,是招待贵宾的珍贵美食品。
红米是盛产在我国南方多省的一种健康营养食品,它具有高蛋白、低脂肪、低热量,富含维生素及多种元素。实验证明,红米具有升高血浆高密度脂蛋白胆固醇(HDL),提高机体抗氧化能力的作用,对防治AS和其它慢性病也具有重要意义。这一发现对通过正常饮食途径提高体内的抗氧化水平,防治因氧化状态升高引起的慢性病有着重要的价值。但目前人们对这种营养功能性食品认识不足,不能充分利用开发,是极大的浪费。

本发明的发明目的是提供一种风味独特,香糯松软,营养丰富又美味可口,又能满足工业化生产需求的具有降脂降压功效的即食红米竹筒饭。
实现本发明目的的技术方案是:
一种具有降脂降压功效的即食红米竹筒饭,由下述重量份配比的原料组成:
红米250-280、杏鲍菇30-40、榨菜30-40、黑豆30-40、食盐15-18、鸡精5-6、味精5-6、芝麻油20-25、生抽15-20、料酒10-15、水120-150。
上述即食红米竹筒饭的制作方法,包括如下步骤:
1、选直径约为5-6cm、长度为30cm的竹子,一边留竹节,洗净备用;
2、将红米放入清水中浸泡5-6小时,捞出备用;
3、取杏鲍菇、榨菜和黑豆洗净,将榨菜切成粒状,杏鲍菇切成片状,备用;
4、在浸泡过的红米中,加入食盐、鸡精、味精、食用油、生抽、料酒、杏鲍菇、榨菜和黑豆进行均匀搅拌,备用;
5、将拌好的米放入竹筒中,再放入清水,装满后用竹叶包好,放入蒸锅中先用大火蒸制25-30分钟,再用中火蒸制15-20分钟,冷却后真空包装即成。
一种具有降脂降压功效的即食红米竹筒饭,优选地,由以下重量份的原料制成:
红米270、杏鲍菇32、榨菜32、黑豆32、食盐16、鸡精5、味精6、芝麻油22、生抽18、料酒12、水135。
所述红米,是产于我国南方山区山寒地带的一种稻米,能抗旱、耐寒,具有丰富营养价值,营养成分有蛋白质、糖类、膳食纤维、磷、铁、铜,维生素A、B、C等。红米具有降血压、降血脂的作用,所含红曲霉素K可阻止生成胆固醇。含有丰富的淀粉与植物蛋白质,可补充消耗的体力及维持身体正常体温。富含众多的营养素,其中以铁质最为丰富,故有补血及预防贫血的功效。内含丰富的磷,维生素A、B群,则能改善营养不良、夜盲症和脚气病等毛病;又能有效舒缓疲劳、精神不振和失眠等症状。所含的泛酸、维生素E、谷胱甘滕胺酸等物质,则有抑制致癌物质的作用,尤其对预防结肠癌的作用更是明显。还有健脾消食、活血化瘀的功效。

红米250、杏鲍菇30、榨菜30、黑豆30、食盐15、鸡精5、味精5、芝麻油20、生抽15、料酒10、水120。

1、选直径约为5cm、长度为30cm的竹子,一边留竹节,洗净备用;
2、将红米放入清水中浸泡5小时,捞出备用;
3、取杏鲍菇、榨菜和黑豆洗净,将榨菜切成粒状,杏鲍菇切成片状,备用;
4、在浸泡过的红米中,加入食盐、鸡精、味精、食用油、生抽、料酒、杏鲍菇、榨菜和黑豆进行均匀搅拌,备用;
5、将拌好的米放入竹筒中,再放入清水,装满后用竹叶包好,放入蒸锅中先用大火蒸制25分钟,再用中火蒸制15分钟,冷却后真空包装即成。
食用时,打开包装即可食用,也可加热再食。
对本实施例所得的即食红米竹筒饭进行口味评分试验,经过20人感官评价,有16人表示喜欢本实施例的味道,有1人表示不喜欢本实施例的味道,其余3人表示本实施例味道一般。可见,大众对本实施例口感与味道接受程度较高。
实施例2
一种具有降脂降压功效的即食红米竹筒饭,由下述重量份配比的原料组成:
红米270、杏鲍菇32、榨菜32、黑豆32、食盐16、鸡精5、味精6、芝麻油22、生抽18、料酒12、水135。
上述即食红米竹筒饭的制作方法,包括如下步骤:
1、选直径约为5cm、长度为30cm的竹子,一边留竹节,洗净备用;
2、将红米放入清水中浸泡5.5小时,捞出备用;
3、取杏鲍菇、榨菜和黑豆洗净,将榨菜切成粒状,杏鲍菇切成片状,备用;
4、在浸泡过的红米中,加入食盐、鸡精、味精、食用油、生抽、料酒、杏鲍菇、榨菜和黑豆进行均匀搅拌,备用;
5、将拌好的米放入竹筒中,再放入清水,装满后用竹叶包好,放入蒸锅中先用大火蒸制28分钟,再用中火蒸制18分钟,冷却后真空包装即成。
食用时,打开包装即可食用,也可加热再食。
对本实施例所得的即食红米竹筒饭进行口味评分试验,经过30人感官评价,有25人表示喜欢本实施例的味道,有2人表示不喜欢本实施例的味道,其余3人表示本实施例味道一般。可见,大众对本实施例口感与味道接受程度较高。
实施例3
一种具有降脂降压功效的即食红米竹筒饭,由下述重量份配比的原料组成:
红米280、杏鲍菇40、榨菜40、黑豆40、食盐18、鸡精6、味精6、芝麻油25、生抽20、料酒15、水150。
上述即食红米竹筒饭的制作方法,包括如下步骤:
1、选直径约为6cm、长度为30cm的竹子,一边留竹节,洗净备用;
2、将红米放入清水中浸泡6小时,捞出备用;
3、取杏鲍菇、榨菜和黑豆洗净,将榨菜切成粒状,杏鲍菇切成片状,备用;
4、在浸泡过的红米中,加入食盐、鸡精、味精、食用油、生抽、料酒、杏鲍菇、榨菜和黑豆进行均匀搅拌,备用;
5、将拌好的米放入竹筒中,再放入清水,装满后用竹叶包好,放入蒸锅中先用大火蒸制30分钟,再用中火蒸制20分钟,冷却后真空包装即成。
食用时,打开包装即可食用,也可加热再食。
对本实施例所得的即食红米竹筒饭进行口味评分试验,经过40人感官评价,有33人表示喜欢本实施例的味道,有2人表示不喜欢本实施例的味道,其余5人表示本实施例味道一般。可见,大众对本实施例口感与味道接受程度较高。
Claims (2)
1.一种具有降脂降压功效的即食红米竹筒饭,其特征是:由下述重量份配比的原料组成:
红米250-280、杏鲍菇30-40、榨菜30-40、黑豆30-40、食盐15-18、鸡精5-6、味精5-6、芝麻油20-25、生抽15-20、料酒10-15、水120-150;
上述具有降脂降压功效的即食红米竹筒饭的制作方法,包括如下步骤:
(1)选直径约为5-6cm、长度为30cm的竹节,一边留竹节,洗净备用;
(2)将红米放入清水中浸泡5-6小时,捞出备用;
(3)取杏鲍菇、榨菜和黑豆洗净,将榨菜切成粒状,杏鲍菇切成片状,备用;
(4)在浸泡过的红米中,加入食盐、鸡精、味精、食用油、生抽、料酒、杏鲍菇、榨菜和黑豆进行均匀搅拌,备用;
(5)将拌好的米放入竹筒中,再放入清水,装满后用竹叶包好,放入蒸锅中先用大火蒸制25-30分钟,再用中火蒸制15-20分钟,冷却后真空包装即成。
2.根据权利要求1所述的具有降脂降压功效的即食红米竹筒饭,其特征是:由以下重量份的原料制成:
红米270、杏鲍菇32、榨菜32、黑豆32、食盐16、鸡精5、味精6、芝麻油22、生抽18、料酒12、水135。
