本发明涉及养生保健食品领域,尤其涉及的是一种冬季寒地养生羹及其制作方法。
背景技术
我国东北三省气侯寒冷,冬季漫长,故有寒地之称。寒地鲜明的气侯特点影响着当地的物产及居民饮食起居习惯。在漫长的寒冬里,为获取更多的热量,寒地居民形成了食用大量鱼、肉、蛋、酒来抵御严寒的饮食习惯。这在一定程度上应和了中医养生观中冬季进补的理论,但随着现代居住条件的改善,大多数寒地的室内环境都配备了取暖设施,营造出温燥的居住环境,再延续大鱼大肉的饮食很易使人“上火”,出现口舌生疮、咽干便秘、心烦口渴、鼻衄齿衄的症状,这是过于滋腻的饮食与温燥的居住环境相合,致脾失运化、食热内积而引起的。除此之外,随着养生保健意识的增强,很多人在“冬季进补”及“肾主冬”理论的影响下服用一些血肉有之品或补肾填精的中药,如阿胶、黄精、人参、甲鱼、海参等,却忽视了寒地冬季的温燥之性和个体脾胃功能的差异,导致食热内郁、气血壅滞、滋腻碍脾,反而伤身。
事实上,进补是否得当应以身体能否分解吸收,即脾胃能否运化生成气血精微为标准,而适合东方人体质特点的进补佳品既不是高蛋白、高能量的食物,也不是补肾填精、益气养血的中药材,而应以谷物、蔬菜为主。《素问·脏气法时论》曰:“毒药攻邪,五谷为养,五果为助,五畜为益,五菜为充。气味合而服之,以补精益气。”是说在治病的过程中,除了用攻除外邪的药物外,还应配食气味相合于患者所需的五谷、五果、五畜、五菜,达到补益精气的作用。可见,最能够扶助正气抗病祛邪的补品不是滋腻的补益药物,而是这些平时常见的谷果肉蔬。其中,以谷物、蔬菜充养为主,以果实、畜肉助益为辅。
自然状态下,寒地冬季是没有绿叶蔬菜产出的。每到秋末,寒地居民都会将大量块根类蔬菜如土豆、地瓜、青萝卜、白萝卜、胡萝卜,以及叶片层层包裹而利于储存的大白菜和大葱,或埋入干燥沙土或放入地窖储藏,作为越冬的主要蔬菜。这种看似艰苦繁锁的生活饮食习惯其实恰好符合冬季养生理论。块根食物符合冬季万物闭藏的特点,葱是五菜“葵、韭、藿、薤、葱”中的辛品,在干燥的冬季食用,符合《素问·脏气法时论》中“肾主冬,……肾苦燥,急食辛以润之,开腠理,致津液,通气也。”的用法。而现代大量反季、非本地蔬菜的食用严重违背了“天人合一”的自然规律,不被中医养生学所提倡。
《灵枢·五味第五十六》从生理、病理两个角度列举了益肾的食物:“肾色黑,宜食辛,黄黍、鸡肉、桃、葱皆辛。”“肾病者,宜食大豆黄卷、猪肉、栗、藿。”即辛味和咸味的食物。生理状态下食母味辛以益肺,可取母子相生之效而间接生化肾之精气;病理状态下食本味咸,可直接入肾以助固元。因肾与冬相应,故上述食物宜可有选择地在冬季食用。
黄黍为寒地居民所谓黄米;大豆黄卷为黄豆微微泡发出细芽之时曝干而成;藿为豆苗,是豆类泡发后生出的绿色芽苗;栗即板栗瓤,《本草别录》谓其“主益气,厚肠胃,补肾气,令人忍饥”,即有健脾益气、补肾壮体之效。在寒地居民的冬季日常饮食中,鸡肉、猪肉、葱为主要食材,不需特别补充,而桃子是冬季寒地的反季水果,不宜食。故本发明中的冬季寒地养生羹选用了黄米、大豆黄卷、栗子、豆苗作为主要原料。冬季在五行配属中属水、色黑,因此一些色黑的食物亦适合在冬季食用。如东北山珍黑木耳,其性平味甘,人胃、大肠经,具有滋补、润燥、养血益胃、活血止血、润肺、润肠的作用,非常适合在雾霾加重的寒地冬季食用。另外,寒地冬季必不可少的肉食会加重脾胃负担,易造成消化不良和食积内热的情况,同时冬季活动又需要大量食物以补充能量,因此,健胃的鸡胗和消肉食积滞的山楂成为这款冬季寒地养生羹的必要组成。
