背景技术
黄瓜(Cucumber)也称胡瓜、青瓜,属葫芦科植物,是主要的蔬菜生产品种。在我国南、北各地都有大量种植。黄瓜富含人体所必需的多种维生素、膳食纤维和微量元素,并且因其清新的香气以及低卡路里而备受人们的喜爱。近年来的研究表明,黄瓜中存在能够抑制糖类物质转变为脂肪的丙醇二酸、防止机体氧化的维生素E以及增强人体免疫机能的葫芦素等生理活性物质,具有良好的生理保健作用。
目前,我国对黄瓜汁的开发主要采用热力杀菌(如巴氏杀菌、高温短时杀菌(HTST)和超高温瞬时杀菌(UHT))。热力杀菌技术的杀菌效果稳定,操作简单,设备投资小,但是热力杀菌也会对食品的品质带来不利影响,如色泽破坏、发生褐变和营养成分破坏等。而黄瓜属于热敏性蔬菜,在黄瓜汁饮料中应用热杀菌会破坏原本清新的香气从而出现严重的蒸煮味,大大降低产品的品质。
近年来,鲜榨果蔬汁饮料越来越受到消费者的欢迎。但是,新鲜农产品引起的食品安全事件屡见不鲜,引起了国内外的广泛关注。2008年,美国数州爆发的沙门氏菌疫情来源于生食被沙门氏菌感染的番茄;2011年,欧洲爆发的肠出血型大肠埃希氏菌0104:H4疫情来源于受污染的豆芽。由此可见,目前鲜食食品的微生物安全问题不容小觑,同样,鲜榨汁的微生物安全问题也应当受到足够的重视。
发明内容
本发明所要解决的技术问题在于提供一种方法简单,成品品质好的无公害黄瓜制剂及制备方法。
本发明所要解决的技术问题采用以下技术方案来实现:
一种无公害黄瓜制剂,由以下重量份数的组分制成:黄瓜微粉25-35份、紫甘薯花青素1-2份、脱脂大豆粉1.5-2.5份、白茶粉1-2份、山药多糖0.4-0.6份、蜂花粉1.5-2.5份、花生芽粉1-2份、红景天甙0.4-0.6份、玉米肽0.1-0.3份、核桃粉0.1-0.3份、五味子粉0.4-0.6份、姜黄素0.1-0.3份、西瓜翠衣0.2-0.4份、炒米粉0.1-0.3份、芝麻叶干粉1-2份;
各组分的较佳重量份数为:黄瓜微粉30份、紫甘薯花青素1.5份、脱脂大豆粉2份、白茶粉1.5份、山药多糖0.5份、蜂花粉2份、花生芽粉1.5份、红景天甙0.5份、玉米肽0.2份、核桃粉0.2份、五味子粉0.5份、姜黄素0.2份、西瓜翠衣0.3份、炒米粉0.2份、芝麻叶干粉1.5份;
上述黄瓜制剂的制备方法为:
1)按上述配比称取:黄瓜微粉、紫甘薯花青素、脱脂大豆粉、白茶粉、山药多糖、蜂花粉、花生芽粉、红景天甙、玉米肽、核桃粉、五味子粉、姜黄素、西瓜翠衣、炒米粉、芝麻叶干粉;
2)将黄瓜微粉、脱脂大豆粉、白茶粉、花生芽粉、核桃粉、五味子粉、西瓜翠衣、炒米粉及芝麻叶干粉混匀,放入热锅中快速翻炒2分钟左右,倒出摊开,冷却至常温,得物料a待用;
3)将紫甘薯花青素、山药多糖、蜂花粉、红景天甙、玉米肽和姜黄素混匀后送入冷库,在-10℃环境中冷冻10小时左右,完成后取出,送入搅拌机,在180转/分的转速下连续搅拌10分钟,得物料b待用;
4)将物料a与物料b进行混合,送入烘干机,至水分含量在8%以内,再将物料投入研磨机,连续研磨1-1.5小时,过360目筛,得黄瓜制剂。
所述黄瓜微粉的制备方法如下:
1)以新鲜黄瓜为原料,将黄瓜去杂,清洗干净,然后送入软化溶液中浸泡20-30分钟,使黄瓜软化;
上述软化溶液是由以下重量份数的组分构成:山泉水100份、改性玉米淀粉5份、烟草提取物0.5份、姜黄素0.5份、原花青素1.5份、纯碱5份、金银花提取物2份、柠檬酸0.5份、碘盐1.5份、葡萄酒1.5份、维生素C 0.05份、大豆分离蛋白1份、绿茶提取物1.5份、冰片1份;
2)将步骤1)中软化后的黄瓜沥干表面水分,在零℃的环境下冷藏40分钟左右,通过冷藏来提高黄瓜内部物质的活性;
3)将步骤2)中冷藏后的黄瓜进行榨汁,收集黄瓜汁,并对黄瓜汁进行不断搅拌;
4)将步骤3)中的黄瓜汁兑水稀释,按重量比黄瓜:水=5:3的比例进行稀释,投入到不锈钢加热罐,边加热边搅拌,其搅拌速度控制在120转/分钟,搅拌加热至25-35℃后,停止加热,并继续搅拌60-65分钟;
5)将加热搅拌后的黄瓜汁吸注到不锈钢冷冻床上,封闭冷冻3小时,冷冻温度为-5℃;
6)在冷冻床上,保持0℃-2℃条件下冷藏24小时,使其结晶凝沉,然后再送入不锈钢加热罐,边加热边搅拌,其搅拌速度控制在120转/分钟,搅拌加热至25-35℃后,停止加热,并继续搅拌60-65分钟;
7)将步骤6)中加热后的黄瓜汁在真空环境下进行喷雾干燥,得到固态物料,利用研磨机将固态物料研磨至400目即得到黄瓜深加工产品黄瓜微粉。
将黄瓜与紫甘薯花青素、山药多糖、蜂花粉、红景天甙、玉米肽进行配合,常服可以提高人体免疫能力,服用安全可靠,也可以作为调味佐料进行使用。
本发明的有益效果是:本发明采用新鲜黄瓜为原料,加工成微粉,制成制剂,该制剂可以作为像豆粉、奶粉一样进行冲服,营养丰富,保健效果佳,速溶性好,口味纯正,易于保存。

1)按上述配比称取:黄瓜微粉、紫甘薯花青素、脱脂大豆粉、白茶粉、山药多糖、蜂花粉、花生芽粉、红景天甙、玉米肽、核桃粉、五味子粉、姜黄素、西瓜翠衣、炒米粉、芝麻叶干粉;
2)将黄瓜微粉、脱脂大豆粉、白茶粉、花生芽粉、核桃粉、五味子粉、西瓜翠衣、炒米粉及芝麻叶干粉混匀,放入热锅中快速翻炒2分钟左右,倒出摊开,冷却至常温,得物料a待用;
3)将紫甘薯花青素、山药多糖、蜂花粉、红景天甙、玉米肽和姜黄素混匀后送入冷库,在-10℃环境中冷冻10小时左右,完成后取出,送入搅拌机,在180转/分的转速下连续搅拌10分钟,得物料b待用;
4)将物料a与物料b进行混合,送入烘干机,至水分含量在8%以内,再将物料投入研磨机,连续研磨1-1.5小时,过360目筛,得黄瓜制剂。
实施例2
一种无公害黄瓜制剂,由以下重量份数的组分制成:黄瓜微粉35份、紫甘薯花青素1份、脱脂大豆粉2.5份、白茶粉1份、山药多糖0.6份、蜂花粉1.5份、花生芽粉2份、红景天甙0.4份、玉米肽0.3份、核桃粉0.1份、五味子粉0.6份、姜黄素0.1份、西瓜翠衣0.4份、炒米粉0.1份、芝麻叶干粉2份;
上述黄瓜制剂的制备方法为:
1)按上述配比称取:黄瓜微粉、紫甘薯花青素、脱脂大豆粉、白茶粉、山药多糖、蜂花粉、花生芽粉、红景天甙、玉米肽、核桃粉、五味子粉、姜黄素、西瓜翠衣、炒米粉、芝麻叶干粉;
2)将黄瓜微粉、脱脂大豆粉、白茶粉、花生芽粉、核桃粉、五味子粉、西瓜翠衣、炒米粉及芝麻叶干粉混匀,放入热锅中快速翻炒2分钟左右,倒出摊开,冷却至常温,得物料a待用;
3)将紫甘薯花青素、山药多糖、蜂花粉、红景天甙、玉米肽和姜黄素混匀后送入冷库,在-10℃环境中冷冻10小时左右,完成后取出,送入搅拌机,在180转/分的转速下连续搅拌10分钟,得物料b待用;
4)将物料a与物料b进行混合,送入烘干机,至水分含量在8%以内,再将物料投入研磨机,连续研磨1-1.5小时,过360目筛,得黄瓜制剂。
所述黄瓜微粉的制备方法如下:
1)以新鲜黄瓜为原料,将黄瓜去杂,清洗干净,然后送入软化溶液中浸泡20-30分钟,使黄瓜软化;
上述软化溶液是由以下重量份数的组分构成:山泉水100份、改性玉米淀粉5份、烟草提取物0.5份、姜黄素0.5份、原花青素1.5份、纯碱5份、金银花提取物2份、柠檬酸0.5份、碘盐1.5份、葡萄酒1.5份、维生素C 0.05份、大豆分离蛋白1份、绿茶提取物1.5份、冰片1份;
2)将步骤1)中软化后的黄瓜沥干表面水分,在零℃的环境下冷藏40分钟左右,通过冷藏来提高黄瓜内部物质的活性;
3)将步骤2)中冷藏后的黄瓜进行榨汁,收集黄瓜汁,并对黄瓜汁进行不断搅拌;
4)将步骤3)中的黄瓜汁兑水稀释,按重量比黄瓜:水=5:3的比例进行稀释,投入到不锈钢加热罐,边加热边搅拌,其搅拌速度控制在120转/分钟,搅拌加热至25-35℃后,停止加热,并继续搅拌60-65分钟;
5)将加热搅拌后的黄瓜汁吸注到不锈钢冷冻床上,封闭冷冻3小时,冷冻温度为-5℃;
6)在冷冻床上,保持0℃-2℃条件下冷藏24小时,使其结晶凝沉,然后再送入不锈钢加热罐,边加热边搅拌,其搅拌速度控制在120转/分钟,搅拌加热至25-35℃后,停止加热,并继续搅拌60-65分钟;
7)将步骤6)中加热后的黄瓜汁在真空环境下进行喷雾干燥,得到固态物料,利用研磨机将固态物料研磨至400目即得到黄瓜深加工产品黄瓜微粉。

1.一种无公害黄瓜制剂,其特征在于,由以下重量份数的组分制成:黄瓜微粉25-35份、紫甘薯花青素1-2份、脱脂大豆粉1.5-2.5份、白茶粉1-2份、山药多糖0.4-0.6份、蜂花粉1.5-2.5份、花生芽粉1-2份、红景天甙0.4-0.6份、玉米肽0.1-0.3份、核桃粉0.1-0.3份、五味子粉0.4-0.6份、姜黄素0.1-0.3份、西瓜翠衣0.2-0.4份、炒米粉0.1-0.3份、芝麻叶干粉1-2份;
上述黄瓜制剂的制备方法为:
1)按上述配比称取:黄瓜微粉、紫甘薯花青素、脱脂大豆粉、白茶粉、山药多糖、蜂花粉、花生芽粉、红景天甙、玉米肽、核桃粉、五味子粉、姜黄素、西瓜翠衣、炒米粉、芝麻叶干粉;
2)将黄瓜微粉、脱脂大豆粉、白茶粉、花生芽粉、核桃粉、五味子粉、西瓜翠衣、炒米粉及芝麻叶干粉混匀,放入热锅中快速翻炒2分钟,倒出摊开,冷却至常温,得物料a待用;
3)将紫甘薯花青素、山药多糖、蜂花粉、红景天甙、玉米肽和姜黄素混匀后送入冷库,在-10℃环境中冷冻10小时,完成后取出,送入搅拌机,在180转/分的转速下连续搅拌10分钟,得物料b待用;
4)将物料a与物料b进行混合,送入烘干机,至水分含量在8%以内,再将物料投入研磨机,连续研磨1-1.5小时,过360目筛,得黄瓜制剂。
