本发明涉及一种番茄味粉丝及其制备方法,属于中药领域。
背景技术
粉丝品种繁多,如绿豆粉丝、豌豆粉丝、蚕豆粉丝、魔芋粉丝,更多的是淀粉制的粉丝,如红薯粉丝,甘薯粉丝、土豆粉丝等,粉丝按其开联有粗、细、圆、扁及片状等多种,按其主要用料又有豆类、薯类、苕类的不同;目前市场上方便食用的速食粉丝为了提高表面的亮度和美观度,都在粉丝中添加有明矾,对于处在生长发育期的孩子们是不宜食用的。
发明内容
本发明的目的在于提供一种番茄味粉丝及其制备方法。
本发明采用如下技术方案:
番茄味粉丝,其组成原料的重量份为:高粱粉23-25、红薯淀粉15-20、红苋菜粉5-8、番茄8-10、腰果3-4、葛根2-3、青梅5-6、徐长卿3-4、款冬花6-8、麦芽1-3、红参3-4、黄瓜香6-8、芦根2-4、芹菜汁2-5、白芷5-6、食盐3-5、黄原胶2-4、柠檬酸钠0.5-0.8和粉丝开粉剂4-5。
番茄味粉丝,其组成原料的重量份为:高粱粉24、红薯淀粉18、红苋菜粉6、番茄9、腰果3.5、葛根2.5、青梅5.5、徐长卿3.5、款冬花7、麦芽2、红参3.5、黄瓜香7、芦根3、芹菜汁3、白芷5.5、食盐4、黄原胶3、柠檬酸钠0.6和粉丝开粉剂4.5。
番茄味粉丝的制备方法,包括以下步骤:
(1) 按组成原料的重量份称取各原料,先将番茄、腰果、青梅清洗后控干,切碎,然后用冷开水加食盐、白酒、黄酒配制成泡菜水浸泡2-4h,过滤取渣,所述的泡菜水中食盐、白酒、黄酒分别占冷开水的2-5%、0.3-0.5%和0.2-0.5%;
(2) 称取葛根、徐长卿、款冬花、麦芽、红参、黄瓜香、芦根、白芷,加入适量的水,水提2-3次,过滤合并每次的水提取物,备用;
(3) 称取高粱粉总质量8-10%的高粱粉,向里面加水搅拌,加热并不断搅拌,调成芡;然后向其中加入步骤(1)的滤渣和步骤(2)的水提取物,搅拌5-10分钟后,再加入其他剩余组成原料混合,用搅拌机搅拌,和成面团;
(4) 将和好的面团放入打瓢机,轻压面团进行漏粉,漏入沸腾的水中,取出,放入循环冷水中冷却,冷却后将粉丝进行晾晒,晒干后,包装即可。
本发明的有益效果:
本发明的番茄味粉丝制作成本低廉,番茄味合理改善饼干的口味,粉丝的配方配伍合理,使粉丝具有更好的营养价值,不仅食用起来味道纯正,口感细腻,而且具有滋阴养血、养胃润肺、补气养心的功效。
具体实施方式
实施例1:番茄味粉丝,其组成原料的重量份(g)为:高粱粉24、红薯淀粉18、红苋菜粉6、番茄9、腰果3.5、葛根2.5、青梅5.5、徐长卿3.5、款冬花7、麦芽2、红参3.5、黄瓜香7、芦根3、芹菜汁3、白芷5.5、食盐4、黄原胶3、柠檬酸钠0.6和粉丝开粉剂4.5。
番茄味粉丝的制备方法,包括以下步骤:

1.一种番茄味粉丝,其特征在于其组成原料的重量份为:高粱粉23-25、红薯淀粉15-20、红苋菜粉5-8、番茄8-10、腰果3-4、葛根2-3、青梅5-6、徐长卿3-4、款冬花6-8、麦芽1-3、红参3-4、黄瓜香6-8、芦根2-4、芹菜汁2-5、白芷5-6、食盐3-5、黄原胶2-4、柠檬酸钠0.5-0.8和粉丝开粉剂4-5。
2.根据权利要求1所述的番茄味粉丝,其特征在于其组成原料的重量份为:高粱粉24、红薯淀粉18、红苋菜粉6、番茄9、腰果3.5、葛根2.5、青梅5.5、徐长卿3.5、款冬花7、麦芽2、红参3.5、黄瓜香7、芦根3、芹菜汁3、白芷5.5、食盐4、黄原胶3、柠檬酸钠0.6和粉丝开粉剂4.5。
3.一种权利要求1所述的番茄味粉丝的制备方法,其特征在于包括以下步骤:
按组成原料的重量份称取各原料,先将番茄、腰果、青梅清洗后控干,切碎,然后用冷开水加食盐、白酒、黄酒配制成泡菜水浸泡2-4h,过滤取渣,所述的泡菜水中食盐、白酒、黄酒分别占冷开水的2-5%、0.3-0.5%和0.2-0.5%;
称取葛根、徐长卿、款冬花、麦芽、红参、黄瓜香、芦根、白芷,加入适量的水,水提2-3次,过滤合并每次的水提取物,备用;
