本发明涉及属于食品加工技术领域,具体涉及一种牛肉蛋黄粉丝的制作方法。
背景技术
粉丝是我国的常见食品,因其含有丰富的碳水化合物、膳食纤维、蛋白质、烟酸和钙、镁、铁、钾等矿物质,所以自古以来就受到人们的喜欢,现有的粉丝品种比较单一,一般都是由绿豆、红薯等制成,含有的营养成分也比较单一,不能满足人们对粉丝营养多元化的需求,而且也限制了粉丝的各种做法。
发明内容
本发明的目的在于提供一种牛肉蛋黄粉丝的制作方法。
为了实施上述目的本发明采用如下技术方案:
牛肉蛋黄粉丝的制作方法,包括以下步骤:
(1)称取小麦粉78-90份、红薯粉15-17份、牛肉粉20-25份、虾壳粉2-4份和玫瑰花粉1-3份搅拌混合均匀,然后加入30-40份大豆油,放入炒锅中,先武火炒3-5分钟,再文火炒10-15分钟,备用;
(2)称取10-15份蛋黄,加入步骤(1)炒制后的混合粉中,搅拌均匀;
(3)称取3-4份葡萄、1-3份草莓、6-8份苹果、4-5份黄瓜、1-2份丝瓜和4-5梨子,放入榨汁机中榨汁,然后向上述果汁浆加入8-10%蔗糖、0.2-0.3%酵母菌,静置放于10-15℃环境下发酵一周,得发酵液;
(4)称取1.5-2.0份山药、2.3-2.5份三七、1.0-2.0份黄精、3.5-4.0份柴胡、1.5-2.0份王不留行、0.8-1.0份党参和2.3-2.5份棕榈叶;用含有1‰-3‰乳酸的水溶液浸泡1-2天,取出打浆,压榨,得压榨液,然后与步骤(3)的发酵液合并,减压浓缩,喷雾干燥过100 目筛,得混合粉末;
(5)合并步骤(2)含蛋黄的混合粉和步骤(4)的混合粉末;先加入适量淀粉水调浆,再加入适量的食盐、味精和大茴香,搅拌混合均匀,然后泵入漏粉机漏成条状,并切断,得到粉丝条,然后将粉丝条在95-100℃的环境下预蒸3-5 分钟,得到熟粉丝;
(6)先将上述熟粉丝放入20-30℃水中浸泡15-30 分钟,再在5-10℃水中浸泡3-5分钟,最后在冰水中浸泡20-30分钟,最后滤去浸泡水,清洗甩干,再放入送入切断机切断,晾干即得。
本发明的有益效果:
本发明制作的牛肉蛋黄粉丝,特别注重了风味和口感,食用很方便,而且本发明中添加了多种保健中药,能起到保养、防病协同治病、保健为一体的组合作用,老少皆宜,特别适于身体虚弱人群食用。
具体实施方式
实施例1:牛肉蛋黄粉丝的制作方法,包括以下步骤:
(1)称取小麦粉85份、红薯粉16份、牛肉粉22份、虾壳粉3份和玫瑰花粉2份搅拌混合均匀,然后加入35份大豆油,放入炒锅中,先武火炒3-5分钟,再文火炒12分钟,备用;
(2)称取10-15份蛋黄,加入步骤(1)炒制后的混合粉中,搅拌均匀;
(3)称取3.5份葡萄、2份草莓、7份苹果、4.5份黄瓜、1.5份丝瓜和4.5梨子,放入榨汁机中榨汁,然后向上述果汁浆加入8-10%蔗糖、0.2-0.3%酵母菌,静置放于10-15℃环境下发酵一周,得发酵液;
(4)称取1.8份山药、2.4份三七、1.5份黄精、3.8份柴胡、1.8份王不留行、0.9份党参和2.4份棕榈叶;用含有2‰乳酸的水溶液浸泡1-2天,取出打浆,压榨,得压榨液,然后与步骤(3)的发酵液合并,减压浓缩,喷雾干燥过100 目筛,得混合粉末;
(5)合并步骤(2)含蛋黄的混合粉和步骤(4)的混合粉末;先加入适量淀粉水调浆,再加入适量的食盐、味精和大茴香,搅拌混合均匀,然后泵入漏粉机漏成条状,并切断,得到粉丝条,然后将粉丝条在95-100℃的环境下预蒸3-5 分钟,得到熟粉丝;
(6)先将上述熟粉丝放入25℃水中浸泡20分钟,再在5-10℃水中浸泡3-5分钟,最后在冰水中浸泡25分钟,最后滤去浸泡水,清洗甩干,再放入送入切断机切断,晾干即得。

1.一种牛肉蛋黄粉丝的制作方法,其特征在于包括以下步骤:
(1)称取小麦粉78-90份、红薯粉15-17份、牛肉粉20-25份、虾壳粉2-4份和玫瑰花粉1-3份搅拌混合均匀,然后加入30-40份大豆油,放入炒锅中,先武火炒3-5分钟,再文火炒10-15分钟,备用;
(2)称取10-15份蛋黄,加入步骤(1)炒制后的混合粉中,搅拌均匀;
