本发明属于食品加工领域,具体涉及一种红薯叶果冻。
背景技术
红薯叶(多年生蔓性草本植物)又称地瓜叶,即红薯生长过程中的茎上的叶子。红薯叶有很多用途,比如有提高免疫力,保护视力,延缓衰老,解毒等作用。一般食用的是秋天红薯成熟后地上秧茎顶端的嫩叶。红薯叶有提高免疫力、止血、降糖、解毒、防治夜盲症促进新陈代谢、通便利尿、升血小板、预防动脉硬化、阻止细胞癌变、催乳解毒等保健功能。红薯叶可使肌肤变光滑,经常食用有预防便秘、保护视力的作用,还能保持皮肤细腻、延缓衰老。
红薯叶是红薯藤的叶子,又称地瓜叶,是旋花科甘薯植物,它是经过人工选择培育出供人们食用的红薯苗顶端尖嫩茎的品种,在香港仍至世界被誉为"蔬菜皇后","长寿蔬菜"及"抗癌蔬菜",亚洲蔬菜研究中心已将红薯叶列为高营养蔬菜品种。
红薯叶的营养非常丰富,叶子翠绿鲜嫩、爽口,它的大部分营养含量比菠菜、芹菜等这种高营养物质高很多,特别是类胡萝卜素比普通胡萝卜高3倍,比鲜玉米、芋头等高600多倍。
红薯芽苗营养丰富,每100克红薯秧蔓顶端的10-15厘米及嫩叶、叶柄合称茎类。红薯茎尖含有丰富的蛋白质、胡萝卜素、维生素、铁和钙质。
据化验分析:茎尖粗蛋白质量为干重的21.1%-15.1%,与猪牛肉相当。茎叶和茎尖的蛋白质为2.7%,胡萝卜素为5580国际单位/100克,维生素C为41.07毫克/千克,钙为74毫克/千克,铁为4毫克/千克,维生素B1为3毫克/千克,烟酸6至10毫克/千克,B6为2.1毫克/千克。据中国预防医学院的检测,红薯叶茎尖和芹菜、甘蓝、菠菜、白菜、油菜、韭菜、黄瓜、茄子、胡萝卜、番茄等13种蔬菜相比较,在14种营养成分中,蛋白质、脂肪、热量、纤维素碳水化合物、钙、铁、磷、胡萝卜素、维生素C、B1、B2、烟酸等13项,红薯叶均居首位。亚洲蔬菜研究中心已将红薯叶列为高营养蔬菜品种,称其为"蔬菜皇后"。在欧美、日本、香港等地掀起一股"红薯叶热"。用红薯叶制作的食品,甚至摆上了酒店、饭馆的餐桌。在我国,城市超市里见不到有红薯叶出售,农民收获红薯后将红薯叶,连同茎一起丢在地里,或用作喂牲畜的饲料,这是非常可惜的。
本发明申请人通过研究发现将红薯叶提取物同山药混合,做成果冻,一方面果冻本身色泽好,另一方面口感好,还通过果冻形式保护了红薯叶、山药的营养价值,具有市场开发前景。

本发明旨在提供一种营养适合各种人群食用的红薯叶果冻。

1)红薯叶清洗,水提,得红薯叶提取物;山药蒸熟,捣碎;
2)将糖溶于水,开水煮开,再将红薯浆、水果浆加入,搅拌使其充分溶胀;
3)将步骤1)制备所得红薯提取物、山药泥加入步骤2)所得混合物中,搅拌均匀,加热煮沸,搅拌均匀后立即灌注至经消毒后的果冻杯模中,及时封口,然后静置成型。
本发明有益效果:
1、本发明提供了一种新型食品;
2、本发明红薯叶果冻营养丰富,口感好,适合各种年龄人群。工艺简单,能大规模推广。

红薯叶150份,山药80份,糖30份,红薯浆18份,蓝莓果浆15份,水200份。

红薯叶200份,山药100份,糖50份,红薯浆20份,芒果果浆20份,水300份。

红薯叶100份,山药80份,糖40份,红薯浆10份,猕猴桃果浆15份,水200份。
实施例1-3制备方法:
1)红薯叶清洗,水提,得红薯叶提取物;山药蒸熟,捣碎;
2)将糖溶于水,开水煮开,再将红薯浆、水果浆加入,搅拌使其充分溶胀;
3)将步骤1)制备所得红薯提取物、山药泥加入步骤2)所得混合物中,搅拌均匀,加热煮沸,搅拌均匀后立即灌注至经消毒后的果冻杯模中,及时封口,然后静置成型。
