本发明属于食品加工技术领域,涉及一种玉米糁,尤其涉及一种鸭舌味降血脂玉米糁及其制备方法。
背景技术
目前,随着人们生活水平的不断提高,人们越来越多的选择价高味美的米面,玉米糁营养丰富,广受消费者喜爱,市场上销售的玉米粉口味单调,且多不具有保健功能,已不能满足于消费者的需求。
发明内容
本发明的目的是提供一种鸭舌味降血脂玉米糁及其制备方法,本发明具有口味独特,降血脂、预防肝脏硬化且营养丰富的特点。
本发明所采用的技术方案是:
一种鸭舌味降血脂玉米糁,其特征在于由以下重量份原料制成:
玉米粉500-550、茶多酚30-35、葡萄籽提取物6-7、大豆胚芽9-10、蜂蜡4-5、腰豆粉6-7、豇豆沙10-13、荸荠粉15-16、鸭舌3-4、驴奶5-6、曲药2-3、草果仁4-5、全叶青兰7-8、麻仁5-6、玳玳花7-8、莱菔子2-3、营养添加剂50-55;
所述营养剂由下列重量份原料制成:
蛋黄粉50-55、奶粉10-20、花生粉15-16、葡萄干粉7-8、龙眼肉9-10、南瓜花5-6、椰浆7-8、玉竹3-4、莲子芯2-3、乌梅8-9、砂仁1.2-1.5、银鱼8-9、田基黄1-2、开心果10-11、韭菜子8-9、纤维素酶0.1-0.5、活性酵母菌0.6-0.7;
制备方法如下:
(1)、将玉竹、莲子芯、砂仁、田基黄加5-6倍水煎煮15-20分钟,过滤得药液,将银鱼加入药液煮熟,晾干研成银鱼粉;将南瓜花、韭菜子、开心果大火炒香,研成粉与银鱼粉混合均匀;
(2)、将蛋黄粉、奶粉、花生粉、葡萄干粉、龙眼肉、椰浆加水混合均匀,放入37~50℃恒温酶解罐中,加入纤维素酶和活性酵母菌进行酶解发酵3-5小时,得发酵浆液,将发酵浆液进行喷雾干燥制成粉,再加入步骤(1)所得粉料以及剩余原料混合,即得。
所述鸭舌味降血脂玉米糁及其制备方法,其特征在于包括以下步骤:
(1) 将曲药、草果仁、全叶青兰、麻仁、玳玳花、莱菔子加5-6被水煎煮15-20分钟,得药液,将鸭舌放入药液一起煮熟,将鸭舌取出,烘干研成粉;
(2) 将大豆胚芽、腰豆粉、豇豆沙、荸荠粉混合均匀再添加蜂蜡,大火炒香,烘干研成粉;
(3)将玉米粉、葡萄籽提取物、茶多酚放入驴奶中浸泡10-12小时,再取出烘干研成粉,再与步骤(1)、(2)所得粉料以及其他剩余原料混合均匀,即得。
本发明的有益效果为:
本发明在传统的玉米糁基础上采用现代工艺融入了茶多酚等多种具有保健效果成分,且加入了鸭舌等营养丰富的辅料,使得玉米糁具有茶多酚具有的较强的抑制转换酶活性的作用,因而可以起到降低或保持血压稳定的作用,且口味独特,便于食用。

一种鸭舌味降血脂玉米糁,其特征在于由以下重量份原料制成:
玉米粉500-550、茶多酚30-35、葡萄籽提取物6-7、大豆胚芽9-10、蜂蜡4-5、腰豆粉6-7、豇豆沙10-13、荸荠粉15-16、鸭舌3-4、驴奶5-6、曲药2-3、草果仁4-5、全叶青兰7-8、麻仁5-6、玳玳花7-8、莱菔子2-3、营养添加剂50-55;
所述营养剂由下列重量份原料制成:

玉米粉500-550、茶多酚30-35、葡萄籽提取物6-7、大豆胚芽9-10、蜂蜡4-5、腰豆粉6-7、豇豆沙10-13、荸荠粉15-16、鸭舌3-4、驴奶5-6、曲药2-3、草果仁4-5、全叶青兰7-8、麻仁5-6、玳玳花7-8、莱菔子2-3、营养添加剂50-55;
所述营养剂由下列重量份原料制成:
